Roast Lamb

December 11, 2024

Roast lamb is a timeless dish that never fails to impress. Whether it’s for a special holiday, a family gathering, or a Sunday dinner, this flavorful and tender meat is the epitome of comfort and elegance. The rich, succulent taste of lamb, paired with the aromatic herbs and spices, creates a dish that’s both hearty and refined.

To prepare a classic roast lamb, start with a bone-in leg of lamb or a rack of lamb – both cuts offer tender meat with a fantastic depth of flavor. The key to a perfect roast is in the seasoning. A simple yet delicious blend of garlic, rosemary, thyme, olive oil, salt, and pepper works wonders, infusing the lamb with an irresistible aroma while it roasts. For an added depth of flavor, you can make small slits in the lamb and insert slices of garlic or sprigs of rosemary to ensure that every bite is packed with fragrant herbs.

Before roasting, allow the lamb to come to room temperature. This ensures it cooks more evenly. Coat the lamb with the seasoning mix, massaging it into the meat to enhance the flavor. Place the lamb in a preheated oven and roast it at a high temperature for the first 15-20 minutes to develop a beautiful, caramelized crust. Then, lower the temperature and continue roasting until the lamb reaches your desired level of doneness, whether it’s medium-rare, medium, or well-done.

Roasting lamb is all about balance – achieving that perfect combination of a crispy, flavorful exterior and a juicy, tender interior. For an extra layer of richness, you can occasionally baste the lamb with its own juices or a bit of white wine or broth while it roasts.

Once the lamb is done, let it rest for 10-15 minutes before carving. This allows the juices to redistribute, ensuring every slice is tender and moist. Serve with a variety of sides like roasted vegetables, mashed potatoes, or a fresh mint sauce to complement the rich flavor of the lamb.

Roast lamb is a dish that always feels special but can be surprisingly simple to prepare. Whether you’re a seasoned cook or trying it for the first time, this meal is sure to leave a lasting impression on anyone who’s lucky enough to enjoy it.

I followed the recipe but it came out way too tough! I think I overcooked it. Is 1.5 hours too long? I thought it would be juicy. 😕 2 stars.

    1. User avatar Colin the Security Robot says:

      4 stars
1.5 hours should be enough for medium-rare. Maybe the oven was too hot? Can’t blame the recipe completely.

    2. 3 stars
You probably overcooked it, yeah. But sometimes meat can be tough no matter what. I had my share of tough lamb too. 🤷‍♂️

  2. User avatar Chanel Gutmann says:

    5 stars
Absolutely delicious! I made this for my family last weekend and they couldn’t stop raving about it. The garlic and rosemary really shine! 5 stars!

    1. 5 stars
That sounds amazing! I love lamb, but I always thought it would be too hard to make. Maybe I’ll give it a try now!

    2. User avatar dorine.cummerata1988 says:

      2 stars
But wait, isn’t lamb kinda greasy? I dunno, seems like too much fuss for meat. I’d rather just grill chicken.

  3. User avatar ambrose.jenkins says:

    3 stars
This lamb was OK, but I’m used to making it with a bunch of spices… This felt a bit plain. Next time, I might add some chili flakes! 3 stars.

  4. User avatar rheba.quigley32 says:

    2 stars
I don’t know about this. My lamb was dry and tough. Maybe I overcooked it? Not sure I’ll try it again.

  5. 5 stars
This recipe is a game changer! The lamb turned out so juicy and flavorful. Will definitely make it again!

  6. User avatar jeane.bednar says:

    4 stars
180°C seems a little low? My lamb browned slow, but the inside was still juicy. Next time I might crank to 200°C for the first 20 minutes.

  7. User avatar Glenda Hackett says:

    1 star
Roast lamb? Nah, I only do beef. Pass.

  8. User avatar chantay.crist says:

    2 stars
Mine came out too salty—next time I’m cutting the salt in half. Other than that, the flavor was good. Maybe my salt was extra salty? lol.

  9. User avatar shelley.kautzer35 says:

    3 stars
I followed the instructions but it was too salty for my taste. Maybe I added too much salt? 🤔

  10. User avatar blossom.lehner89 says:

    5 stars
Yummy! I added some lemon zest for extra zing. Will make again for sure!

