Stir-fried Eggplant, Potatoes and Peppers

February 24, 2025

Stir-fried eggplant, potatoes, and peppers is a vibrant and satisfying dish that combines the earthy flavors of vegetables with a savory, umami-packed sauce. This simple yet delicious recipe is a perfect side dish or a light main course. The stir-frying technique ensures the vegetables retain their natural textures while absorbing the rich flavors of the sauce, making each bite a delightful experience.

Eggplant, with its soft, absorbent texture, pairs beautifully with the crispy, golden potatoes and the sweet, tender peppers. The mix of these three vegetables creates a wonderful contrast in both flavor and texture. The potatoes provide heartiness, the peppers add a sweet note, and the eggplant brings a silky richness that elevates the entire dish.

To make this stir-fry, start by cutting the vegetables into bite-sized pieces. The potatoes should be par-cooked for a few minutes to ensure they’re tender without being too soft. Then, stir-fry the vegetables in hot oil until the eggplant is tender, the peppers are slightly charred, and the potatoes are crispy on the outside. A mix of soy sauce, garlic, ginger, and a dash of sesame oil creates a flavorful sauce that complements the vegetables perfectly.

This dish can be easily adapted to your taste. Add some chili flakes for a little heat, or toss in fresh herbs like basil or cilantro for a refreshing twist. If you want more protein, tofu or chicken can be added for a heartier version. Serve the stir-fried eggplant, potatoes, and peppers with steamed rice or noodles for a complete, satisfying meal.

This stir-fry is a great way to enjoy a variety of vegetables in one dish, and it’s ideal for those looking to add more plant-based meals to their menu. Quick, nutritious, and packed with flavor, it’s a meal that everyone will enjoy.

A quick and flavorful stir-fry of eggplant, potatoes, and peppers, perfectly seasoned with soy sauce and garlic. Ideal as a side dish or a light main course.

I found it a bit bland, I think maybe adding some chili would help? Not sure if I’ll try again.

I don’t like eggplant, but my kids do. I just swapped the eggplant with zucchini and it worked great!

  3. 5 stars
Quick and delicious! Perfect for summer meals. I’ll definitely do this again!

  4. User avatar Richard Rice says:

    2 stars
Does it have to be eggplant? I heard potatoes should go with meat only.

  5. User avatar maurice.goldner says:

    2 stars
Too many veggies for my liking. Could use some bacon bits or something I think. I’m just saying.

    1. 4 stars
I think it sounds great as is! But adding bacon could definitely give it an extra flavor. Everyone’s taste is different, I guess!

  6. User avatar ShanksOnePiece says:

    2 stars
Honestly, I think the recipe is missing something. Needs more spices, like cumin or something.

    1. User avatar julio.veum12 says:

      5 stars
I totally agree! A pinch of cumin would really bring this to life. Maybe some chili powder too? It’ll be more flavorful, trust me!

My eggplant was slimy, like ugh, I don’t understand why y’all like this. 1 star.

But wait, is eggplant even that good? It’s kinda mushy, don’t you think?

  9. User avatar Saruman the White says:

    3 stars
Eggplant? Eww. Not my favorite. But I like the peppers. Maybe if I skip the eggplant next time?

  10. 2 stars
Not bad but kinda bland? Like, I followed it exactly and it just tasted like vegetables with oil. Maybe I under-salted, because I’m not sure how much ‘to taste’ means for salt lol.

  11. 4 stars
Could use more seasoning. I added some chili powder for a kick! 😋

  18. 2 stars
I doubt that eggplant and potato go well together. Didn’t like it.

Made this last night and it was such a cozy, hearty stir-fry. The eggplant got that perfect soft texture without turning mushy, and the peppers still had a little bite. I served it over rice—instant win.

    1. 5 stars
Yes! I love that it stays tender but not mushy—eggplant can go bad fast. Serving over rice is exactly what makes it a full meal 😄

    2. 4 stars
I tried it but my potatoes took way longer than the 10 minutes—maybe I cut them too big? Still tasty though. Next time I’ll dice smaller or cover the pan.

