If you’re looking for a satisfying and flavorful vegetarian dish, Teriyaki Tofu and Vegetable Udon is the perfect choice. This dish combines thick, chewy udon noodles with crispy, savory tofu and a mix of colorful vegetables, all drizzled with sweet and tangy teriyaki sauce. It’s a hearty yet healthy meal that’s sure to please both vegetarians and non-vegetarians alike.
The tofu is the star of the show. To get that crispy texture, it’s best to press the tofu to remove excess moisture and then cut it into cubes. A quick sauté in a hot pan gives it a golden, crispy exterior while keeping the inside soft and flavorful. Once the tofu is cooked, it’s tossed in a generous amount of homemade or store-bought teriyaki sauce. The sauce, made with soy sauce, mirin, sugar, and a touch of ginger, is sweet, savory, and slightly tangy, the perfect complement to the tofu.
The udon noodles, which are thick, chewy, and satisfying, serve as the perfect base for this dish. They’re cooked al dente and then added to a skillet with the teriyaki tofu and vegetables. The noodles soak up the teriyaki sauce, making each bite rich with flavor.
For the vegetables, feel free to use whatever you have on hand. Common choices include bell peppers, zucchini, carrots, and mushrooms. A quick stir-fry allows the vegetables to retain their freshness and crunch, adding texture and color to the dish. You can even throw in some bok choy or spinach for an extra boost of greens.
To finish, garnish with a sprinkle of sesame seeds, sliced scallions, and a squeeze of lime for a pop of brightness. A dash of chili flakes adds a hint of spice if you like things hot.

I left out the garlic and it still tasted fine. I think you can do what you want with this recipe.
Eh, it’s okay. Not what I was expecting. I prefer my noodles without all this veggie haha.
How do you make it vegetarian when it uses soy sauce? Soy sauce has fish in it?? Confused.
Huh, I thought soy sauce had fish too!! But if it’s veggie, then I guess I can try this? Still sounds confusing tho.
Actually, most soy sauce is made without fish! It’s totally vegetarian. You might be thinking of fish sauce, which is different. Don’t worry, this recipe is meat-free!
Tofu weird, I prefer chicken. Is this recipe even legit?
my family loved it but I thought was a bit soy sauce heavy. less soy next time!
I’m glad your family enjoyed it! I’ve never thought about soy content, but maybe I will try it with less soy sauce next time as well.
Soy sauce is what makes it good tho! Can’t believe you think it’s heavy. Just curious, did you use the low-sodium kind? That one is less salty!
This recipe is a game changer! The tofu came out so crispy and the flavors are just yum. Definitely try adding some chili flakes for an extra kick! 5 stars!
I’m glad you loved it! I’ve been looking for a tofu recipe that actually works. Thanks for the tip on the chili flakes, I’ll definitely add those next time!
Amazing!!! 😍
It was okay, but the tofu didn’t crisp up like I wanted. Maybe I need to use more oil? Not bad but not great either.
Easy recipe but my veggies got too mushy. I think I cooked them too long? Will try again!
Cooking veggies too long is a common mistake! Try reducing the time next time. I love this recipe!
Udon is good, but mushy veggies can ruin it. Maybe add them later? Just a thought.
This is the best udon recipe I’ve ever made! Thanks for sharing! 🙌
Best? Really? I tried it, but it was just okay to me. A little bland maybe?
I’m so glad you loved it! Udon is my favorite! 🙏
Only thing… I had no rice vinegar so I used lemon juice and it tasted kinda off. Will make again when I restock.
Good note! If anyone’s out of rice vinegar, I’ve found apple cider vinegar is closer than lemon. Still not exact, but way less zesty.
Yeah, rice vinegar has a pretty specific mellow tang. Lemon juice can be sharper/bright in a different way—totally believable it tasted “off.” Glad you’ll try it again!
Not sure if it was me or the recipe, but mine didn’t look like the pic. Mine was all mushy. What did I do wrong?
Mehh. It was ok. My kids didn’t like it, and they usually love noodles. I guess I’ll stick to spaghetti. 2/5.
