Roasted Pumpkin Seeds

September 19, 2024

Roasted Pumpkin Seeds are one of fall’s simplest and most satisfying snacks. Crunchy, savory, and endlessly customizable, they are the perfect reward for anyone who has ever carved a pumpkin or cooked with fresh pumpkin. There’s something incredibly satisfying about turning what’s usually discarded into a tasty, wholesome snack.

The magic of roasted pumpkin seeds is in their texture and flavor. As they roast, the seeds become golden and crisp, offering a delightful crunch with every bite. Lightly salty with a subtle nuttiness, they are the kind of snack that’s hard to stop munching once you start. They’re perfect for setting out in bowls during gatherings, packing in lunchboxes, or simply enjoying by the handful on a cozy afternoon.

One of the best things about pumpkin seeds is how versatile they are. While a simple sprinkle of salt is classic, you can easily dress them up with different flavors. Some prefer a smoky touch with paprika or cumin, while others go for sweet with cinnamon and sugar. A drizzle of olive oil and a pinch of sea salt keep things savory and simple, but experimenting with garlic powder, chili flakes, or even everything bagel seasoning can take them to the next level.

Roasted pumpkin seeds also have a nostalgic quality. They’re tied to the rituals of fall—pumpkin carving, Halloween, and cozy afternoons in the kitchen. The process of rinsing, drying, seasoning, and roasting feels almost meditative and rewarding, especially when the kitchen fills with the toasty, savory aroma as they bake.

Beyond being a tasty snack, roasted pumpkin seeds are also a great topping for soups, salads, and grain bowls. They add a satisfying crunch and a boost of flavor wherever they’re sprinkled. Plus, they store well, making them a great snack to keep on hand throughout the week.

Crunchy, golden, and perfectly salty, roasted pumpkin seeds are a celebration of fall’s simplest pleasures. Whether you enjoy them plain, spicy, or sweet, they’re proof that sometimes the best snacks come from the most unexpected places.

I don’t get why people roast pumpkin seeds. They taste fine raw! 🤷‍♂️

    1. User avatar lucky777 says:

      4 stars
Raw is cool, but roasted just has that crunch! 😋

  2. User avatar bud.koelpin44 says:

    2 stars
Why do mine taste kinda bland? I even added extra salt. Maybe my paprika was old? Not terrible though.

  3. User avatar Kelley Zulauf says:

    3 stars
I followed it exactly, but my seeds were a little more chewy than crispy. I think my oven runs hot? Still tasty though—salt + olive oil is a good combo.

  4. User avatar rea.grant27 says:

    4 stars
My kids loved these! We made a double batch and they vanished quickly.

    1. User avatar sherri.heller83 says:

      5 stars
That’s awesome! I’m glad your kids enjoyed them. Perfect snack for Halloween!

  5. User avatar ingeborg.deckow31 says:

    3 stars
I followed it exactly and they turned out kinda pale… like not golden enough. Maybe I didn’t dry the seeds well.

  6. User avatar Gag Halfrunt says:

    5 stars
Wow, these are dangerously snackable. I made a batch while cooking dinner and then kept stealing handfuls.

  7. 4 stars
Yummy! It’s a great snack for Halloween. I added some garlic powder too!

  8. 2 stars
300°F feels too low… I roasted at that temp and they took forever and didn’t get golden like the picture. The flavor is okay but I’m not convinced.

    1. User avatar tyler.cronin46 says:

      4 stars
hmm maybe you should try higher heat? like 325 or 350 and watch them so they don’t burn. also make sure they’re DRY—any moisture keeps them from browning. flavor ok is better than nothing tho 😅

    2. User avatar vickie.keeling1962 says:

      4 stars
Totally hear you—300°F is pretty gentle. I’ve found they need closer to 35-45 minutes to really brown, and you have to stir more often (like every 10 minutes). If your oven runs cool, that could explain the “took forever” part.

  9. User avatar jackie.purdy84 says:

    3 stars
They turned out okay, but not as crunchy as I expected. Maybe I missed something?

    1. 4 stars
I think you might need to roast them a bit longer! That usually helps with crunchiness. Try checking them after 20 min and maybe give them a little stirring to get more even crunch. Good luck!