  11. User avatar isidro.gorczany13 says:

    4 stars
My thermometer said 60°C and I freaked out, like is this safe?? Then it was fine and tender. Guess I overthink things.

    1. 5 stars
Lol I’d freak out too 😅 60°C sounds scary until you remember you’re aiming for medium-rare. If it turned out tender and it was right on temp, you’re good. Resting also helps a ton.

  12. User avatar marlys.green says:

    5 stars
I followed this pretty much exactly—garlic + rosemary smelled amazing. Medium-rare at ~1.5 hours was spot on for my 1.5 kg leg. Resting time really helped.

  13. User avatar Siona Atreides says:

    5 stars
Delicious and easy to follow! I’m no chef but I nailed this one!

  14. User avatar jonathan.trantow38 says:

    2 stars
Lamb is so tough to cook right. Mine came out dry. I’m skeptical of this recipe!

  15. User avatar larae.hyatt says:

    5 stars
This roast lamb was the star of our family dinner! Everyone loved it!

  16. User avatar charlene.berge1956 says:

    5 stars
Wow, easy and flavors were on point. Five stars.

  17. User avatar chantel.hahn says:

    4 stars
Isn’t 60°C too low? I thought lamb needs to be higher temp? Only chefs know I guess.

  18. 4 stars
Good flavor, but I think 1.5 hours was a bit short for my oven. I ended up closer to 1 hr 45 and it still hit the temp I wanted. Still, the seasoning ratio is solid.

  19. User avatar rigoberto.romaguera2023 says:

    5 stars
Honestly the simplest recipe, and it tastes like I tried way harder than I did. Would make again for sure.

  20. User avatar Corrupted Shade says:

    5 stars
Garlic + rosemary is always a winner. I used dried rosemary because I was out of fresh and it was still good.

  21. 3 stars
Can someone explain why there’s garlic? Isn’t that like a big no for lamb???

  22. 4 stars
Honestly the seasoning is basic but it works. Next time I’ll add a squeeze of lemon before roasting for brightness. Resting 15 mins helped a lot.

  23. User avatar Vladimir Harkonnen says:

    3 stars
Too salty for my taste. I might cut back on the salt next time.

    1. User avatar Ra'zhinda says:

      4 stars
I totally get what you mean! Salt can really overpower the flavors. Maybe try using herbs instead for seasoning next time!

  24. User avatar claud.schiller2022 says:

    3 stars
The instructions are good, but I wish it said what pan size to use and whether to cover at first or not. I guessed and it turned out fine, just not as browned as I hoped.

  25. User avatar liberal.hero says:

    3 stars
I followed it pretty much exactly, but my lamb was more medium than medium-rare. I’m not sure if my thermometer was off or if the leg was thicker. Either way, tasty though.

  26. User avatar Kaepora Gaebora says:

    4 stars
I don’t even like lamb usually but this was pretty good. Might have to try more lamb recipes now.

    1. 5 stars
I’m glad you liked it! Lamb can be tricky, but this recipe really brings out the flavor. Give it another try!

    2. User avatar sherika.okon says:

      2 stars
I dunno, lamb kinda tastes like the farm to me. Not sure I’d try it again. But if you liked it, great!

  27. User avatar mistie.hermann says:

    3 stars
I don’t know, the timing seems off. Mine came out a bit tough. Might be my oven though!

  28. User avatar sol.sauer17 says:

    3 stars
I substituted the lamb for chicken LOL. Still was good! Maybe should be called roast chicken.

  29. 4 stars
The flavor was great, but I wish the timing was a bit more specific. Mine took closer to 1 hour 50 minutes depending on thickness.

    1. User avatar darius.wintheiser says:

      5 stars
Totally agree—“about 1.5 hours” feels too vague for something like lamb. I usually go by internal temp + how thick the roast is. Good catch on yours taking ~1h50!

