Ingredients
- 1 piece Carrots
- 1 piece Carrots
- 2 piece Tomatoes
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 1/2 tsp Cumin
Instructions
- Wash and peel the carrots if desired. Chop the carrots into small bite-size pieces.
- Bring a small pot of water to a gentle boil. Score the tomatoes with a cross on the bottom, then place them in the boiling water for 30–45 seconds. Remove, peel, and chop the tomatoes.
- In the pot, add the chopped carrots and tomatoes. Add 1 to 1 1/2 cups (250–375 ml) of water just to help them simmer (add more if needed).
- Season with salt, black pepper, and cumin.
- Simmer over medium-low heat for 25–35 minutes, stirring occasionally, until the carrots are tender and the mixture becomes thick.
- Taste and adjust seasoning if needed (add a little more salt or pepper). Serve hot.
