Turkey and Cauliflower Bake

April 12, 2024

Looking for a hearty dinner that’s both comforting and low in carbs? This turkey and cauliflower bake delivers all the flavor of a traditional casserole without the heaviness. It’s protein-packed, veggie-loaded, and perfect for feeding the whole family or prepping meals ahead of a busy week.

The star of this dish is ground turkey, a lean, mild protein that pairs beautifully with just about any seasoning. Here, it’s sautéed with onion and garlic until browned and flavorful, then mixed with steamed cauliflower florets that soak up all the goodness. A touch of cream or Greek yogurt gives the bake just enough richness without making it overly heavy.

What really ties everything together is cheese. A generous sprinkle of shredded mozzarella or cheddar creates a golden, bubbly topping that makes this feel like comfort food, even though it’s loaded with veggies and light on carbs.

The process is simple: start by browning your turkey in a skillet with onions, garlic, and a few herbs like thyme or oregano. While that cooks, steam your cauliflower just until tender, not mushy. Combine the turkey and cauliflower in a baking dish, stir in your creamy element (plus a handful of cheese if you like it extra cheesy), then top with more cheese and bake until golden and bubbling.

This turkey and cauliflower bake is a great way to use up leftover veggies or customize based on what you have. Toss in chopped spinach, mushrooms, or even a few sun-dried tomatoes for added flavor.

It reheats well and stores in the fridge for several days, making it a solid option for meal prep. Pair it with a fresh salad for a balanced dinner or serve it solo as a satisfying one-dish meal.

Whether you’re eating low-carb, trying to add more veggies to your meals, or just love a good casserole, this turkey and cauliflower bake is a recipe you’ll want to make again and again.
