Middle Eastern Grilled Chicken and Hummus Bowl

February 8, 2024

If you’re looking for a satisfying and healthy meal that’s anything but boring, this Middle Eastern Grilled Chicken and Hummus Bowl hits every note. It brings together aromatic grilled chicken, creamy hummus, fresh vegetables, and hearty grains in one vibrant bowl. It’s a balanced meal that feels like a feast but is simple enough for a weeknight dinner.

The star of the dish is the grilled chicken, marinated in a mixture of olive oil, garlic, lemon juice, cumin, paprika, and a touch of cinnamon. This blend gives the meat a warm, smoky, and slightly tangy flavor that pairs beautifully with the rest of the ingredients. After just a few minutes on the grill or stovetop, the chicken develops a golden crust while staying juicy inside.

Next is the hummus, a smooth, creamy base made with chickpeas, tahini, lemon, and garlic. It adds richness to the bowl and balances the grilled flavors. You can use store-bought hummus or make your own for an extra homemade touch.

Fresh ingredients are key here. Sliced cucumbers, cherry tomatoes, red onions, and parsley add crunch and brightness, while a sprinkle of sumac or a drizzle of lemon juice wakes up the entire bowl. You can add pickled turnips, olives, or even a dollop of yogurt if you’re feeling fancy.

For the grains, couscous, bulgur, or rice work perfectly. They soak up all the juices from the chicken and hummus, turning every bite into something warm and flavorful. The beauty of this bowl is that you can customize it, add falafel instead of chicken, go vegetarian, or mix in some roasted veggies.

This Middle Eastern Grilled Chicken and Hummus Bowl is a celebration of textures and flavors, tangy, creamy, savory, and fresh. It’s colorful, nourishing, and perfect for meal prep or an easy, impressive dinner.

Too much raw onion for me! 😂 Next time I’ll skip that. Otherwise, decent!

  2. User avatar dell.steuber says:

    3 stars
Why do people put mint in chicken? That’s just weird. I changed it to basil and it was fine.

  3. User avatar efren.schneider says:

    3 stars
Meh. The spice rub was fine, but my chicken took longer than 6-8 minutes per side (thicker breasts). Still edible, just not mind-blowing.

  4. User avatar Shirley Knot says:

    3 stars
Not bad, but I didn’t love the amount of onion—maybe I’m just picky. Other than that, the bowl was fresh and satisfying.

  5. User avatar lesley.fritsch9 says:

    5 stars
easy to make and sooo delicious! I want more!!

  6. User avatar alec.turcotte2 says:

This was the worst recipe ever! It made me hate chicken! Never again ! 😡

    1. 4 stars
I’m sorry to hear it didn’t turn out for you! Cooking can be tricky sometimes. Maybe try marinating the chicken longer next time?

  7. User avatar suspiciousCommentator says:

    3 stars
The flavors are fine, but it tasted kinda flat for me until I added lemon juice. Also I used smoked paprika and that changed it a lot (in a good way).

  8. 5 stars
    Numm. Yummy. Eating now. 😋

  9. 4 stars
I’m not usually a hummus person, but this combo with grilled chicken worked. Next time I’ll slice the onion a bit thinner so it’s not as sharp.

    1. 5 stars
Love hearing non-hummus folks end up liking it 😄 Thin-slicing the onion is a great call—sharp bites can totally overpower everything.

  10. User avatar eldon.ledner87 says:

    2 stars
I cooked it and it came out kinda dry—probably I over-grilled. Also I didn’t have coriander so I used fennel? Not the same vibe, but my family ate it anyway 😅

    1. User avatar Frankie and Benjy says:

      3 stars
Dry?? I think you should’ve basted it with more olive oil or maybe used yogurt marinade. And coriander is like… not optional lol. Fennel might taste kinda licorice-y, but if your family ate it, I guess it worked 🤷‍♀️

    2. User avatar Dwarven Centurion says:

      4 stars
Oof, dry chicken is usually from grilling too long—resting helps though. Next time try 6 min per side max (thicker breasts can be longer) and pull it right when it’s just cooked. Also fennel is a bold swap 😅 how much did you use?

  11. User avatar manuel.mraz64 says:

    4 stars
Hummus and chicken together is genius! But why do we need the cucumber? Just lettuce would be better. 🤔

  12. User avatar terminatorXYZ says:

    2 stars
Didn’t turn out as expected. The chicken was dry after grilling. Anyone got tips?

