Sausage and Bell Pepper Egg Scramble

May 8, 2024

If you’re looking for a breakfast that’s both quick and satisfying, the Sausage and Bell Pepper Egg Scramble delivers every time. This dish is a go-to for busy mornings when you want something hearty and protein-packed without spending too much time in the kitchen. It’s also a great way to use up leftover veggies and sausage, making it both practical and delicious.

At its core, this scramble is all about flavor and balance. The sausage brings a rich, savory bite that perfectly complements the sweetness of sautéed bell peppers. Whether you choose spicy Italian sausage, smoky chorizo, or a milder chicken variety, the combination with fluffy, soft-scrambled eggs creates a comforting, well-rounded meal.

The bell peppers not only add a pop of color but also a welcome crunch and natural sweetness. Red, yellow, or green, each variety offers something slightly different, and when lightly caramelized in the pan, they become even more flavorful. Toss in some chopped onions or fresh herbs like parsley or chives if you want to take it up a notch.

This egg scramble is easy to customize. Want a lower-fat version? Use turkey sausage. Looking to up your greens? Toss in some spinach or kale just before the eggs go in. Craving cheese? A sprinkle of cheddar or feta at the end melts beautifully into the hot scramble.

Best of all, it’s a one-pan meal, quick to cook, quick to clean. Serve it as is, or pile it onto toast, wrap it in a tortilla for a breakfast burrito, or pair it with avocado for an extra nutrient boost.

Whether it’s a laid-back weekend brunch or a power breakfast on the go, this Sausage and Bell Pepper Egg Scramble is the kind of dish that fuels your day and satisfies your taste buds. Simple, flavorful, and endlessly adaptable, that’s breakfast done right.

  4. User avatar Sand-Dial says:

Was that supposed to be green pepper? I used yellow amd it was still good.

  5. 4 stars
This is basically a breakfast burrito without the tortilla. Can it be wrapped? 🤔

    1. User avatar virgen.gutmann says:

      2 stars
I dunno, why not just eat it like that? Who needs a tortilla anyway? 🤷‍♂️

    2. 4 stars
You could totally wrap it in lettuce or even a tortilla if you want! 😊

  6. User avatar wildebeest says:

    5 stars
Simple and filling. I used cheddar and it melted perfectly. Definitely going in my breakfast rotation.

    1. User avatar wellRespected says:

      4 stars
Sounds good, but I think 1/2 cup cheese might make it a bit heavy with all the sausage. Maybe next time I’ll cut the cheese in half—still filling though.

    2. User avatar herb.kirlin says:

      5 stars
Yes!! Cheddar is the move—love that it melts right into the eggs. I’ll definitely try it in my breakfast rotation too. 🍳

I actually thought it was pretty good! Maybe you just need to adjust it to your taste. Everyone likes different levels of spice!

  8. User avatar maximo.jast55 says:

    3 stars
I accidentally overcooked the eggs (I was cooking something else too), so they got a little dry. Still tasty though—sausage + peppers is a great combo.

  9. User avatar garfield.schroeder56 says:

    1 star
Sausage and peppers? Yuck! I used tofu instead. Still didn’t like it. 1 star for effort.

    1. 4 stars
Not everyone likes sausage, that’s understandable! Tofu can be a good sub but it’s not the same. Maybe try a different recipe next time?

    2. User avatar patria.conroy79 says:

      2 stars
Tofu? Really? That’s weird! This is suppose to be about sausage! Try putting in chicken or sumthing.

  10. User avatar jeffry.little1966 says:

    4 stars
I tried this recipe but used turkey sausage instead, still super tasty! 😋

    1. User avatar Falmer Warmonger says:

  19. User avatar zandra.ruecker95 says:

    3 stars
Not bad, but the eggs set a little too fast on my stove. I should’ve turned the heat down earlier.

  20. 3 stars
I’m not a big fan of eggs, but since they were scrambled, it was okay. Could use more cheese, tho!

