Spaghetti Aglio e Olio with Roasted Vegetables

August 8, 2023

If you’re looking for a comforting yet vibrant dish that’s both quick and full of flavor, Spaghetti Aglio e Olio with Roasted Vegetables is the perfect choice. This updated take on the classic Italian pasta dish combines the simplicity of spaghetti aglio e olio, a fragrant garlic and olive oil sauce, with the richness of roasted vegetables. The result is a light yet satisfying meal that’s perfect for any day of the week.

The traditional spaghetti aglio e olio is known for its minimalistic ingredients: garlic, olive oil, red pepper flakes, and parsley. It’s a perfect example of how a few high-quality ingredients can create something truly delicious. The garlic is sautéed in olive oil until golden and fragrant, and the red pepper flakes give the dish just the right amount of heat. Fresh parsley adds a pop of color and a burst of freshness to balance out the richness of the olive oil.

To add depth and texture to the dish, roasted vegetables are included. You can use a variety of vegetables depending on what’s in season or what you have on hand. Bell peppers, zucchini, cherry tomatoes, and eggplant are all excellent choices. Roasting the vegetables intensifies their flavor, bringing out their natural sweetness and creating a slight caramelization that pairs perfectly with the garlic and olive oil sauce. The vegetables add a layer of richness and make the dish feel more substantial.

The spaghetti is cooked al dente and tossed with the garlic oil sauce, allowing the pasta to absorb the flavors. The roasted vegetables are mixed in, creating a dish that’s both hearty and light. A generous sprinkle of Parmesan or Pecorino cheese (optional) can add a creamy, salty finish to the pasta.

Spaghetti Aglio e Olio with Roasted Vegetables is a simple, versatile dish that’s full of flavor and color. It’s perfect for a weeknight dinner, a light lunch, or even a side dish to complement other meals. With just a few ingredients, you can create a satisfying and delicious meal that’s sure to please.

The timing was spot on for me. I used a little extra red pepper flakes and it came out great. Basil on top makes it feel fancy.

why not just boil the veg instead? roasting it feels like overkill.

    1. User avatar alba.parisian says:

      4 stars
Boiling is easier, but roasted veggies taste way better. Just sayin’!

    2. 5 stars
Roasting adds a whole new layer of flavor! You should try it. Boiling just isn’t the same.

  3. 4 stars
It was quite simple and quick. Good if you’re in a hurry. Will make again!

    1. User avatar luetta.glover says:

      5 stars
I’m glad to hear you enjoyed it! It’s such a quick meal, perfect for busy nights. What kind of veggies did you use?

  4. User avatar jenni.lockman says:

    2 stars
Way too much garlic for me—4 cloves is a lot when thinly sliced. The smell was amazing though, I just reduced it next time.

  5. 4 stars
Tried this and added some chicken. It was yummy! Will share with my friends.

  6. 2 stars
This looks great on paper, but I’m skeptical about baking the veggies for only 20–25 minutes at 425°F. For me, they’d need longer—otherwise kind of crisp.

  7. User avatar ramon.gorczany1953 says:

    5 stars
This was so good! I love how simple it is but tastes like gourmet! Definitely 5 stars from me!

  8. 3 stars
Too much garlic for my taste, but the roasted veggies were nice. Might be better with less.

  9. 5 stars
This was DELICIOUS! The roasted veggies added so much flavor. Will definitely make again.

  10. User avatar tommye.ruecker says:

    5 stars
Five stars—simple, quick, and tastes like restaurant food. The basil at the end is a great finishing touch. Next time I’ll add mushrooms too.

    1. User avatar johna.emard says:

      3 stars
Sounds tasty, but I’m confused—do you roast the tomatoes too or only the zucchini/bell pepper/red onion? I usually do all of them together.

    2. 5 stars
I made this last night and couldn’t believe how good it was for such little effort. The garlic + pepper flakes combo is the star 😋

  11. User avatar Blue Dartwing says:

    5 stars
Simple and satisfying. Also, cutting all those slices is kind of a workout lol. Fresh basil at the end really helps it taste “restaurant.”

