Ingredients
  

  • 1 lb ground turkey
  • 1 head cauliflower chopped
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup shredded cheddar cheese
  • 1/4 cup parmesan cheese grated
  • 1/4 cup breadcrumbs
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 2 tbsp olive oil

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic and cook until softened, about 5 minutes.
  • Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon as it cooks. Season with dried basil, dried oregano, salt, black pepper, and red pepper flakes.
  • Add the chopped cauliflower to the skillet and stir to combine with the turkey mixture. Cook for another 5 minutes until the cauliflower starts to soften.
  • Transfer the mixture to a greased baking dish. Sprinkle the shredded cheddar cheese, grated Parmesan cheese, and breadcrumbs over the top.

      I’m skeptical. 30 minutes at 375 doesn’t sound like enough to make cauliflower tender… like it might still be crunchy. Maybe steam it first? Also I’d use mozzarella not parmesan.

    I’m skeptical about the breadcrumbs—like, do they actually crisp in 30 minutes? Mine came out a little soft. Flavor was decent though, onions/garlic saved it.

      Yeah, the breadcrumbs are the weak spot—30 min might be enough for the cheese to melt, but not always for crisping. I’ve had better results if you use panko or add a drizzle of oil/butter on top before baking. Also make sure the baking dish isn’t too deep so the heat can hit the crumbs.

      Totally get that—breadcrumbs can go from “nice crunch” to “why is this rock hard?” fast. I’d try mixing the breadcrumbs with a bit of extra cheese (or even a drizzle of olive oil) and keep an eye on it near the end. 2 tbsp sounds like the sweet spot.
