Red Velvet Cake

April 24, 2024

Red Velvet Cake is a true classic that has a special place in the world of desserts. Known for its vibrant red color, velvety texture, and deliciously tangy flavor, it’s a cake that brings both beauty and indulgence to any occasion. Whether it’s a birthday, holiday, or just a special treat, Red Velvet Cake never fails to impress.

At the heart of a Red Velvet Cake is its unique flavor. It’s not quite chocolate, not quite vanilla, but somewhere in between. The slight cocoa flavor is complemented by a tangy note from the buttermilk and a hint of vinegar, which balances the sweetness perfectly. The cake is moist, tender, and has a light crumb that practically melts in your mouth.

The key to a perfect Red Velvet Cake is in the ingredients and technique. The cake gets its signature red color from food coloring, which, when combined with the richness of the cocoa and the tanginess of buttermilk, creates a flavor profile like no other. The frosting, typically a cream cheese or buttercream frosting, adds an extra layer of sweetness and creaminess, making each bite even more irresistible.

What makes Red Velvet Cake so popular is its versatility. It’s delicious on its own, but you can also get creative with different frostings, fillings, and toppings. Adding a bit of chocolate ganache, or even decorating it with edible flowers or fresh fruit, can take this cake to the next level. It’s the perfect dessert to bring to celebrations or enjoy as a sweet treat after dinner.

There’s something inherently elegant about Red Velvet Cake, and it’s a dessert that’s perfect for both casual and formal gatherings. With its striking color and rich flavor, it’s a cake that’s sure to be the centerpiece of any dessert table.

This recipe needs more chocolate flavor. It’s too sweet as is. Not my favorite.

  2. User avatar Ra'zhinda says:

    5 stars
This cake is absolutely delightful! The cream cheese frosting takes it to another level. Will definitely make it again!

  3. 5 stars
Made this for a birthday and it was so fluffy. The red color is seriously gorgeous, and the flavor is way better than boxed mixes.

  4. User avatar joaquin.oconner26 says:

    3 stars
Why do people like red velvet? It’s just chocolate cake with red dye! Anyway, I guess it looked pretty, so that’s a plus.

  5. User avatar Brigida Mann V says:

    2 stars
Honestly the ratio feels weird to me: 2 1/2 cups flour and only 2 eggs? It’s delicious though, I just don’t fully trust the science.

  6. 4 stars
Followed the steps exactly and it baked up nicely. Only thing: the cocoa amount felt a little low, so next time I might add 1 extra teaspoon for deeper flavor.

  7. 2 stars
I don’t know why people rave about red velvet. It’s just chocolate cake with food coloring.

  8. User avatar lyle.larkin1997 says:

    3 stars
I’m skeptical about 2 tbsp red food coloring—seems like a lot or maybe not enough depending on brand. Mine was bright red but still tasty. Followed it exactly.

    1. 5 stars
Yeah, 2 tbsp sounds wild until you realize brands vary a lot. I’ve done “red velvet” where it was more pink than red—so your bright red result checks out. Glad you followed it exactly!

  9. User avatar michel.brown1957 says:

Red velvet? More like red mistake! Who puts cocoa powder in a cake? Just doesn’t make sense!

    1. User avatar melissia.emmerich31 says:

      4 stars
Red Velvet is actually a classic! The cocoa adds flavor, not bitterness. Give it another try with an open mind!

    2. User avatar jonelle.kutch says:

      2 stars
Who cares about cocoa? It’s supposed to be red and yummy. Sounds like you just don’t know how to bake right.

  10. User avatar truman.tillman1981 says:

    5 stars
This cake turned out amazing! The color was so vibrant and the taste was heavenly. I can’t believe how easy it was to make!

  11. 1 star
meh. Too much cocoa for me. Also messy 😅

    1. User avatar marlena.zboncak says:

      3 stars
meh is right lol. Maybe your cocoa measurement was off? I’ve found 1 tsp cocoa is fine, but if someone scooped big/packed it, it could turn too chocolatey. Messy is just batter life though 🤷‍♀️

    2. 4 stars
Totally get it—red velvet is usually cocoa-light. I’d cut the cocoa in half next time and see if it matches your taste. Also yeah, batter can get messy if you don’t smooth/portion carefully 😅

  12. User avatar nestor.gusikowski99 says:

    2 stars
I don’t understand why it uses baking soda AND vinegar—wouldn’t that cancel? Maybe I’m missing something, but my batter curdled a bit. Ended up okay after baking, but I’m confused.

