Ramen eggs, often called ajitsuke tamago or shoyu tamago, are one of the most beloved toppings in Japanese cuisine, and for good reason. These soy-marinated eggs bring a depth of flavor and texture that transforms a bowl of ramen into something truly special. With their slightly firm whites and custard-like yolks, they strike a delicate balance that feels both comforting and indulgent. The glossy, amber-stained surface and golden center make them as visually appealing as they are delicious.
What sets ramen eggs apart is the marinade. Typically made with a blend of soy sauce, mirin, sake, and a touch of sugar, the mixture infuses the eggs with layers of umami. As the eggs rest in this savory bath, they soak up a combination of salty, sweet, and tangy notes, all of which seep into the whites and enhance the richness of the yolks. The longer they marinate, the deeper the flavor and color become, making each egg a customizable experience depending on preference.
The texture is where the true magic lies. The whites remain delicate yet firm enough to hold together, while the yolks sit right at that perfect point between soft-boiled and jammy. When sliced in half, they reveal a golden center that oozes slightly without being runny, adding a luxurious element to any dish. This unique consistency makes them ideal for ramen, where they meld with the broth to create bursts of creaminess with every spoonful.
Although ramen eggs are most often enjoyed in noodle bowls, their versatility extends well beyond that. They can be served over rice, tucked into bento boxes, or sliced onto salads and grain bowls. Their umami-rich flavor complements almost any savory dish, making them a staple for those who love bold, satisfying bites.
Part of their charm lies in the ritual of eating them. Cracking into the soft center and letting the yolk mingle with noodles or rice is a small but memorable moment of joy. Ramen eggs remind us how simple ingredients, when treated with care, can be elevated into something extraordinary. They are the finishing touch that turns a good meal into an unforgettable one, delivering comfort, richness, and pure satisfaction.

I followed the recipe but my eggs were still too runny. What did I do wrong? 😕
Why do people love these eggs so much? They are just eggs dipped in sauce! Pretty overrated if you ask me.
These ramen eggs are AMAZING! I made them for dinner last night, and they were a hit! Can’t wait to make them again!
I’m so glad you loved them! They really are a game changer in ramen. 😂
They look great, but I always mess up the boiling part. Any tips?
Not bad, but the soy sauce flavor was a bit overpowering for me. I think I’ll dilute it more next time.
So easy to make! Even my kids enjoyed them. I didn’t have mirin so I used rice vinegar instead. Still turned out great!
Eggs! Yum! 🥚🥚
how long does it take for the have good flavors? Can’t wait!
The flavors really start to develop after about 12 hours, but leaving them longer is better! You’ll love it!
12 hours? That seems like a long time. Can’t just eat them right away? 🤔
I followed the 6-minute boil and they were perfect—runny yolks, tender whites. Only thing: peeling was kinda stressful, but worth it.
Yes!! 6 minutes is the sweet spot. I’m always scared about peeling but the runny yolks make it worth it 😄
Mine were good but i guess i overcooked mine? yolks a little less runny and my peeling was a mess lol. Still tasty tho—next time i’ll do ice bath longer.
These ramen eggs are fantastic! I love how simple the recipe is. I’m definitely making these again.
Quick tip! If you drop eggs in boiling water too fast, they crack! Learned that the hard way. 😂
Wow, I made these for my family and they loved them! Better than the ones at my favorite ramen shop!
I followed the recipe exactly, but my eggs turned out rubbery. Not sure what I did wrong.
Rubbery eggs? That’s weird. I thought they was supposed to be soft and creamy. Maybe you didn’t use fresh eggs? 🤔
Sounds like you might have overcooked them! 6 mins is key, maybe try 5 next time.
I followed it pretty closely, but my eggs were a little too salty (used dark soy). Next time I’ll dilute more with that optional water.
I always add garlic to my marinade, gives the eggs a kick! This recipe still rocks.
Garlic in the marinade? That’s genius! I gotta try that next time.
Not sure about the garlic. Eggs are good as they are, don’t mess them up!