  26. User avatar dorris.bahringer60 says:

Too many veggies! Like how does that make sense?? Just stick with meat.

  31. 4 stars
Tried this today, yummmm!!! Eggplant didn’t taste like much though.

No thanks, I’m not a fan of eggplant. 😕

  35. 2 stars
Just a suggestion, but maybe you can use zucchini instead of eggplant? I don’t like eggplant at all!

  36. User avatar leandra.bahringer says:

    4 stars
Pretty solid recipe. I added a pinch of chili flakes because I like heat, and it turned out great. Next time I’ll cut the potatoes a tiny bit smaller so they soften faster.

  37. User avatar andy.brekke41 says:

    5 stars
This recipe is amazing! The eggplant was cooked perfectly and the flavors were spot on.

    1. User avatar bradford.ebert86 says:

      2 stars
I don’t know, can you really trust a recipe that has potatoes and peppers too? Seems a bit too complicated for eggplant!

    2. User avatar kendall.collins36 says:

      5 stars
I’m so glad you loved it! The eggplant really does add a unique texture. Did you serve it with rice? That’s how I enjoy it!

  38. 3 stars
I don’t know… the eggplant was kinda mushy for me. Maybe too much cooking?

  39. User avatar Charles Darwin says:

    5 stars
Yummm, so colorful! and healthy too.

  40. User avatar MAGA2024.Trumpster says:

    5 stars
SUPER easy and healthier than takeout. I added mushrooms and it worked great. The soy sauce really ties it together.

  41. 3 stars
I forgot the soy sauce! It still turned out okay but I think it might be better with it.

    1. 5 stars
Soy sauce really adds a depth of flavor! You should definitely try it next time.

Awesome! So easy to make and healthy too! 👌

  43. User avatar grazyna.carroll9 says:

  44. User avatar myles.langosh40 says:

    4 stars
Yum, yum!! 😀 Did mine with chicken instead of just veggies and it was awesome!!

    1. 2 stars
But isn’t this dish supposed to be vegetarian? I don’t get why you’d put chicken in it. 🤔

    2. User avatar Mose Kilback says:

      5 stars
Wow, chicken sounds like a great twist! I never thought about adding meat to this dish. I might try it next time!

  45. 5 stars
Yum! So delicious!!! I used sweet potatoes instead of regular ones.

  46. 4 stars
I only had one bell pepper, so I used a mix of frozen peppers. Still good, just less colorful. Texture was nice and not greasy.

  47. User avatar lissette.effertz64 says:

    3 stars
I’m skeptical about adding only 1 tsp salt + soy sauce—seemed a little bland at first, but a dash more pepper fixed it. Still tasty!

    1. User avatar Gandalf the Grey says:

      5 stars
Totally get the skepticism. I always worry salt/soy sauce will be too light, but your note about pepper helping makes sense. Glad it worked out!

    2. User avatar genna.rodriguez63 says:

      3 stars
Maybe it’s bland because 1 tsp salt feels like nothing for all that volume 😅 I’d start with less soy and then adjust at the end. But if pepper fixed it, respect.

  48. User avatar kieth.thompson34 says:

    4 stars
Tried it tonight. My potatoes took a bit longer than 10 minutes, but once they softened everything tasted balanced. Next time I’ll dice them smaller.

  49. User avatar Bruno Spinka says:

    2 stars
Anyone else think eggplant is just weird? Tried it but not for me.

  50. User avatar sherman.bashirian1986 says:

    1 star
Why would anyone even eat eggplant? Not my thing. Potatoes are better on their own!

  51. 2 stars
I dunno, didn’t really work for me. The eggplant was kinda mushy and I prefer my potatoes crispier. Maybe I did it wrong?

  52. User avatar jimmie.gutkowski24 says:

    4 stars
I forgot the soy sauce and it was still good, but I imagine it would be better with it. Whoops!

    1. User avatar katia.oconner88 says:

      4 stars
I think it could be good without soy sauce too! Just depends on personal taste, right?

  53. User avatar Balgruuf says:

    5 stars
So good! Made it twice this week already!

    1. 5 stars
That’s awesome! I love how versatile this dish is. What do you usually serve it with?