    1. User avatar hue.reilly says:

      4 stars
Maybe it’s bc baking soda is basic and vinegar is acidic—so yeah, it sorta cancels, but only in the sense of balancing pH, not stopping the rise. If yours was curdled, check you measured right? Like 1 tsp vinegar and 1 tsp soda—if either was off, it could mess with the texture. Still, red velvet often looks weird in the bowl.

    2. User avatar bettie.hodkiewicz says:

      4 stars
I get the confusion! Baking soda + vinegar don’t fully “cancel.” The soda needs an acid (like vinegar) to release CO2 and help the cake rise. They still react, but not instantly like a neutralizing solution would. Also, if your batter “curdled,” it can happen with buttermilk + acid + eggs—usually it bakes up fine.

  13. User avatar winona.dickinson1954 says:

    5 stars
YUM! The cream cheese frosting takes it to another level. Can’t get enough of this cake.

  14. User avatar sha.barrows13 says:

    2 stars
I tried making this but my cake turned out super dry! I’m not sure what I did wrong. Any tips?

  15. 2 stars
The ingredient list is simple and the steps are easy. I messed up and forgot the vinegar once, but I still ate it 😅

    1. User avatar virgil.reilly says:

      5 stars
Honestly the vinegar probably just adds a little tang—if it still came out good, I’d call that a win 😅 Nice save!

  16. User avatar michiko.beatty2021 says:

    5 stars
This came out so moist and fluffy—exactly what I wanted. The red color is bold (in a good way) and the flavor is legit.

  17. User avatar heath.haley says:

    5 stars
This looks dangerously good. The cocoa + red coloring combo is exactly what I want in a red velvet—moist and rich. Can’t wait to try it with homemade frosting!

  18. User avatar Humma Kavula says:

    4 stars
I followed it pretty close, and mine came out nice, but I had to bake 5 extra minutes. Still super tender though. Next time I’ll sift the flour/cocoa to avoid any lumps.

    1. 5 stars
That’s awesome! I always do extra minutes when ovens run hot/cold too. Sifting the flour/cocoa sounds like a great next step—helps a ton with lumps.

    2. User avatar alan.simonis1965 says:

      4 stars
Hmm “toothpick comes out clean” always seems vague—mine usually comes out a bit fudgy but still sets. Maybe that’s why you needed 5 more minutes? Either way, glad it was tender!

  19. User avatar basementDweller says:

    3 stars
Not really a fan of red velvet, but I gave it a go because my friends love it. It was ok, but I still think chocolate is better.

  20. 3 stars
It was okish. Too sweet for my taste. Maybe less sugar next time.

  21. User avatar kati.lebsack says:

    2 stars
If it says “baking soda” but there’s no baking powder, doesn’t that throw things off? Also my cakes didn’t rise much…

  22. User avatar carl.bartell says:

    2 stars
I tried this recipe and it didn’t come out right! The cake was too dry! What did I do wrong? 😩

    1. 4 stars
I’m sorry to hear that! Sometimes overbaking can cause dryness. Did you check the toothpick test?

    2. User avatar Herb Wolff says:

      3 stars
Maybe u forgot the buttermilk? That helps keep it moist. Try again, you got this!

  23. User avatar shonna.rodriguez70 says:

    3 stars
I think your oven temp should be higher because mine took longer than 30 minutes. After 35-40 it finally tested clean. The cake ended up fine though—just be patient.

    1. 5 stars
Good point—mine always varies a bit with oven type too. I’d definitely start checking around 25-30, but if it needs 35-40 for a clean toothpick, that sounds normal. Glad yours turned out fine!

  24. User avatar Peregrin Took says:

    3 stars
What is ‘1 batch cream cheese frosting’ though? Like, how much? I guessed and it was okay but confusing.

  25. User avatar joetta.brakus says:

    3 stars
Not gonna lie, 2 tbsp red food coloring seems like a lot. My batter looked closer to neon than red velvet, but the flavor was still legit.

  26. User avatar berry.kuhn19 says:

    5 stars
I make this cake every year for my family reunion! It’s a hit every time. ❤️❤️

    1. User avatar hedgehog says:

      5 stars
That’s awesome! I love a good family tradition. 😍 What kind of frosting do you use?

  27. User avatar victoria.schumm37 says:

    4 stars
I had to substitute regular milk for buttermilk and it still turned out fine. Just make sure to adjust the baking time!

  28. User avatar dominica.bernier19 says:

    4 stars
Red velvets the best! I have a family recipe that’s even better. Sorry, not sorry!

  29. User avatar tomas.bernhard says:

    1 star
Never again. My cake tasted like food coloring and vinegar, and the top cracked. Maybe I did something wrong but I’m not chasing it.

