Ingredients
  

  • 8 ounces sashimi-grade fish thinly sliced, such as tuna or salmon
  • 8 ounces soba noodles
  • 2 cups mixed salad greens
  • 1 cucumber thinly sliced
  • 1 carrot julienned
  • 1/4 cup Green onions chopped
  • 1/4 cup cilantro chopped
  • 1/4 cup mint chopped
  • 1/4 cup basil chopped
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp ginger grated
  • 1 tsp garlic minced
  • 1/4 cup peanuts optional, chopped
  • Lime wedges for serving

Instructions
 

  • Cook the soba noodles according to package instructions. Drain and rinse with cold water.
  • In a large bowl, combine the cooked soba noodles, salad greens, cucumber, carrot, green onions, cilantro, mint, and basil.
  • In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, lime juice, grated ginger, and minced garlic.
  • Pour the dressing over the noodle and salad mixture and toss to coat.