Great recipe!!! Yummmy! Quick to cook and filling.
I totally agree! This dish was super easy to make and my family loved it. Definitely a keeper! 😍
It’s good but I don’t know, I felt like something was missing. Maybe more sauce? 🤷♂️
It was okay. Noodles are hard to cook. I prefer rice. Not makin again.
I’m not a huge fan of udon, but this made me try it again. The sesame oil at the end really helps. Would make again for sure.
Not enough flavor for me. I’m a spice lover and this could use some hot sauce or something. Tofu was fine but overall meh.
I tried it with frozen mixed vegetables and snap peas (straight from the bag). They got tender fast, but I missed that ‘still crisp’ part. Tasted great, just slightly soft.
Yum! 10/10. I even added some chili flakes and it was perfect.
Yesss chili flakes would totally level it up 🔥 Glad it worked for you!
Simple and quick! I added some chili flakes for spice. Yum!
This was delish! The tofu got really crispy like I love. Definitely making again!
Too much soy sauce! Ruined the taste. I added extra veggies to balance it out.
I think udon is not supposed to be in teriyaki. Just doesn’t feel right. 🤔
This was so bad. I think I ruined it somehow. Tofu was mushy, and I don’t even like veggies. 😩 1 star.
I dunno, I think tofu is just weird. But my friend liked it. Kinda bland tho.
Tofu can be an acquired taste! Maybe try adding more spices next time?
Blahh, tofu sucks. Not a fan of this recipe, sorry!
Udon noodles are the best! I added some extra veggies. Just love them all!
I dunno, I tried this recipe but my noodles turned all sticky. What did I do wrong? 🤔
I totally agree! Udon noodles are so versatile and the veggies just make it pop! 🥦🥕
This was a lot of work for some noodles and vegetables. Never doing this again.
I tried this and my tofu didn’t get crispy at all 😕 I think my pan wasn’t hot enough. Flavor was still decent.
Ugh, sorry that happened 😕 If the pan wasn’t properly hot, tofu won’t crisp. Next time, try high heat and make sure the oil is shimmering before adding the tofu.
I’m not sure about mixing the broth + teriyaki + soy all together for 5 minutes… it felt kinda watery at first. Once I reduced it a touch, though, it came together. Flavor was nice.
Yummy! My kids didn’t even notice the tofu! I’m making this again!
Honestly, I don’t get the hype—too many ingredients and the end result felt like ‘stir-fry soup.’ Maybe it’s just my palate though.
Nooo this is not stir-fry soup 😅 The crispy tofu + teriyaki coating is the whole point. If your udon sat in the sauce too long it’ll go softer.
Hmm I get what you mean about it tasting a bit soupy—mine was definitely more saucy than I expected. I think next time I’ll reduce the broth a little or simmer uncovered longer.
Simple yet delicious! I added some mushrooms and broccoli cause why not? It’s a hit at my house!
But wait, broccoli? Isn’t that too much? I dunno if that fits with teriyaki.
Sounds great! I’ll try adding mushrooms too next time, thanks! 🍄
I don’t know about this, the mixture seemed off. My veggies got too mushy. Not a fan.
Delicious! I made it for dinner and everyone loved it! Tofu was crispy 😋
Yummy! This is now my go-to recipe for lunch! I added some broccoli and it was perfect! Thanks!
So glad you liked it! Broccoli sounds like a great addition. I might try that next time too! 😍
This recipe is amazing! I’ve made it twice already and my family loves it. The tofu gets so crispy. Yum!
I followed it pretty closely and it was tasty, but mine came out a little too salty. Next time I’ll cut back the soy sauce.
Not impressed. I’m used to better teriyaki. This felt too watery even tho I followed the recipe.
Not a fan of this dish. I thought teriyaki meant thick and sweet. This felt like soup with noodles. 😕
I get what you mean! I had the same struggle. Maybe try reducing the broth next time? It could help with the watery texture. 🤔
I made this exactly as written and it was so comforting. The tofu got wonderfully crispy and the sauce tasted like takeout.