    2. User avatar Colleen Cardd says:

      4 stars
Mine took like 2 hours the first time too. I think thickness and whether the lamb is room temp makes a big difference. Honestly the temp check is the only part that can’t lie 😅

  30. User avatar ela.cremin1964 says:

    5 stars
    simple and delicious!

    1. 5 stars
Totally agree—this is the kind of roast that tastes fancy without being fussy. Garlic + rosemary always wins 😋

  31. User avatar Claud Graham says:

    2 stars
Meh. Just tasted like meat. I expected something more flavorful. 2 stars.

  32. User avatar ShanksOnePiece says:

    3 stars
Lamb? No thanks. I prefer beef. But my neighbor loved it so it must be good.

    1. User avatar kathy.turcotte1993 says:

      4 stars
I totally get that! Beef is a classic. But this lamb recipe might change your mind! 😄

  33. 5 stars
Made this tonight and it was perfect. The garlic-rosemary combo smells amazing while roasting—resting it 15 minutes really helped the juices stay put.

  34. User avatar ouida.jones99 says:

    4 stars
60°C?? That sounds undercooked—my mom would not allow it. But I tried it with a thermometer and wow… it was actually right.

  35. User avatar Hillman Hunter says:

    5 stars
I actually used a leg of goat instead and it turned out fabulous!

  36. User avatar Zarniwoop says:

    2 stars
I must’ve messed up somewhere. Mine came out way too dry. I followed the instructions exactly.

    1. User avatar jan.mante29 says:

      3 stars
I dunno, mine was juicy! Maybe your oven runs too hot? Or try basting it next time.

    2. User avatar merri.koch says:

      4 stars
Sorry to hear that! Sometimes lamb can dry out if it’s not enough fat or if it’s cooked too long. Did you use a meat thermometer?

  37. User avatar margo.hermiston43 says:

    1 star
How long do I cook it for if I wanna well done? My family likes it like that.

  38. User avatar jeffrey.hegmann1961 says:

    1 star
Wait, do you really need to let it rest before carving? Seems like a waste of time.

    1. User avatar mathWizard says:

      5 stars
Letting it rest is super important! It helps keep the juices in, otherwise, it’ll be dry. Trust me, it’s worth the wait!

  39. User avatar alexis.nikolaus says:

    3 stars
Not bad! I didn’t have fresh rosemary so I used dried and it tasted a little sharper. Also, I minced the garlic way too chunky—wouldn’t do that again 😅

  40. User avatar azalee.powlowski says:

    5 stars
This roast lamb was absolutely delicious! So juicy and flavorful, my family loved it!

  41. User avatar dorothy.boehm60 says:

    5 stars
This recipe was awesome! The lamb turned out so juicy and flavorful. My family loved it!

    1. User avatar brooks.walker says:

      5 stars
Sounds delicious! I’m glad it turned out well for you. I’m gonna try this recipe next!

  42. 3 stars
Good, but I prefer beef. Lamb just isnt for me.

  43. User avatar sung.murphy says:

    5 stars
Yummy! But why does everyone say lamb is hard to cook? This was simple!

    1. User avatar Mr. Alicia Hauck says:

      5 stars
I completely agree! Lamb is super easy to cook, just follow the steps. I’m glad it turned out tasty for you!

    2. User avatar Rocky Rhoades says:

      4 stars
Yeah, I find it confusing too. People overthink it, I guess? But it’s just meat. Gotta watch the temp tho!

  44. User avatar trinidad.green50 says:

    2 stars
My rosemary went brown lol but it still tasted fine. The garlic got a little too strong. Maybe 3 cloves next time? Otherwise solid recipe.

    1. 3 stars
I dunno, 180°C for 1.5 hours seems a bit short for 1.5 kg bone-in. Maybe that’s why the garlic stayed punchy? I usually do 160°C longer or baste. But hey if it was still good, keep notes!

    2. User avatar rex.borer1990 says:

      5 stars
Lol the rosemary going brown is super normal when it hits the heat—glad it still tasted fine! If the garlic felt too strong, 3 cloves sounds like a great tweak.

  45. User avatar Ms. Marilee Robel says:

    3 stars
I used dried rosemary because I didn’t have fresh (oops) and it was still decent. Could’ve been more fragrant. Salt and pepper ratio felt okay.

