Sour Cream Pound Cake

November 7, 2025

Sour Cream Pound Cake is the kind of dessert that doesn’t need embellishment to shine. Humble yet luxurious, simple yet unforgettable, it sits comfortably between everyday comfort baking and something worthy of a special occasion. Dense without feeling heavy, rich without being overwhelming, it’s the quiet masterpiece of classic home kitchens. Even Jackie Kennedy loved lemon Pound Cake.

The secret, of course, is the sour cream. Incorporated into a traditional c base of butter, sugar, eggs, and flour, it delivers moisture in a way nothing else quite can. But this ingredient does more than soften the crumb, it adds a gentle tang that balances sweetness and rounds out the flavor. Instead of a flat sugary note, you get dimension, a subtle brightness that makes each bite more interesting than the last.

Texture is everything here. Unlike airy sponge cakes or fluffy layered confections, pound cake embraces a tight, buttery crumb that feels substantial, comforting, and satisfying. It slices cleanly, holds beautifully on a fork, and toasts exceptionally well if you break tradition and gently warm it the next day. Golden at the edges, tender at the center, it carries an aroma of vanilla and butter that quietly perfumes the entire kitchen while baking. It doesn’t ask for attention, but it gets it.

While many cakes rely on frosting or glazing to complete them, Sour Cream Pound Cake plays by its own rules. Some prefer it naked and proud, served in thick soft slices. Others finish it with a delicate drizzle of vanilla glaze, or dust it with powdered sugar like a whisper of sweetness on top. Pair it with berries and whipped cream, and it transforms into a summer dessert. Serve it with coffee, and suddenly mornings feel slower and kinder. Add a scoop of strawberry ice cream, and simplicity becomes celebration.

It’s also the sort of cake that ages gracefully. On day two, the flavor deepens, the tang mellows, and the crumb becomes even more velvety. Few desserts improve with time, but this one does, quietly, confidently, in the background.

Sour Cream Pound Cake is proof that baking doesn’t need to be complicated to be memorable. No dramatic layers, no elaborate decor, no fanfare, just butter, sugar, creaminess, and a sliceable little reminder that the most timeless recipes never shout, they linger. And they always, always earn a second slice.

I’m so glad you loved it! It’s a family favorite for us too. Have you tried adding lemon zest? It gives it an extra zing!

  2. 3 stars
Easy to make, but why do you need so much sugar? I like sweets, but this was over the top! Maybe cut the sugar by a cup next time.

I dunno, sour cream in a cake? Sounds weird. How does it even taste? 🤔

I had a difficult time with this. The batter seemed too thick? Can’t figure out if it was me or the recipe.

  6. User avatar parker.mayer67 says:

    3 stars
I followed the recipe but it came out dense. Not sure what went wrong.

    1. User avatar Samwise Gamgee says:

      4 stars
Maybe you overmixed it? Pound cake should be dense but not too heavy.

  7. User avatar Arielle Crist says:

Is it really a pound cake if there’s sour cream? I thought they were supposed to be heavier.

    1. User avatar perry.jacobson79 says:

      4 stars
Actually, sour cream adds moisture to the cake! It can still be a pound cake if it has the right density, trust me!

    2. User avatar Hannah Jerde says:

      2 stars
I dunno, sounds kinda weird to me. What’s wrong with the old recipe?

Looks good, but isn’t sour cream a bit weird for cake? I gotta try it myself to believe it.

Yum! Wish I could eat it every day! 😍

Yum! Used Greek yogurt instead of sour cream and it was still great. 😋

    1. 5 stars
That sounds like a delicious twist! Greek yogurt is a great substitute. Can’t wait to try it! 😍

  20. User avatar ramonita.kemmer70 says:

    2 stars
Why do people add that much sugar? It’s way too sweet. I’ll cut the sugar next time.

  21. User avatar katharine.huel24 says:

    2 stars
Sour cream in cake? Really? Not sure if I should try this. Sounds weird but I might give it a shot.

  22. User avatar Flame Atronach says:

    2 stars
Since when do you put sour cream in cake? Sounds strange but I might give it a try.

  23. 3 stars
Just okay. I thought it would be sweeter. Maybe add more sugar next time?

  24. User avatar Super Saiyan 2 Goku says:

    5 stars
This cake was heavenly! So moist and buttery, will definitely make again. 😍

    1. User avatar yevette.jast57 says:

      3 stars
But isn’t it just too rich? I prefer something lighter. 🤷‍♂️

    2. 5 stars
I agree! This cake is so easy to make and turns out perfectly every time. 😋

  25. User avatar christian.rau says:

    4 stars
I like the flavor, but my bundt stuck a bit even though I greased and floured. Next time I’ll probably use a baking spray too.