  12. User avatar tommye.mcglynn8 says:

    2 stars
I think you forgot to mention what to do with the vegetable water, it just sits there! Not cool.

    1. User avatar emerita.armstrong says:

      5 stars
Thanks for pointing that out! You can use the vegetable water for soup or to cook rice. It’s really helpful not to waste it.

  13. 2 stars
I don’t get why people love this so much. It’s just spaghetti with veggies.

    1. 3 stars
But there’s so much flavor in the garlic and roasted veggies! It’s not just spaghetti, it’s a whole vibe! You might just not be tasting it right.

    2. User avatar Cyrstal Leannon III says:

      4 stars
I totally see your point! It’s simple, but that’s what makes it good. Sometimes, less is more. 🌱

  14. User avatar Draugr Scourge says:

    3 stars
The timing is key. I accidentally overcooked the garlic (too long), so it tasted a bit bitter. Still edible, just less “wow.” Next time I’ll watch it like a hawk.

  15. User avatar beatrice.wiegand54 says:

    4 stars
I love spaghetti, but does it really need that many veggies? Seems like a salad now. 😂

    1. 5 stars
I think the veggies really add flavor and nutrition! It’s not just a salad, it’s a fun twist on spaghetti. 🍝

    2. 3 stars
Wait, you don’t think spaghetti needs veggies? That seems wrong! Every good dish needs balance, right? 😅

  16. 5 stars
Sooo good! Even my kids ate it, but I added some chicken for protein.

  17. 5 stars
Made this last night. My friend ate 3 plates! Not sure if he was just being nice or if he really liked it.

  18. User avatar johnathon.wolf says:

    5 stars
5/5. I added extra red pepper flakes and it was hot in a good way. Also the roasted onion is crazy good.

  19. User avatar ArabianNights says:

    4 stars
I like the simplicity. The roasted zucchini and peppers tasted like they came from a restaurant. Would definitely make again for weeknights.

  20. 5 stars
    Yum!

    1. 5 stars
Yum indeed! The roasted veggies + garlic oil sounds perfect—might steal this idea for my weeknight dinners.

  21. User avatar drucilla.schmidt27 says:

    2 stars
I accidentally roasted the veggies for like 35 minutes because I got distracted… they were basically candy-burnt. BUT even then it was good? Probably not your fault.

    1. User avatar annemarie.doyle12 says:

      5 stars
Honestly 35 minutes sounds brutal 😅 but if it was still good, that’s kind of a win. Maybe your oven runs hot or the veggies just caramelize beautifully with the oil.

    2. User avatar connie.harvey says:

      3 stars
Candy-burnt sounds… not great 😂 but also aglio e olio can forgive a lot. Next time, try pulling them at 20-25 like the recipe—then they get sweet, not burnt.

  22. 2 stars
I don’t get why everyone loves this so much. My pasta was so bland, I had to add cheese just to make it taste good.

  23. User avatar jone.bartell73 says:

    3 stars
Why would you put red onion in spaghetti?! That’s just wrong. 3 stars, but I’ll stick to my recipes.

  24. User avatar wellRespected says:

    3 stars
My spaghetti turned a bit clumpy because I didn’t toss right away after draining (oops). Still tasted good, though—just needs quicker mixing with the sauce.

  25. 1 star
Isn’t spaghetti supposed to be with meat? This seems weird to me.

  26. User avatar anonymous_hacker says:

    5 stars
BOMB! I added some parmesan on top and it made it perfect. Highly recommend!

  27. User avatar santiago.denesik says:

    2 stars
1-2 minutes for garlic is scary lol. I’ve burned garlic before and I don’t want to repeat that again. Still, the recipe sounds delicious.

  28. 4 stars
Pretty solid weeknight recipe. I followed it mostly, but my garlic browned a bit too fast (maybe my pan was too hot). Still delicious though—next time I’ll watch it closer.