  30. 4 stars
This recipe is a keeper! The colors are so nice and festive. Great for birthdays!

  31. User avatar demetra.cummerata2016 says:

    5 stars
Yum, who doesn’t love cream cheese frosting! It was super easy to make, 10/10 would bake again!

  32. User avatar emilia.gerhold65 says:

    4 stars
Mine was a little dense, but I think I may have overmixed after adding the wet ingredients. Still tasted really good with the cream cheese frosting.

  33. User avatar karan.legros25 says:

    4 stars
I was skeptical about the baking soda amount + cocoa powder, but it worked. I used gel food coloring and it still looked great.

  34. User avatar clayton.jerde67 says:

    5 stars
This is the best red velvet recipe! Came out so moist and delicious. My family loved it!

  35. User avatar chana.okeefe says:

    3 stars
Too sweet for my taste. Maybe less sugar next time?

  36. User avatar anonymous_hacker says:

    3 stars
Only 2 eggs? I thought red velvet needed more! 🤔 Anyway, my friend said it was good., I just eat it for the frosting anyway.

  37. User avatar anonymous_hacker says:

    3 stars
I followed the instructions exactly, but my cakes came out a little dense. Not terrible, just not fluffy like I hoped.

    1. User avatar shayna.lebsack1977 says:

      4 stars
Sorry that happened! Dense cakes can come from overmixing (mix just until combined) or too much flour—did you measure by spooning into the cup or scoop-and-level? Also, checking at 25 minutes matters; baking too long can dry them out and feel heavy.

  38. 4 stars
Pretty good, but I think it needed more cocoa. Also mine baked closer to 35 minutes than 25-30, so don’t trust the timer too much. Frosting saved it though 😄

    1. User avatar smartestRedditor says:

      5 stars
Totally agree—mine always takes longer than the recipe says. I’m glad the frosting saved yours 😄 I also add an extra pinch of cocoa for a richer taste.

  39. User avatar liberal.hero says:

    4 stars
I was skeptical about the vinegar, but it really does make a difference. Who knew?

  40. User avatar jodie.leannon1979 says:

    5 stars
Made this for my sister’s birthday—came out super moist and the red color is gorgeous. The vinegar + buttermilk combo really does something. I’d definitely make again!

  41. User avatar Clay Kertzmann says:

    3 stars
Not gonna lie, mine was a little dense. I think I overmixed after adding the wet ingredients. Also my bake time went closer to 35 minutes in my oven, so watch that toothpick!

  42. User avatar shelton.kilback82 says:

    5 stars
If I can make this, anybody can! Super easy and the frosting is unreal!

    1. User avatar christie.huels says:

      5 stars
Totally agree! The frosting really makes it! I never thought I’d be able to bake something so fancy.

  43. User avatar cecil.bogisich says:

    3 stars
My frosting melted in the heat. How do you keep it from getting runny?

  44. User avatar rich.landlord says:

    5 stars
I love how it doesn’t require cocoa + buttermilk confusion like some recipes. The batter mixed up fast and the cake came out fluffy. 10/10 comfort dessert.

    1. User avatar arnulfo.brown says:

      5 stars
Yes! I hate when recipes are all over the place with cocoa or buttermilk—this one actually makes sense. Glad it came out fluffy 😋

  45. User avatar wesley.kuvalis1975 says:

    3 stars
My batter was more like a chocolate milkshake than cake batter. Still baked fine, but texture was weird. Maybe my buttermilk measurement was off? Either way, good flavor.

  46. 2 stars
I dunno, mine tasted kinda funny… Maybe because of the buttermilk? 😕

  47. User avatar jonna.parisian says:

    3 stars
I followed the recipe exactly, but my cake came out kind of flat. Maybe I overmixed it?

    1. User avatar tim.lebsack1998 says:

      4 stars
Don’t worry, it happens! Overmixing can definitely make it flat. Next time, just mix until combined. It’ll rise perfectly!

    2. User avatar manuel.waters says:

      3 stars
Maybe it was the baking powder? Or did you check your oven temp? A flat cake is just sad…

  48. User avatar Jake Mayer DVM says:

    5 stars
Love it!!! Best cake I ever made! My friends think I’m a pro now! 🥳

  49. User avatar alfonso.bailey2017 says:

    4 stars
Honestly super easy. I was worried about the baking soda/vinegar combo but the crumb is nice and tender. Only thing: next time I’ll sift the cocoa so there are fewer tiny lumps.

  50. 4 stars
I was skeptical about the baking soda + cocoa + vinegar combo, but it rose well and tasted legit. I might reduce the cocoa slightly next time, but overall super solid.