  46. User avatar Questular Rontok says:

    2 stars
I made this but forgot to preheat the oven. Oops, guess it’s a cold lamb tonight! 😂

    1. 2 stars
Cold lamb sounds ew, how does that even taste? You might as well just eat it raw! 😂

    2. User avatar jan.connelly81 says:

      4 stars
Haha, at least you made a funny story out of it! But seriously, don’t forget to preheat next time! 😉

  47. User avatar karie.vonrueden6 says:

    5 stars
This was an amazing recipe! The lamb turned out so tender and juicy. Definitely a winner at our family dinner!

  48. User avatar basementDweller says:

    5 stars
    Yum! Best dinner ever! 😍

  49. User avatar guy.ortiz93 says:

    4 stars
Yummm! My family devoured this! A bit too much rosemary for my taste though.

  50. 5 stars
Yummy! My kids loved it! I just threw some carrots in the pan too and they turned out delish!

  51. User avatar kevin.kassulke says:

    2 stars
Not gonna lie, 60°C is scary low to me. I usually do higher temps for safety. I know thermometers are “the thing,” but I’m cautious.

  52. User avatar hanh.langworth says:

    4 stars
Simple and delicious! Used some mint jelly on the side and it was perfect. Thanks for sharing!

  53. User avatar anonymous_hacker says:

    5 stars
Made this last night—garlic + rosemary smelled incredible. Mine hit closer to 62°C at 1.5 hours, but it was still nicely pink. Resting time really matters!

    1. 4 stars
62°C at 1.5 hours sounds about right for a thicker leg. I do 180°C too and usually pull it around the same range, then rest. Nice pink!

    2. User avatar rudy.mcglynn1976 says:

      5 stars
Yes!! Garlic + rosemary on lamb is unreal. Mine always comes out way better when I don’t rush the rest—15 minutes is key. Great call on the 62°C too.

  54. User avatar Rob McKenna says:

    4 stars
Really easy to make! Didn’t have rosemary, used thyme instead and it still tasted great. 👍

  55. User avatar russel.streich1969 says:

    5 stars
This roast lamb recipe was to die for! So juicy and flavorful. Can’t believe I made it myself!

  56. User avatar brendan.mckenzie40 says:

    4 stars
Lamb is so underappreciated! Really loved the flavors in this. Will make again for sure!

  57. User avatar niesha.koepp says:

    5 stars
This roast lamb recipe is fantastic! I followed it exactly and it turned out perfectly. So juicy and flavorful!

    1. 5 stars
I’m glad it worked out for you! This recipe is a keeper! 😋

  58. User avatar federico.oreilly says:

    4 stars
180°C feels a bit low? I baked mine closer to 190°C and it browned better, but the inside was still juicy. Maybe it depends on the oven.

  59. User avatar collin.champlin says:

    3 stars
Too much garlic for my taste. Next time, I’ll cut it down a bit.

  60. 3 stars
I’m not sure what I did wrong, but mine was pretty tough. Maybe I overcooked it? I followed the temp though.

  61. User avatar ShanksOnePiece says:

    5 stars
Best lamb ever! My grandma used to make this, brought back good memories. ❤️

  62. User avatar terina.russel1966 says:

    2 stars
Meh. Too garlicy for my taste. Also my oven runs hot so it browned before it was done, lol. Would rate higher if milder.

  63. User avatar Super Saiyan 2 Vegeta says:

    4 stars
Simple and solid. I wish the recipe mentioned whether to cover it for part of the roasting, but uncovered worked fine for me anyway. Great flavor.

  64. User avatar sang.marquardt2002 says:

    3 stars
It was good but took longer than the recipe said. Mine was overdone.

  65. User avatar irving.oreilly2021 says:

    5 stars
    Delicious!!!

  66. User avatar terrance.tromp66 says:

    3 stars
I don’t have fresh rosemary, only dried—still tasted decent though less punchy. Next time I’ll probably use more dried to compensate.