    1. User avatar Shaddam Corrino IV says:

      5 stars
Totally get the garlic browning—aglio e olio is sooo sensitive to heat. Next time try medium-low and slice them a bit thinner/keep stirring. Glad it still tasted great!

  29. User avatar bart.schimmel17 says:

    1 star
Waste of time! The spaghetti didn’t even stick good with the olive oil. 1 star.

  30. User avatar alan.renner93 says:

    4 stars
Honestly, I expected more “aglio e olio” and less roasted-veg situation. But it worked—just not what I pictured. Good comfort meal though.

    1. 4 stars
I get what you mean—traditional aglio e olio is mostly garlic/oil with a little chili. The roasted veg twist definitely changes the vibe, but I’m glad it still worked for you!

  31. 4 stars
Is it just me or does 425°F feel way too high? I usually roast lower, but it worked out fine.

    1. 4 stars
I thought the same thing at first! But it actually helps the veggies caramelize nicely. Give it a try next time!

  32. User avatar Restless Draugr says:

    2 stars
Eh, it was okay. My boyfriend thought it was too spicy. Where are the cream sauces? Lol.

  33. User avatar tissues_with_issues says:

    5 stars
This turned out amazing! The roasted veggies were a perfect addition. 5 stars!

  34. User avatar houston.smitham says:

    3 stars
Lol I made it without the garlic because I don’t like it and it was still decent.

  35. User avatar barbie.dibbert99 says:

    2 stars
Not bad, but I prefer my pasta without the roasted stuff. Just didn’t vibe with it.

  36. User avatar rosendo.herzog1992 says:

    4 stars
I followed it pretty closely. My garlic browned faster than expected, so I’d say watch closely in step 5. Other than that, great weeknight meal.

  37. User avatar evita.leffler says:

    3 stars
umm… aglio e olio usually doesnt have roasted veggies right? I mean it tastes good but it’s not the same vibe as the classic version.

  38. User avatar shemeka.deckow says:

    3 stars
Tasted alright, but too much garlic for my liking. I think next time I’ll cut it in half.

    1. 4 stars
I get it! Garlic can be strong sometimes. Maybe try roasting it a bit before adding next time? It mellows out flavor. 😊

  39. User avatar francisco.fisher says:

    3 stars
Honestly, too much chopping for me 😅 But flavor is nice. Next time I’ll use a pre-sliced veggie mix and roast them on a sheet pan.

    1. 5 stars
Totally get the chopping pain 😅 I’ve done this with a bagged salad mix before—still came out good. Flavor-wise you’re spot on!

    2. User avatar tayna.quitzon1 says:

      4 stars
Interesting combo with roasted veggies on aglio e olio. I feel like roasting onions + zucchini makes it a bit sweet—still tasty though. Would you roast the tomatoes too, or keep them in the skillet?

  40. User avatar Erin McKenzie says:

    4 stars
Good base recipe, but I think the garlic time should be more like 30-45 seconds. Mine went a little too golden and turned bitter. Still saved by tossing right away with tomatoes.

    1. User avatar lavonne.prohaska says:

      5 stars
Totally agree—garlic goes from fragrant to bitter FAST. I usually do like 20-30 seconds max, and pull the pan off heat for a sec if it’s browning too quick. Great save with tossing immediately!

    2. User avatar Vroomfondel says:

      4 stars
1-2 minutes seems long to me. I’m surprised yours got bitter though—maybe your slices were thick? Also roasted veggies might be throwing off the timing? Next time try lower heat and watch closely.

  41. User avatar lance.crona48 says:

    5 stars
Absolutely delicious! I made this for my family, and everyone loved it. The roasted veggies added a nice touch!

    1. User avatar edwin.barrows says:

      5 stars
I’m so glad to hear you liked it! The roasted veggies really do take it to the next level. Did you add any other spices?

  42. User avatar julietta.lubowitz says:

    4 stars
I’m skeptical about adding roasted vegetables to aglio e olio… like it’s already flavorful. But honestly it works. The veggies add sweetness and texture.

  43. User avatar Arwen Evenstar says:

    5 stars
Spaghetti + garlic + roasted vegetables is always a winner. I used fresh cherry tomatoes from the garden and it was insanely fragrant.

