Lamb Stew

March 3, 2025

Lamb stew is a timeless comfort food that brings together tender chunks of lamb, root vegetables, and a rich broth in one deeply satisfying dish. It’s a staple of many traditional cuisines, especially Irish and Mediterranean, known for its ability to warm you from the inside out. Whether you’re making it for a cozy winter dinner or a Sunday family meal, lamb stew delivers big flavor with minimal fuss.

The heart of the stew is, of course, the lamb. Shoulder or leg cuts are ideal, as they become meltingly tender when simmered slowly over low heat. The meat is usually seared first to lock in flavor, then combined with aromatics like onions, garlic, and herbs such as rosemary, thyme, or bay leaves. Carrots and potatoes are classic additions, but parsnips, turnips, or even peas can be used to add depth and variety.

A rich stock or broth forms the base of the stew, often enhanced with a splash of red wine or a spoonful of tomato paste to deepen the flavor. As it simmers, the ingredients break down and blend together, creating a thick, savory gravy that clings to every bite. The result is a dish that’s as hearty as it is comforting.

Lamb stew is traditionally served with crusty bread, mashed potatoes, or even a bowl of buttered noodles. It’s a complete meal in one pot, making cleanup easy and leftovers even better the next day. The flavors continue to develop as it sits, making it a great make-ahead option for busy weeks or gatherings.

This stew isn’t flashy, but that’s part of its charm. It’s honest, nourishing food made with care and simple ingredients. Each spoonful is filled with warmth, making lamb stew a favorite during the colder months or whenever you need a little extra comfort.

Looks good, but I don’t trust lamb. Isn’t it too tough? I might stick to beef.

  2. 2 stars
I dunno, didn’t taste good to me. It was too salty! I think I put too much of the salt. Not making it again.

  3. User avatar Nick L. Andime says:

This stew is amazing! I added a pinch of rosemary and it was a hit with my family. Will make again!

I wasn’t sure about using beef broth instead of lamb broth. It turned out okay but felt a bit off. Next time I’ll try it with lamb broth.

  5. User avatar leslie.wiza says:

This turned out rich and cozy—exactly what I wanted on a cold night. Browning the lamb makes a huge difference.

Tasted good, but my kids didn’t like it. Maybe it’s an adult thing? Alot of veggies!!!

    1. User avatar Reg Nullify says:

      4 stars
Maybe it’s too many veggies for them! Kids can be picky, but this stew sounds hearty. I love it!

  7. User avatar Shaddam Corrino IV says:

    5 stars
The smell while simmering was amazing. My whole family kept hovering like it was Thanksgiving. Will definitely make again.

  8. User avatar Gandalf the Grey says:

    3 stars
Okay but mine turned out kinda bland. I might’ve under-salted. Also I cut the potatoes too big so they took longer. Flavor was better after I reheated with extra pepper.

Aint no stew like a lamb stew! Yum!
    Perfect for winter days! 🥘

    1. 5 stars
Absolutely! Lamb stew is the best, especially with crusty bread on the side! 🍞

    2. User avatar carlos.harber2002 says:

I dunno, isn’t beef stew just as good? 🤔 Lamb seems kinda expensive for a stew.

  10. User avatar Eccentrica Gallumbits says:

    2 stars
I followed the recipe exactly but it was kinda bland. I even added extra garlic!

  11. User avatar dayna.jaskolski11 says:

Eww, I don’t like lamb too gamy for me! I used beef instead. Still turned out good tho.

    1. User avatar sade.champlin28 says:

That’s interesting! I usually find lamb really tasty, but I guess everyone has their preferences. Glad the beef worked out for you!

    2. User avatar francisco.reilly says:

Lamb’s not that bad! Maybe you just had a bad batch. Beef in lamb stew? Isn’t that a bit off? 🤔

  12. User avatar viki.cummerata2023 says:

    4 stars
Good flavor but I had to add a splash of water near the end because my potatoes soaked everything up. Still, thyme + tomato paste combo is great.

Who in their right mind uses beef broth for lamb? Should be lamb broth, duh! 👎

    1. 2 stars
Ugh, who cares about flavors? Just use what’s on hand! 🤷‍♂️

    2. User avatar Grandpa Gohan says:

      4 stars
I don’t see the problem? Beef broth adds depth of flavor. Lamb’s rich enough as it is!

