Tarte Tatin is a classic French dessert that turns simple ingredients into something truly spectacular. Made with buttery caramelized apples and a crisp, golden pastry, this upside-down tart is both rustic and elegant – perfect for everything from dinner parties to cozy fall afternoons.
The story goes that Tarte Tatin was invented by accident in the late 19th century by the Tatin sisters, who ran a hotel in France. One of them reportedly left the apples cooking in butter and sugar for too long and decided to top them with pastry and bake it all together. The result? A caramelized, upside-down tart that became an instant classic.
To make a traditional tarte Tatin, start by cooking peeled and halved apples in butter and sugar until they begin to caramelize. Tart varieties like Granny Smith or Braeburn work well, as they hold their shape and contrast nicely with the sweet caramel. Once the apples are golden and tender, they’re arranged in a skillet or oven-safe pan and topped with a sheet of puff pastry or shortcrust. The tart is then baked until the pastry is golden brown and crisp.
The magic happens when you flip the tart upside down onto a plate. The once-bottom layer of apples becomes a glossy, caramel-drenched topping, beautifully arranged and glistening with syrup. It’s a show-stopping moment every time.
Tarte Tatin is best served warm, often with a dollop of crème fraîche, a scoop of vanilla ice cream, or a drizzle of cream. The combination of flaky pastry, soft caramelized apples, and rich sauce is pure comfort and elegance.
Whether you’re honoring French tradition or just craving a dessert that’s simple yet impressive, Tarte Tatin is a delightful treat that proves sometimes the best recipes are happy accidents.

It turned out a bit burnt for me. Maybe I cooked the sugar too long? Not gonna try again.
Loved the recipe but had a lot of trouble flipping it. Make sure to be careful!
Yeah, flipping can be tricky. Just use a bigger plate next time! I almost dropped mine too 😅.
I had the same issue! It took me forever to get it flipped right. Maybe I need to practice more 😂.
I don’t like apples that much, but this tasted amazing! Surprise! 😄
I used Granny Smith apples and they were too tart! Not what I expected.
I can’t believe how easy this was! I used a premade crust and it turned out great! 🥳
So much butter and sugar! Is there a healthier way to make this? 🤷♀️
Yummy! My kids gobbled it up. Def. making this again! 10/10
Ugh! The pastry turned out soggy… what did I do wrong? Help! 😩
Is it just me or does this taste way too sweet? I’ll cut back on the sugar next time.
This is the best Tarte Tatin I’ve ever made! The caramel was perfect.
Easy to follow recipe! My family loved it, and it looks fancy! 🍏✨
I’m so glad your family enjoyed it! It really does look impressive! 🍏💕
Fancy? It’s just apples and pastry. Not that hard to make.
Can you make this with other fruits? Like, maybe peaches? 🤔
You could definitely try peaches! They might taste super fresh! 🍑
I don’t know… I followed everything but my apples turned mushy. Maybe I need to use different apples?
Easiest recipe I’ve followed! I even let my kids help, and they loved it. Will make again!
So glad to hear that! Cooking with kids is the best. Tarte Tatin is such a fun recipe!
Why are you using butter? Can’t you use oil? Anyway, looks good.
Butter makes it rich and tasty! Oil just ain’t the same. Trust the recipe!
Oil could work, but butter gives it that classic flavor. Not that I know much, but…
This is a French recipe, right? I substituted with American apples, and it was still good, I guess.
I didn’t have puff pastry, so I made a biscuit topping and it was a disaster. Follow the recipe, you will not regret!
This Tarte Tatin is simply divine! I can’t believe how easy it was to make. My family loved it!
Really? Only 5 apples? I used like 8 apples and it was still good!
Simple recipe, but I burnt the sugar! 😩 Watch carefully, or it will taste bitter.
5 STARS!!! I can’t stop eating this right now. Next time, I might add some cinnamon, just for fun.
Very good! The caramel was really sweet, but the tartness of the apples balanced it nicely. I’d make it again!
Made this for Sunday dessert and it came out gorgeous—caramel smelled amazing and the apples stayed nice and tender. I used Granny Smith and it was the perfect sweet-tart combo.
Yesss! That sweet-tart with Granny Smith is the move. I swear the caramel smell is half the magic—glad your apples stayed tender too!
Nice! I tried similar but my caramel turned a bit bitter—maybe I cooked the sugar too long. Also, do you cover the apples at all while baking or just leave them open? Mine kinda dried out.
This is the best Tarte Tatin recipe ever! The caramel is just perfect. My family devoured it.
Is it supposed to be this hard to flip? Mine fell apart. Idk what I did wrong. 😕
This dessert is absolutely divine! The caramelized apples are heavenly.
This recipe is incredible! I made it for my family and they couldn’t get enough. So delicious and easy to follow!
I tried it, but it didn’t come out right. My apples turned mushy and the pastry was soggy. What went wrong?
I’m glad you enjoyed it! Tarte Tatin is a family favorite in my house too. So simple yet so tasty!
Great recipe! But I think I accidentally used too much butter… Oops.
No such thing as too much butter! It’s Tarte Tatin, after all. Embrace the richness!
Really? I thought using less butter was better for health. Did you taste it? How did it turn out?
This was amazing! The caramel turned out perfectly and the apples are so tender. My family loved it!
This is basically just upside down apple pie, right? Kind of confusing.
Who even invented Tarte Tatin? Sounds fancy, but tastes like apple pie to me! 😂
I ain’t never heard of Tarte Tatin before, but this was fun to make! Taste good.👍
Meh, not gonna lie, I don’t see what the fuss is about. It’s just apples and pastry.
I think you’re missing out! The caramelizes apples and flaky pastry together is magical. It’s not just about the ingredients, it’s about how they’re combined!