    1. User avatar adell.gerhold says:

      5 stars
More cheese is always a good idea! Maybe add some pepper jack for a kick? 😋

  21. User avatar williams.cronin24 says:

    1. 5 stars
Totally agree! I made this on a Tuesday morning and it was so quick. Love the combo of sausage and peppers!

    2. User avatar francis.dicki69 says:

      2 stars
Sounds good, but isn’t it same as just eggs and sausage? I don’t see the point of peppers.

  23. User avatar eric.lebsack2006 says:

    2 stars
I don’t get why people add milk—makes it kinda wet. Would’ve preferred all egg + salt, but it worked.

  24. User avatar craig.nader says:

    1 star
I messed this up bad. Eggs were burnt, and the sausage fell apart. 😭

    1. 3 stars
You should have used a non-stick pan! That can help with burning eggs. Better luck next time!

    2. User avatar dennise.wintheiser says:

      4 stars
Aw, don’t worry! It happens to the best of us. Maybe try lowering the heat next time for the eggs?

  25. User avatar genoveva.hartmann1 says:

    1 star
I don’t understand why you would put cheese on eggs. Isn’t that weird?

  26. 5 stars
This is one of those recipes that looks simple and then tastes way better than expected. The milk makes a nice texture.

  27. 5 stars
This was so yummy! My kids loved it and I did too. Will make again!

  28. 5 stars
This is just what I needed for a quick breakfast! So tasty! 😋

    2. User avatar Peregrin Took says:

  29. 2 stars
Is it really a scramble without onions? Just sayin’.

  30. User avatar leida.turcotte93 says:

    5 stars
This is a great breakfast! I added some hot sauce and it was perfection!

    1. 2 stars
Hot sauce?! Really? I think that ruins the recipe. Why would you add that?

    2. User avatar joe_banana says:

      5 stars
I’m glad you enjoyed it! Hot sauce sounds like a tasty addition!

  31. User avatar charita.gusikowski1997 says:

    4 stars
I forgot the cheese lol but it still turned out good. 😂

  33. 5 stars
This recipe is so easy and delicious! I make it every Sunday. 🌞

  34. 3 stars
Why do people put cheese in everything? It could ruin it. Just sayin’.

  35. User avatar basementDweller says:

    4 stars
Only had yellow peppers, turned out fine! Colorful dish. 4 stars!

    1. User avatar yu.rice2025 says:

Sounds delicious! Yellow peppers are great too! Can’t wait to try it myself.

  36. User avatar Leopoldo Murphy says:

    2 stars
I don’t think sausage belongs in eggs… kinda weird if you ask me. But the peppers were nice.

    1. 4 stars
I understand where you’re coming from, but sausage can add such a great flavor! Maybe you could try it without it next time?

  37. 3 stars
Too much sausage in mine, I like my eggs more eggy, ya know?

  38. User avatar laurence.cremin10 says:

    2 stars
I tried this but it didn’t turn out like the picture. The eggs were too runny for me.

  39. User avatar elden.daniel63 says:

    2 stars
Eggs with bell peppers? Sounds weird. Are you really supposed to mix them like that? Meh.

  40. User avatar adan.borer90 says:

    5 stars
5 stars. So easy. (also i burned my tongue, worth it tho)

  41. User avatar ernie.satterfield70 says:

    2 stars
Not what I expected. The sausage was too greasy for my taste. Maybe less next time?

  42. 3 stars
Quick question, can I use chicken instead of sausage? I’m not a fan of pork.

  43. User avatar jann.hermann11 says:

    4 stars
My 5-year-old only ate the cheese! lol but it was still good. 4 stars.

    1. User avatar Draugr Thrall says:

    5 stars
My kids loved it! Easy to make and they ate all their veggies! 🎉

  45. User avatar ShanksOnePiece says:

    3 stars
Ehh, it was alright but I think I overcooked the eggs. They turned out rubbery.

  46. 5 stars
This was amazing! I added some onions too, really brought it to life!

