Maybe your jalapenos were still a bit wet or too fresh/squishy. I’ve found if you roast them (cut-side up) for like 5 min first, they firm up and the cheese leakage drops. And if you let the filled jalapenos chill in the fridge 20-30 min before breading, it seals better for me.
Oof, sorry they came out messy. A couple things help the filling “stay put”: after you scoop out the seeds/membranes, pat the jalapeno halves really dry, and when you fill them don’t overstuff—leave a little rim so the cheese doesn’t push out. Also make sure you really press the breadcrumbs/flour coating down so it grips the pepper skin.