  54. User avatar ShanksOnePiece says:

    2 stars
I didn’t have soy sauce so I used ketchup, and it tasted weird. 😳

  55. User avatar Samwise Gamgee says:

    5 stars
This was sooo good! I added some chicken and it turned out amazing. Definitely making it again!

    1. User avatar jade.schultz says:

This recipe is awesome! I added some chili flakes for heat.

    1. User avatar Prostetnic Vogon Jeltz says:

Chili flakes sound like a great idea! I’ll have to try that next time. Thanks for sharing!

  57. User avatar georgina.kuhn10 says:

    3 stars
This is giving “healthy stir-fry” vibes 😅 I liked it, but the salt/pepper felt like it needed adjusting. I used less salt and it tasted cleaner.

    1. 5 stars
Totally agree—this one does lean “healthy stir-fry” 😄 I usually start with a light hand on the salt too, since the soy sauce already brings some flavor. Glad you liked the cleaner taste!

  58. 4 stars
Simple and easy to make! My kids actually ate the veggies. Miracle!

  59. User avatar Shawanna Schmidt says:

    3 stars
The soy sauce amount felt a tiny bit low. I ended up adding another half teaspoon and it tasted more “restaurant-y.”

  60. User avatar kimberly.sanford says:

    4 stars
I didn’t have red pepper so I used whatever I had. Still tasted great though—soy sauce + black pepper is a solid combo. Would recommend!

  61. User avatar benito.gerlach says:

Yummy!I added some chicken and it turned out great! Everyone loved it!

    1. User avatar herminia.kiehn1998 says:

    2. User avatar jackqueline.schaden says:

      5 stars
Adding chicken is a great idea! Did you marinate it before cooking? That might add even more flavor!

  62. User avatar valentine.yost63 says:

So yummy! I added some chicken to it and it was a hit with the family!

  63. User avatar Jewel Gottlieb says:

How is it possible to screw up this dish? Followed and still burnt it 😩

  64. 3 stars
I don’t like eggplant much, but this turned out okay. The colors are pretty!

  65. 4 stars
So easy to make! I didn’t have garlic, so I used onion instead. Still came out good!

    1. 2 stars
How can u replace garlic with onion? That’s not even the same flavor!

    2. User avatar kira.dietrich76 says:

      4 stars
Glad to hear it turned out good! Onion is a nice twist. I might try that next time!

  66. User avatar edwardo.purdy says:

    5 stars
This was amazing! The flavors were just perfect. I added a sprinkle of chili flakes and it added a nice kick. Definitely a keeper!

  67. User avatar daryl.armstrong says:

    5 stars
Not gonna lie, I thought “stir-fried potatoes” would never get soft enough. But they did! The peppers stayed a bit crisp too. I’m impressed.

    1. User avatar rosette.willms99 says:

      5 stars
Totally get that—potatoes can be stubborn. Nice job getting the eggplant to melt-y tender without overcooking the peppers.

  68. User avatar kip.gutmann33 says:

    5 stars
Just made this—so good! The garlic smell is on point, and the peppers make it feel fresh. I served it over rice and it was gone fast.

  69. User avatar Edmond Rau IV says:

    4 stars
This is one of those recipes that feels healthy but still satisfies. I didn’t have red pepper so I used only green and it was still good—maybe even better.

  70. User avatar marty.considine1967 says:

    2 stars
Nothing special, kinda bland to me. I would suggest adding some spices.

  71. User avatar dewayne.ledner22 says:

    4 stars
Super easy and quick! I added some chicken for protein and it was amazing.

  72. 4 stars
Stir-fried??? You mean you just fry it? So easy! I’m gonna try it with other veggies I have at home.

  73. User avatar simon.corwin57 says:

    3 stars
A bit too oily for my taste, but overall it’s alright.

  74. User avatar merlyn.haag49 says:

    1 star
This is not how my mom makes it!! She would never use eggplant, just potatoes!!!

    1. User avatar logan.hayes55 says:

      4 stars
I get that, but eggplant adds a nice flavor! You should give it a try!

