Ingredients
  

  • 500 g ground pork
  • 2 zucchini medium, grated
  • 1/2 cup bread crumbs
  • 1/4 cup parmesan cheese grated
  • 2 Green onions chopped
  • 2 cloves garlic minced
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs beaten
  • 2 tbsp olive oil

Instructions
 

  • In a large bowl, combine the ground pork, grated zucchini, bread crumbs, Parmesan cheese, green onions, garlic, dried basil, salt, and black pepper.
  • Mix well until all ingredients are evenly combined.
  • Heat olive oil in a large skillet over medium heat.
  • Scoop about 1/4 cup of the pork and zucchini mixture and shape it into a patty.
  • Place the patty in the heated skillet and cook for about 5 minutes on each side, or until golden brown and cooked through.
  • Repeat with the remaining mixture to make more fritters.
  • Serve the pork and zucchini fritters warm with your favorite sauce or dip.
