Octopus and Eggplant Sauté

April 26, 2024

If you’re looking to shake up your usual seafood routine, this octopus and eggplant sauté offers a bold and unexpected combination that truly delivers. It’s rustic, flavorful, and brings the essence of coastal Mediterranean cooking to your plate.

The key to making this dish shine is properly preparing the octopus. Simmering it slowly before the sauté makes it tender without losing its naturally firm texture. Meanwhile, eggplant acts as the perfect partner, soaking up the surrounding flavors while offering its own creamy, earthy base. When sautéed together in a pan with good olive oil, garlic, and a few sprigs of fresh thyme or oregano, the result is nothing short of magic.

A splash of white wine or lemon juice brightens up the flavors and adds just the right acidity. A touch of red chili flakes can give it a gentle kick, though that’s optional depending on your taste.

This dish is simple but layered, the octopus brings the sea, the eggplant brings the earth, and the aromatics tie it all together in a warm, savory hug. It works well as a light main course or as a shared plate for a tapas-style dinner.

For serving, think crusty bread on the side to mop up the delicious olive oil and juices. Or pair it with a small side of couscous, farro, or grilled vegetables. A chilled glass of white wine or crisp rosé complements the flavors beautifully.

What’s great about this recipe is its flexibility. You can toss in cherry tomatoes for sweetness, add a spoonful of capers or olives for extra brine, or even stir in fresh herbs like parsley or basil at the end for a pop of freshness.

Whether you’re a seafood lover or just feeling adventurous, this octopus and eggplant sauté is a unique and satisfying way to bring something special to the table, elegant enough for guests, but easy enough for a weeknight treat.

Yummy! This was a hit at my dinner party! People were impressed!!

The paprika amount felt a little light? I used sweet paprika and would’ve liked more color/flavor. Also, mine stuck to the pan once—use enough oil!

  3. User avatar fatima.senger1955 says:

I followed it but it just tasted… bland? Salt/pepper maybe didn’t carry enough. Could use chili flakes or something acidic.

  4. User avatar Versie Lynch says:

Made it tonight and it came out great. The garlic smelled amazing and the eggplant got perfectly soft. I salted the eggplant like the recipe said and it definitely helped the texture.

    1. User avatar angelo.mueller39 says:

      3 stars
I tried salting eggplant once but I think I left it too long… it turned kinda watery. Still tasted ok though. Yours came out perfectly soft? Makes me wanna retry but maybe set a timer next time 😅

    2. User avatar suspiciousCommentator says:

      5 stars
Nice! The salt step for eggplant always makes a difference—soft but not mushy. I also find the garlic at that 1-minute mark is key. Thanks for confirming it worked!

Made this last night, and it was amazing! The flavors blended so well. Will definitely add to my favorite recipes!

    1. User avatar Grìma Wormtongue says:

I tried this recipe and it was a total flop. The octopus was too chewy, and I don’t even like eggplant that much.

    2. User avatar hobert.balistreri62 says:

      5 stars
I’m so glad you enjoyed it! It’s one of my favorites too. The garlic really adds a nice touch, doesn’t it?

  6. 3 stars
I tried this, but the octopus was too chewy for my taste. Maybe I cooked it too long?

  7. User avatar mathWizard says:

Looks easy and sounds good. Gonna try it with extra garlic and parsley for sure.

  8. User avatar quincy.littel65 says:

Octopus? Really? I wouldn’t eat that if you paid me. Give me chicken anytime.

    1. User avatar Leo Torphy says:

      3 stars
Chicken is safe, but octopus has its unique flavors. Don’t knock it till you try it! 🐙

    2. User avatar anja.littel says:

      4 stars
I get what you mean, octopus isn’t for everyone. But it’s actually really good when cooked right! Have you ever tried a well-prepared dish?

  10. User avatar frankie.king2021 says:

    1 star
Sauté? I thought this was a boil dish. Misleading title. 🙄

  11. User avatar Lumberjack says:

    3 stars
I followed it exactly, but my octopus turned chewy. Maybe my pieces were too big? Also I didn’t have paprika so I used chili powder and it was okay.

    1. User avatar Gail Andrews says:

      4 stars
Chewy octopus usually means it needed a bit more tenderness time—your pieces being bigger is a real suspect. Next time, cut them smaller so they cook through faster (and keep an eye on that 5–7 min step). Also your chili powder swap is totally plausible, since it still gives that smoky/peppery flavor—just go a little lighter if it’s hotter than paprika.

  12. User avatar jacinta.west15 says:

    4 stars
Yum! My family loved it! The garlic makes such a difference. I skipped the parsley tho.

  13. User avatar Ms. Florencio Mann says:

    3 stars
I’m skeptical about “rinse and remove innards” lol. Do people actually have innards just chilling in there? Either way, the steps are clear and it’s not complicated.