  14. User avatar malinda.kilback1972 says:

    5 stars
Made this tonight and it’s super comforting. The lamb got tender at the 2-hour mark, and the tomato paste gives it a nice depth. I added a splash of Worcestershire too—highly recommend.

  15. User avatar Gaynell Weimann says:

    5 stars
This came out so tender! I browned the lamb a little longer and the whole stew tastes richer. Great comfort food.

  16. User avatar herman.treutel68 says:

    5 stars
I was skeptical about only 2 hours—my lamb usually takes forever. But wow, it actually came out tender. Thick, hearty, and not too salty. Will make again.

  17. User avatar stephen.pagac37 says:

    4 stars
Not gonna lie, I’m skeptical about “beef broth” with lamb stew. But I tried it and it turned out fine. Would still maybe use lamb stock if I had it.

    1. 5 stars
Honestly that combo surprised me too, but beef broth does give it a deeper, richer flavor. Lamb stock would be even better if you’ve got it—otherwise beef is totally workable.

  18. User avatar france.bechtelar says:

    2 stars
Who even eats lamb? Chicken is way better, but I guess this stew looked kinda good.

  19. User avatar marybelle.spencer says:

    2 stars
Too much time to cook for just stew. I don’t have that kind of patience. 😒

    1. 3 stars
2 hours ain’t that long for something so yum. Just put it on and chill for a bit! 😅

    2. User avatar Draugr Overlord says:

      4 stars
I get it, waiting for stew can feel like forever! But the flavor is worth it. Maybe try a quicker recipe next time?

  20. User avatar Duncan Idaho says:

    4 stars
2 hours seems long, but I’m glad I didn’t rush it. The veggies held up and the broth thickened a little. Great balance of flavors.

    1. User avatar bryon.heathcote says:

      5 stars
Totally agree—two hours is exactly what it needs. I did the same and the broth got that nice body. Nice work!

  21. User avatar Torchbugs says:

    4 stars
Delicious! I added a few extra veggies like bell peppers and it was still great! Definitely a keeper.

    1. User avatar leland.vonrueden93 says:

      5 stars
Sounds yummy! Bell peppers are a great addition! Can’t wait to try it with those.

5/5 omg best stew ever!! my kid ate it all 😅

    1. 5 stars
Ahh love this!! 😄 Lamb stew is the best comfort food—so glad your kid devoured it!

    2. 4 stars
2 hours seems kinda long to me—mine always gets tender faster with lamb, like 45 min. Still, if it tastes that good I’m not complaining.

  23. 4 stars
Easy to make, but my lamb didn’t brown like the picture. What did I do wrong?

  24. User avatar Arthur Dent says:

    5 stars
This came out super comforting. The lamb turned melt-in-your-mouth after the full 2 hours, and the tomato paste gave it a nice rich depth.

  25. User avatar joe_banana says:

    3 stars
Not sure about using beef broth with lamb. I feel like it should be lamb stock, but I didn’t have any so I tried it anyway. It wasn’t bad, just not as rich as I expected.

    1. User avatar Miss Carmen King says:

      4 stars
Honestly, beef broth isn’t crazy—lamb is strong enough to handle it. You’ll just miss that subtle gaminess/rich lamb flavor you’d get from lamb stock. If you have any beef bouillon, adding a tiny bit less broth might help keep it from tasting “too beefy.”

    2. User avatar marcelo.turcotte says:

      3 stars
I think you should use lamb stock or even just water + a little extra tomato paste. Beef broth got a different taste… but hey, if it wasn’t bad then it’s fine. 2 hours simmer is the important part I guess 😅

  26. User avatar lenard.sauer43 says:

Lamb stew? Never heard of that. Is lamb good? I thought only cow meat was used for stew.

  27. User avatar bob.reinger8 says:

    5 stars
This was a game changer! The lamb turned out sooo tender. My family loved it!

  28. User avatar coleman.bartoletti1963 says:

    3 stars
Flavor was good, but I forgot to set the lamb aside and kinda crowded the pot—browning didn’t happen as much. Still tasty, just more stew-y than rich.

  29. User avatar luann.ruecker77 says:

    5 stars
It took a long time to cook, but totally worth it! My family loved it, thanks!

  30. User avatar harold.sawayn says:

    5 stars
SO YUMMY! I made it for my family and they loved it! Just what I needed for a cold night.