  47. User avatar shawn.schumm says:

    2 stars
Sausage? Isn’t that high in fat? Im not sure about this recipe.

  48. User avatar andre.heller66 says:

    3 stars
Can you substitute sausage with bacon? Asking for a friend.

  49. User avatar lupe.nikolaus1968 says:

    4 stars
Not bad! My kids loved it. I’m not great at cooking but this was simple enough for me.

  50. 1 star
Why do ya put milk in scrambled eggs? I thought that was a myth or something.

  51. 5 stars
This recipe was amazing! So easy to make and my kids loved it. Definitely a keeper!

  52. User avatar hobert.towne says:

    4 stars

Seriously? How can you put green peppers in eggs? 🤢

    1. User avatar emery.lockman says:

      4 stars
I think green peppers add a nice flavor! You should give it a try before you knock it. 🌶️

  55. User avatar geraldo.fay says:

    3 stars
Easy and tasty, but where’s the garlic!? Needs more flavor, maybe some onion too.

    1. User avatar ida.schinner2007 says:

      4 stars
I totally agree! Garlic and onion would really kick it up a notch! Maybe next time I’ll throw them in.

    2. User avatar Shaddam Corrino IV says:

      2 stars
Huh? Who needs garlic in eggs? I think it’s great just the way it is. A bit of cheese for flavor is all you need!

  56. User avatar augustine.mclaughlin94 says:

    5 stars
This was soooo good! I added some onions too, and it made it even better. Definitely making it again!

  57. User avatar walter.kub says:

I don’t like bell peppers, can I use onions instead? 🥴

  59. User avatar Magrathean sperm whale says:

    2 stars
I tried this recipe but forgot the milk. It didn’t turn out great.

  60. User avatar asley.lakin says:

    3 stars
It’s too salty for my taste. I think I may not add salt next time.

  61. 2 stars
I think it’s an interesting combination. But I prefer my eggs sunny side up.

  62. User avatar rickey.simonis says:

    4 stars
Sausage is life! Added some hot sauce to mine for a kick. Yum!

  63. User avatar robbie.nolan1956 says:

    5 stars
I tried this and I thought it was muy delicioso! I will tell my family! 🌶️

  64. 4 stars
I followed it pretty much exactly—next time I’ll add a pinch of garlic powder because I like it more punchy.

  65. User avatar Raleigh Bechtelar says:

    3 stars
Not bad, but I think it needs more seasoning. I added garlic powder.

    1. User avatar leanora.stamm says:

      5 stars
I totally agree! A little more garlic or even some onion powder could really amp it up. Love the idea of adding more flavor!

  66. User avatar michael.grady82 says:

    1 star
This was a big mess. Eggs cooked too fast and burnt. Never cooking eggs again.

  67. User avatar Jim Laucher says:

    4 stars
Yum! Forgot the cheese but still great!

    1. User avatar hiram.ferry2003 says:

      3 stars
No cheese? Is that even legal for this recipe? 😂 But glad it worked out for ya!

    2. User avatar sunday.mccullough43 says:

      4 stars
Cheese makes everything better! But glad you still enjoyed it. 😊

  68. 5 stars
So quick. Like 20 minutes. I mean you brown sausage, cook peppers, scramble eggs—done. Love recipes that don’t require 14 steps and 47 bowls.

  69. User avatar adalberto.walker says:

    5 stars
My kids actually ate the peppers! I swear scrambling makes veggies disappear. ⭐️

  70. User avatar liberal.hero says:

    5 stars
I added some spinach too, turned out great! 😍

  71. User avatar floretta.mueller2012 says:

    5 stars
Made this for brunch and it turned out way better than I expected—juicy peppers, nicely browned sausage, and the cheese melted perfectly. I added a pinch of chili flakes and it really popped.

  72. User avatar Loonquawl and Phouchg says:

    4 stars
Not gonna lie, I was skeptical about 6 eggs being enough, but it fed two of us with leftovers. The only thing: I used cheddar and it still turned out great.