    1. User avatar jenny.huel2003 says:

      5 stars
Ugh, that’s the worst—glad it still tasted good though! Baking spray really does help with bundts, especially around the ridges. Also make sure the pan gets greased *and* floured evenly (sometimes a thicker coat at the bottom helps).

  26. User avatar alva.cummerata2012 says:

    3 stars
I found it a bit too sweet for my taste. Maybe cut the sugar by half?

    1. 4 stars
Yeah, I think cutting the sugar would help! I like it sweet, but this was a bit much even for me.

  27. User avatar marcos.orn says:

    5 stars
My grandma used to make this! Brings back memories. I love this recipe, it’s simple but soooo good.

  28. 4 stars
325°F seems low to me for a pound cake? I checked at 55 minutes and thought it was underdone, but it ended up fine after the full 1:10. I’m still confused lol, but it worked.

  29. User avatar rosy.stanton79 says:

    5 stars
This pound cake is the best I’ve ever made! So moist and delicious. Definitely a 5-star!

  30. 5 stars
Yummy! My family loved it! 😍 I’m gonna make it again next weekend for my gathering.

    1. User avatar Draugr Death Overlord says:

      5 stars
So glad your family loved it! This recipe is a real crowd-pleaser! 😊

  31. 5 stars
This cake is super moist—like, dangerously good. I followed the steps exactly and the texture came out tender with that classic pound cake crumb.

    1. User avatar june.kassulke94 says:

      5 stars
Totally agree—this one’s dangerously good 😄 I also followed it exactly and the crumb was super tender. My bundt usually sticks, but the greasing/flouring worked great.

  32. User avatar alene.rutherford2006 says:

    3 stars
Solid cake. Not amazing, but solid. Also, what’s the point of using sour cream? I don’t get it.

  33. 3 stars
Not gonna lie, 3 cups of sugar is… a lot. I reduced it by 1 cup and it tasted better to me. Texture was still good, but yeah, the sweetness is real.

  34. User avatar dylan.fisher27 says:

    4 stars
Talk about a pound cake! This one’s heavy! But tastes nice, not gonna lie.

  35. User avatar man.johnson25 says:

    4 stars
I messed up by forgetting to whisk the flour and baking soda together, so I got little pockets of weirdness. But once I fixed that on the second attempt, it came out super even. Lesson learned.

  36. 4 stars
This receipts looks to complicated for me, can someone tell me if its really that hard?? I just wanna bake for my kids!

    1. User avatar chae.brown says:

      4 stars
I think it sounds harder than it is! Just follow the steps carefully. Your kids will love it! 😊

  37. User avatar terry.nader81 says:

    3 stars
Why do we need so much sugar?? Seems excessive! Couldn’t it be made with less sugar?

    1. User avatar janita.bauch says:

      4 stars
I think the sugar is what makes it so rich and delicious! Pound cake needs that sweetness. You can always adjust it to your taste, though!

    2. User avatar serita.dubuque33 says:

      3 stars
Just 3 cups? That seems low for a pound cake! But I guess everybody likes different levels of sweetness. Do what works for you.

  38. User avatar althea.ward says:

    2 stars
My toothpick didn’t come out clean at 1:10 so I left it longer… then it kinda got dry. I think I overbaked. Flavor’s okay, just not as moist as I wanted.

  39. User avatar Eccentrica Gallumbits says:

    1 star
This is a weird recipe. Why do you put baking soda in pound cake? Cake was kinda flat.

    1. 2 stars
I thought pound cake was supposed to be dense? Adding baking soda is just odd. My cakes always rise fine without it.

    2. User avatar petronila.gutkowski1965 says:

      4 stars
Baking soda helps with leavening, even in pound cake. It can give a better texture! Maybe try beating the eggs more next time?

  40. User avatar Chaurus Hunter says:

    3 stars
I had a bit of trouble with the baking time. Mine turned out a little overcooked. You might want to check earlier than 70 mins.

  41. User avatar Gormlaith says:

    4 stars
Cake = yum! Sour cream? Never thought of that, but it’s awesome. Will make again for sure!

  42. User avatar tracie.simonis32 says:

    5 stars
Absolutely delicious! This cake is so moist and the sour cream makes it so rich. It’s a hit at every gathering. 5 stars!

