Ingredients
  

  • 6 Bell peppers any color
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1/2 cup black olives sliced
  • 1/4 cup parsley chopped fresh
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. Rinse the peppers and set aside.
  • In a large bowl, combine the cooked rice, diced tomatoes, sliced black olives, chopped parsley, olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper. Mix well.
  • Stuff each bell pepper with the rice mixture and place them in a baking dish.
  • Cover the baking dish with foil and bake for 40 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and lightly browned.
  • Serve the stuffed peppers hot and enjoy!

      Mine stayed kinda crunchy too. Maybe the rice wasn’t cooked enough? But you said “cooked rice,” so idk… I used regular white rice and still crunchy. Next time I’ll lower oven temp? 🤷‍♂️

      Totally possible—40 min covered can be enough for smaller peppers, but if yours were big/thick they’ll stay crunchy. I’d try slicing the peppers a bit thinner or adding 10–20 min before removing the foil (or both).
