Ingredients
  

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp matcha powder
  • 1/2 cup milk
  • 1/4 cup butter melted
  • 1 tsp vanilla extract
  • 1 egg large
  • Matcha Glaze Decorating option 1
  • 1/2 cup powdered sugar
  • 1/8 to 1/4 teaspoon matcha powder depending on desired green color
  • 1 tbsp almond milk

Instructions
 

  • Preheat the oven to 180°C (350°F) and grease a doughnut pan.
  • In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and matcha powder.
  • In another bowl, whisk together the milk, melted butter, vanilla extract, and egg.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Spoon the batter into the prepared doughnut pan, filling each cavity about 3/4 full.
  • Bake for 10-12 minutes, or until a toothpick inserted into a doughnut comes out clean.
  • Remove from the oven and let the doughnuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  • Serve the doughnuts as is or dust them with powdered sugar or matcha powder or with matcha glaze.
  • Matcha Glaze: In a small doughnut-sized bowl, whisk together the powdered sugar and matcha powder, then whisk in the almond milk until smooth. Dip each doughnut in the glaze and let the excess glaze drip off.

      180°C does seem low sometimes depending on the oven. Mine runs hot/cold too—when that happens I go by color: bake until the edges look set and the tops spring back a little. Flavor probably saved it though!

    This is a great recipe! But mine didn’t rise much. I followed it exactly, but they came out flat. Anyone else have this problem?

    Matcha glaze idea is cute, but mine came out clumpy. I think the matcha powder wasn’t fully whisked with the powdered sugar. If I had sifted it, it would’ve been smoother.

      Ugh clumpy glaze is the worst 😩 I totally agree—matcha can be stubborn. I usually sift the powdered sugar and whisk the matcha in slowly so it doesn’t clump.

    Too much sugar for my taste. I’d cut the powdered sugar in the glaze by like 25-30% next time. The matcha is good but the sweetness overpowers it.

    Not gonna lie, 1 tbsp matcha powder in the batter sounds like a lot? I used only 1/2 tbsp the first time and it was better for me. But the texture still worked. Maybe I’m just sensitive to matcha.

      Yeah, 1 tbsp matcha does sound pretty bold for 1 cup flour 😅 I’m with you—starting with 1/2 tbsp might be the sweet spot. Texture matters more than people think!

    My pan didn’t bake evenly—some were a bit pale on one side. Flavor is still great though. Next time I’ll rotate the tray halfway through. Also, 180°C felt a little hot in my oven.

      I get it, not everyone likes the taste of matcha. But I think these are worth a try! They’re a nice twist on the classic doughnut.

    The batter smelled amazing but I got a weird gummy center. I think I overfilled the cavities—mine were closer to full-full. Next time I’ll stick to 3/4 like the recipe says.