    1. 5 stars
I had the same eyebrow-raise moment with the baking soda + vinegar. Glad it worked for you though—mine also rose better than expected. I think next time I’ll try a tiny cocoa tweak too.

    2. 3 stars
Wait… red velvet usually uses baking powder, not baking soda + vinegar, right? 😂 But if it tastes legit and rose, I guess the vinegar really does something. I’d still be careful with the cocoa—too much makes it more like chocolate cake.

  51. User avatar Genghis Khan says:

    1 star
Red velvet is just chocolate cake with red dye! Can’t believe people go crazy over it. 🤨

  52. User avatar graig.stoltenberg92 says:

    5 stars
This cake is so delicious! I made it for my sister’s birthday and everyone loved it. Will definitely make again!

    1. 5 stars
So glad to hear that! Red velvet is my favorite. Happy birthday to your sister!

  53. 1 star
This was my first cake ever. I think I did something wrong, it didn’t rise much. 🙁

    1. 4 stars
Don’t worry! First cakes can be tricky. The baking soda might’ve been old or maybe you didn’t mix it well enough. Keep trying!

  54. User avatar arleen.sporer98 says:

    5 stars
so yum! bestest cake I ever bake!!!

    1. User avatar syble.durgan24 says:

      5 stars
That sounds amazing! I love red velvet cake! How did you get it so fluffy?

    2. User avatar emely.hoppe99 says:

      2 stars
Bestest? Really? I think there’s better cakes out there, this one seems too basic. Let’s be real!

  55. 1 star
I used regular milk because I didn’t have buttermilk, and it turned out dry and crumbly. Learn from me—get buttermilk.

    1. User avatar Vern Conroy says:

      5 stars
Ugh, I’m sorry that happened! But you’re 100% right—this recipe really needs the buttermilk for that tender crumb. Dry and crumbly is exactly what I’d expect from swapping it 1:1 with regular milk.

    2. User avatar colton.hackett78 says:

      3 stars
Wait—so the buttermilk changes the texture? I always use regular milk in red velvet and it turns out fine… maybe you overbaked it? 25-30 min could be a little long depending on your oven.

  56. User avatar Blitzcrank says:

    4 stars
350°F is fine but 25 minutes felt short for me—my toothpick wasn’t clean until closer to 32. Watch your ovens, folks.

    1. User avatar matha.balistreri6 says:

      5 stars
Totally agree—25 min was way too fast in my oven too. I usually start checking around 28–30 and mine finally comes clean closer to 32. Great tip!

  57. 2 stars
I used baking powder instead of baking soda and it flopped… so yeah, make sure you read that part 😅

  58. User avatar harris.tillman54 says:

    5 stars
    Very good. Five stars.

  59. User avatar emory.medhurst92 says:

    5 stars
So easy. The instructions are straight-forward. 10/10 would make again 😅

  60. User avatar porfirio.harber96 says:

    5 stars
    Looks great! Yum

  61. User avatar chantay.block5 says:

    2 stars
Tried this recipe and it was a disaster! Way too oily and I don’t think the vinegar was needed. Not impressed.

  62. User avatar damon.connelly says:

    4 stars
Cream cheese frosting is a must. I used store-bought and it was still great, though I think homemade would’ve been even better.

  63. User avatar Cave Bear says:

    5 stars
This cake was a hit at my daughter’s birthday! The cream cheese frosting is the best part! 😍

  64. User avatar alejandra.hoppe says:

    3 stars
I’m confused about the baking soda though. Red velvet recipes usually use both baking soda and baking powder, right? Still tasted good, just not super “classic” for me.

  65. User avatar gregg.wiza6 says:

    3 stars
Red velvet???? Isn’t that just chocolate cake with red dye? 🤔

  66. User avatar valentin.rodriguez40 says:

    4 stars
Super good! I added some chocolate chips and it was a hit at the party! Will definitely make again.

    1. User avatar Pasta Fasta says:

      5 stars
Wow, chocolate chips? That’s genius! I never thought to add those to red velvet. I’ll have to try it!

    2. User avatar rickie.kessler8 says:

      2 stars
Not sure about that combo… red velvet is perfect as it is. Chocolate chips might mess it up.

  67. User avatar Tricia McMillan says:

    3 stars
Not bad, but I hate baking with food coloring. The cake tastes good anyway, I just wish it was less messy.

  68. User avatar King Vegeta says:

    5 stars
Simply divine! A slice of heaven on a plate! 🍰🤤

  69. 5 stars
Turned out really moist and the crumb is nice! I used gel food coloring and the color still came out great. Frosting set perfectly too. 10/10 for a homemade red velvet.