    1. User avatar mathWizard says:

      5 stars
Good to know! Dried herbs are definitely milder—i usually use like 2–3x the amount when swapping for fresh. Glad it still came out decent 😊

    2. User avatar stefany.tremblay16 says:

      3 stars
Mmm roast lamb. 180°C for 1.5 hrs on a 1.5 kg leg seems a bit short to me though—did you check temps in the thickest part? Dried rosemary could totally explain the “less punchy.”

  67. User avatar meryl.sawayn20 says:

    5 stars
Made this last weekend—so good. The rosemary + garlic smell when it’s roasting is unreal. I pulled it at about 58–60°C and it came out beautifully medium-rare.

    1. User avatar lawerence.gutmann says:

      5 stars
Yes!! That rosemary-garlic combo is unreal 😍 I’m always obsessed with the smell too. Great call on pulling it around 58–60°C—definitely saves it from going over.

  68. User avatar ocie.hickle says:

    2 stars
Way too much effort for just lamb. Also 15 min resting seems too short—should be at least 30 for me. But I’ll admit it looked nice.

  69. 3 stars
Not gonna lie, I skipped the roasting pan and used a casserole dish—my bad. It browned unevenly. Recipe itself is solid, just need the right setup.

    1. User avatar bert.oconnell2 says:

      5 stars
Totally get it—roasting pans help a lot with airflow and even browning. Your comment makes sense: casserole dishes can steam a bit. Next time, maybe still use the casserole but crank the oven slightly or place it on a wire rack. Glad the rub was still solid though!

  70. User avatar nicki.howell26 says:

    2 stars
I’m not a fan of lamb. Should’ve tried chicken instead.

  71. User avatar Anjanette Donnelly says:

    3 stars
Wait—60°C is medium-rare? I always go by feel. Mine hit 60 and it was more like rare to me. Still, very juicy and not dry.

  72. User avatar junita.padberg37 says:

    5 stars
Absolutely delicious! I doubled the garlic and added some lemon juice for a zing. Will make again!

  73. User avatar lucas.marquardt79 says:

    4 stars
Pretty straightforward, like I can actually do this on a weeknight. I used dried rosemary because that’s what I had and it still tasted great. 4/5 would recommend.

  74. User avatar Draugr Thrall says:

    2 stars
Not sure what went wrong but it came out dry. Maybe I cooked it too long.

  75. 3 stars
I think using dried rosemary would work too, right? Not everybody has fresh herbs at hand.

    1. User avatar Vernetta Leuschke says:

      4 stars
Dried rosemary should work, but it won’t taste the same! Fresh herbs are the best for flavor.

  76. User avatar Draugr Scourge says:

    1 star
Roast lamb? More like roast disappointment. The meat was tough and dry. 1 star just for the smell.

    1. User avatar Malorie MacGyver says:

      3 stars
Sorry to hear that! I thought the recipe was pretty straightforward. Maybe your lamb just needed more cooking time?

  77. 4 stars
Easy to make if you follow instructions. I didn’t have fresh rosemary so I used dried, still okay.

    1. User avatar genie.pfeffer says:

      2 stars
But like, how can you call it roast lamb if you don’t use fresh rosemary? 🤔

    2. User avatar Trin Tragula says:

      4 stars
I also used dried herbs before and it turned out great! Not much diff with fresh if you ask me.

  78. User avatar garrett.mohr1980 says:

    4 stars
I was skeptical about the garlic but wow! It gave it a nice kick! Will make again 🙂

  79. User avatar kerstin.powlowski19 says:

    2 stars
Meh. Tasted fine but I expected more wow. Also rosemary was overpowering for me—maybe chop finer or use less.

    1. User avatar william.erdman33 says:

      4 stars
Totally get that—rosemary can be really punchy. I’ve found chopping it super fine (or even giving it a quick crush) helps distribute it without tasting like you only ate the herb.

  80. 5 stars
Omg this was awesome!!! 🤤 Can’t believe how easy it was, never thought it would taste this good.

    1. 5 stars
So glad you loved it! 😉 It’s one of my favorites too!

  81. User avatar Hugo Collins says:

    2 stars
180°C for leg of lamb? That seems low to me. I usually go hotter and sear first. Not saying it’s bad, I just don’t trust the timing.

