Ingredients
  

  • 4 turkey cutlets
  • 2 eggplant sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 4 slices mozzarella cheese
  • 1 cup marinara sauce
  • Basil leaves for garnish

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Place the sliced eggplants on a baking sheet and drizzle with olive oil. Sprinkle with dried oregano, garlic powder, salt, and pepper. Toss to coat.
  • Roast the eggplant slices in the preheated oven for 15-20 minutes, or until tender and lightly browned.
  • While the eggplant is roasting, season the turkey cutlets with salt, pepper, and olive oil.
  • Heat a grill pan or skillet over medium-high heat. Cook the turkey cutlets for about 3-4 minutes per side, or until cooked through.

      Maybe your slices were too thick? If they’re chunky, they steam more than brown. I cut mine pretty thin (like 1/4 inch) and they come out better.

      I’ve made this and soggy eggplant usually means it didn’t get hot enough fast. Even though the recipe says 15–20 mins, I find I need closer to 25 and I make sure the oven is fully preheated (and the sheet is hot). Also pat the slices dry before oil—helps them brown.

    400°F feels high for eggplant—mine got a bit too soft and kind of went mushy on the edges. I might lower the temp next time or slice thicker.

      I’ve had the same thing happen with eggplant at 400°F. I go more like 375°F and slice a bit thicker—then it browns instead of turning to mush on the edges.