  44. User avatar antonia.cole94 says:

    5 stars
Wow—this tastes like a restaurant meal. The roasted veggies add so much sweetness, and the garlic/pepper flavor really comes through. I used a little extra basil and it was perfect.

    1. 5 stars
That’s awesome to hear! I love when the roasted veggies hit that caramelized sweetness—makes the whole aglio e olio feel way more “special.” Extra basil sounds like a perfect move 🌿

    2. User avatar abbey.runolfsdottir1995 says:

      4 stars
I tried something similar but mine tasted kinda bland until I used a lot more garlic. Also, do you think 20-25 minutes is long enough for the veggies to caramelize, or should I roast longer?

  45. User avatar deadra.daniel says:

    4 stars
Can I use frozen veggies instead? I got no fresh ones at home. Will it still taste good?

  46. 5 stars
This was amazing! The garlic flavor was on point. Definitely making it again!

  47. User avatar emerson.borer says:

    4 stars
The roasted veggies took longer than the recipe says. At 25 minutes mine weren’t quite caramelized, so I went closer to 35. Still worth it.

  48. User avatar cheree.price says:

    3 stars
I didn’t care much for the roasted veggies, they were kinda mushy. Maybe next time I’ll just sauté them instead.

    1. 2 stars
Roasted veggies mushy? Sounds like you overcooked em! Hope they’re better next time. Just keep an eye on em lol.

    2. 4 stars
I think the roasted veggies taste better when they are a bit crispy. Sautéing might be a good idea, but roasting gives them a nice flavor! Maybe try a shorter roast next time?

  49. 3 stars
I found it a bit bland. Maybe add some parmesan or something? I expected more flavor.

  50. 3 stars
The directions are clear but I got confused on the oven time vs skillet time. Like, do I multitask? I ended up doing it all slowly and it still tasted good, so whatever.

  51. User avatar ashli.orn says:

    4 stars
I added some chicken and it turned out great! Definitely a keeper. Thanks for sharing!

    1. User avatar jim.boehm18 says:

      5 stars
Adding chicken is a great twist! I never thought to do that with spaghetti aglio e olio. I’ll have to try it next time!

  52. User avatar Meriadoc Brandybuck says:

    3 stars
I forgot the garlic! Still came out pretty decent. Shows how important garlic is lol. 3 stars.

  53. User avatar mathWizard says:

    4 stars
Spaghetti Aglio e Olio is easy, but I never thought to add vegetables! Good idea, but I think my kids won’t eat it.

  54. User avatar thora.greenholt1981 says:

    4 stars
Wasn’t expecting much, but this has become my go-to dish. Easy peasy!

  55. User avatar Mrs. Annika Zboncak says:

    3 stars
LOL, I thought aglio e olio was with fish 🤔. But this was still pretty tasty! Who knew veggies were so good.

  56. 3 stars
I tried this but my veggies got burned. I guess I left them too long in the oven. Still tasted good tho.

    1. User avatar shalanda.fay22 says:

      3 stars
You probably need to lower the temp next time. 425°F is pretty high. But, hey, if it tasted fine, that’s what really matters!

    2. 4 stars
I always burn veggies too, haha! Maybe try checking them sooner next time? But glad it still tasted good!

  57. 5 stars
No lie, this tastes like something I’d order. The combination of roasted peppers/onion with aglio e olio is genius. I added parmesan and it bumped it up even more.

  58. User avatar Gormlaith says:

    5 stars
I followed it pretty closely and it turned out great. Only tweak: I roasted the zucchini a few minutes longer because mine stayed a bit firm. Still delicious though.

    1. 5 stars
Nice! The zucchini being a little firmer happens—roasting a few extra minutes is such a good call. Did you get a nice caramelized edge on yours?

  59. User avatar frank.runte1969 says:

    5 stars
Wow, you can taste the garlic! Love it. This is going into my weekly rotation for sure!