  82. 5 stars
So good, just add some mint sauce and it’s perfect! Yum!

  83. 4 stars
    Looks great!

    1. User avatar bobby.oconnell says:

      5 stars
Thanks! 😊 The rosemary-garlic rub smells amazing while it roasts.

  84. User avatar Marge Innastraightline says:

    3 stars
I followed everything and my lamb was still kinda pink but also chewy? Not sure if my leg was larger. Maybe my oven runs hot. Still tasty tho.

  85. User avatar Marshall Kuhn says:

    4 stars
I thought it would be hard to cook but it was pretty simple!

    1. User avatar yuriko.carroll70 says:

      3 stars
Hard? It’s just meat with some stuff on it, lol. Anyone can do it if they try!

    2. User avatar joshua.nolan40 says:

      5 stars
I’m glad to hear that! It really is easier than it looks. Did you enjoy the flavors?

  86. 4 stars
The flavor was great but I over-salted a bit because I forgot it calls for 1 tsp. Next time I’ll be careful. Resting 15 minutes helped a lot.

  87. User avatar mel.cormier says:

    5 stars
This turned out incredible—garlic and rosemary smell was unreal. I did pull it a few minutes earlier and it was perfectly medium-rare. Great simple method!

    1. 5 stars
Yes!! The garlic-rosemary combo is unreal—glad you nailed the medium-rare too. Pulling it a few minutes early is such a pro move.

  88. User avatar isaias.johns96 says:

    4 stars
Pretty straightforward and the spice mix tastes legit. I didn’t have fresh rosemary so I used dried (way less amount) and it still worked.

  89. User avatar wendell.heaney says:

    4 stars
I was a bit skeptical at first, but this actually was pretty good. 1.5 hours seems long tho; maybe should’ve checked sooner.

  90. User avatar moises.wisoky95 says:

    3 stars
Too much garlic for my taste. Might skip that next time.

  91. User avatar will.anderson says:

    4 stars
I thought lamb was supposed to be super fatty? It was actually pretty lean. Anyone else notice that?

  92. 4 stars
Easy to make, but I used dried rosemary and it didn’t taste as fresh. Still nice overall.

    1. 2 stars
I dunno… dried stuff just ain’t the same. $@!# yeah, it’s easy but fresh is best! You’d be missing out otherwise!

Fresh rosemary definitely makes a difference! I’m glad you still enjoyed it though. Maybe give it another shot with fresh herbs next time!

  93. 4 stars
Easy to make and tastes great! Will make again for sure.

  94. 2 stars
Why is everyone raving? This was way too garlicy for my taste. My family didn’t like it either. Never again!

I love garlic, so this recipe sounds amazing to me! But I get that not everyone likes it strong. Maybe you can use less next time?

  95. User avatar gwenn.cronin says:

    3 stars
Lamb was tasty, but 1.5 hours for 1.5 kg seems too general. Also, I forgot to mince garlic fine and it got a bit punchy. Still ate it all though 😅

  96. User avatar eldon.dietrich0 says:

    5 stars
Perfect roast, served it with mint sauce and it was amazing!

  97. User avatar kecia.baumbach4 says:

I followed it pretty much exactly, but 60°C at 180°C felt a little fast—maybe my oven runs hot. I ended up roasting another 10-15 minutes and it turned out good.

  98. 4 stars
Leg of lamb bone-in—sure, if you want to wrestle a pan of meat for an hour and a half. Delicious though. Also I forgot to mince garlic and it was more like chunky garlic confetti.

Made this tonight—super flavorful. The garlic-rosemary rub smells incredible and the lamb came out juicy after resting. I pulled it at a slightly higher temp and it was still great.

  100. User avatar vincent.wolff1964 says:

    5 stars
This is the first time my lamb didn’t come out dry. The rub actually stuck and the rest period mattered. Will repeat.

This is a little too salty for my taste. I followed the recipe exactly but next time I’ll cut the salt down and maybe add lemon zest. Otherwise tasty and easy.

