Matcha Baked Doughnuts

December 28, 2023

Matcha baked doughnuts are a vibrant and modern take on a nostalgic favorite. With their beautiful green hue and subtle, earthy sweetness, these doughnuts are the perfect balance of indulgent and wholesome. They’re baked instead of fried, making them a lighter option that still satisfies your doughnut cravings.

The star ingredient, matcha powder, brings a unique depth of flavor and a boost of antioxidants. Its naturally bitter and grassy notes are mellowed by just the right amount of sugar and vanilla in the batter, creating a perfectly balanced bite. The doughnut texture is light and cakey, thanks to the use of baking powder and buttermilk (or yogurt for a tangy alternative), with a soft crumb that melts in your mouth.

Making these doughnuts is quick and simple. The batter comes together in one bowl and bakes in less than 15 minutes. If you have a doughnut pan, you’re already halfway there. Once cooled, you can glaze them with a sweet matcha icing or dust them with powdered sugar for a cleaner finish. For extra flair, add a few sesame seeds or white chocolate drizzle on top.

These baked treats are ideal for breakfast on the go, a midday snack, or a playful addition to brunch. They also make a beautiful gift or dessert for anyone who appreciates matcha’s distinct flavor. Plus, they’re easy to customize, you can adjust the matcha strength or even make them vegan or gluten-free with a few substitutions.

Best of all, you don’t have to deal with hot oil or deep frying. Just pop them in the oven and enjoy the comforting smell of sweet matcha wafting through your kitchen.

Matcha baked doughnuts offer a touch of elegance with every bite. Whether you’re a matcha lover or just curious to try something new, these doughnuts are a fun and flavorful way to elevate your baking routine. Serve with green tea or a creamy latte and savor the moment.

I followed it pretty closely, but my batter seemed a little thick. Still baked fine—just denser doughnuts. Glaze helped a lot though. Pretty good overall!

Glad they baked up fine! A thicker batter can definitely make them denser—maybe your matcha was extra powdery or your flour was packed. Love that the glaze saved them, though 😄

YUM!! I love matcha! I could eat these every day! Also, super easy to make. Got my kids involved, they loved it too!

Matcha? More like meh-cha. Didn’t like them at all. Kinda disappointed.

  4. 2 stars
Not impressed. The doughnuts came out too dry for me.

I was skeptical about matcha and doughnuts but this recipe changed my mind. Just wish the glaze was sweeter!

Wow these are amazing. I used oat milk and it still worked, and my whole kitchen smelled like green tea heaven. Five stars! ✨

That’s awesome—oat milk is such a good swap for matcha bakes. Glad the flavor came through and your kitchen smelled amazing 😍

Oh wow, these are delicious! The glaze is the perfect touch. My friends loved them at the party! ❤️

Not gonna lie, I was skeptical about baked doughnuts being close to fried ones, but these are actually solid. Flavor is light, not super intense. I’d maybe add a touch more vanilla next time and make sure the batter isn’t overmixed.

These doughnuts are absolutely delicious! I love the matcha flavor. Will definitely make again!

I tried these and they came out a bit dry. Maybe I overbaked them? Not sure if I’ll make them again.

So easy and way less messy than frying. I served them to friends and everyone asked where I bought them (lol).

I forgot the egg and they were still okay… kinda.

Ok, but like, what’s matcha? Is it a green tea or something?

Doughnuts??! I thought it was muffins. 🤔

I accidentally used whole egg instead of “large” and didn’t measure the matcha glaze perfectly. Still turned out decent. Not perfect green color, but tasty.

Honestly, these were a fail for me. The toothpick came out clean but the crumb was dense and dry. I might’ve baked too long or my egg was small.

    1. 2 stars
Ugh, I’m sorry that happened! Dense/dry crumb usually means overmixing or the batter getting a bit too thick. Next time, stop as soon as it’s just combined and consider baking closer to 10 minutes instead of 12.

1 cup flour + 1/2 cup milk? feels off—mine came out way too thick/dry and didn’t rise much. Maybe my measuring was wrong, but I’m not sure I’d trust it again.

  18. 5 stars
These turned out way cuter than I expected. The matcha flavor is subtle but nice, not bitter. I’d bake them like 11 minutes next time so they’re a tad firmer.

Matcha doughnuts??? Who even thought of that?!!!

Yummy! I added some sprinkles on top for extra fun. Will make again for sure!

Is it really that healthy? I thought sweets were bad, but these look fun to try. Might give them a shot.

  22. 4 stars
I was skeptical about baking doughnuts (always feels like it won’t work), but this was easy and the batter behaved fine. The toothpick test saved me—turns out mine weren’t ready at 10 minutes.

    1. 4 stars
I tried this and mine were a bit dry at 10 minutes… I think my oven runs hot. Next time I’ll do 11-12 and maybe swap the milk for buttermilk.

Same! I’m always convinced doughnuts are gonna be a flop in the oven 😂 but the “toothpick saves you” tip is so real. How did your matcha flavor come through—subtle or pretty punchy?

I didn’t have a doughnut pan, so I used a muffin tin instead. They still turned out yummy!

Matcha doughnuts, yay! Who knew healthy could taste so sweet?!

I followed the recipe pretty closely, but my dough batter was a bit thick. Still baked fine though—10-12 min was perfect for my oven. Glaze turned out glossy; would recommend using the higher end of matcha if you want it greener.

  29. 3 stars
I messed this up—I used self-rising flour instead of all-purpose. Still tasted ok but not doughnut-y enough! Ha!

  30. 3 stars
I’m skeptical about using matcha. Can’t believe people get so excited over green powder! It’s just okay to me.

I totally get it! Matcha can be polarizing. Have you tried it in a latte or dessert? Sometimes it can surprise you!

    2. User avatar tuyet.spencer32 says:

Nah, matcha is just fancy grass powder! I never seen the hype. These doughnuts look good tho.
