      Sorry it was bland for you! I’ve found the “pop” really depends on caramelization—make sure the cubes are cut evenly and get that light browning. If your squash was small, it might have roasted a bit dry instead of caramel-y. Also, I sometimes add a pinch of cinnamon or a little extra maple at the end (last 5 minutes).

      Hmm, bland could be seasoning. 1 tsp salt for a whole squash can be low depending on cube size. I’d try 1.5 tsp next time and definitely taste before serving. Also 400F for 35-40 is fine, but if it’s smaller you may need less time so it doesn’t lose flavor. Just sayin.

      Yeah, I think leaving it in longer could help with caramelization. I usually roast mine for at least 45 minutes! Just keep an eye on it.