  70. 5 stars
Honestly, the instructions are super straightforward. Grease/flour + cool 10 minutes = learned that the hard way before. Great recipe layout!

    1. User avatar tabatha.moen says:

      5 stars
Totally agree—step-by-step is what makes it foolproof. Grease + flour and that 10 minutes cooling tip really does save you from the stickiness. Nice catch on the layout!

  71. User avatar whitley.rohan says:

    3 stars
The flavor is nice, but mine looked more burgundy than red. Maybe my food coloring brand is weaker. Still tasty though—would make again with stronger coloring.

  72. User avatar Barry Manilow says:

    1 star
Why you need vinegar in the cake? Isn’t that for chips? 😅

  73. User avatar MAGA2024.Trumpster says:

    5 stars
Made this for my sister’s birthday and it turned out gorgeous—moist and not too sweet. The vinegar + buttermilk combo really does something.

  74. User avatar jae.gusikowski37 says:

    2 stars
Why do you put vinegar in cake? Seems weird to me. But I’ll try it anyways.

  75. User avatar ferne.cole says:

    3 stars
This tasted pretty good, but the cocoa flavor feels a little muted compared to other red velvet recipes I’ve tried. Also mine domed a bit in the middle.

  76. User avatar rosendo.turcotte1995 says:

    4 stars
Followed the recipe exactly and it was good, but I expected it to be more “velvety.” Texture was a little dense for me, maybe I overmixed. Still, taste is solid.

  77. User avatar rick.west49 says:

    2 stars
I followed the recipe but mine turned out too dense. Maybe it was my oven? Not sure if I will try again.

  78. User avatar Colin the Security Robot says:

    4 stars
I didn’t have buttermilk, so I used milk and lemon juice. It turned out fine. Still tasty!

  79. User avatar Ms. Carroll Bayer says:

    5 stars
This recipe is amazing! My family loved it. Will be making again for sure.

  80. User avatar alexis.feil61 says:

    2 stars
My cake stuck to the pans even though I greased and floured. Maybe my pans are older. Next time I’ll use parchment too.

  81. User avatar Rob McKenna says:

    5 stars
Easy peasy! Tastes like bakery cake!

  82. User avatar charlie.schroeder12 says:

    4 stars
Yummy! So moist and delicious! I added some chocolate chips because why not? 🧁

    1. User avatar bart.strosin1963 says:

      4 stars
      Chocolate chips? That’s a bold move! I haven’t tried it but I might! 🤔

  83. User avatar Hasimir Fenring says:

    3 stars
I followed it exactly and it tasted fine, but the texture was kinda dense. Maybe my eggs were small? Or I overmixed. Still, red velvet fans will like it.

  84. User avatar forrest.goldner says:

    4 stars
Not gonna lie, red velvet always tastes kinda “meh” to me unless the frosting is on point. If your cream cheese frosting is sweet enough, this will slap.

    1. User avatar lazaro.cartwright1991 says:

      3 stars
I get what you mean, but I think red velvet is more about the cocoa + vinegar/buttermilk combo than just the frosting. Also 2 tbsp red coloring seems like a lot—won’t it taste too chemical or super red? 😅

    2. User avatar samual.hammes80 says:

      5 stars
Totally agree—red velvet can be kinda underwhelming without a really good frosting. If that cream cheese frosting is sweet/tangy enough, it really makes the whole cake work. I’m trying this version!

  85. 5 stars
This came out gorgeous—deep red and super moist. I used gel food coloring since that’s what I had, and it still worked great. Frosting perfectly balanced too.

  86. User avatar ruth.green88 says:

    3 stars
Looks pretty, but 25-30 min was not enough for my oven—center was still wet at 30, had to bake like 38.

    1. User avatar rod.heller36 says:

      5 stars
That makes sense—every oven runs different. I usually check at 30 minutes and then keep going in 3–5 min increments until the center is set. A toothpick can lie too if the crumb is just a bit underdone.

  87. 3 stars
Can’t believe this has so much oil! Is that normal?? Seems greasy to me. Still tasted good tho!

    1. 4 stars
Yeah, it does have a lot of oil! That’s kinda normal for red velvet cake, but I get why it seems greasy. Glad you liked the taste anyway!

  88. User avatar terminatorXYZ says:

    3 stars
Cream cheese frosting covered up everything… I mean, it was good, but the cake itself didn’t have that classic red velvet tang I’m used to.

  89. User avatar henry.stoltenberg says:

    5 stars
Tried this for a birthday and it came out super moist! The color was way more vibrant than I expected—2 tbsp is the sweet spot.