  14. 2 stars
I don’t like the texture of octopus. I thought this would be good, but it was too chewy for me.

  15. 3 stars
Not bad, but I don’t know about the “rinse and pat dry” step—felt unnecessary. Mine got slightly watery until I cooked it longer. Would make again with adjustments.

  16. 5 stars
This was surprisingly good! I wasn’t sure about octopus, but it turned out delicious with the eggplant.

  17. 3 stars
Not a fan of octopus, but my partner loved this recipe. The eggplant was a nice touch.

    1. User avatar zachariah.klocko33 says:

      2 stars
Eggplant’s good but octopus? Ewww, can’t believe anyone likes that! Different strokes, I suppose.

    2. 4 stars
Octopus is definitely not everyone’s thing, but I’m glad your partner enjoyed it! The eggplant sounds yummy!

  18. User avatar Andrew Marvin says:

    2 stars
This recipe sounds interesting but octopus? Really? Idk if I can try it.

  19. User avatar marya.hermiston62 says:

    5 stars
I made this last night and my family loved it! The combination of octopus and eggplant is genius! 😍

  20. 1 star
I don’t even know what octopus looks like, is it pink or what? 😂

    1. 4 stars
Octopus is actually kinda purple-ish when cooked. Definitely not pink! 😂 You’ll be surprised once you see it!

  21. User avatar alva.wehner1967 says:

    5 stars
Delicious! The garlic and paprika really pop. Will definitely make again!

  22. User avatar Ashlie Padberg says:

    4 stars
Pretty tasty, but I think I overcooked the eggplant a bit. Next time I’ll check earlier since my slices were thin. Still, flavor was solid.

    1. User avatar roxanne.fay61 says:

      3 stars
Not bad, but I dunno about 10-12 minutes—mine turned mushy. Also, I rinsed the eggplant after salting like the instructions say, but still got kinda watery. Maybe hotter pan? Or less oil?

    2. User avatar giovanni.kihn36 says:

      5 stars
Glad it was tasty! Thin eggplant slices cook fast—your instinct to check earlier is spot on. I usually pull it when it’s just tender and still a little springy.

  23. User avatar humberto.witting says:

    3 stars
This recipe is just okay. The eggplant was mushy and I didn’t really like the texture.

  24. 4 stars
So simple yet so fancy! Loved the presentation. 👌

  25. User avatar blake.mayert2008 says:

    4 stars
I had to guess on the salt step—10 minutes felt long for my eggplant, but rinsing it off helped with bitterness. Would make again, for sure.

    1. 5 stars
Glad you tried it! That 10 minutes for salting eggplant really depends on thickness—your note about bitterness makes sense. I usually pat it super dry before it hits the pan, so it browns better. Would love to hear how long you cooked the octopus total—mine always feels like it varies by size.

  26. User avatar Reginald Schoen Sr. says:

    4 stars
Not bad but I added a squeeze of lemon at the end and it totally changed it (in a good way). Recipe is missing that little brightness imo.

    1. User avatar dara.grant42 says:

      5 stars
Yes! A squeeze of lemon at the end is exactly the brightness it needed. I’ll add it next time—great call.

  27. User avatar smartestRedditor says:

    3 stars
Octopus is too chewy dude, what’s up with that? Next time I’m using shrimp.

  28. User avatar debbie.halvorson83 says:

    3 stars
Nice dish, but can we substitute octopus with shrimp? Maybe that would be easier? ⭐️⭐️⭐️

  29. User avatar carol.leuschke47 says:

    5 stars
Very Mediterranean vibes. My nonna would approve. I used less salt because the octopus was already salty from the package, and it was still tasty.

    1. User avatar cassondra.lockman80 says:

      5 stars
Yes!! Nonna energy for sure. Love that you adjusted the salt—octopus can be so briny depending on the pack. Did you still rinse it after, or just rely on the package flavor?

    2. User avatar Dominic Vernius says:

      3 stars
Mediterranean vibes are nice, but I’m not sure the garlic only cooking 1 minute is enough—wouldn’t it get lost once the eggplant goes in? Also octopus can be chewy… how long did you cook yours?

  30. User avatar darlena.hoeger73 says:

    5 stars
Super good! I added some chili flakes for heat. Love it!

  31. User avatar MAGA2024.Trumpster says:

    3 stars
I don’t know… octopus is kinda weird. It was alright, but it didn’t blow me away. Eggplant was good tho.

  32. User avatar jeff.jacobson18 says:

    5 stars
This dish was amazing! The flavors complemented each other perfectly. Will definitely make again!

  33. 4 stars
So quick. 10–12 minutes and done. I mean, it can’t be that easy… but it was. Honestly: delicious.

