Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups buttermilk
  • 2 eggs
  • 2 tbsp butter melted
  • 1 tsp vanilla extract
  • butter or oil for greasing the pan

Instructions
 

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are small lumps.
  • Heat a non-stick skillet or griddle over medium heat. Grease with butter or oil.
  • Pour about 1/4 cup of batter onto the hot skillet and spread it in a circular motion to form a pancake.
  • Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  • Repeat with the remaining batter.
  • Serve the pancakes warm with your favorite toppings and enjoy!

      I think so? But honestly mine only gets lumps if I’m not careful. Also, if you overmix it could make them chewy. Next time stop as soon as it looks combined. Meh, pancakes are picky.

    Honestly, 1/4 cup batter feels like a lot. I made smaller ones and they cooked much faster and flipped easier. Great texture though.

      You should definitely use 2 cups. 1 cup won’t give enough structure! That’s why they were flat. Try again!