Good flavor balance, not too sweet. I used whatever veggies I had and it still worked. Sesame seeds on top is a nice touch.
I’m not really into tofu, but I tried it anyway. The sauce was kinda good tho.
Tofu is kinda strange, but that sauce sounds delish! I might try just the sauce with noodles or somethin.
Just okay. I expected it to be more flavorful.
So easy and tastes restaurant-y. I didn’t have rice vinegar so I used a splash of lime and it was still tasty (don’t @ me).
Quick and easy recipe! My kids loved it. Just wish it had a little more sauce. Will make again!
The instructions are clear, but I wish it said to toss the udon with sauce off-heat so it doesn’t get too soft. Mine turned kinda mushy.
Too complicated for me… and what even is sesame oil? I think I’ll stick to box meals 😩.
This wasn’t very good. The sauce was too salty for my liking. I won’t make this again…
Wow! This was surprisingly easy! I never cooked tofu before but it turned out great!
That’s awesome! Tofu can be a bit tricky, but you did great! It’s one of my favorites now.
Noodles? What noodles? I couldn’t find udon at the store so I used spaghetti. It was still tasty! Not exactly traditional but good! 4 stars.
This was amazing! I love tofu and this recipe was so easy to follow.
Glad you loved it! Tofu is such a great ingredient, and this recipe is super simple to make!
Green onions are a must. I almost skipped them and then I remembered—perfect finish.
Tasty and ready quick! Great for weeknight meals. I’ll be making this a lot!
1/2 tsp ginger? That’s nothing. I think it needs way more seasoning. Would not make again like this.
Totally agree—this needs more seasoning. Teriyaki sauce + soy can taste sweet/salty but bland without extra ginger/garlic to balance it.
1/2 tsp ginger does feel a bit light, yeah. I’d probably bump it up if you really like that zing.
Too complicated for me! I just wanted fried noodles and this required too much work.
I can understand that! But it’s really worth trying! Maybe simplify it next time?
This was absolutely delicious! The tofu turned out perfectly crispy. Will make again!
Tried this tonight, but I didn’t have teriyaki sauce. Used BBQ sauce instead. Still turned out tasty!
Simple and delicious! I added mushrooms and it was a hit! Thanks for sharing.
Udon noodles? More like udon NO-thank-you!! Just not my thing. But my friend loved it.
Gonna try this with some shrimp instead of tofu! Hope it works out. 🤞
I tried this recipe, but the tofu didn’t get very crispy. Did I do something wrong?
Yum! But I used chicken instead of tofu because I’m not a fan of it. Still turned out great! 😂
I think chicken actually sounds yummy in this! Might try that next time. Thanks for sharing! 😊
My sauce tasted a bit salty even with the 3 tbsp total soy/teriyaki situation. I might cut the soy sauce next time or use low-sodium.
Pretty tasty and easy weeknight meal. My only issue was my veggies overcooked a little, so next time I’ll time them more carefully and add the sauce later.
This was absolutely delicious! The tofu was crispy and the flavors were on point. I will be making this again for sure.
I’m so glad you enjoyed it! The crispy tofu really makes the dish, doesn’t it? 😋
The instructions are solid, but my udon turned out a little overcooked (probably my timer). Still tasty though.
Waaay too soy saucy for me. I’ll stick to pizza!
HEAVENLY! My new go-to dish for sure!
Not sure about the sesame oil amount—1 tsp seemed small, but I guess it’s enough. Tasted good though.
This was delicious! The tofu turned out perfectly. Will definitely make this again.
I didn’t have udon noodles, so used spaghetti instead. It was still good, but not the same!
Not bad! The udon stayed chewy and the veggies were crisp. I think 2 tbsp soy sauce was slightly salty for me, so I’d cut it in half next time.
This was easy and delicious! My family loved it. Will make again!
Udon noodles are easy but my sauce was runny. Any tips?
This is my new favorite dish! It’s so filling and the flavor is superb. I added some chili flakes for extra kick! Definitely a 5!
I tried this recipe, but the noodles turned out mushy. 😔 Maybe I overcooked them? But my kids loved it!