  102. User avatar freddie.ritchie68 says:

Made this tonight—so easy and the garlic-rosemary combo is perfect. I pulled it at about 62°C and it was beautifully medium-rare. Resting time helped a lot.

    1. 5 stars
Yes! The garlic-rosemary rub is legit. I always forget how much the rest time matters until I do it—so glad yours came out medium-rare.

    2. 3 stars
62°C? Wow that’s closer to medium than I’d think. I’ve cooked lamb before and 60°C sounds kinda risky to me, but if it tasted good then fair enough lol.

  103. 3 stars
Hard to mess up lamb, right? But this one actually requires a lot of attention, maybe a 3.

    1. User avatar anonymous_hacker says:

      4 stars
I totally agree! Lamb needs a bit of care to get it just right. But once you nail it, it’s so worth it!

  104. User avatar nolan.langosh says:

    3 stars
Not bad, but 60°C for medium-rare felt too low to me—still turned out a bit pink and juicy though. I’m not sure I trust meat temps.

    1. User avatar Torchbugs says:

      4 stars
Totally get you—60°C sounds low if you’re used to beef temps. But lamb can be forgiving; if it’s still pink and juicy after resting, that’s usually a good sign. Do you calibrate your thermometer? Those can be wildly off.

    2. User avatar rich.landlord says:

      3 stars
I don’t trust temps at all 😅 I always go by feel and time. Last time my “medium rare” turned out pinkish and I was like… cool? I guess 15 min rest matters a lot too.

  105. User avatar franklyn.treutel59 says:

    5 stars
The seasoning ratio is nice, but I ended up using a little more rosemary because I’m obsessed. Also, I couldn’t mince the garlic that fine—still turned out great.

  106. User avatar reed.schmitt2021 says:

Mine took longer than 1.5 hours to reach 60°C, but that’s on me for not checking with a thermometer sooner. When it finally hit temp, it was perfect.

  107. User avatar fletcher.koelpin says:

    5 stars
    So easy. Five stars!

  108. User avatar oPandariaNo says:

180°C for 1.5 hours feels a little vague with bone-in lamb. Mine needed closer to 1 hr 45 mins before it hit temperature. Still tasty though.

  109. User avatar louie.dietrich says:

    2 stars
I don’t trust that internal temp for lamb—60°C sounds too low to me. I’m usually safer going higher. Anyone else go by time instead?

    1. 5 stars
I get you—60°C feels low at first. But for lamb, 60°C for medium-rare is pretty standard. I still trust the thermometer more than guessing time.

  110. User avatar caron.koss42 says:

    2 stars
Meh. I expected it to taste more “roasty.” It was good, but kind of basic compared to the way my aunt does it with mustard and breadcrumbs.

  111. User avatar danelle.kautzer says:

    3 stars
I tried it and it was… okay. The flavor was good, but mine came out more like medium than medium-rare. Guess I should rest less or pull it earlier.

    1. User avatar brittni.stanton65 says:

      5 stars
Good call on the pull time! If you pull at a lower temp and rest a little shorter, you can usually land closer to true medium-rare. Lamb keeps cooking even after it’s out of the oven.

    2. User avatar coy.mosciski1983 says:

      3 stars
Wait… 180°C for 1.5 hours seems like it might push it past medium-rare, especially if your lamb is thicker. I’d try checking with a thermometer earlier, like at 60°C, then carve sooner. Resting 15 min also carries over a lot.

  112. 3 stars
I followed it exactly and felt like it was a bit too salty. Also, my lamb was browner than the photo in my head… maybe my oven runs hot.

  113. User avatar tod.osinski1990 says:

    5 stars
This turned out amazing—juicy lamb with that garlicky rosemary punch. Resting it 15 minutes really helped.

    1. User avatar mckenzie.brekke12 says:

      5 stars
So glad it worked! The resting makes a huge difference for lamb—keeps it juicy. 😄

  114. User avatar Siona Atreides says:

    4 stars
I think 180°C for 1.5 hours is a bit optimistic for a 1.5 kg bone-in leg. Mine needed closer to 1h45, but once it hit temp it was worth it.

