A gluten-free flourless chocolate torte is the ultimate indulgence for chocolate lovers, offering a rich, dense, and fudgy texture that is sure to satisfy your sweet tooth. This luxurious dessert is perfect for those following a gluten-free diet, but it’s so delicious that everyone will enjoy it. Made without flour, the torte relies on eggs, sugar, and high-quality chocolate to create a dense, moist cake with an intense chocolate flavor.
The foundation of this torte is premium dark chocolate, which provides the deep, rich flavor that sets the tone for the dessert. The chocolate is melted and combined with butter, creating a smooth, glossy base. The addition of sugar ensures the right balance of sweetness, while eggs are beaten into the mixture to give the torte its creamy, velvety consistency.
One of the keys to a perfect gluten-free flourless chocolate torte is the right baking technique. The torte is typically baked at a lower temperature to allow it to set without becoming too dry. The result is a decadent, almost pudding-like center that is firm yet soft when you cut into it. When it cools, the torte solidifies slightly but retains a moist, dense crumb that melts in your mouth with every bite.
To finish, the torte can be dusted with powdered sugar for a simple, elegant presentation, or topped with whipped cream, fresh berries, or a drizzle of raspberry coulis for added flavor. A small sprinkle of sea salt can also enhance the richness of the chocolate and bring out its complex flavor notes.
This flourless chocolate torte is perfect for special occasions, such as birthdays, holidays, or dinner parties, and is naturally gluten-free, making it a great option for those with dietary restrictions. Its rich texture and intense chocolate flavor make it feel like a decadent treat without being overly heavy.
Whether served warm or at room temperature, this gluten-free flourless chocolate torte is sure to impress with its deep chocolate flavor and creamy, melt-in-your-mouth consistency.

Ingredients
- 200 grams dark chocolate roughly chopped
- 100 grams unsalted butter cubed
- 150 grams granulated sugar
- 5 large eggs separated
- 1 teaspoon vanilla extract
- pinch salt
Instructions
- Preheat the oven to 180°C (350°F). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- Melt the chocolate and butter in a heatproof bowl set over a pot of simmering water, stirring until smooth. Let it cool slightly.
- In a separate bowl, whisk the egg yolks with the sugar and vanilla until pale and thick. Stir in the melted chocolate mixture.
- In a clean bowl, whisk the egg whites and a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture in three additions.
- Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes until the edges are set and the center is slightly soft.
- Allow the torte to cool in the pan for 10 minutes, then gently remove from the pan and cool completely on a wire rack.
- Serve the torte with a dusting of cocoa powder or a dollop of whipped cream if desired.
This was amazing! So rich and delicious. I can’t believe it’s gluten-free!
Torte? More like torture! Had a hard time getting it out of the pan. Fancy name for a cake.
I followed it exactly but mine stuck a little even with the parchment. Still tasted amazing though. Next time I’ll grease heavier.
Didn’t turn out as pretty as the picture. Maybe my chocolate was bad? Tasted okay, tho. 😕
So rich! I felt like I was eating straight chocolate. Maybe too much for my taste but still good.
OMG this is so easy lol. I messed up the folding a little and it still turned out. 10/10—would do again.
Too sweet for my taste… I think I will reduce sugar next time.
I’m not sure about the egg whites part. Can I just use a whole egg? Sounds too complicated for me.
GREAT! First time baking and it worked out! Took a bit longer but who cares! So delicious!!
This torte is absolutely delicious! So rich and chocolatey, I couldn’t believe it’s flourless! Definitely making it again!
This recipe didn’t work out for me. It was just a hot mess in the pan. 😡
Just OK. I expected more for all the ingredients. It was just kinda flat.
I’m skeptical of gluten free desserts. Is this really that good? My friend said it changed her life, but how could it be? Anyone tried this yet?
This is the best chocolate dessert ever! So rich and fudgy! My family devoured it in minutes. Definitely a keeper!
Isn’t flourless just a fancy way to say it’s falling apart? Mine did. 😩
It was okay, but kinda dry. I think I baked it too long. Should’ve watched the time better.
OMG this torte is amazing!!! I can’t believe it’s flourless! I topped mine with strawberries. Best dessert ever! Will make again!
Why do I need to separate the eggs? Seems like a lot of work for a chocolate cake…
Separating the eggs helps create a lighter texture! It might seem like extra work, but it really makes a difference in the final cake. Trust me on this one! 🍰
This torte is sooo good! I doubled the recipe for a party and everyone loved it. Just remember not to overbake!
Doubled the recipe? That’s ambitious! But how can you trust it’ll turn out good if you don’t even follow the original measurements? Just sayin’.
I’m so glad everyone enjoyed it! Your advice on not overbaking is super helpful. Will definitely try this soon!
This torte is amazing! So rich and delicious. My family devoured it in one sitting!
I totally agree! This torte is pure heaven. I made it last week and my kids said it’s the best thing I’ve ever baked!
I made this and my brother ate the whole thing in one sitting. Oops!
its good but my grandma said its not gluten free if you use normal butter. use dairy free butter! LOL
Interesting point! I always thought butter was just butter, but maybe I’ll try dairy free next time. Thanks for the tip!