  73. User avatar jeremiah.waelchi75 says:

    2 stars
Not for me. I don’t like mixing eggs with sausage. Just sounds wrong, man.

  74. 5 stars
Sausage + eggs = best combination ever. This made my morning!

  75. 4 stars
Not bad, but I’ve had better. Maybe try adding some spice?

  76. User avatar sherry.cronin7 says:

    5 stars
Just made this for my family and they devoured it! Will definitely make again!

  77. 5 stars
My kids devoured this and didn’t even realize there are peppers in it! Win!

  78. User avatar Paula Nancy Millstone Jennings says:

    2 stars
I don’t see how this is any different from regular scrambled eggs. Kind of boring, tbh.

  79. User avatar emmaline.bergstrom2003 says:

    4 stars
I followed it mostly, but I used mozzarella instead of whatever shredded cheese. Still good! The only thing is I wish the seasoning called out more salt—had to add extra pepper too.

  80. User avatar gavin.ritchie9 says:

    1 star
Can you even call this a recipe? It’s just cooking stuff in a pan. Disappointing.

  81. 5 stars
This recipe is AMAZING! I added some hot sauce and it was perfect. Definitely making it again!

  82. User avatar bambi.west20 says:

    2 stars
meh. it’s scrambled eggs with stuff in it, nothing special. 2/5.

  83. User avatar blake.hickle1994 says:

    4 stars
Pretty solid recipe. I followed it mostly, but my eggs took a little longer on the stove. Still tasted great and looked like restaurant food.

  84. User avatar mittie.collier92 says:

    4 stars
Simple and quick to make! Perfect for busy mornings.

  85. User avatar rafael.borer2005 says:

    2 stars
I don’t get the hype. The scramble was kinda bland for me, and the peppers overpowered the sausage. Maybe my sausage wasn’t flavorful enough? Either way I wouldn’t make it again exactly as written.

  86. User avatar dewayne.pouros2011 says:

    4 stars
This recipe was easy but I mistook the milk for cream. Oops! Still tasted okay, though 🤷‍♀️

  87. User avatar Kareem O'Weet says:

    5 stars
Made this for brunch and it was seriously good—great flavor from the browned sausage. The peppers cooked up perfectly, and the cheese melt at the end was the best part.

    1. 5 stars
Love hearing this! The browned sausage really does make it—my peppers always come out better when I slice them thin like you did.

  88. User avatar major.leffler34 says:

    3 stars
Easy to make, though I burned the first batch. Oops! But still turned out tasty!

  89. 4 stars
Sausage and peppers are my fav! So easy and good.

  90. 5 stars
Sausage and peppers? Yummm! My kids ate it all! 10 outta 10 recommend!

  91. User avatar ricarda.hintz76 says:

    5 stars
Yum! 🤤 Perfect combo of flavors! I added some hot sauce too.

  92. 4 stars
Good, but I think it needs more cheese. Like, seriously, I would drown it in cheese if I could.

  93. User avatar luna.hintz1995 says:

    2 stars
Could you use tofu instead of sausage? Just wondering… 😅

  94. User avatar wilton.jast20 says:

    3 stars
Could’ve used more cheese for my taste. Like, 1/2 cup is good, but I’d probably double it. Also I wish it had onions—maybe my bias, lol.

    1. User avatar lauren.boyer says:

      4 stars
Hmm I think 1/2 cup is plenty if the sausage is flavorful. Onions would make it more like a frittata vibe, but then you’d have to cook them first so they don’t stay raw, ya know? Maybe try adding diced onion to the pepper step.

    2. User avatar rickiestmorty says:

      5 stars
Totally agree on the cheese—1/2 cup feels a little stingy. I usually do closer to 3/4 to 1 cup so it gets all melty and not just “a little cheesy.” I’m with you on the onions too (they’d add so much).

  95. User avatar aleisha.spinka80 says:

    5 stars
Sausage, eggs, and cheese? Can’t go wrong with that combo. 10/10.

