Ingredients
  

  • 1 lb ground turkey
  • 1 bunch asparagus trimmed and cut into 2-inch pieces
  • onion small, diced
  • 3 cloves garlic minced
  • 1 tsp thyme dried
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth low-sodium
  • 1 tbsp olive oil

Instructions
 

  • Heat the olive oil in a skillet over medium heat.
  • Add the ground turkey and cook until browned, breaking it up into small pieces.
  • Add the diced onion and minced garlic to the skillet and cook until the onion is soft and translucent.
  • Add the asparagus pieces to the skillet and season with dried thyme, dried oregano, paprika, salt, and black pepper.

    I used turkey thigh meat (same idea?) and it was darker than expected but still turned out. I thought it’d be bland, but the herbs came through.

      Good catch! Asparagus can go from tender to mushy fast. I’d definitely aim for closer to 8–10 min depending on thickness—10 is probably perfect for 2-inch pieces, but simmering longer will do it.

      I usually treat “small diced onion” as about 1/2 cup diced (roughly a small onion). If you underdid it, it’ll still taste fine—just a little less sweet/rounded.

      Yeah “small” is super vague 😅. Next time weigh it—like 6-8 oz for a small onion—or just dice up a whole small one. Your skillet might be missing flavor if you only did like 2 tablespoons.
