Ingredients
  

  • 2 pounds Tomatoes
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 carrots chopped
  • 1 stalk celery chopped
  • 1 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp basil dried
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion, garlic, carrots, and celery. Cook for 5 minutes until the vegetables are softened.
  • Add the tomatoes, vegetable broth, dried basil, dried oregano, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 20 minutes.
  • Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches.
  • Taste and adjust the seasoning if needed. Serve hot.

      I used regular blender batches and… yeah it took forever and splattered a bit 😅 immersion blender really is the move. Also I added a pinch of sugar once to cut the tomato acidity—helped me.

      Totally agree about the broth! I made it once with a weak store brand and it was kinda sad/watery. This sounds way better with a flavorful veg broth.

    I’m skeptical about how it would turn out with just veggies, but WOW! It’s really good. I didn’t have basil, so I used pesto instead. Not sure if that’s allowed, but it turned out fine. Thanks!