  96. 4 stars
I think 6 ounces of sausage is small… I ended up adding extra because my pan looked sad lol. Still tasted good.

  97. User avatar emile.pollich51 says:

    4 stars
Wasnt sure about the milk in the eggs, but it made them fluffier!

    1. User avatar nickolas.fay18 says:

      3 stars
Wasn’t so sure about the milk either, but my brother said it’s what makes them nice. I dunno, seems weird!

    2. User avatar mazie.jacobi1977 says:

      5 stars
I totally agree! The milk really does add that fluffy texture. I’m glad you tried it!

  98. 4 stars
Pretty solid and easy. My eggs came out a tiny bit dry (probably cooked a minute too long), but the cheese helped a lot. Next time I’ll lower the heat and stir more gently.

  99. User avatar anonymous_hacker says:

    3 stars
I dunno, I thought it was kinda bland. Needs more spices or something. My husband liked it though.

    1. User avatar guillermo.green41 says:

      3 stars
Bland? I mean, it’s just sausage and eggs, can’t expect much more. But if it tastes good to him, that’s what matters!

    2. User avatar brittney.satterfield says:

      4 stars
I think you’re right! A little garlic powder or paprika would really kick this up a notch! But hey, glad to hear your husband liked it.

  100. User avatar ferne.rolfson67 says:

    4 stars
Followed the recipe pretty much exactly. Next time I might add a pinch of garlic powder or chili flakes, but otherwise it’s solid and easy. Scrambled eggs came out fluffy.

    1. User avatar Prostetnic Vogon Kwaltz says:

      5 stars
Nice! I love how simple this is—fluffy eggs are the best. I might also try a tiny bit of garlic powder next time too.

    2. 4 stars
Mine didn’t get quite as fluffy (maybe I cooked the eggs too long?). Still tasted good though. I added chili flakes and it was way better.

  101. User avatar reda.christiansen1979 says:

    2 stars
Meh. The instructions are fine, but I found it a bit bland even with salt/pepper. Maybe my sausage wasn’t flavorful enough.

    1. User avatar garfield.hodkiewicz3 says:

      3 stars
Sorry but I don’t think it’s bland, it’s just breakfast. Mine tasted great bc I used spicy sausage. Also I added like a splash more milk so it got fluffier. Maybe try that?

    2. User avatar dewitt.beer says:

      4 stars
Yeah I get that—this is pretty straightforward. If the sausage isn’t seasoned (or you use a mild one), it can come out flat fast. I usually go a little heavier on pepper and add a pinch of garlic powder or crushed red pepper next time.

  102. User avatar rickiestmorty says:

    3 stars
I followed it mostly, but my eggs got a little too dry. I think I overcooked while stirring. Still tasted good though.

Cheese on top? I did it, but it kinda clumped. Maybe my heat was too high. Would not say it’s bad though.

Cheese clumping makes sense—if the pan runs too hot when you add it, the proteins can seize up. Next time maybe turn the heat to low (or even off) right before you sprinkle it on, and give it a couple stirs so it melts evenly. Still sounds like you nailed the idea!

These instructions are not clear. How many servings does it make? I got confused!

Who knew eggs and sausage could taste so good together? Loved it!

I dunno…eggs and sausage sound good but isn’t it kinda heavy? What about some veggies instead?

I know right? It’s like the perfect breakfast combo! Can’t believe I never tried it before. 😊

Got mixed peppers and everything tasted fresh. The cheese topping made it feel way more “special” than I expected.

I tried it, but the sausage was too greasy for my liking. Maybe less sausage next time? 3/5

Why only 1/4 cup milk? Mine turned out a bit firm—maybe I should’ve used more for fluffier scrambles.

    1. User avatar arlinda.konopelski7 says:

      5 stars
Good point! The 1/4 cup milk is on the lighter side—if you like them softer/fluffier, a splash more (like 2–4 tbsp extra) can help. Also don’t overcook; once the eggs look set but still a little glossy, pull them off.

