425°F for 25-30 mins might not be enough for my pumpkin—mine always takes way longer. Otherwise looks good though.
Totally fair—pumpkin size/thickness makes a big difference. I usually find 25–30 mins is closer to “small cubes” done, but if yours runs bigger it can easily take longer. I’d roast until you can easily pierce a piece with a fork and they’re browning at the edges.