    2. User avatar efrain.damore88 says:

      2 stars
Crunchy? More like soft! I roasted mine for 30min and they were still not that crunchy. How do you get it right?

  10. User avatar elizbeth.koch49 says:

    2 stars
Oven temp was way off, took forever to cook right. Use a thermometer or somethin’!

  11. User avatar kati.mcglynn2001 says:

    3 stars
Followed the steps but my seeds were kind of chewy, not crispy. Maybe I didn’t dry them enough before roasting? Still edible though.

  12. User avatar NAFO.SUPREMACY says:

    5 stars
These were super easy and delicious! I’m never buying store-bought again!

  13. User avatar fatima.dibbert says:

    5 stars
    Yummm!!! 🔥

    1. 2 stars
These seeds aint as good as toasted sunflower seeds. Just sayin’!

    2. 5 stars
I can’t believe how good these are! I made them last night and they were all gone in minutes!

  14. User avatar Ms. Ericka Jacobson says:

    3 stars
I didn’t like the paprika. I think it’s overrated. Just use salt next time.

  15. User avatar Questular Rontok says:

    5 stars
These were soooo good! I made a big batch and they disappeared fast. Will make again for sure! 🥰

  16. 3 stars
I had some leftover seeds from Halloween and gave this a try. They turned out okay, but I think I overcooked them a little bit.

  17. User avatar zoraida.bernhard says:

    1 star
I messed up the temperature 😭 They burned!! But I think I can still eat them?

  18. 4 stars
Pretty good and easy. I used to burn mine before, but stirring occasionally helped a lot. Would do 22 minutes next time.

    1. User avatar janeen.streich says:

      4 stars
I did 22 minutes once and they were perfect… but I covered mine with foil for “even roasting” and now I’m not sure if that’s why. Anyone else?

    2. User avatar liberal.hero says:

      5 stars
Nice! I also used to burn them—turns out they go from “almost done” to “oops” real fast. I’ll try 22 minutes next time.

  19. User avatar brooks.heller5 says:

    5 stars
Tried this exactly—perfectly crispy after 23 minutes. The paprika really makes them taste “roasty” instead of just salty. Will make again!

  20. User avatar thea.walker says:

    4 stars
I’m skeptical that 1/2 tsp paprika does anything, but I’ll admit it added a nice smoky vibe. Would make again.

  21. User avatar Willodean Daugherty IV says:

    2 stars
Honestly, pumpkin seeds are pumpkin seeds… I don’t see why this needs a whole recipe, lol. But I’ll admit they were better than my usual plain ones.

  22. User avatar sha.parisian2014 says:

    2 stars
1 cup of seeds? That don’t sound right. Seems too much for just a snack.

  23. 5 stars
Yum! I added garlic powder too. Next level flavor! 🌟

  24. User avatar lee.keebler says:

    1 star
I think I burnt them because I forgot to stir and then they became dust, not seeds. My bad but yeah… watch the time.

    1. User avatar stephen.farrell9 says:

      5 stars
Wait… “dust, not seeds” is a sign the oven ran too hot. I bake mine more like 250°F and stir every 5-7 minutes. Your warning is real though—thanks!

    2. User avatar saul.macgyver45 says:

      4 stars
Ugh, I’m sorry 😅 but honestly 100% relatable—stirring is everything with seeds. Next time set a timer halfway and keep an eye on them so they don’t turn to dust.

  25. 1 star
Pumpkin seeds??? Yuck! Who eats those? I only like candy, lol.

    1. User avatar Hotblack Desiato's bodyguard says:

      4 stars
Haha, candy is good but you gotta try these! They’re super crunchy and so easy to make.

  26. 4 stars
Can you use other seeds? Like sunflower? Cuz I no like pumpkin.

  27. User avatar ethan.gleason says:

    5 stars
These are the BEST roasted pumpkin seeds ever! I can’t believe how easy it was. I added a bit of garlic powder too!

  28. User avatar odis.green2 says:

    2 stars
I tried this and I don’t know if I did something wrong, but mine burnt in 15 minutes. 🤷‍♂️

    1. 4 stars
Maybe you had your oven too hot? Mine took longer too, but they turned out yummy! 😊

  29. User avatar Draugr Overlord says:

    4 stars
Simple and tasty. I didn’t have paprika so I just used extra salt and they still slapped (in a good way).