  60. User avatar oren.wilkinson says:

    3 stars
Couldn’t find fresh basil so I used dried… big mistake! Tasted different but still ok.

  61. User avatar ashlee.douglas says:

    4 stars
Im not a fan of zucchini, so I just used more bell pepper and tomatoes. Still good though. 4 stars!

    1. User avatar raymundo.mills9 says:

      5 stars
I love that you made it your own! Substituting veggies can really work. I’m gonna try with just peppers and tomatoes next time too!

  62. User avatar Chang Hermann says:

    2 stars
I tried substituting garlic powder instead of fresh garlic (don’t judge)… and it tasted kinda flat. Fresh cloves definitely win here.

  63. 5 stars
I followed everything and it came out great. The tomatoes burst perfectly and the whole dish smelled amazing. Basil on top is a must.

    1. User avatar sid.aufderhar5 says:

      5 stars
Love hearing this! I always worry the tomatoes will go mushy, but “burst perfectly” is exactly what I want. Basil really ties it together—agree!

  64. User avatar joey.gusikowski33 says:

    2 stars
Honestly tasted super bland. I think it needs more seasoning. I only gave it 2 stars.

  65. User avatar kelsey.howe1964 says:

    5 stars
Yummy! Took me 30 mins, and all my family loved it! 👌

    1. 3 stars
30 mins? Really? I took way longer cause I messed up the garlic part. Still tasted good tho!

    2. 5 stars
So happy to hear that! This recipe is just the best, right? 🍝

  66. User avatar rodney.runte23 says:

    5 stars
This recipe is super easy and tastes amazing! My family loved it! 😍

  67. 5 stars
Really loved this—simple but feels fancy. The roasted veggies add so much flavor, and the garlic oil clung to the spaghetti perfectly.

  68. 4 stars
I used spaghetti (obviously) but honestly I think linguine would hold the sauce better. The garlic oil flavor is strong in a good way!

  69. User avatar wilson.lind1988 says:

    4 stars
i thought roasting was too much work but this was quick! I’ll do it again!

    1. User avatar Emery Kuhn says:

      2 stars
But like, isn’t it just putting stuff in an oven? Seems kinda overrated to me.

    2. User avatar tia.blick says:

      5 stars
I know, right? Roasting is so easy and adds so much flavor! Glad you liked it!

  70. 5 stars
Quick and easy! Perfect for a weeknight dinner. Love it!

  71. User avatar Rob McKenna says:

    5 stars
This was such a flavorful weeknight meal. The garlic + pepper flakes combo really pops, and the roasted veggies added that perfect caramelized sweetness. I didn’t even miss cheese! ⭐️

  72. 4 stars
Good flavor, but I think 20 minutes for the zucchini might be too long if your slices are thick. Mine got a little mushy—still tasty though.

  73. 2 stars
My garlic burned even though I watched it. I think my pan was hotter than medium. The rest was good though—pepper flakes gave it nice kick.

  74. 4 stars
I used grape tomatoes instead of cherry and it still worked. I’d recommend salting the pasta water well though, because otherwise it can taste a bit flat.

  75. User avatar wilda.ruecker22 says:

    2 stars
I followed it exactly and it turned out bland. Salt to taste wasn’t enough, and my tomatoes were kinda sad. Any tips on boosting flavor?

    1. User avatar Gail Andrews says:

      4 stars
Bland is usually the salt/acid/oil balance. I’d try salting your pasta water more (it should taste like the sea), then add a pinch of salt to the garlic stage too. Also a tiny squeeze of lemon or a splash of pasta water at the end helps a lot.

  76. User avatar norberto.smith says:

    3 stars
Could use more sauce for my taste—my plates looked a little dry. I added a splash of pasta water and it helped a lot. Otherwise, tasty and easy.

  77. User avatar erminia.skiles37 says:

    4 stars
I was skeptical about roasting everything, but wow. My zucchini got caramelized edges and the tomatoes turned into this light sauce. Would make again.

  78. User avatar Frank Walsh says:

    4 stars
Not bad! The instructions are clear. I would just use a little more red pepper flakes next time because 1 tsp felt mild for my taste.