    2. User avatar ali.wisozk48 says:

      2 stars
Nah, potatoes are way better. Eggplant just mushes up and tastes weird.

  75. User avatar anonymous_hacker says:

    4 stars
Yum! The flavors are so good together. Garlic is the key!

  76. User avatar rickie.bosco says:

    2 stars
Tried this but it turned out too mushy for me. I think I’ll stick to my usual roast veggies.

  77. User avatar jenae.greenholt85 says:

    4 stars
Pretty good, but I had to cook way longer than the timing says. My potatoes took closer to 20 minutes to soften. Once I kept stirring and covered the pan for a bit, it turned out great.

  78. User avatar Kenisha Runte says:

    2 stars
Way too salty for my taste. I know it says ‘to taste’ but I still ended up backing off the salt next time. Pepper was great though.

    1. User avatar patricia.leffler20 says:

      3 stars
Really? I usually find it pretty mild. Maybe your soy sauce was saltier than mine? I’d try low-sodium soy and cut the salt even further.

    2. User avatar anonymous_hacker says:

      4 stars
Ugh, I feel you. I’ve had “to taste” salt turn into way too much too—next time I do a tiny pinch first and add more only if needed. Pepper being great is a win though!

  79. User avatar ellamae.klein1987 says:

    1 star
Didn’t taste like much at all. I had to add so much salt, and I still didn’t really like it. Not for me.

  80. User avatar ira.treutel says:

    5 stars
Made this tonight—so good! The garlic smelled amazing and the veggies got perfectly tender without getting mushy. I served it over rice and it was a total win.

  81. User avatar Moshe Towne III says:

    4 stars
Soy sauce + veggies is always a good combo. I was skeptical about the exact timing, but the 10 minutes plus 8–10 minutes actually worked for me. Great flavor.

    1. User avatar Deep Thought says:

      5 stars
Totally agree—soy sauce really makes the veggies taste deeper. I also thought the timing would be too short, but the way you get everything tender in two stages makes sense. Gonna try it again with a pinch of chili flakes!

  82. 3 stars
Looks great but how come there’s no meat? Even a little chicken would make it better. Veggies are nice, but need protein!

  83. User avatar rick.reinger says:

    3 stars
I used sweet potatoes instead. It was alright I guess.

    1. 4 stars
Why bother with sweet potatoes? The recipe is good as it is! Stick to the eggplant and peppers!

    2. 3 stars
Sweet potatoes? That’s interesting! I don’t think they go with eggplant tho. Might be too sweet, right?

  84. User avatar leanna.smitham44 says:

    5 stars
Great way to sneak in veggies, my kids even ate it!

Why’s everyone raving about this? It was okay but I’ve had better veggie stir-fries. Maybe too much oil?

  87. User avatar marlene.kulas78 says:

    5 stars
This was delicious! The eggplant soaked up all the flavors. Will make again!

  88. User avatar Hiram Boehm I says:

Not gonna lie, I was skeptical about stir-frying potatoes with eggplant that long. It worked, but I had to increase heat slightly for browning.

  89. User avatar harris.paucek52 says:

    2 stars
Tasted fine but my husband said it was ‘soggy’. I don’t know what went wrong?

    1. User avatar Hillman Hunter says:

      3 stars
I don’t think it’s soggy, probably your hubby just wants it crunchy. But I think frying them longer would help.

    2. User avatar Nelson Bauch says:

      4 stars
Maybe you cooked it for too long? Sometimes eggplant can get mushy =/

  90. 4 stars
This is nice but I think it needs carrots or an onion. Also my eggplant was like spongy 😂 so I salted it first like my grandma always does.

  91. User avatar rich.landlord says:

    3 stars
uhh i dont think you need the salt if soy sauce already salty? but i tried both and it was okay. veggies were tasty though, would try again.

  92. User avatar harrison.pacocha93 says:

    3 stars
I don’t get why people are raving about this dish. It’s just veggies in oil. Meh.

  93. User avatar frederick.okeefe90 says:

    4 stars
I didn’t have olive oil so I used butter and it was great!