  30. User avatar jenae.schaden says:

    2 stars
lol i forgot to toss after oil and they stuck together a bit. But once I spread them again at roasting, they were edible at least. 😅

    1. User avatar agustina.bernier28 says:

      5 stars
Hey, that happens! Tossing is the difference between “clumpy” and “crunchy.” Glad you saved them at roasting 😄

  31. 5 stars
These came out super crispy and way better than the store-bought kind. I used smoked paprika and it added a nice little kick. Will definitely make again!

  32. User avatar tissues_with_issues says:

    3 stars
Do you have to use olive oil? I’m out and only have vegetable oil.

    1. 2 stars
I dunno, does it really matter? I thought oil is oil…just use what you got.

    2. User avatar tommie.stoltenberg82 says:

      4 stars
Yeah, you can totally use vegetable oil instead of olive oil. It’ll still taste good!

  33. User avatar arnold.buckridge95 says:

    4 stars
1 cup? That’s like, not even enough! I used 5 cups! Yum! More seasoning next time though.

    1. User avatar Arnbjorn says:

      4 stars
5 cups?! Wow, that’s a lot! I feel like it might be too much, but if you like it, good for you! Maybe your oven temp was different? 😂

  34. 3 stars
Are pumpkin seeds even healthy? I heard they can be bad if not washed well.

  35. User avatar pete.will2026 says:

    5 stars
Honestly? Way better than store-bought. The salt clings well and the flavor is way more “toasty.” Going to make a big batch again.

  36. 5 stars
I added a pinch of cayenne and paprika—10/10. Would also be good on salads or yogurt.

  37. User avatar bertram.blick57 says:

    3 stars
Easy to make, but I think I overdid the salt. Next time I’ll try without it. Still decent!

  38. User avatar Slartibartfast says:

    5 stars
These came out super crunchy! I used smoked paprika and it gave a nice, savory kick. Great snack for movie night.

    1. User avatar rolanda.schumm says:

      5 stars
Glad they turned out crunchy for you! Movie-night snack perfection 😄 Smoked paprika is such a great upgrade—nice savory kick.

  39. User avatar harvey.torp says:

    3 stars
Mine were tasty but a little too salty. Next time I’ll start with 1/2 tsp and taste as I go.

  40. User avatar kelly.flatley37 says:

    2 stars
Meh, kinda bland. Didn’t taste much difference with paprika. I’ll stick to store bought ones.

  41. User avatar Paul "Muad'Dib" "Usul" Atreides says:

    4 stars
Could you air-fry these? I don’t have time for oven stuff today. Still, recipe seems solid.

  42. User avatar kassandra.rempel says:

    5 stars
These are dangerously snackable. I tossed them in a bowl and ate half before they even cooled. Would love a spicy version with cayenne next.

  43. User avatar Frodo Baggins says:

    5 stars
Loved them! Simple and delicious! Perfect for munching while watching TV.

  44. User avatar Slaughterfish says:

    2 stars
Meh. Tastes like plain seeds with seasoning. I wanted more flavor, maybe add garlic powder or something.

  45. User avatar tasha.will45 says:

    3 stars
There’s not enough flavor, I’d suggest adding more seasonings next time. Just meh for me.

  46. User avatar catina.baumbach1995 says:

    4 stars
Great snack! My kids love them. I added some garlic powder instead of paprika and they turned out awesome!

  47. 2 stars
I forgot to dry them after cleaning and they came out kind of chewy 😕 but the seasoning still tasted nice.

  48. User avatar nathan.bosco42 says:

    3 stars
I used coconut oil instead of olive oil, and they didn’t taste good. Did I mess up??

  49. User avatar wanda.kulas says:

    2 stars
They burnt way too fast! I thought I was following the recipe. I won’t try again.

  50. User avatar jaymie.russel2013 says:

    5 stars
Just made these—so easy and they actually crisp up without turning bitter. The paprika touch is clutch.

    1. User avatar Siona Atreides says:

      5 stars
I made these too! Totally agree on the crisp factor—my last batch always got bitter, but this didn’t. The paprika really makes it pop.

    2. User avatar glenn.hoeger28 says:

      3 stars
Hmm I’m not sure about the 300°F for 25 minutes—mine didn’t really crisp, more like dried. Also I accidentally used smoked paprika and it was kinda strong. Maybe I needed higher heat?

