Mint surprised me too—I’m with you, but it *does* lift it. For the “wet” salad: daikon/cucumber can hold water, so slice julienned cucumber a bit thinner or pat cucumber lightly dry, and toss with the dressing right before serving. Also don’t over-mix or it’ll weep more.