Sounds simple, but the flavors can be really intense if done right. Maybe give it a try before dismissing it completely? Sometimes the simplest things are the best!
Not bad for a quick dessert. I used regular puff pastry and it was crisp, but the sweetness was high. Maybe reduce sugar to 120g?
Glad you liked the crisp pastry! Reducing the sugar sounds like a great tweak—120g should help balance the apples and the caramel.
What’s with the puff pastry? Mine came out soggy! Followed the recipe exactly, smh.
Caramel theme is nice but 150g sugar seems like a lot to me. It was very sweet. Maybe next time I’ll reduce sugar or use less butter, because it kinda overwhelmed the apples.
Totally get what you mean—150g sugar can be a lot, especially if the apples are already sweet. I’ve had better luck with 120g and it still caramelizes nicely.
Wait… you reduced the butter?? That makes no sense to me, sugar is the main caramel part. Maybe your apples were too sweet? Try Granny Smith next time.
I tried it but the caramel burned. There should be better instructions on timing. Disappointed.
This is super beginner-friendly. I used a non-stick skillet and it worked fine—no disasters. Love the classic tarte tatin vibe.
Honestly, 150g sugar felt like a lot, but it balanced the apples nicely. Next time I might use slightly less just because I like it less sweet.
So easy to make! I was surprised at how well it turned out. Family loved it!
Really? It came out good? My last attempt went awful, maybe I did somethin wrong? 🤨
I’m so glad you enjoyed it! It’s definitely a family favorite. 🌟
Yummy! But I used different apples and it didn’t turn out right. Stick to the recipe!
Soo good! It was a hit at the potluck! 🥳
That’s awesome to hear! I’ll definitely try this recipe for my next gathering! 🎉
180°C for 30 minutes felt short for my oven. I had to add like 8-10 minutes to get the pastry fully golden. Other than that, solid and easy.
Yum! I used Granny Smith apples and it turned out fantastic! Will make again for sure.
mmm apples caramel good
I followed it pretty much exactly, but my caramel got a bit too dark and bitter. Still edible, just not as sweet. Maybe I should’ve watched the heat more closely.
Why do I gotta use apples? Can’t I use other fruits? 🤔
You can try other fruits, but apples are traditional for Tarte Tatin. Give them a try first!
Why not just use bananas instead? 🤷♂️ I mean, they’re sweet too, right?
I had trouble with the caramel, it burnt. Why does mine look so dark? Any tips?
Tasty but too sweet for my taste. I will cut down the sugar next time.
I get that! It’s def too sweet for some. Maybe try using less sugar or a sugar substitute next time.
Real talk, I messed up the pastry part. It like fell apart when I flipped it. LOL!
The instructions say to cook apples for 10 minutes—mine looked like they needed longer. I’d suggest 15 min if your apples are super firm. Otherwise yummy!
I don’t know much about baking, but this was fun to make! It did look pretty. 👍
Isn’t Tarte Tatin supposed to be made with puff pastry only? Don’t know if the apples are right.
I thought it was all about shortcrust pastry? I don’t know. Those apples don’t look right to me either!
Actually, Tarte Tatin traditionally uses a pastry base, and the apple choice is just a matter of taste. Golden Delicious and Granny Smith work just fine!
I think you need to cook the apples longer than 10 minutes. Mine were a bit firm after baking, like they needed another 5-10.
Totally agree—10 minutes can be too short depending on how thick your apple quarters are. I usually simmer/saute a bit longer until they look slightly softened.
My puff pastry shrank in the oven and didn’t cover as well, so I pressed it harder before baking. Still tasty though—crisp on top!
This recipe is too complicated. I just want to eat a tart, not go through all these steps.
Made this last weekend and it turned out gorgeous—my kitchen smelled like caramel heaven. I used Granny Smith and the tartness balances the sugar really well.
My family loved it! But I feel like it’s too sweet if you ask me.
I’m glad your family enjoyed it! You could always reduce the sugar next time if you find it too sweet. Just a suggestion!
This was my first tart tatin and wow. The inversion part is terrifying but it worked—one slice even looked like the picture. Definitely keeping this recipe.
Wow, congrats on your first one! 😄 The caramel fear is real, but your slice “looked like the picture” is the best compliment. I’m definitely trying this next—thanks for sharing!
Yum! 🙂 Will definitely make again!
Quick and easy! Love that I don’t have to let the dough rest.
I think 180°C is too hot? My pastry browned super fast and the apples were still a little firm. I ended up lowering the temp and covering loosely with foil.
This feels like the fancy version of apple pie. My kids asked for seconds and I pretended I’m a pastry genius.
Didn’t have a skillet so I used a regular pan and it burned. Not impressed.
I followed it pretty closely, but my caramel went a bit too dark right at the end. Still tasted good though, just more bitter. Next time I’ll watch it like a hawk.
So easy! I’ve never made a dessert before and this turned out great, even my kids liked it.
This Tarte Tatin is absolutely delicious! I used Granny Smith apples and it turned out perfect!
I tried it and my puff pastry stuck to the pan, so when I inverted it, a corner tore. Maybe I didn’t tuck edges well enough.
Can I use store-bought puff pastry straight from the fridge? I didn’t thaw mine and it tore a little. Flavor is still great but the pastry wasn’t as crisp as I expected.
meh. Tasted okay but not life changing. Also caramel burned a bit, so maybe my fault.
burned caramel means you cooked the sugar too long, yeah. also, i find 150g sugar is a lot—maybe cut to 130g? puff pastry also puffs different by brand, so 30 min might be long/short depending. still tasted okay tho.
Totally fair—tarte tatin can be “good” without being mind-blowing. If the caramel burned, that’s usually just heat control; sugar goes from amber to burnt fast. Next time try slightly lower heat and don’t walk away.
