Ingredients
  

  • 100 grams dark chocolate chopped
  • 2 tablespoons granulated sugar
  • 2 large eggs separated
  • 1 cup heavy cream cold
  • 1 teaspoon vanilla extract

Instructions
 

  • Melt the dark chocolate in a heatproof bowl set over a pan of simmering water. Allow to cool slightly.
  • Whisk the egg whites until soft peaks form, then gradually add the sugar, whisking until glossy.
  • In a separate bowl, whip the cream with vanilla extract until soft peaks form. Reserve some for garnish.
  • Fold the chocolate into the egg yolks, then fold in the whipped cream until well combined.
  • Gently fold in the egg whites until just combined. Spoon into serving dishes and chill for at least 2 hours.

      Totally get that—overwhipping cream can make it look “done” but feel tight. Next time stop as soon as you see soft peaks (when you lift the whisk it should droop a bit), not ones that hold a firm point. Cold cream + clean bowl/whisk helps a lot.

    I’m skeptical about the ‘soft peaks’ part—every time I do it, it turns into something closer to whipped chocolate milk. Still, the flavor was great.

    I tried to whip the cream with the vanilla but I used vanilla sugar instead and… idk. Still tasted good, just not as rich as expected.

      Ahh that makes sense—vanilla sugar can be nice, but it won’t give the same depth as vanilla extract in cream. If you try again, maybe add a tiny extra splash of extract to bring back the richness.

    Not convinced about the bain-marie step. I melted the chocolate too fast and it got grainy. I remelted carefully and it recovered, so maybe the method matters more than I thought.

      Totally get that—bain-marie timing is everything. If the chocolate gets even a little too hot it can seize and go grainy. I’m glad you were able to fix it though!
