Ingredients
  

  • 4 medium sweet potatoes scrubbed clean
  • 1 tablespoon olive oil extra virgin
  • 1 can chickpeas drained and rinsed
  • 2 cups spinach fresh
  • 1 teaspoon ground cumin to taste
  • 1 teaspoon paprika to taste
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Pierce the sweet potatoes several times with a fork, place them on a baking sheet, and bake for 45 minutes or until tender.
  • Meanwhile, heat olive oil in a skillet over medium heat. Add chickpeas, cumin, paprika, salt, and pepper. Cook for about 5 minutes.
  • Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  • Once sweet potatoes are done, let them cool slightly. Cut them in half lengthwise and gently scoop out a portion of the flesh, creating a small well.
  • Fill the sweet potato wells with chickpea and spinach mixture. Serve hot. Sprinkle with Parmesan to taste.

    Good idea but I think 45 minutes might be too long for smaller sweet potatoes. Mine got a little dry on the edges, still tasty though.

      Oh good point! I’ve noticed smaller sweet potatoes cook faster too—45 min is probably perfect for medium ones but could dry out the edges on the little guys. Maybe start checking at ~30–35 min and tent with foil if they brown too much.

    5/10. Too much spinach? Also 400°F is like high for my oven, it burned the edges a little. I might try at 375 next time.

    Not gonna lie, 45 minutes felt long for my potatoes (they were smaller). I had to check around 35. Still tasty though, and the filling was nice.

    I’m skeptical about cooking potatoes without wrapping in foil. They came out a little dry on the bottom for me, but the filling saved it. Next time I’ll foil them.

      I was also skeptical about no foil—my bottoms usually get crispy/dry. If you want less dryness, maybe bake on a lower rack or add a splash of water to the tray. Still love that chickpea filling though.

    I’m skeptical of the whole ‘pierce and bake’ thing because sometimes potatoes still take forever, but mine actually baked in time. Maybe my oven runs hot? Either way, flavorful!

    The instruction says sprinkle Parmesan to taste but you didn’t list it in ingredients. I guessed and added some pecorino—turned out okay but come on 😅

      I mean… “to taste” stuff is usually implied? Like cheese is optional, right? But yeah, it should still be on the ingredients list. Next time I’ll just throw whatever hard cheese I got in the fridge on top lol.

      Omg you’re totally right—Parmesan is mentioned in the instructions but not in the ingredient list. I added pecorino once too and it worked, but that’s exactly the kind of annoying mismatch this recipe should fix. 😅