    1. User avatar cherish.conn2013 says:

      5 stars
I’ve made this recipe before and it’s always a crowd-pleaser too! Totally agree with you!

  43. User avatar mora.crooks says:

    2 stars
I followed the recipe exactly and it turned out dry… Not sure what went wrong but my family didn’t like it.

    1. User avatar steve_maga says:

      4 stars
I’m sorry to hear that! Sometimes the baking time can vary based on ovens. Did you check it a bit earlier to see if it was done? Also, maybe try adding a bit more sour cream next time? That could help with moisture.

  44. User avatar Romana Dickinson says:

    5 stars
This cake is dangerously good. The crumb is so tender and it tastes like a real old-school pound cake, not that dry stuff. I followed it exactly and it baked up perfectly in my oven.

  45. User avatar clinton.zulauf61 says:

    4 stars
I didn’t have a bundt pan so I used loaf pans. Bake time was different, but the flavor is still excellent—very buttery and rich.

    1. User avatar corene.glover2021 says:

      3 stars
I mean… loaf pans are kinda different though. Did you change the temp too or just time? Also, 3 cups sugar is a LOT—does it taste super sweet or is it balanced by the sour cream?

    2. User avatar oPandariaNo says:

      5 stars
That’s awesome! Pound cake is so forgiving—loaf pans totally make sense. If it’s still turning out rich and buttery, you basically nailed it. 😊

  46. User avatar Alec Hickle says:

    3 stars
I accidentally used cold eggs once and it curdled the batter a bit. I still baked it though and it was… edible. Lesson learned: room temp matters.

  47. User avatar jeramy.cruickshank1952 says:

    4 stars
I like the tang from the sour cream, but mine came out a little dense even though I creamed the butter/sugar a long time. Maybe my eggs weren’t truly room temp? Still tasty though.

  48. User avatar danial.spencer71 says:

    4 stars
3 cups flour feels like a lot… but it came together fine. Next time I might try sifting the flour so it’s even lighter.

    1. 5 stars
I felt the same way—3 cups is a lot—but pound cake is supposed to be dense and rich. Sifting might help the crumb though!

  49. User avatar don.okon42 says:

    2 stars
Way too much sugar for my taste—sweet sweet sweet. The sour cream helps, but it’s still more dessert than cake.

  50. User avatar leeanne.dubuque84 says:

    3 stars
325°F seems kinda low for that much batter. I baked mine the full time and it was still a little wet in the center, so I added 15 minutes.

    1. User avatar robbyn.fritsch says:

      4 stars
Hmm, 325°F definitely sounds gentle, but pound cakes can take their sweet time. Mine’s usually done around that “toothpick clean” mark, though I start checking closer to 1 hr 10 min too.

  51. User avatar inger.lindgren says:

    5 stars
Made it for a brunch and everyone asked for the recipe. The bundt release was fine once I really greased the ridges. Next time I’ll probably add a pinch of salt because it felt just slightly flat.

  52. User avatar benjamin.kub says:

    5 stars
The instructions are straightforward and it actually worked! Mine rose nicely and the top cracked just a little like you want from a pound cake.

    1. User avatar annalee.bergnaum says:

      4 stars
Mine tasted good but I’m not sure about the 325°F part… I think mine needed more time? I checked at 1 hr 10 and the middle was still kinda wet, so I went like 15-20 min more. Still, good recipe tho.

    2. 5 stars
Yes!! I had the same thing happen—mine also cracked a bit on top, and it came out really tender. I used room-temp eggs and didn’t overmix at the end. Great directions.

  53. User avatar latisha.hessel says:

    5 stars
Perfect recipe! I made it for a family thing and everybody asked for the link. I used a homemade vanilla too and it elevated it.

  54. 3 stars
Honestly I expected more sour cream tang. It tastes more like vanilla butter cake than anything super “sour cream” if that makes sense.

    1. User avatar isaiah.simonis43 says:

      3 stars
Huh, mine always has more tang than that. Maybe you mis-measured the sour cream or let the sour cream get warm? Also if your baking soda is off, it can change the flavor—are you sure it’s 1/4 tsp and not baking powder by mistake? I’d try adding a tiny pinch of salt too.

    2. User avatar Curiosity Shop Guy says:

      4 stars
That does make sense—sour cream pound cakes can read more “buttery vanilla cake” than tangy, especially with a full pound-style batter like this. Next time you could try using sour cream with higher fat (like full-fat) or bump the vanilla a touch less so the sour note isn’t drowned out.