    1. User avatar cyrus.bashirian says:

      3 stars
Maybe you overcooked it? Try not to grill too long next time! Chicken needs juicy.

  13. User avatar cassie.parker says:

    3 stars
It was ok… I thought it was going to be more flavorful. Maybe it needed more salt or something. 🤷‍♂️

  14. User avatar ShanksOnePiece says:

    5 stars
so good i ate it all in one go! haha. Highly recommend!!

    1. User avatar ramon.paucek says:

      2 stars
I don’t know, seems kinda dry to me. Maybe it needs more sauce?

    2. User avatar ken.halvorson48 says:

      5 stars
I tried it too and yes, it’s amazing! The flavors just pop. Love it!

  15. User avatar eve.tillman says:

    1 star
How can you put raw veggies in a bowl? That just don’t make sense. 🤷‍♂️

  16. User avatar tissues_with_issues says:

Pretty good idea, but 6-8 minutes per side feels like a lot or not enough depending on thickness. I’d like to see an internal temp, like 165°F, because my grill runs hot sometimes.

    1. 5 stars
Yeah, I agree—6-8 min/side is pretty thickness-dependent. An internal temp check (165°F) is the safest way, especially if your grill runs hot.

  17. 4 stars
Skeptical about all the ingredients but it surprisingly worked out. Nice fresh flavors.

  18. User avatar ernie.nitzsche2004 says:

    3 stars
Eh, it was just okay. The chicken was a bit dry for my taste.

  19. User avatar drew.bergstrom says:

    5 stars
I followed the recipe exactly and it turned out perfect. Juices ran clear, rested a few minutes, and every bite had flavor. My family asked for it again tomorrow 😅

    1. User avatar arthur.blanda97 says:

      5 stars
Love this! I’m always skeptical with “exactly” recipes, but the clear-juice + rest note makes total sense. What hummus did you use—store-bought or homemade?

    2. 3 stars
Huh, I think 6-8 min per side is too long—my chicken dries out if I do that 😅 Maybe grill temps vary? Still sounds really good though, I’d try it but watch closely.

  20. 4 stars
Nice and fresh with the cucumber + tomatoes. I swapped parsley/mint for what I had and it still tasted like a real bowl. 10/10 for a weeknight meal.

    1. User avatar leon.donnelly47 says:

      4 stars
I like the idea, but 6-8 min a side seems like it could be off depending on the thickness? I had to cook mine longer. Also I didn’t have mint so I used dill—still ok.

    2. User avatar merrill.willms46 says:

      5 stars
Yes! The cucumber + tomatoes combo makes it feel super fresh, and hummus ties it all together. I also did the parsley/mint swap and it still worked great. 10/10 weeknight for sure.

  21. 4 stars
I’m not usually a “bowl” person but this worked. The herbs (mint especially) make it feel restaurant-level. Chicken could’ve used a touch more salt in my case though.

  22. User avatar marcella.waters49 says:

    4 stars
My kids loved the chicken, wlil make again for sure! 👍

  23. 5 stars
Delicious! I added extra tomatoes and it was yummmmy. Definitely making this again!

    1. User avatar tommie.larkin says:

      3 stars
I dunno, I think extra tomatoes might make it too soggy. Did you really like it that much?

    2. User avatar cory.muller50 says:

      5 stars
So glad to hear! Extra tomatoes sound like a great idea. I might try that too next time!

  24. User avatar Michael83 says:

    3 stars
Eh, it was okay. Chicken did not grill well. Maybe my grill is broken? Idk.

    1. User avatar eustolia.turner says:

      4 stars
Maybe try cooking it a bit longer next time? Sometimes grills can be tricky!

  25. User avatar w00d_ch0p says:

    5 stars
This was super flavorful—those spices really pop. I followed the timing pretty closely and the chicken stayed juicy after resting. Will make again for sure.

  26. User avatar hassan.kihn says:

    5 stars
This recipe is amazing! The flavors are just perfect, and the chicken was so juicy. Definitely a 5-star dish!

  27. User avatar micheal.rolfson60 says:

    2 stars
Are you sure 1 tsp turmeric is right? Mine turned the chicken a little weird-looking, like yellow-brown. Tastes okay tho.