  31. User avatar Tish Corkery says:

    3 stars
I tried this recipe but it came out a bit bland. I added some chili flakes which helped a lot.

  32. User avatar hipolito.howell9 says:

    2 stars
Sooo bland for me. I used exactly the seasonings but it needed more salt and maybe a splash of Worcestershire? The tomato paste flavor was there, just not enough.

  33. User avatar NAFO.SUPREMACY says:

    4 stars
Didn’t have potatoes so I used rice instead. Still turned out okay!

  34. User avatar isaura.stehr3 says:

  35. User avatar Wellington Yueh says:

    5 stars
Absolutely delicious! This is the best lamb stew I’ve ever made. Will definitely be making it again!

  36. User avatar Jarvan IV says:

    2 stars
Needs more garlic. Like way more. Also carrots got a little mushy for my taste. Still, everyone ate it.

    1. User avatar nam.gulgowski22 says:

      5 stars
Honestly I’m with you—2 cloves sounds way too timid for lamb stew. I usually go closer to 4–6 cloves and it makes a big difference. Also sorry about the mushy carrots; I slice them thicker next time so they hold up during the long simmer.

    2. 4 stars
I get the garlic urge 😄 but mushy carrots usually means they were in there too long. Next time add carrots partway through (like after the lamb has been simmering ~1 hour) so they stay firm. Glad everyone still ate it though!

  37. User avatar kali.mann says:

    2 stars
Idk about “beef broth” with lamb… I used chicken broth and it turned out kinda bland. Needs more seasoning or maybe fresh herbs.

  38. User avatar kalyn.hayes says:

    5 stars
Made this last night and it was super comforting. Browning the lamb really made the flavor pop. I added a splash of Worcestershire too—don’t know if it’s “authentic,” but it tasted amazing.

    1. 5 stars
Yes!! Browning the lamb is the make-or-break step—love that you got that flavor pop. Worcestershire is a nice little boost, even if it’s not “traditional” in every household. Glad it turned out comforting for you!

    2. User avatar Atahbah says:

      3 stars
I’m torn—Worcestershire feels like it would make it a bit too “savory-saucy.” But hey, if it tasted amazing then it worked. Did you add it when you sautéed the onion/garlic or later when simmering? Two hours seems long too… I usually do like 45 min? 😅

  39. User avatar david.kessler94 says:

    5 stars
Made this last night—so cozy. Browning the lamb took a bit of patience but it was worth it. The stew thickened up nicely and the thyme flavor was perfect.

  40. User avatar Princess Zelda says:

    4 stars
What other veggies can I add? My kids are picky! 🤔

    1. 3 stars
I dunno, maybe just stick with what it says? Kids can be picky for a reason. 🤷‍♂️

    2. User avatar stephania.hintz3 says:

      5 stars
You could add peas or bell peppers! They add nice color and flavor. My kids love them! 😊

  41. User avatar MrsLucyG says:

    4 stars
I added extra potatoes instead of carrots and it turned out great! Love it!

    1. User avatar Kid Trunks says:

      2 stars
Extra potatoes? That ain’t how the recipe works! You gotta stick to it for the real taste.

    2. User avatar tammara.lang2024 says:

      5 stars
That sounds yummy! I’ve never thought of swapping carrots for potatoes! Gonna try that next time!

  42. 3 stars
Meh, it was okay. Just another lamb dish, nothing special, ya know?

    1. User avatar mitchel.hagenes1982 says:

      4 stars
I disagree! I think lamb stew can be amazing if cooked right. Did you use good quality lamb?

  43. User avatar reginald.dickens1959 says:

    4 stars
I was skeptical about 2 cups broth for all that veg, but it ended up just right. Next time I’ll thicken it a bit more with a little flour slurry.

  44. 2 stars
Followed the recipe, but it was too salty for my taste. Any way to fix that next time?

  45. 5 stars
Yummy stew! Perfect for a cold day. I will make it again for sure!

    1. 4 stars
I’m excited to try this! It sounds delicious, especially on a chilly day like today. Do you think it would work with chicken instead of lamb?

  46. User avatar Sand-Dial says:

    4 stars
I wasn’t sure about adding tomato paste, but it really works! Tastes so good, I’m impress!