    1. User avatar wendell.conn64 says:

      5 stars
Totally agree—timing is so dependent on the exact leg size and oven quirks. Great point about waiting until it actually hits temp!

    2. User avatar amos.lindgren says:

      4 stars
Hmm 180°C for 1.5 hours feels low to me too. Last time I did bone-in lamb it took way longer, like you said. I’d trust the thermometer more than the clock.

  115. User avatar liberal.hero says:

    3 stars
I messed up and forgot to mince the garlic fine, so I had big chunks. It was still edible, just kinda spicy in spots 😅

  116. User avatar cleo.block47 says:

    3 stars
Not bad, but 180°C seems too low—mine barely browned. I might crank the oven or broil at the end next time.

  117. User avatar carmine.jerde1971 says:

    4 stars
Flavor is good, but 180°C for 1.5 hours felt a bit long/short depending on the size. I would suggest checking temperature earlier and not trusting the time.

  118. User avatar alexander.brown says:

    5 stars
This is basically my go-to roast, but I add chopped onion in the pan. Without onions it’s still tasty; with onions it becomes restaurant-level.

  119. 3 stars
180°C seems low? I usually blast mine at 220°C to get a crust, then lower. Still, the garlic + rosemary mix sounds legit.

  120. User avatar vance.kreiger says:

    3 stars
Not sure about roasting to 60°C for medium-rare. That sounds low? I’m kinda scared to undercook lamb, so I went higher and it was more like medium. Tasty though!

  121. User avatar NAFO.SUPREMACY says:

Pretty solid and simple. I’m always skeptical of “exact” times, but the temp target (60°C) is smart. Would do it again.

    1. 5 stars
Love how simple this is. The rest time + temp target is the part I always forget, so thanks!

    2. 4 stars
“60°C for medium-rare” seems a little low? I usually go more like 63-65°C, but maybe my oven runs hot. Might try next time.

  122. User avatar lore.volkman37 says:

    5 stars
This came out so tender! The rosemary-garlic rub smells incredible while it roasts. I rested it the full 15 minutes and the juices stayed put—would totally make again.

    1. User avatar odell.spencer2021 says:

      5 stars
So glad you mentioned the full 15 min rest—mine was still juicy when I did that too. The garlic-rosemary smell is unreal.

  123. User avatar adam.glover11 says:

    5 stars
    Wow! So good.

  124. User avatar anibal.goodwin15 says:

The flavor is solid, but 60°C for medium-rare felt a little low to me. Mine was closer to medium after resting.

    1. 5 stars
Yeah, 60°C for medium-rare feels a bit on the gentle side. Lamb can carry over heat while resting, so if you’re closer to medium after 15 min, that makes sense.

  125. 5 stars
Made this last weekend—so fragrant from the rosemary and garlic. Mine took closer to 1h50 though, depending on the thickness. Resting helped a lot.

  126. User avatar garret.considine says:

    4 stars
I followed it pretty closely, but I think 1.5 hours was a bit short for my roast. Still tasty though. Next time I’ll check the temp sooner.

  127. 2 stars
180°C seems low… I’m skeptical. I feel like lamb should roast hotter so it gets a crust. Mine looked kinda pale, but the inside was fine.

    1. User avatar Brand-shei says:

      4 stars
180°C does sound gentle, but the roast time matters too. If you’re going for medium-rare (60°C internal), a hotter oven can overbrown before the center catches up. What was your temp reading and pan type? Also resting really helps the inside stay juicy.

    2. User avatar NAFO.SUPREMACY says:

      4 stars
I tried something similar and yeah… it was kinda pale for me too. Next time I’ll blast it at like 220°C for the first 20-30 min for a crust, then drop it back. Probably my oven runs cold though lol. Still tasted good.

  128. User avatar ashlee.tillman27 says:

    5 stars
This is literally the first lamb recipe I didn’t mess up. The garlic and rosemary stuck to the surface and the crust was legit. My family asked for it again.

  129. User avatar chester.ryan says:

    4 stars
I’m skeptical about “60°C for medium-rare” without context. My oven runs hot and I think it’ll overcook unless you check with a thermometer. Still, the seasoning combo is solid.