  94. User avatar Spriggan Matron says:

    3 stars
I’m skeptical about adding soy sauce this early. It smells nice, but I feel like it makes everything a little too salty unless you’re careful. I used less than 1 tsp and it was better.

    1. User avatar terrell.bahringer24 says:

      5 stars
I totally get that—soy sauce is sneaky salty. I usually hold it until the end like you did or add it in stages (half now, half after tasting). Works way better.

    2. User avatar Zula Gulgowski says:

      4 stars
I think you’re right-ish, but soy sauce has flavor even when it’s early. I still add 1 tsp at the end of cooking though, so it doesn’t overpower. Maybe less than the recipe like you say.

  95. User avatar lauryn.carter1992 says:

    5 stars

  97. User avatar maire.brakus27 says:

    5 stars
Perfect side dish, I served it with chicken. Will make it again!

  98. 5 stars
5 stars for the simplicity! I just threw everything in the pan and it turned out delicious. Love it!

Good idea but I’d add a bit more garlic or even some chili flakes. Also, 10 minutes for eggplant might be short depending on cube size—mine needed a few extra stirs.

    1. User avatar Koume and Kotake says:

      3 stars
Maybe. But 10 minutes for eggplant sounds fine if you cut them small cubes and keep the pan hot. Also I’d avoid chili flakes unless you really want it spicy—soy sauce already brings some bite.

    2. 5 stars
Totally agree on garlic—2 cloves feels a little timid for this. I’ll try chili flakes next time too. And yeah, eggplant cubes definitely depend on size; mine always takes longer to really get tender.

I love eggplant but I was skeptical about potatoes + soy sauce—turns out the combo is really nice. Next time I’ll add a pinch of chili flakes for some heat.

  104. 4 stars
Mine took longer than 10 minutes to soften the potatoes. I think my cubes were too big. Flavor was still solid though, especially after seasoning at the end.

Pretty good! Made it with brown rice and it was great! Next time I might add some chicken for protein.

  106. User avatar brady.schmitt0 says:

Yum! I added some chicken to make it a full meal. Great combination of flavors!

Sounds delicious! Chicken is a great addition for protein. Can’t wait to try it!

It turned out really soggy. I don’t get why everyone loves eggplant.

Wait… 1 teaspoon salt to taste? That’s vague. I did what I thought was right and it was a little salty for my family. But otherwise pretty tasty.

Easy and quick recipe! I added some chicken to it and it turned out great!

I didn’t like the eggplant texture. Maybe if cooked longer? But the peppers were nice.

  112. User avatar Shayne O'Keefe says:

i tried it but the garlic burned a little… maybe my pan runs hot. next time i’ll watch it closer. still tasted good tho

    1. User avatar hildegard.hahn says:

      5 stars
Good call—garlic is super sensitive. Next time try medium-low heat or add the garlic a minute or two later so it stays fragrant instead of burning. Glad it still tasted good!

Wot’s a bell pepper? Can I use any pepper?

  114. User avatar dylan.carroll99 says:

The timing is pretty on point. I did need a splash of water halfway through for the potatoes, but they still got tender. Garlic smelled amazing.

    1. User avatar nancee.yundt74 says:

      5 stars
Glad it worked for you! I’ve found potatoes can be stubborn without a little moisture, so that little splash makes total sense. And yeah, garlic aroma is the best part 😄

This recipe is wrong, it shouldn’t need soy sauce! Traditional stir fries don’t use that, do your research!

  116. User avatar Bernadette Johnson says:

Didn’t really follow the recipe, used what I had, but it turned out ok.

  117. User avatar latisha.lindgren79 says:

This is the best recipe! I love how the eggplant becomes so silky. Definitely a family favorite. 🙂

  119. 4 stars
I’m skeptical about soy sauce with eggplant and potatoes, but honestly it works. The peppers really balance it out.

  120. 3 stars
meh, bland. Maybe add some more spices next time.

  121. 3 stars
Good dish for vegetarians, but I prefer my veggies raw!

    1. 4 stars
I totally get that! Raw veggies are crisp and refreshing. But have you tried this recipe with a little extra spice? It might change your mind!

