Ingredients
  

  • 2 tablespoons olive oil for cooking
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium carrot diced
  • 1 stalk celery chopped
  • 1 can diced tomatoes 15 oz
  • 1 can kidney beans drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 can cannellini beans drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion, garlic, carrot, and celery and cook until the vegetables begin to soften, about 5 minutes.
  • Stir in the diced tomatoes, kidney beans, black beans, and cannellini beans.

    Decent stew, but mine needed more time—25 minutes felt a bit short for the carrots. Next time I’ll simmer closer to 40 and maybe mash a little beans to thicken.

    I had to substitute regular beans for some old dried ones 😬. Not the best decision – they didn’t cook right.

    I followed it exactly and it was… okay? Like, good flavor but not wow. Maybe my salt was off or my onions weren’t sautéed long enough. Still ate it all though.

      Honestly that “okay but not wow” feeling happens to a lot of stews—your hunch about the salt and sauté time is probably right. Onion/carrots/celery usually need a bit more time to build sweetness (even 7–10 min helps). Also, did you rinse the beans well? Sometimes leftover can flavor can mute things. Next time try tasting after 15 minutes and adjusting thyme/salt again.

    I tried this and it was fine, I guess. The instructions are clear but I’m missing instructions on whether to mash some beans for thickness… still ate it though.

    1/2 teaspoon pepper is not enough!! Also I think it said to bake it or something? (I might’ve skipped a step?) Either way, not impressed.

      1/2 tsp pepper sounds fine to me but everyone’s palate different. Also it’s definitely not bake—stove top: boil then simmer 25-30 min. If yours was bland, maybe it needed more salt or more thyme, not more pepper.

      Aw, I get what you mean—pepper can be a little timid in bean stews. I usually add more to taste at the end too. And yep, it should boil then simmer; you didn’t miss a “bake” step unless the recipe got changed.

    Bean stew is bean stew, ya know? I think it’s missing something. Like maybe cumin? Or it needs to be cooked longer for sure. Still, not horrible.

      Totally get what you mean—bean stew can feel a little “flat” sometimes. Cumin would definitely help, and I also think simmering closer to 45-60 minutes (or at least letting it reduce a bit) makes a big difference. A splash of vinegar or a squeeze of lemon at the end can brighten it too.