  51. User avatar porpoise says:

    5 stars
These are the best snacks ever! So easy to make. I could eat them all day.

  52. User avatar alisa.lubowitz23 says:

    4 stars
So simple! Even I could manage it. LOL

  53. User avatar magan.hill49 says:

    5 stars
These are sooo good! I didn’t think I could make something this tasty at home. Thanks!

  54. User avatar kari.spinka says:

    5 stars
Best recipe for fall! Great for snacking while watching movies.🍂

  55. 4 stars
My oven runs hot so I dropped it to like 275°F and checked early. They turned out great—small effort, big payoff.

    1. User avatar Cammar Pilru says:

      5 stars
Yes! Totally agree—checking early is the move, especially if your oven runs hot. Also love that “small effort, big payoff” energy 😄

  56. User avatar Hein Noon says:

    3 stars
Not bad, but 300°F feels low—mine didn’t get that “crispy” stage until I roasted longer. Still tasty though!

  57. 5 stars
These made my house smell amazing while cooking! Yum!

  58. User avatar marion.cole48 says:

    4 stars
The instructions say to let cool before serving—important! I tried one hot and it felt kind of chewy. Cooling fixed it.

  59. User avatar lucky777 says:

    3 stars
Not bad! Mine were a little too salty even though I used “to taste.” Next time I’ll go lighter on the salt and maybe add garlic powder.

  60. User avatar King Vegeta says:

    2 stars
Not bad, but honestly, I prefer store-bought chips. More crunch.

  61. User avatar sergio.kuhlman says:

    4 stars
I tried this and my oven runs hot, so next time I’ll lower the time—still edible though. Rookie mistake 😅

  62. User avatar patria.frami5 says:

    4 stars
Pretty simple recipe, but I added some garlic powder too. Gave them an awesome kick! Yum!

  63. User avatar levi.jacobi says:

    2 stars
Umm, I tried this recipe but it didn’t turn out right. The seeds burned in my oven. Maybe my oven is too hot?

  64. User avatar adolfo.goodwin88 says:

    3 stars
Pretty good, but 20-25 minutes felt a bit too long for my oven. Some seeds got a little too dark. Flavor is solid.

  65. User avatar liberal.hero says:

    5 stars
These are the best! I can’t believe how easy it is to make them at home. Flavorful and crunchy!

    1. 5 stars
I tried making these, and they turned out great! Thank you for the simple recipe!

  66. 5 stars
Made these last night—super crunchy and way better than store-bought. I used smoked paprika and it gave a nice little kick.

    1. User avatar kia.lindgren says:

      3 stars
I tried roasting mine but they came out more “toasty” than crunchy. Maybe I didn’t dry the seeds enough? Still tasty, just not that snap.

    2. User avatar khadijah.beatty89 says:

      5 stars
Yes! I love how crunchy these get—my oven runs hot though so I usually start checking around 18 minutes. Smoked paprika sounds awesome.

  67. User avatar basementDweller says:

    5 stars
Wow these are addictive. I ate like half the tray before they even cooled 😅. Next batch I’m adding garlic powder too.

  68. User avatar walker.hackett says:

    4 stars
Super simple recipe! My kids loved helping out. We will definitely make this again.

  69. User avatar antony.parisian72 says:

    5 stars
These turned out *so* crispy! I used a little extra paprika and they had the perfect salty snack vibe. Definitely making again.

    1. 5 stars
Love this! I’m always chasing that extra-crispy crunch, so 20-25 min at 300°F sounds spot on. Going to try with paprika again—your “salty snack vibe” sold me 😄

  70. User avatar emmett.weber says:

    5 stars
I was skeptical at first but my kids loved them! They’re great for snacks during movie night. 🎥🍿

  71. User avatar rosanna.schimmel says:

    3 stars
Tried this recipe and it was easy, but I thought roasted means crispy! Mine were just chewy.

    1. User avatar avril.durgan says:

      4 stars
Maybe you roasted them too long? Mine turned out crunchy, but I checked them often.

    2. User avatar Oswaldo Boyle says:

      3 stars
Crispy? I thought they were supposed to be like popcorn! 🍿

  72. User avatar randa.west52 says:

    4 stars
I used no paprika (allergy) and they still tasted great. Salt to taste worked perfectly for me.