    1. User avatar ted.sanford84 says:

      5 stars
I was skeptical about tomato paste too, but it really does change the flavor! Glad you liked it!

  47. User avatar joan.walker1977 says:

    4 stars
This is nice, but 2 hours is not enough if your lamb is tough 😅 I cooked mine longer and then it finally turned fork-tender. Also I used 1/2 onion cuz I was lazy.

  48. User avatar gaye.mills18 says:

    5 stars
This is giving “grandma stew” vibes 😍 super easy and smells amazing while it simmers. I served it with crusty bread and it was gone fast!

    1. User avatar yong.walsh says:

      4 stars
I tried a similar stew and it turned out good but mine was a little bland—maybe I just didn’t salt enough. Still, the aroma while simmering is unbeatable. Any tips for thickening it?

    2. User avatar jeffrey.howell says:

      5 stars
Aww I love that “grandma stew” vibe too 😍 crusty bread is the perfect move. I’m making this next week!

  49. User avatar terminatorXYZ says:

    5 stars
This stew is excellent! The lamb just melts in your mouth. Will definitely make it again.

  50. 4 stars
Did you use chicken broth instead of beef? That could change the flavor A LOT!

  51. 3 stars
Not bad, but my stew was a little too salty even though I started with “1 teaspoon or to taste.” Next time I’ll go lighter and reduce broth a bit.

  52. User avatar oPandariaNo says:

    5 stars
This stew is just heavenly! The lamb turned out so tender, and the flavors are just sooo rich. Will make again for sure!

  53. User avatar willa.kuhic38 says:

    2 stars
I dunno. My stew turned out kinda bland…maybe I forgot to add some spices? Not sure this recipe is for me.

  54. 3 stars
Easy recipe but it took forever to cook. I thought it would be quicker!

    1. 2 stars
2 hours? That’s way too long for me. I thought this was supposed to be easy.

    2. User avatar Arthur Philip Deodat says:

      4 stars
Yeah, it can take a while but the flavor is so worth it! Just a little patience 🙂

  55. User avatar gavin.monahan says:

    1 star
Lamb? Disgusting! Why not just use beef? Way better!

    1. 5 stars
Lamb has a unique flavor that beef just can’t match! Give it a try before knocking it! 😊

  56. User avatar Bettie Batz III says:

    2 stars
Honestly, 1 tablespoon olive oil feels too little for browning 500g lamb. I had to add more oil so it wouldn’t stick.

    1. User avatar Mary Ann Bright says:

      3 stars
Whaat, mine browned fine with 1 tbsp… maybe my lamb was drier? Also I cover later, not from the start. If it stuck, maybe the pan not hot enuff.

    2. User avatar hiram.kuphal2023 says:

      5 stars
I agree—500g lamb can hog up the oil. I usually use closer to 2 tbsp so you get real browning instead of steaming. Your fix makes sense.

  57. User avatar kym.nikolaus1959 says:

    5 stars
This recipe is absolutely delicious! The lamb turned out super tender!

    1. 5 stars
I agree! It’s like a hug in a bowl. Perfect for cold days!

    2. User avatar austin.carroll41 says:

      2 stars
I don’t know, lamb can be kinda greasy. What if I don’t like the taste?

  58. User avatar sammy.marvin71 says:

    4 stars
I don’t get why people simmer lamb for *two hours*—isn’t that kind of overkill? But I tried it and yeah… it really did soften. Okay, you win this time.

    1. User avatar jacquiline.schumm26 says:

      5 stars
I felt the same way, but 2 hours is usually when the tough fibers really break down. Browning + low simmer makes a huge difference.

  59. 4 stars
I don’t usually cook with lamb, so I was a bit unsure, but wow this was better than I thought. A bit long to cook but worth it.

  60. User avatar peter.wisozk2 says:

    4 stars
My lamb took longer than 2 hours (bigger cubes), but patience paid off. Sauce thickened nicely once the stew simmered uncovered for a few minutes.

    1. User avatar wallace.kilback says:

      5 stars
Good to know! I always underestimate simmer time—bigger cubes definitely need more patience. I’m glad the sauce thickened up once you simmered uncovered.

    2. User avatar cleveland.mckenzie says:

      3 stars
Weird, mine always takes like, 2 hours no matter what. Maybe my cubes are just smaller? Either way, thicker sauce is nice—uncovered at the end makes sense I guess.