Took me a bit to make it, but worth it! Just make sure you don’t over mix the egg whites like I did the first time. Yummy!
This was too rich for my taste. I thought it was gonna be lighter with all those eggs, but nope! Gave it a 3 because it looked great tho.
I totally understand where you’re coming from! It can definitely be richer than expected. Maybe try serving it with some berries to lighten it up? Just a thought!
This torte is pure decadence! I cannot believe it’s flourless. So rich and chocolatey, it was a hit at my party!
Yummy! My kids loved it. Didn’t even realize it was gluten free, haha!
I dunno about you, but gluten free stuff often tastes weird to me. Does this torte really not taste gluten free? 🤔
That’s awesome! So glad to hear your kids enjoyed it. It’s a real hit in our house too!
Yum, yum! I added a pinch of cinnamon, and it was to die for!
Cinnamon? Really? I thought this was all about chocolate. But hey, if it works for you! Maybe I’ll try it.
It took a lot longer to bake than the recipe said. Don’t trust the time!
But you have to check it, every oven is different. Mine was done in 28 mins, maybe it’s just your oven? 🤷♂️
I know right! The baking time is usually off in these recipes. I just set a timer for 40 minutes and watched it closely. No regrets!
Easy to follow and the end result was super elegant. Will make again for sure!
Made this last night—super fudgy and rich. I was worried about the center, but pulling it at 28 min was perfect. The cooling step really matters.
Good but will try adding more chocolate next time!
More chocolate sounds like a win! Can’t wait to see how it turns out! 🍫
Not for me. It was too rich and sweet. I prefer a lighter dessert, honestly.
I don’t know about this recipe. It’s too complicated for me. Can’t I just use regular flour?
Flourless? Seriously? How does this even work? But, it was surprisingly good! I still prefer my traditional brownies.
I dunno, it was okay but I expected more from such a fancy name. Maybe it’s just not for me. 3 stars.
Chocolate heaven! 🍫
I made this recipe and it was simply too rich for my taste. I prefer lighter cakes. But my sister loved it!
My egg whites wouldn’t get to stiff peaks at first. I used a plastic bowl (maybe should’ve used glass/metal). After I redid it, it worked—so lesson learned.
Absolutely delicious! Made this for a party and it was a huge hit. Will definitely make again.
This torte is divine! I can’t believe it’s flourless! Rich and fudgy, just how I like my desserts. Definitely a keeper! 🍫
I don’t get it… how does not using flour make it a cake? Seems off, but I’m gonna try it anyways.
It’s actually a thing! Flourless cakes are super rich and chocolatey. You’ll love it!
What happens if I use regular flour? Would it ruin it? Asking for a friend.
Regular flour will definitely change the texture! This is meant to be flourless, so it might turn out dense and heavy. Better to stick with the recipe, trust me!
I don’t know much about baking, but I guess regular flour could work? Maybe don’t use too much, or it’ll be like a brick lol.
I followed the recipe, but my torte turned out flat and dry. Did I bake it too long? I’m not a pro baker.
This torte was a huge hit at my dinner party! So rich and moist, everyone loved it. Will definitely make again.
Absolutely love this recipe! So easy to make and my gluten-free friends were thrilled. Thank you!
I think the recipe is misleading. I ended up with a gooey mess. My friend said it was good but I suspect she was just being nice.
Just made this for a dinner party. Everyone loved it, so rich! But why don’t all cakes need flour?
I mean, does cake even need flour? Mine never turns out right. 🤷♂️ But I guess if people liked it, that’s what matters.
I’m so glad to hear everyone enjoyed it! Flourless cakes are amazing, they can be just as rich without the flour. They use the eggs for structure instead. 😋
Absolutely decadent! I’ve made this two times already and it’s a hit with my family. Rich, chocolatey goodness! 🍫
Really? I tried it and it was too rich for me… Just not my thing. 🤷♂️
So glad to hear that! This recipe is a game changer! 😍
Soooo good. I ate it warm and the center was like lava—my family demanded I make it again immediately lol.
Easy to make and gluten free! Definitely a winner for my dessert table!
Okay, it was good, but I thought it would be better. Just a chocolate cake. Meh.
I think it’s amazing! The chocolate is rich and so delish. Maybe you just wanted something more unique? This is perfect for chocoholics!
Really? I just made it and it was really good! You just ain’t appreciating the flavors, I guess. It’s simple but satisfying!
I followed the recipe exactly and got a shiny, fudgy texture—favorite part. The only complaint: it’s dangerously good with whipped cream.
That shiny, fudgy center is the dream 😍 Also yeah… whipped cream turns it into a full-on dessert emergency. Glad you nailed it!
I tried this too but mine didn’t get shiny—maybe my chocolate was too hot when I mixed it? Still tasted good though. And whipped cream is kind of illegal with this torte, lol.
Made this for a gluten-free friend and it was seriously rich and fudgy. The center stayed slightly soft like the instructions said—perfect.
This torte is amazing! So rich and chocolatey, my family loved it!
