Ingredients
  

  • 12 whole jalapeño peppers seeded and finely chopped
  • 2 cups apple cider vinegar
  • 6 cups sugar
  • 1.75 ounce powdered pectin

Instructions
 

  • Combine chopped jalapeños and apple cider vinegar in a large saucepan.
  • Stir in sugar and bring the mixture to a boil over high heat. Continue boiling for 10 minutes, stirring constantly.
  • Stir in the powdered pectin and return to a hard boil for 1 minute.
  • Remove from heat and skim off any foam using a spoon.
  • Pour hot jelly into sterilized jars, leaving ¼ inch headspace. Seal jars with lids and process in a boiling water bath for 10 minutes.

    The vinegar-to-sugar ratio looks pretty intense. I’m worried it’ll taste like straight vinegar if not balanced.

      Totally get the worry—2 cups vinegar to 6 cups sugar is strong, but the sugar really does tame it. Plus jalapeños add their own “sweet heat” instead of just sharp tang. I’ve found it tastes closer to jelly than salad dressing, especially after the jars rest.

    Loved the heat—sweet but still got a nice kick at the end. Skimming the foam was key, mine looked way cleaner after that. Next time I might add a little extra jalapeño for more spice.

      Yes!! Exactly what I found too—sweet up front, then that jalapeño “kick” comes rolling in. Skimming the foam is such an underrated step. I’m thinking of trying extra jalapeño like you said next time.

      Mine came out too mild even with the peppers chopped up pretty fine… maybe I didn’t boil long enough? Also I forgot to skim the foam and it got kinda cloudy. Still tasted decent though. Would adding more jalapeño throw off the set with the pectin?

    10 minutes boiling plus the 1 minute hard boil… seems kinda short to me? I’m skeptical it’ll gel every time, but the pectin does the heavy lifting I guess.

      I felt the same at first—10 minutes sounded too quick. But with that much sugar and the pectin added on the hard boil, it usually gels fine. The boiling water bath time after also helps set things up consistently.