  28. User avatar Leilani Robel says:

    5 stars
Absolutely delish! The spices gave the chicken a flavorful kick. Will be making this again for sure!

  29. User avatar latoyia.davis says:

    2 stars
I don’t understand why the turmeric is in there… it tasted weird to me. I think I’ll skip that next time.

  30. User avatar johna.friesen51 says:

    5 stars
This was AMAZING! The spices were perfect, and the chicken came out so juicy. My family loved it!

    1. 5 stars
I’m so glad you loved it! The spices really make a difference, don’t they? 🔥

    2. User avatar winston.lehner says:

      2 stars
Uhm, I don’t think chicken should be grilled that long. Sounds fishy to me. Might try it but idk.

  31. User avatar Shaddam Corrino IV says:

    4 stars
Really good but my grill timing was off; 6-8 minutes per side got a bit charred on mine. Next time I’ll lower the heat slightly. Still delicious though.

    1. User avatar latia.bauch says:

      5 stars
That makes sense—grills can run hotter depending on the model/charcoal. Lowering the heat next time is a solid move. I’m glad it was still delicious!

  32. 5 stars
This was absolutely delicious! The spices really made the chicken pop. My family loved it!

  33. User avatar deedee.gerhold6 says:

    4 stars
Honestly, this is the kind of meal I can count on. Fresh herbs really make it feel restaurant-y. Next time I’ll add a squeeze of lemon too.

    1. User avatar sherril.orn says:

      5 stars
Totally agree—fresh herbs make a huge difference. I added a lemon squeeze once and it was even better. Great bowl!

  34. 5 stars
Yummm! Super easy and quick! Grill chicken is my go-to!

    1. User avatar janett.wilkinson45 says:

      2 stars
Looks good, but why do they need so many spices? Can’t you just grill the chicken as is?

    2. User avatar lenard.borer says:

      5 stars
Totally agree! The spices make it so flavorful. Love this recipe!

  35. User avatar faustino.greenfelder says:

    4 stars
Quick and easy! I used store-bought hummus and it still turned out great. Perfect for a busy weeknight dinner!

    1. User avatar lovella.keebler says:

      5 stars
Sounds delicious! I love that you used store-bought hummus. Saves so much time! Can’t wait to try this recipe!

  36. 4 stars
I ain’t got time to grill chicken. Tried it in a pan and it turned out fine. Still tasted good.

    1. User avatar glendora.graham78 says:

      2 stars
But grilling gives a smoky flavor that you can’t replicate in a pan! You should try it sometime.

    2. 4 stars
Grilling is overrated! Pan-frying is just as good. Besides, who has time for all that? 👍

  37. 5 stars
Delicious! My husband said it’s the best chicken he ever had! Will make again for sure.

  38. User avatar Murray Medhurst says:

    2 stars
The idea sounds good but I’m not sure about mixing all these flavors. Might try it someday.

    1. User avatar benjamin.kuhic says:

      4 stars
I understand your hesitation! The flavors may seem intense, but they really balance well together. You might change your mind once you give it a try!

  39. 5 stars
Hummus is life! Combined with this chicken, it’s a game changer.

  40. User avatar dayle.durgan93 says:

    3 stars
Sounds delicious, but I don’t know about turmeric. Can I just leave it out?

  41. 2 stars
I think 8 mins is too long for grilling. I overcooked mine and it was tough. Next time I’ll try 5-6 mins.

  42. 4 stars
Grill the chicken for that long? I usually just fry it quick. Either way, my husband ate it all!

    1. User avatar jin.farrell73 says:

      3 stars
Grilling is better for health, but it takes time. Who has time for that?! 🕑

    2. User avatar aletha.dietrich11 says:

      5 stars
Frying is quicker for sure, but grilled chicken is so much tastier! Glad your husband loved it! 😊

  43. 3 stars
I don’t think this recipe is very authentic… where’s the tahini for the hummus? Kinda confused.

  44. 1 star
Who eats this bowl thing? Are we in some fancy restaurant or what? I just want my grilled chicken with rice.

  45. 5 stars
This grilled chicken is absolutely delicious! The spices really bring out the flavor. My family loved it!

  46. User avatar dallas.harris1950 says:

    3 stars
I don’t know about this. Seems like too much cumin. My husband doesn’t like it but I kinda do. Mixed feelings.