  73. User avatar corazon.smitham2015 says:

    5 stars
    Snack time! 😋

  74. User avatar theresia.parisian1990 says:

    3 stars
I followed it exactly and they came out golden but not very crispy. Maybe my seeds were still damp from cleaning? Still tasty.

  75. User avatar audie.mertz2001 says:

    5 stars
I think 300°F is the key. I tried roasting at higher temp before and they burned. This method is way more forgiving.

  76. User avatar barbera.ritchie says:

    3 stars
Burned mine a bit because I forgot to stir halfway 😭 but even then they tasted good—next time I’ll watch them closer.

  77. User avatar leila.schultz87 says:

    2 stars
150°C seems low for 25 minutes—like how do they get golden without drying out? Mine didn’t brown much at all.

  78. User avatar valene.jerde says:

    1 star
Roasting pumpkin seeds is a waste of time tbh. Just buy them pre-made. Who has time for this?

  79. User avatar aide.waelchi says:

    5 stars
These turned out super crunchy—golden and not burnt at all. I used a little extra paprika and it was perfect with my snack mix.

  80. 2 stars
I followed everything exactly and they were kind of chewy, not crispy. Maybe my seeds were still too wet? Next time I’ll dry them longer.

    1. User avatar shannon.mann43 says:

      5 stars
That sounds plausible—if the seeds weren’t completely dry before roasting, they can turn out chewy instead of crisp. I usually pat mine really well (paper towels) and sometimes even give them 5–10 extra minutes to air-dry while the oven preheats. Also, try roasting a couple minutes longer or roasting a bit hotter (like 325°F) if they’re still not browning by the 25-minute mark.

  81. 4 stars
Pretty good but I thought pumpkin seeds would be more “nutty.” I guess this is more of a basic roasted snack. Not bad at all.

  82. User avatar aurelio.robel75 says:

    3 stars
Pretty good snack, but I think 300°F is a little low? I tried once and they stayed kinda chewy. Maybe my oven runs off.

  83. 4 stars
300°F for 25 minutes feels long, but it worked. Stirring occasionally helped a lot so they didn’t brown unevenly.

  84. 5 stars
These came out super crunchy—golden and not burnt. I added a little extra paprika and it was perfect with my afternoon snack.

    1. User avatar sunny.schmidt1973 says:

      5 stars
Love that! 300°F really does bring out that nice crunch without burning. Extra paprika sounds spot on—might try that next time.

    2. User avatar Akh Va'quot says:

      3 stars
Mine always either burns or turns out kinda chewy, so I’m jealous 😅 What kind of pumpkin seeds did you use—like fresh ones or the shelled store-bought? Also do you stir halfway through?

  85. User avatar arron.flatley1983 says:

    4 stars
Good basic recipe. Mine needed closer to 25 minutes for full browning, but they were crunchy after cooling. Next time I’ll toss them halfway more aggressively so they brown evenly.

    1. User avatar dwain.wilkinson84 says:

      5 stars
Yeah totally—mine also take a bit longer than the “20–25” window if the seeds aren’t fully dry. Crunch factor after cooling makes sense though!

    2. User avatar hanh.abernathy says:

      4 stars
I always burn these a little, so I’m glad you said to stir halfway more aggressively. Next time I’ll keep an eye at 15 min—my oven runs hot 😅

  86. User avatar Falmer Archer says:

    5 stars
These came out *so* crispy—golden and crunchy just like the recipe said. I used smoked paprika and it was a nice little upgrade.

  87. User avatar rashad.mclaughlin97 says:

    2 stars
I tried it, but I guess I didn’t dry them enough. They stayed kind of chewy instead of crispy. Will dry better next time.

  88. User avatar hal.strosin8 says:

    5 stars
OMG! These are so good! I added some garlic powder too, life-changing!!

    1. User avatar adrian.glover5 says:

      5 stars
Garlic powder sounds awesome! I’ll have to try that next time. Thanks for the tip!

    2. 2 stars
I dunno, adding garlic to pumpkin seeds? Seems weird. They’re fine as is.

  89. User avatar ward.prosacco1990 says:

    4 stars
These are super easy. I used toasted seeds I bought already and followed the steps anyway—still turned out great.

