I think my ratios were off. Mine tasted more like sweet oat bars than pistachio. Also, I used sweetened almond milk by accident and it was sweeter than expected.
That makes sense—if your sweetener ratios were a bit off, it’ll definitely read more like sweet oat bars. And sweetened almond milk would push it even further into “oat bar” territory. That totally can happen—25–30 is tight, and every oven runs different. If yours were sticky/underdone, I’d just add 5–10 minutes and look for a deeper golden top + edges pulling away a bit. Also cooling completely matters a lot for these.
