Beef and Rice Stuffed Tomatoes

Ingredients

  • 2 piece Tomatoes
  • 1 cup Cooked jasmine rice
  • 150 g Beef
  • 50 g Cheese
  • 1 piece Carrots
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Oregano
  • 1 tablespoon Olive oil

Instructions

  • Preheat your oven to 180°C (350°F).
  • Cut the tops off the tomatoes and scoop out the insides gently, reserving the pulp.
  • In a skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned.
  • Grate the carrot and add it to the beef, cooking for another 2-3 minutes.
  • Mix in the cooked jasmine rice and the reserved tomato pulp. Season with salt, black pepper, and oregano.
  • Remove from heat, stir in the cheese until melted and well incorporated.
  • Stuff the mixture into the hollowed tomatoes.
  • Place the stuffed tomatoes in a baking dish and bake in the preheated oven for about 20-25 minutes, or until the tomatoes are tender.
  • Serve hot, garnishing with additional cheese if desired.