  79. 4 stars
The instructions are clear, but 2 tbsp olive oil felt low for me. I ended up adding another tablespoon when tossing spaghetti so it coated better.

  80. User avatar charley.bernier2 says:

    5 stars
Spaghetti Aglio e Olio is supposed to be simple! Love this with the roasted stuff! Yum!

  81. User avatar malia.douglas says:

    3 stars
Too much olive oil for my taste—felt a little heavy. Maybe I’m just not an oil person. I’ll cut it down next time.

  82. User avatar Erinn Donnelly says:

    4 stars
Pretty good, but I think 4 cloves garlic was a lot—mine got a little too golden and turned slightly bitter. Next time I’ll go 2-3 cloves.

  83. 3 stars
Quick question: do you cook the spaghetti first then roast veggies after? I did it but multitasking was chaotic. Still turned out edible, so yay.

  84. User avatar Garth Lehner says:

    3 stars
I mean, spaghetti is just noodles with stuff, right? Didn’t really wow me.

  85. User avatar wesley.howe32 says:

    3 stars
Not gonna lie, I forgot to roast the onions and just tossed them raw-ish. Still ate it though—garlic saved the day. 😅

  86. User avatar breanne.von1953 says:

    3 stars
Ehh, it’s okay. Nothing special about it, I’ve had better!

  87. 4 stars
Pretty good, though I thought 20-25 minutes was a bit too long for my zucchini—went more mushy than caramelized. Still tasty, and the spice level was right.

  88. User avatar warren.cruickshank says:

    4 stars
Not gonna lie, I was skeptical about “aglio e olio” with all those roasted veggies. But they work together and it’s not heavy—will make again.

  89. User avatar Apryl Senger says:

    4 stars
Easy to make! Even my kids liked it, and that’s saying something. A bit spicy for my taste tho.

  90. 5 stars
GREAT! So colorful and healthy. Feels like I’m eating a rainbow.

  91. User avatar irvin.mccullough says:

    2 stars
Spaghetti is good but where’s the meat? Noodles alone ain’t too filling for me.

    1. 4 stars
I get what you mean! Maybe add some meat next time? Chicken or sausage would be good too.

  92. User avatar cornell.jakubowski1961 says:

    3 stars
I followed it pretty closely and it turned out decent. But my garlic got a little too brown at the 1-2 minute mark, so I had to lower the heat next time. Sauce could use a splash of pasta water maybe.

    1. 5 stars
Glad it still came out decent! And yeah—garlic can go from “fragrant” to “oops” super fast at that 1–2 minute mark. Lower heat is the move.

  93. User avatar renato.zemlak88 says:

    2 stars
Not my thing. I’m used to sauces with my pasta. This felt like just noodles with veggies. 😕

    1. User avatar lucilla.streich39 says:

      4 stars
I get where you’re coming from! I love a good sauce too. But this dish is all about the flavors of garlic and roasted veggies! You might try it again with a splash of olive oil or some grated cheese on top. 🧀

So good, I even added some parmesan on top! Will make again for sure! 😊

This recipe is amazing! I love how simple it is and the flavors are on point. My family devoured it!

This tastes like a restaurant meal. I was worried the veggies would get too soft, but 20-25 minutes was perfect—slightly caramelized edges were the best part.

I’m not convinced about roasting the veggies before adding to the pasta—felt a little separate like two dishes. Maybe I’ll mix them into the skillet next time.

The red pepper flakes were perfect, but I think my garlic got a little too golden—still tasty though. Next time I’ll watch it more closely.

Totally agree about the pepper flakes! I always get nervous with the garlic too—golden turns from “fragrant” to “burnt” real fast 😅 Next time I’ll lower the heat like you said.

I think you’re being a bit too picky—if the garlic is golden it’s basically roasted, right? 😄 Mine usually turns dark if I don’t stir constantly, but it still tastes good.

Looks easy, but I can’t cook. Might just order pizza instead. Lol.