Why do you separate the eggs? Seems like a lot of extra work for cake. I just mix em all together usually.
I get what you’re saying, but separating the eggs really helps the cake rise and be light. It’s worth the effort! 🍰
Honestly, I think it’s unnecessary. Why go through the hassle? A cake’s a cake, right? Just mix em!
Yum! Just made this and it’s amazing. Chocolatey and not too sweet. Perfect for my gluten-free friends!
It turned out like a gooey mess. Did I do something wrong? Not happy.
This torte is heavenly! Rich and indulgent, a true chocoholic’s dream. Just perfect!
Why use dark chocolate? Milk chocolate taste better! But I guess it is gluten free, so that’s cool.
Yummm! Just made this for dessert and my kids loved it. Will definitely be making again! Quick questions tho, can I use milk chocolate?
I don’t get why people say flourless is hard—this is mostly just whisking and folding. The flavor is super deep. Mine was a little too sweet next time I’ll cut sugar by 20g.
Good. I’d rate a 3.5 if I could. It was okay but I found it a little dry? Maybe I baked too long?
I don’t know, I found it super moist! Maybe just make sure not to overbake next time? It’s a tricky recipe.
I think it might be your oven! Sometimes they run hotter than the setting. I’ve had that happen too. Try checking yours with an oven thermometer next time.
Yummy! But why is it called a torte? I thought tortes have layers? Anyway, it tasted nice. 4 stars!
Actually, torte can mean different things in different regions! Some do have layers, but not all. Glad you enjoyed it!
Super easy and quick to make! I added a bit of espresso powder for extra flavor. Yummy!
Tried this for my gluten-free friend. It was a hit! However, I think I added too much vanilla? Oops! Still tasted great tho.
That’s awesome! I’m sure your friend appreciated the effort. A little extra vanilla never hurt anyone, right? Sounds delicious! 😊
Wow, gluten-free and it still turned out good? I wouldn’t trust those gluten-free recipes. Are you sure it wasn’t a disaster? 😂
Seems too rich for me. I’m more of a vanilla cake person anyway. But nice recipe!
Thanks! I love vanilla too, but this chocolate torte is sooo rich and good! Maybe give it a try just once?
Why would you make a chocolate cake without flour? Sounds weird to me.
I don’t get it either! What’s wrong with just using regular flour? Seems like a gimmick to me.
Flourless cakes are actually super popular! They can be really rich and fudgy. Give it a try before judging!
I don’t understand how it can be flourless. How does it hold together? Magic?
Okay but… 180°C seems high? I baked at 180°C and the edges got a little dry. Still tasty, just not as “wobbly” in the middle as I expected.
The separation part was annoying, I don’t have a lot of patience 😅 Also, I accidentally got yolk in the whites and still tried… it didn’t whip. Waste of chocolate, but at least I learned.
I followed everything pretty closely, but my egg whites wouldn’t get to stiff peaks. Tasted great though, just a bit more dense than expected.
Glad it still tasted great! If your whites wouldn’t stiffen, it’s usually one of two things: the bowl/whisk has a bit of grease, or the whites got a trace of yolk. Also, make sure they’re room-temp and whisk until glossy peaks—folding gently but not too long. You said it was denser, which fits if the whites didn’t get as much air in. Next time, I’d separate eggs carefully and wipe the bowl with a little vinegar or lemon juice before whipping.
Wow, I love how easy this was to make! Next time I’ll add nuts on top tho. yum!
I dunno, isn’t a torte supposed to be a bit more complicated? Sounds too easy to be good.
Adding nuts sounds like a great idea! I’m gonna try that too. This recipe was such a hit at my party!
Love it! I’m gluten intolerant and this is perfect. Total game changer! 🥳
This torte is AMAZING! So rich and decadent, perfect for my chocolate cravings. Highly recommend!
Wow, this torte is incredible! So rich and chocolatey, my whole family loved it! Definitely a 5-star recipe!
Meh. Too sweet for my taste, and mine cracked on top which looked kinda sad. I think i overmixed the whites a bit? Idk. Won’t stop me from eating it though 😅
This is the best gluten-free dessert I’ve ever tried! Super easy to make. Thank you for sharing!
180°C seems too hot? Mine started cracking on top around 20 minutes. Still edible, but I think the baking time/temp needs tweaking.
It was okay. I don’t know if I did something wrong, but mine came out sort of gooey in the middle. A bit disappointing.
Maybe you didn’t bake it long enough? The middle should be soft but not gooey.
Mine turned out perfect! You gotta make sure to whip the egg whites properly. Keep trying!
Mine didn’t rise much, more like a dense brownie torte (which isn’t bad). I think my oven runs hot because I pulled it right at 25 mins and it still set too far.
That “dense brownie torte” vibe actually sounds really close to what I’d expect from this kind of flourless recipe. For me, the key is pulling it when the center is still a bit soft—if your oven runs hot, 25 minutes might be perfect (or even a hair too long). Next time, try dropping the temp by 10–15°C or start checking around 20 minutes. Also make sure you didn’t overwhisk the whites; they should be stiff but not dry/overworked.