Don’t worry about the noodles, that happens to everyone! Just make sure to keep an eye on the time next time. Glad your kids loved it! 😊
Mushy noodles??? I dunno, maybe they just need a bit less boiling? 🤔 Also, sounds like the kids had a good time!
Meh. The flavor was okay but not “wow.” Also my tofu didn’t get golden—maybe my skillet wasn’t hot enough.
This recipe is a game changer! Super flavorful and healthy. My kids loved it!
I followed the recipe but forgot the green onions. Still tasted great! Next time I won’t forget. 4 stars.
Not bad, but the sauce was too salty for me. Next time gonna cut the soy sauce in half!
You sure this is healthy? Too much sauce for my diet, but it looks good.
I tried this recipe, but I didn’t have any vegetable broth. Used chicken broth and it still tasted fine 😂.
I was skeptical about using tofu, but it was surprisingly good. Didn’t have all the veggies, so I used frozen ones.
Udon noodles taste diffrent than I thought. I prefer spaghetti. But this is ok.
I totally get that! Udon has its own unique texture, but spaghetti is a classic! Maybe try it with a different sauce next time?
Too many ingredients for my taste. Can’t you just boil noodles and throw some sauce on? 🤷♂️
I get that, but fresh ingredients make it so much better! You should try it sometime! 😋
Can I use any other sauce? Soy sauce is what I have, not teriyaki.
It was okay, but I think I overcooked the noodles. Not as good as I expected.
Super tasty and the tofu got really crispy like you said. I used frozen mixed veggies and it still turned out great. Next time I’ll add a little extra garlic/ginger for more punch.
I tried this but my tofu didn’t crisp up at all—maybe my skillet wasn’t hot enough? I also used way too much sauce and it got kinda salty. Still tasty though.
Yes!! The crispy tofu is the best part. I’ve done it with edamame too and it still works great. Extra garlic/ginger sounds perfect.
Disappointing. Tofu is suppose to be crispy when you cook it but mine was soft and yucky. Never cooking udon again.
Tofu never gets crispy for me either. I think it’s just a scam! Udon is overrated anyway. Stick with pasta!
I’m sorry to hear that! Tofu can be tricky sometimes. Did you press it before cooking? That helps remove extra moisture. I hope you give udon another chance!
Simple and tasty! Made it for dinner last night 👌
I don’t know, my noodles got all mushy. What did I do wrong? Anyone else have this happen?
I dunno about this. Tofu is weird and the texture is not for everyone. Maybe try chicken?
Chicken would be fine but tofu is way healthier and good for you. Plus, it’s cheap! Just gotta season it right!
I get what you mean about tofu, but if you cook it right, it can be super tasty! Maybe give it a try? 😄
Teriyaki sauce + soy sauce felt like overkill to me, but I guess it balances out. I’ll try using less soy next time.
I added extra garlic like the chef said. Yummm. So much flavor. Thanks for sharing!
Too many ingredients!! I was confused lol. How can I make it with less stuff? 1 star.
This is the best udon dish I ever tried! I love that it’s easy and can be made vegetarian. Will make it again for sure! So colorful too! 5!
I’m glad you loved it! The colors really pop and it’s so tasty. Can’t wait to make it myself!
It was ok but didn’t taste quite like the teriyaki I am used to. Maybe too much garlic?
I get what you mean! I think the garlic can be overpowering sometimes. Maybe try less next time or add some honey to balance it out?
Tasted fine to me! Maybe you just ain’t used to it? Garlic adds flavor, that’s a good thing!
Hmmm, I don’t know. Teriyaki sauce tastes like dessert to me. 😅
5 stars but also… teriyaki sauce varies so much. Mine was sweeter than expected, so I diluted with a splash of broth. Huge flavor either way.
Good weeknight meal! The sauce tasted legit, but my udon was a bit overcooked—maybe I left it in the skillet too long. Still, I’d make it again.
So many ingredients… I expected it to be awesome but it was just okay. Might try it again with less stuff.
I agree with you! A lot of stuff here, but I think the flavors are worth it. Maybe try cutting back on the veggies, they can be overwhelming.