    1. 5 stars
That’s awesome—glad they still turned out great even with toasted seeds. Thanks for sharing!

  90. User avatar fredrick.mclaughlin1995 says:

    3 stars
Too much salt! I think it ruined the flavor. Next time I’ll use less.

    1. User avatar Katelin Thompson says:

      4 stars
I guess everyone has different tastes! I actually thought the salt was just right. Maybe try reducing a bit but not too much! 😋

  91. User avatar magali.weimann says:

    2 stars
Honestly kinda boring without extra spices. Salt + paprika is fine, but I need more flavor—maybe cumin or chili powder.

    1. User avatar risa.fadel says:

      5 stars
Totally agree—salt + paprika is okay, but cumin or chili powder really wakes them up. I’d also try a pinch of garlic powder and smoked paprika.

  92. User avatar nubia.stroman says:

    5 stars
I thought paprika was optional, but I added it anyway and now I’m addicted. Couldn’t stop eating. 10/10 snack behavior.

  93. User avatar smartestRedditor says:

    3 stars
Pretty good. But do we HAVE to put oil on them? I just used a bit of water.

  94. User avatar smartestRedditor says:

    4 stars
Pretty good snack. The paprika was a nice touch, but next time I’ll use a bit less salt—my batch tasted salty fast.

  95. 3 stars
Not bad, but I always burn mine lol. Also I forgot to dry the seeds and they splattered a bit. Lesson learned: dry them and watch the last 5 minutes.

Haha same—mine usually goes from “golden” to “why are these smoking” real fast. I like your note about the last 5 minutes though.

So the seeds splattered bc you didnt dry them? Makes sense. I’ve always just rinsed and chucked ’em in. Gonna try drying next time—also I forget to stir so that’s probably why I burn them.

Why does it say let cool? I ate them hot and they were still crunchy, so maybe that step is optional…

Optional maybe? I always eat right away and mine are crunchy too. Like, if you roast long enough, they’ll be fine—cooling is just extra insurance.

Yeah I think the “let cool” is mainly for crunch. When they first come out they’re still a bit steamy and softer, then they crisp up as they cool.

Mine burned slightly at 25 minutes even though I stirred. I think my oven runs hot, so I’ll start checking closer to 18–20 next time.

These are dangerously addictive. I ate the whole bowl standing up in the kitchen 😂

These are delicious but I overdid the oil. The seeds were a bit greasy. Still, the flavor was there!

Glad you still got the flavor even with extra oil! Next time try 1–1/2 tbsp max and stir halfway so they crisp up instead of getting greasy.

Mine took closer to 30 minutes to get golden brown, but once they hit that crunch level they were gone fast. Next time I’ll stir more often.

Crunchy and addicting! I added a pinch of cayenne too and they came out golden exactly like I hoped.

Crunchy is right—adding cayenne is such a good idea. Did you do it with the paprika too, or swap it in?

World’s smallest meal prep win. Cool, crunchy, and way cheaper than store-bought. I’ll be roasting a whole batch next weekend.

300°F seems low? I feel like they should crisp faster at higher heat, but they did get golden eventually. Flavor is simple and nice.

I used a full tablespoon of salt by mistake… not recommended 😅 Still, the texture was great. Salt amount matters a lot.

Pretty good and easy, but mine browned faster than 20 minutes—maybe my oven runs hot. Stirring more often helped.

Wow. Honestly better than store-bought. Five stars.

Agreed—these are way better than the packaged ones. I love that they actually crisp up instead of staying chewy.

Mine came out a little darker than expected (oops, I left them 5 min too long), but honestly still good. Next time I’ll watch closer at the end.

Not gonna lie, I didn’t expect much from pumpkin seeds, but they’re actually addictive. I keep reaching for them.

I followed the steps but my seeds were kinda chewy, not fully crispy. Maybe I didn’t dry them enough before roasting—still tasty though.

Totally sounds like a drying/time issue. If the seeds were even a little damp, they’ll roast more chewy than crispy. Next time, try drying longer (or patting them extra well) and roast until they’re a deeper golden—also stirring a bit more often helps them crisp evenly. Glad they were still tasty though!

I followed it exactly, but mine were more chewy than crispy. Maybe my seeds weren’t fully dried? Still tasty though.
