Sashimi Salad with Soba Noodles

August 8, 2023

If you’re craving something light yet satisfying, sashimi salad with soba noodles checks every box. It’s a refreshing mix of clean flavors, vibrant colors, and nourishing ingredients that come together in one beautiful bowl. Perfect for warm days or when you want a meal that’s both healthy and exciting, this dish delivers on taste without weighing you down.

At the heart of this salad is sashimi-grade fish. Tuna and salmon are classic picks, but yellowtail or even scallops can work just as well. The key is using the freshest fish you can find. Slice it thinly so it pairs well with the delicate textures of the noodles and greens.

Soba noodles, made from buckwheat, add a nutty flavor and a slightly chewy texture. They’re quick to cook and can be served chilled or at room temperature. After boiling, rinse them under cold water to stop the cooking and remove excess starch. This helps them stay light and separate in the salad.

Now for the greens. A mix of crisp romaine, baby spinach, or arugula works nicely. Add julienned cucumbers, thinly sliced radishes, avocado slices, and shredded carrots for extra crunch and color. You can also throw in some edamame or seaweed salad for even more variety and flavor.

What ties everything together is the dressing. A simple soy-sesame vinaigrette made with soy sauce, rice vinegar, sesame oil, a touch of honey, and grated ginger gives the dish a tangy, slightly sweet punch. Drizzle it generously over the salad and noodles, then toss gently to combine.

Top everything with the sliced sashimi, a sprinkle of sesame seeds, and perhaps some chopped scallions or a squeeze of lime. For a little heat, add a dab of wasabi or a few slices of chili.

This sashimi salad with soba noodles is everything a modern meal should be, simple, nourishing, and full of clean flavors. It’s ideal for lunch or dinner when you want something beautiful, balanced, and fast to make.

Just okay. Soba noodles were a bit slippery, and I didn’t have cilantro sooo I used parsley instead. Not the same.

OK, but isn’t this just fancy sushi? I’m not convinced it’s a salad. 3 stars.

Looks good, but I’m not a fan of raw fish. Can it be made with cooked fish instead? 🤔

Delicious! Also, forgot to add the peanuts but didn’t even miss them.

I’ve made this salad a few times, and it’s always great! Peanuts are nice, but they aren’t necessary. Glad you enjoyed it!

    2. 3 stars
Really? No peanuts? I think that’s like a crime against Sashimi Salad! lol. But hey, if it tastes good without them, who am I to judge?

  8. User avatar dan.bayer1983 says:

Not as fancy as it looks in the pic, but still really good. Love the peanuts!

  9. 4 stars
This recipe is a total winner! The mint and basil give it such a kick. Will be making it again!

  10. 5 stars
I made this last night and it looked so pretty on the plate, my guests loved it!

  11. 4 stars
Can you use regular pasta instead of soba? I can’t find those anywhere!

  12. User avatar terminatorXYZ says:

Way too many herbs for me. Cilantro and mint together usually tastes like toothpaste, no offense. I’d cut it in half next time.

    1. User avatar Stevie Hammes says:

      5 stars
Totally fair—herbs can be a lot. I usually do cilantro + mint heavy only if I’m using a milder base, but halving them sounds like the move. Thanks for the tip!

Y’all, it did not taste good. My fish was fishy and the sauce was too sour. Won’t be trying this again.

    1. 3 stars
Sorry to hear that! Maybe the fish wasn’t fresh? Sashimi should be tasty, but sometimes it can go wrong. Did you try using different fish or adjusting the dressing?

Isn’t soba noodles made from wheat? I thought they were gluten-free? 🤔

  15. User avatar spencer.langworth46 says:

This is such a fresh, light combo—love the soba + herbs + lime. The dressing tasted balanced and the honey cut the sharpness nicely.

  16. 3 stars
I tried this recipe and it was just okay. The dressing was too strong.

  17. User avatar penney.kutch says:

I don’t think honey belongs in savory dishes. Can’t recommend it. 🤷‍♂️

  18. User avatar raelene.paucek1957 says:

Who puts honey in salad? Seems kinda weird. Not for me. 🥴

  19. 2 stars
The ingredients seem way too fancy for a simple salad. I dont have half these herbs. Just regular greens should work.

    1. User avatar amos.bernhard2022 says:

      3 stars
Fancy ingredients? I dont know. Just mix whatever you have, it’ll still taste good! Just make sure that fish is fresh, or else 🤢.

    2. 4 stars
I totally get what you mean! Not everyone has a full herb garden at home. I think just using regular greens would be fine. Maybe add a bit of lemon for some zing?

No way I’m eating raw fish. This dish is not for me.

This was amazing! The sashimi was so fresh. Definitely a 5/5!

Easy to make! I just mixed everything and it worked out fine!

  23. 4 stars
I made something similar once and the honey + lime balance was weird to me at first, but now I love it. Dressing step was easy—would do again.

  24. 5 stars
Absolutely delicious! The flavors are amazing together.

Really simple and quick to make, but I think it needed more crunch. Maybe add some croutons next time?

    1. 2 stars
I dunno, croutons in a salad with fish? Sounds kinda weird to me. But hey, if you like it, go for it!

    2. 5 stars
Croutons sound great! I love that extra crunch too. Maybe some toasted nuts would be good as well!

  26. User avatar Lunkwill and Fook says:

Can I use pasta instead of soba noodles? I don’t even know what that is!

    1. User avatar lashawnda.nader53 says:

      4 stars
You can use pasta, but it won’t taste the same. Soba has a unique flavor! Maybe try it if you’re curious.

  31. 4 stars
Love the freshness! 🍃 I added more herbs than listed and it was even better!

  32. 2 stars
Tried this recipe, but I burnt the noodles! Oops. 😅 Not sure if I did it right.

  33. 3 stars
Not sure about “sashimi-grade” at my store. I used regular salmon and… well, it was okay but I wouldn’t call it sashimi. Still tasty though.

  34. 5 stars
Honestly this slapped. Dressing was savory-sweet, and the ginger/garlic actually tasted like something. Peanuts on top gave it crunch.

  35. User avatar kyong.homenick1953 says:

    4 stars
Great recipe! I subbed shrimp for the fish and it was fab! Love the combination of flavors. 4 stars.

  36. User avatar cherry.feest says:

    3 stars
Really easy to make, but needed more flavor in the dressing! It was a bit bland.

    1. 4 stars
I agree! The dressing could definitely use a little more zing. Maybe add some chili flakes or more lime juice next time.

    2. 2 stars
Nah, I thought it was fine. Maybe you just don’t know how to season food? 🤷‍♂️

  37. User avatar lorinda.walker44 says:

So many ingredients to buy! Can’t I just use regular ol’ fish?

  38. User avatar anna.oconner0 says:

    3 stars
Honestly, this was just okay. The dressing was a bit off for my palate.

    1. User avatar sigrid.zemlak26 says:

      4 stars
I totally get what you’re saying! The dressing can be hit or miss. I added some chili flakes to mine, and it was much better! 🌶️

  39. User avatar armida.gibson says:

Yummy! But I added extra lime because I love that tangy taste! 😋

    1. User avatar Frankie and Benjy says:

      5 stars
Extra lime sounds awesome! I might try that next time. 😊

  40. User avatar terrie.lesch says:

Yum! But I think I added too much ginger, it was a bit overpowering. Next time, I’ll go easy on it.