Ramen eggs? Is that a thing? Sounds weird but I guess I’ll try it??
Honestly I don’t trust the “perfect” part lol. My eggs leaked marinade and the bag got messy, but they were still tasty. Would make again, maybe in a container.
Wait so you boiled 6 minutes then marinade overnight? Mine always ends up too salty when I do it like that. Also I think the bag leakage might mess up the soak time.
Lol same—“perfect” is a marketing word 😂 I’ve had bags get all grimey too. Container definitely helps, and mine still tastes great even when messy.
I don’t get why people like these so much. They tasted just okay to me. Seems overrated.
Too salty for my taste. Any advice on reducing the soy sauce?
Holy moly! How did I live without this recipe? They add so much flavor to my ramen!
Plastic bag method is genius. Cleanup was easy and the eggs soaked evenly. Sesame seeds added a nice vibe.
I don’t like eggs that much but wanted to give this a try for my partner. He loved them! 🥚💖
So glad he loved them! Ramen eggs are such a treat! 🌟
Meh. 1/2 cup soy + 1/2 cup mirin seems too intense. Mine tasted more like straight marinade than ramen eggs.
Took too long to prepare. Is there an easier way? 😒
I’m skeptical about using a whole 1/2 cup mirin with that much soy, but it worked. Could be a bit salty for me though—might dilute with a bit more water next batch.
I messed up the peeling lol. The whites tore a little, so the marinade kinda got everywhere. Taste is good regardless. Next time I’ll peel under running water like my grandma says.
I’m not usually picky with eggs, but wow. The marinade actually tastes legit in ramen. I added the chili flakes and it kicked.
Yes! The chili flakes really wake it up—glad you tried it in ramen. 😄
These ramen eggs were delicious! Perfectly soft and flavorful. Definitely a keeper!
Yeah right, ramen eggs are just boiled eggs with soy sauce. How can they be that special? I’ve had better eggs in my omelet.
I’m so glad you enjoyed them! It’s amazing how something so simple can taste so good. Can’t wait to try your version!
Didn’t have mirin, used apple cider vinegar instead. 🤷♀️ Not great.
My bag leaked a tiny bit in the fridge and I panicked, but they still turned out surprisingly good. Sesame seeds next time—didn’t add them this round.
I tried this recipe but the eggs were too salty, maybe less soy sauce next time? 🤔
Tried these with my instant ramen and the yolks came out perfectly jammy. Soy-mirin balance is spot on. Will do again for sure.
Nice! That jammy yolk is the whole point 😄 What’s your sweet spot—12 hours or closer to 2-3 days?
Soo hard to peel the eggs! 😤 I ended up wasting a couple. Any tips?
These turned out fantastic! My ramen has never been better! ⭐⭐⭐⭐⭐
Just 6 mins? Aren’t they gonna be runny? I left mine a minute longer. They was perfect tho <3
I thought the same! But they turned out soft-boiled and delicious. Nice to know your timing worked too! <3
Okay but 6 minutes is kinda scary 😅 I’ve overcooked eggs before. Still, the method worked—cooling in ice bath saved me.
Pretty easy, but I think 6 minutes is a little too long for my eggs? Mine were more custardy than runny. Still tasty though.
Wait 6 minutes is long?? I always do 3-4 min for runny yolks lol. But hey if it’s custardy and tasty, that’s the main thing. Mine usually float in the bag too, so I shake it mid-marinate.
Good catch! 6 min definitely depends on how hot your boil is and the size of the eggs. If yours came out custardy, that sounds like it’s closer to “jammy but set.” Next time I’d try 5 minutes and adjust from there.
Eggs! Meh. Not for me. ⭐
Very good! The soy sauce and mirin combo work so well together.💖🥚
I’m glad you liked it! The flavors really do meld beautifully. Have you tried it with any other recipes?
Pretty solid. The 6-minute boil gave me the exact custardy center I wanted. I did notice the eggs were a bit salty without diluting, so next time I’ll add the optional water like suggested.