Pizza’s great, but this recipe is super simple! You might surprise yourself if you give it a try. Plus, it tastes awesome!

Easy recipe, but I forgot to roast the zucchini. Still turned out okay, kinda tasteyy.

I love the concept, but 425°F for 20-25 min maybe depends on the pan size. Mine was underdone at 20. I waited closer to 30 and it was perfect.

Not bad at all. I used what I had—one yellow squash and a bit of onion powder—and it still worked. I’ll tweak it, but it’s a solid weeknight meal.

Not bad, but I felt like it needed more sauce. The tomatoes released some juice, yet the pasta was a little dry for my taste—maybe add a splash of pasta water?

Roasting the veggies was the highlight. I used a mix of yellow and red bell peppers and it looked fancy on the plate. My family asked for seconds.

  105. 4 stars
I liked it, but the garlic got a bit too dark when I only cooked it “1-2 minutes.” Next time I’ll watch it like a hawk. Overall still yummy.

Just ok. My grandma makes better spaghetti. Also, where’s the meat?

This was surprisingly cozy for how simple it is. The roasted veggies add so much sweetness, and the garlic oil tastes restaurant-level.

  108. 4 stars
Wow! So easy and delicious. The garlic gives it a great flavor! I will make it again!

Too much garlic for my taste. I think the recipe needs adjustments.

I think the garlic is perfect! It’s what makes the dish so flavorful. Maybe just use less next time if you’re not a fan!

    2. 3 stars
Too much garlic? U serious? I think it’s one of the best parts! But I guess everyone has different tastes.

This dish is SO GOOD! The garlic flavor really shines through. I will definitely make it again!

I agree! The garlic does make a difference! Can’t wait to try it with extra veggies next time!

5 stars?? I tried it and the sauce tasted kinda bland—maybe I didn’t salt enough. Also my cherry tomatoes didn’t really ‘release juices’ until after I added the pasta, lol.

Not bad! I did not have basil so I used parsley. It was fine, but basil would’ve made it taste more fresh.

    1. User avatar raleigh.rohan says:

Glad you tried it! Parsley isn’t the same vibe as basil, but I think it still keeps things bright. Next time adding a little fresh lemon zest could mimic that freshness too.

This is such a satisfying weeknight pasta—bright from the tomatoes and the garlic flavor is perfect. Roasting the veggies really makes it feel restaurant-y. I used a little extra basil and it was great.

Yes!! The garlic + tomato thing is so good on weeknights. I’ve been looking for a way to make aglio e olio feel “special,” and roasting the veggies sounds like the move.

  114. User avatar jamar.littel says:

Super easy. I didn’t have cherry tomatoes so I used regular ones and chopped them smaller—still fine. Next time I’ll keep an eye on the garlic though.

This was surprisingly bright and fresh—roasting the veggies really brings out the sweetness. The garlic + pepper flakes combo is spot on. Will make again!

I loved the idea, but the veggie roast timing felt a little short? My zucchini wasn’t quite caramelized at 25 minutes, so I bumped it to ~30. Flavor was good, just adjust for your oven.

    1. User avatar Spider Worker says:

      5 stars
Totally agree—my zucchini also needed closer to 30 minutes. 25 felt a bit optimistic for my oven.

  118. 3 stars
Not gonna lie, I thought “aglio e olio” would be more simple, like mostly garlic and oil. The roasted vegetables are tasty, but I found it a bit busy for my taste. Would make again, just with fewer veggies.

    1. 4 stars
Totally get that—aglio e olio is usually just garlic, oil, and pepper flakes. I like the idea of the roasted veg, but yeah, it can feel “too much” for the vibe. Love your tweak!

    2. User avatar squirrel says:

I agree it’s busier than classic. I usually use just tomatoes + a little zucchini, and skip the onion. Still feels like aglio e olio to me.

  119. 4 stars
umm yes. 😅 quick dinner. garlic is everything. i added extra chili bc i like spicy

This is one of those “how is this so good?” recipes. The pepper flakes are the perfect kick. Basil on top makes it taste restaurant-level.