    2. User avatar winfred.bartell says:

      3 stars
Wait, mine came out perfect with 1/4 cup 🤷‍♂️ Maybe you cooked the eggs too long or had the heat too high? If it’s firm, try lower heat and more stirring—milk won’t fix everything.

This is good but I wish it had onions too. I know it’s not in the recipe, but onions would round it out.

    1. User avatar luke.schmitt says:

      5 stars
Totally agree—onions would make it even better. I might sauté some in the same skillet after the sausage before adding the peppers.

This came out so flavorful! Browning the sausage first really makes a difference, and the peppers add a nice sweetness.

I tried it but my eggs kinda got rubbery 😅 Next time I’ll probably pull them sooner. Still tasted good though—sausage + peppers is a great combo.

    2. 5 stars
Yes!! I did exactly this and it’s crazy how much the browning boosts the flavor. The peppers really mellow it out too—so good.

I’m gonna be honest… it was kinda bland until I added extra salt. The scramble itself was fine but it needed more seasoning than “to taste.”

    1. User avatar Sand-Dial says:

      3 stars
Huh, mine was never bland… maybe your sausage was like turkey sausage or something? I usually add a pinch more black pepper and cheese, and it comes out good. Also, maybe you waited too long to add salt? Salt before cooking can make it weird idk.

    2. User avatar nannie.champlin44 says:

Totally get that—“to taste” can be wildly unhelpful. Next time I’d add salt while whisking the eggs *and* season the peppers a bit in the pan. The sausage probably needs a little help too if it’s not very flavorful.

Hmm… I cooked the peppers “until tender” for like 5 minutes and they stayed kinda crisp. Taste good though.

Yum! I made it for brunch and everyone loved it! Will make again!

That’s awesome! I can’t wait to try it myself. Got any tips?

Not sure about 6 eggs—felt like a lot for my skillet size. Also I used pre-cooked sausage and it didn’t brown much, so I had to rely on the peppers for flavor. Would try again with fresh sausage though.

    1. User avatar kala.bins1950 says:

      5 stars
Yeah 6 eggs can feel like overkill depending on your skillet—mine was pretty full too. I ended up doing a slightly wider pan and it turned out perfect. Also, fresh sausage definitely helps brown more.

    2. 3 stars
Hmm I think 6 eggs is fine… unless your pan is teeny lol. If the sausage wasn’t browning, could be it was too much moisture in the pan or the heat was too low. Next time try higher heat and drain it a bit. Or use more cheese? 😅

Honestly, simple and tasty. The bell peppers give it a nice sweetness. Next time I might add a pinch of paprika.

    1. 5 stars
Love how simple this is—those bell peppers really do make it taste sweeter. Paprika would be a great upgrade too!

I don’t usually add bell peppers to eggs (feels weird to me), but I tried it anyway. Honestly, it worked. The veggies weren’t too sweet, more savory.

Way too much pepper for my taste. Like, I think my salt shaker fell in? But the texture was still great.

  118. 2 stars
Meh. I burned the sausage a little and then the eggs stuck to the pan. Still ate it though because it was edible lol. Could use more instructions about heat control.

This was surprisingly tasty—like a breakfast-for-dinner vibe. The peppers stay a little sweet and the sausage makes it super hearty. I added a pinch of chili flakes and it made the flavor pop.

    1. User avatar Margot Fenring says:

      3 stars
Wait—do you really cook the peppers until “tender” in step 2? I tried something similar and my peppers stayed kinda crisp. Also I used turkey sausage and it wasn’t as hearty… but adding chili flakes might fix it.

    2. User avatar elias.spinka says:

Breakfast-for-dinner is exactly right 😂 The sweet peppers + sausage combo sounds perfect. I’ve been looking for something quick like this!

I tried it with turkey sausage and it was kinda bland. Could be the seasoning on the sausage. Salt/pepper definitely matters.