    1. User avatar guillermo.damore39 says:

      5 stars
Wow, you’re right—10–12 minutes actually sounds believable for this one. I’ve always expected octopus to take forever, but cooking until it turns opaque and curls seems to do the trick. Did you find the eggplant came out silky or more soft/steamed?

  34. User avatar britt.stiedemann68 says:

    5 stars
So delicious! I used some extra garlic and it made it even better. My kids loved it too.

  35. User avatar nathanial.wolff says:

    4 stars
Ok but where’s the lemon?? Octopus needs acid, otherwise it’s kinda bland. I added lemon at the end and it tasted way more alive. Recipe is close though.

  36. User avatar buck.becker says:

    5 stars
Octopus? I thought that was just for sushi? Anyway, mom liked it so I’m happy.

  37. User avatar ray.reinger says:

    5 stars
Okay I tried this and it came out AMAZING. My whole kitchen smelled like garlic heaven. The eggplant was tender and the octopus curled like the picture in my head 😅

    1. 3 stars
Not to be picky but… eggplant took me forever to get tender. Also I may have rinsed the octopus too long? 😅 Still tasty though. Would broil the eggplant next time.

    2. User avatar harrison.lynch says:

      5 stars
That description makes me want to try it tonight 😍 Garlic heaven is the best review. Mine usually needs a little extra cook time, but the curl/opaque stage sounds right!

  38. 2 stars
So I did it exactly and it was bland. Like, no flavor. Maybe I forgot paprika (or I did salt wrong). Will re-try with more pepper.

  39. User avatar vincenzo.spinka33 says:

    3 stars
I made this without the paprika. It was still ok, but kinda bland.

  40. User avatar ralph.welch says:

    1 star
Why would anyone eat octopus? Can’t you just use chicken instead? jz sayin

  41. User avatar nam.macgyver93 says:

    4 stars
lol “octopus” scared me but it came out fine. I overcooked the eggplant a bit and still ate all of it. 😅

  42. 5 stars
The garlic really made it pop! Flavor explosion in my mouth, a+!

  43. User avatar joella.reynolds91 says:

    5 stars
This recipe is fantastic! I’ve never cooked octopus before, but it turned out delicious. Thank you!

  50. User avatar Falmer Shadowmaster says:

    5 stars
This recipe is amazing! The flavors meld so well together. My family loved it!

  51. User avatar Ms. Lasandra Lehner says:

Where do you buy octopus? Is it was expensive? 🤔

    1. User avatar w00d_ch0p says:

      5 stars
You can find octopus at most seafood markets or some grocery stores. It’s a bit pricey, but totally worth it if you love seafood! 🐙

  52. User avatar ramonita.rosenbaum75 says:

    5 stars
Tried this last night—surprisingly flavorful. The garlic/paprika combo is doing a lot of work. Mine took closer to 12 minutes for the eggplant to get tender.

  53. User avatar Hwi Noree says:

    3 stars
Not sure where you got your octopus from, but it was chewy. Maybe I overcooked it? 🤔

  54. User avatar basil.okuneva says:

    3 stars
Not bad! I salted the eggplant rounds and rinsed/patted dry like it says. Next time I’ll mince the garlic finer because I had a couple big chunks.

  55. User avatar Chi Shenlong says:

    2 stars
I tried this recipe, and I think I did something wrong. My octopus came out chewy. How do you make it tender? Help!

  56. User avatar luciano.johnston65 says:

    4 stars
This is a great quick sauté, but I gotta say: rinse the octopus and remove innards… mine didn’t have any innards lol. Anyway it worked.

  57. User avatar andrea.ernser says:

    2 stars
Eggplant turns all mushy and gross, I can’t deal with that! Not for me! 🤢

  58. User avatar titus.fadel says:

    2 stars
I must say, octopus and eggplant? Sounds weird. I didn’t even bother trying this one.

  59. User avatar Gangplank says:

    5 stars
Tried this tonight—so delicious! The octopus turned tender and the eggplant absorbed all the garlic/paprika flavor. I added a squeeze of lemon at the end and it was perfect.

  60. User avatar mindy.zieme says:

    4 stars
This sounds delicious but I’m a little nervous about the octopus cooking time. 5-7 minutes feels fast—mine usually takes way longer to become tender. Still, I love the eggplant + paprika combo!

    1. User avatar Trin Tragula says:

      5 stars
Totally fair to be nervous—5–7 min *can* be fast. I’ve found it really depends on whether the octopus is fresh vs already tenderized/frozen. If it’s not tender at 7, just keep cooking (low-ish heat) and it’ll get there. Eggplant + paprika is also a win though—sounds like exactly my kind of bowl.