I don’t get why people love these so much… it’s just eggs in soy sauce. Still, the texture is pretty great.
Fair point—it sounds simple, but the soy-mirin soak is what makes the flavor really sink in. Also the jammy yolk + seasoned whites is the whole magic 😅
I don’t get why people like these eggs so much. They taste kinda funky to me.
Honestly, I thought this was gonna be complicated, but it’s just boiling eggs! I think I’ll stick to eating out instead. 😂
kinda bland? like i followed it but it didnt pop. maybe my soy was weak?? idk
Perfect ramen eggs are all about the timing! 6 minutes was spot on. Thank you!
I think 6 minutes is too long. I did 4 minutes and it was better for me. Also I skipped chilli flakes because I’m not trying to suffer.
I followed the recipe but my eggs came out too salty. Maybe I used too much soy sauce? Not sure if I’ll make them again.
10/10 would recommend. Made some for my friends, they loved it! 😍
Ramen eggs? Who even eats that? I prefer my eggs scrambled! 😛
Ramen eggs are amazing! They add a burst of flavor to ramen. You should give them a try!
Scrambled eggs are fine, but have you even tasted a ramen egg? It’s a whole different experience! 😋
I tried making these for the first time, but I messed up the boiling time… can the eggs still be good? Asking for a friend.
These eggs turned out amazing! I’ve never made ramen eggs before, but this recipe was super easy to follow. I will definitely be making these again!
Pretty solid. I didn’t have mirin so I used a sweet cooking wine thing—still tasted decent but not the same. Would recommend using mirin if possible.
Eggs good! Yum! 👍
I tried this and my eggs turned out kinda brown-ish and the flavor was too sweet. Maybe I used less soy or the mirin was different? Not for me, sadly.
Ahh sorry it didn’t work for you 😕 Brown-ish eggs can happen if the boil time is a bit longer or if your marinade is stronger/has more sugar. Next time try diluting the mirin with a little extra water, or reduce mirin/soy to taste. Also double-check you used whole eggs, not pasteurized liquid eggs or anything.
Hmm too sweet is exactly why I never do 1/2 cup mirin 😅 I cut it way down (like 2–3 tbsp) and add a splash more water. Also, boil 6 min is tight—if it’s closer to 7–8 they get darker. Not for me either? I get it. Next batch, less mirin prob fixes it.
Not bad, but mine came out a little too salty even with the optional water. Next time I’ll dilute more or use less soy sauce.
Mine got salty too 😅 I thought the mirin would balance it but nope. Next time I’m gonna try like less soy sauce for sure (or add more water right away).
Good tip—soy sauce can vary a lot by brand. I usually start with the water and maybe even a bit more than optional if I’m using a darker/stronger soy. Glad yours still tasted good!
These are the best ramen eggs ever! I added a little garlic powder just for kicks, and it worked great! 🥚❤️
Not bad, but the mirin makes it a little sweet for my taste. I’ll probably cut the mirin in half next batch.
Yeah, totally get that—mirin can push it sweet fast. Cutting it in half is a solid move. You might also try adding a splash more soy (or a tiny bit more water) to keep it balanced.
6 minutes felt risky, but it worked. I added chili flakes and sesame seeds like the recipe says and it tasted like ramen-shop quality.
6 minutes? Mine were still kinda soft, like not set at all. Also I didn’t have mirin so I used sugar water (don’t judge). Flavor was okay but not “ramen-shop.” Maybe I should’ve boiled longer?
Honestly I was nervous too—6 min eggs sound like they could turn into raw yolk soup 😅 But I tried it and yep, perfect jammy center. Chili flakes + sesame is the move!
This is my new go-to. I added the chili flakes and sesame, and now my ramen nights feel like restaurant quality.
These eggs are dangerously good. The yolks turn so jammy—perfect with ramen. I did 13 hours and it was spot on.
Wasn’t sure about the mirin, but it really adds something special. Just don’t leave them too long in the marinade or they get mushy.