  47. User avatar jeanette.klocko2020 says:

    3 stars
Looks tasty but I think 4 chicken breasts is like for a whole family lol. I’d scale it down unless you’re really hungry.

  48. User avatar earnest.von42 says:

    3 stars
    I don’t have a grill, can I bake the chicken instead? 🤔

  49. User avatar yer.wyman81 says:

    2 stars
I followed the recipe exactly, and my chicken turned out super dry. What did I do wrong?

  50. User avatar Spider Guardian says:

    4 stars
Didn’t know what cumin was. Had to google it. Taste was nice tho, even tho I used way too much salt.

  51. User avatar Samwise Gamgee says:

    5 stars
This chicken was bursting with flavor! Absolutely loved it. 5 stars!

    1. 3 stars
Flavor? Really? I thought it was kinda plain. Maybe I did something wrong… 🤔

Loved it! I did it with beef instead, and it was still good. Pretty flexible recipe.

  56. User avatar Israel Hammes says:

    5 stars
This recipe was super easy and the chicken turned out so juicy! Definitely a keeper! 🍗

    1. User avatar george.mcglynn35 says:

      3 stars
Looks good but how is the chicken juicy? I always thought grilling made it dry. 🤔

    2. 5 stars
I made this recipe yesterday, and my family loved it too! 🥳 Such a crowd-pleaser!

  57. User avatar anton.barton66 says:

    5 stars
This was so good! The spices really made the chicken pop. My family loved it!

  58. 3 stars
I tried it but didn’t have all the spices, so it was kinda bland. Maybe next time I’ll follow the recipe better.

    1. User avatar sheldon.rau23 says:

      4 stars
I feel you! Sometimes I skip spices too, but they really make a difference. Don’t be too hard on yourself. Just give it another shot with all the ingredients next time!

    1. 5 stars
I’m so glad to hear you loved it! The spices really do make a difference. Did you try any variations?

    2. User avatar Treebeard says:

      3 stars
Sounds good, but what if I don’t like hummus? Can I swap it for something else?

  62. 1 star
This recipe is too complicated with all the spices. Just stick with salt and pepper next time.

  63. 5 stars
OMG this was so good! The spices were perfect and the chicken was juicy. Will definitely make again!

  64. 1 star
Meh. Who eats chicken with hummus? Sounds weird but my friend said it was good. Maybe I’ll give it a shot.

  65. User avatar ramonita.stanton78 says:

    3 stars
Pretty good, but my chicken ended up a bit dry. I think my grill ran hotter than medium-high. Still ate it all though 😅

    1. User avatar terminatorXYZ says:

      5 stars
Ahh that happens—6-8 min/side can be totally different depending on the grill. Next time try knocking it down a notch or pulling when it hits ~165°F and then resting longer.

  66. User avatar frederick.okuneva79 says:

    3 stars
Not my favorite. I prefer my chicken plain with just salt, everything else felt unnecessary.

  67. 4 stars
This feels like one of those ‘healthy bowls’ that’s really just hummus and sadness… but nope, actually tastes great. I added extra lemon and it popped.

  68. User avatar thu.parisian76 says:

    2 stars
I’m skeptical about grilling times—6-8 minutes per side seems short for thick breasts. I had to keep going like 10-12 minutes.

    1. User avatar clarisa.bode1970 says:

      5 stars
Totally get you—6-8 min/side sounds way too quick for thick breasts. I’m with you: mine needed closer to 10-12 too, and I always check with a meat thermometer (165°F).

    2. User avatar Arthur Dent says:

      4 stars
Mine was only 6-8 per side and it came out perfect 🤷‍♀️ maybe your grill was hotter or your chicken was thinner. I also let it rest like 5 minutes so it stayed juicy.

  69. User avatar terminatorXYZ says:

    4 stars
Yummy!! 😋 but do u have a vegetarian version?

  70. 2 stars
Not the best I’ve made. The chicken turned out a bit dry, could be my grill tho. I’ll try again.

    1. 4 stars
Dry chicken can be a bummer but it happens! Maybe try cooking it for less time next time? Also, marinating might help! Good luck!

    2. User avatar Great Moblin says:

      3 stars
I dunno, I think the grill might’ve messed it up a bit. But hey, at least you got hummus! That’s the best part!