  122. User avatar hosea.pouros says:

This came out super flavorful—didn’t expect the soy sauce + peppers combo to taste so balanced. I served it over rice and it was gone fast.

    1. User avatar danyel.ebert4 says:

      5 stars
Yes! The soy sauce really pulls it together—never would’ve thought eggplant + potatoes would hold up so well. Serving it over rice is such a move, ours disappeared just as fast.

    2. User avatar kraig.kiehn84 says:

      3 stars
Hmm sounds good but I worry 1 tsp soy sauce might be too weak? Also are you sure it’s 10 min for potatoes with just medium heat—mine usually take way longer. Still, I’ll try it though.

  123. User avatar harrison.farrell10 says:

    3 stars
It tasted fine, but mine came out a little oily. Maybe I didn’t cut the eggplant evenly or my heat was too high. Still, the flavor was solid.

  124. 5 stars
I love quick stir-fries like this. The peppers gave it a fresh taste and it felt like a full meal even as a side.

    1. User avatar kristofer.wilkinson17 says:

      3 stars
This sounds good, but I’m not sure about the timing—10 min for eggplant + potatoes together might leave the potatoes a bit firm? Also I used soy sauce instead of salt once and it was salty so go easy I guess.

    2. User avatar benton.waters says:

      5 stars
Totally agree! The peppers really brighten it up, and with the potatoes + eggplant it somehow feels filling even when you serve it as a side. I did it over rice and it was perfect for weeknights.

I don’t like peppers, can I leave them out? 🤔

    1. User avatar kimberli.kunde41 says:

I dunno, the peppers might be important for flavor. Maybe try it with just a little? 🤷‍♂️

    2. User avatar Leto II Atreides says:

Yeah, you can definitely leave them out! Just add more eggplant or potatoes if you want. 😊

  126. User avatar lamont.bogan88 says:

Tasty, but not my favorite. Eggplant is kinda weird, mabe swap it with zucchini?

  127. User avatar salley.monahan says:

This is a great weeknight side. I love that it’s mostly pantry ingredients. Cleanup was easy too—one pan!

I am not sure if this dish is healthy because of the amount of oil used, but it was good.

  131. User avatar jesus.murphy42 says:

Is it really healthy? I think vegetables are not enough. Where’s the meat?

    1. User avatar ahmed.upton says:

      4 stars
Vegetables can be super healthy! You don’t always need meat. This dish has lots of nutrients.

  132. 2 stars
Honestly, I don’t get why you need both bell peppers. It felt like a lot of veggies with no sauce. Still ate it, but wouldn’t repeat without adding something like vinegar or sesame oil.

    1. 3 stars
Honestly I thought the same at first. I only use one pepper sometimes. But if you cut them thin and cook until they’re a little blistered, it’s not just veggies—it’s kinda sweet-savory. Also soy sauce helps, but yeah vinegar would slap 🔥

    2. 4 stars
I get what you mean—2 bell peppers is definitely “a lot.” But I like it because they sweeten up the eggplant and potatoes a bit. The soy sauce at the end kind of ties it together, though I agree it could use a splash of vinegar or sesame oil for more pop.

Why is everybody talking about eggplant? It’s just a purple squash.

  134. User avatar glennie.gleichner says:

    3 stars
Not bad, but mine came out slightly bland even with salt/pepper. Next time I’ll taste while cooking and maybe add a splash more soy sauce.

  135. User avatar katelyn.hahn2026 says:

Recipe good but i got confused on the garlic part—did i sauté 1-2 minutes or longer? I think I went too long and it got kinda brown. Tasted okay anyway. Maybe lower heat?

  136. User avatar zack.cormier says:

Honestly super easy and better than expected. The garlic aroma was amazing, and seasoning was on point. Would make again for meal prep.

    1. User avatar genesis.oconnell says:

Yes! The garlic step really makes a difference—aroma first, flavor later. I also love this over rice for meal prep.

Really tasty and colorful. The soy sauce gives it a nice savory depth without being overpowering. I served it over rice and it was gone fast.

Made this tonight and wow—really flavorful for how simple it is. The garlic really comes through and the peppers stay nice and sweet. I served it over rice and it was a hit.
