Ingredients
  

  • 4 potatoes medium
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cayenne pepper
  • 2 jalapeno peppers sliced
  • 1 cup shredded cheddar cheese
  • 1/4 cup cilantro chopped fresh

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Slice the potatoes into thin fries.
  • In a large bowl, toss the potato fries with olive oil, salt, paprika, garlic powder, onion powder, and cayenne pepper until well coated.
  • Spread the seasoned fries in a single layer on a baking sheet.
  • Bake for 20 minutes, then flip the fries and bake for another 5 minutes.
  • Remove the fries from the oven and sprinkle the sliced jalapeno peppers and shredded cheddar cheese on top.
  • Place the baking sheet back in the oven for another 5 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and sprinkle with chopped fresh cilantro.
  • Serve hot and enjoy!

      Thanks! Browning can be tricky—thinner fries should help a lot. I like the broil idea at the end too. Did you use a light-colored baking sheet or parchment? That can affect crisping.

      Mmm mine also paled after the flip. I think 20 min is not enough. I would try 30 then flip, and skip the broil cuz it burns my cheese quick lol. Still tasted good tho.

      I get what you mean—400°F is a bit on the gentle side. I usually do 425°F and flip halfway, and they come out way more golden. Maybe your fries were a little thick too?

      Nah, 400°F is fine imo. If they didn’t color, it’s more about spacing—single layer and don’t overcrowd. Also soaking the cut potatoes helps a lot with crisping.

      I get your point 😅. Without soaking, the outside can be more “soft potato” than crisp. I’ve found cutting a bit thinner and making sure they’re in a single layer helps a lot—also, if your oven runs cool, 400°F might not be hot enough.

      Tbh the recipe says bake 20 + 5 + 5 = only 30 mins. For extra-crispy, you might need more time and/or a higher temp (like 425°F) + flipping halfway. Also patting the fries dry after slicing makes a difference.
