Garlic Oysters

January 24, 2024

Garlic oysters are a simple yet luxurious dish that brings out the best in fresh oysters. Whether you’re celebrating a special occasion or just want to treat yourself, these oysters are the perfect balance of briny, sweet ocean flavor and rich, garlicky goodness.

To make garlic oysters, start with fresh oysters, either shucked or in their shells. If you’re using oysters in their shells, it’s easy to shuck them at home with a sharp oyster knife, or you can ask your fishmonger to do it for you. Once shucked, the oysters are ready to be transformed into a delectable treat.

The key to garlic oysters is the sauce. Begin by melting butter in a pan, then adding minced garlic and sautéing until the garlic is fragrant but not burnt. You can also add a dash of white wine or lemon juice to the butter for an extra layer of flavor. A sprinkle of crushed red pepper flakes adds a little heat, and fresh herbs like parsley or thyme brighten the sauce. Once the garlic butter is ready, spoon it generously over each oyster, ensuring they’re well-coated.

After the oysters are topped with the garlic butter, they’re ready for baking. Bake at a high temperature (about 400°F or 200°C) for 8-10 minutes, or until the oysters are bubbling and golden on top. If you like, you can sprinkle a little Parmesan cheese on top before baking for a cheesy, crispy finish.

These garlic oysters are perfect for serving as an appetizer or as a main course. Pair them with a crisp glass of white wine or champagne to complement the richness of the dish. They’re also great served alongside a fresh salad or a simple pasta dish.

Whether you’re an oyster aficionado or new to this delicacy, garlic oysters will elevate any meal. Rich, garlicky, and satisfying, they’re an indulgent yet easy way to enjoy the best of what the sea has to offer.

I’m skeptical about grilling oysters—feels like they’d dry out fast. But mine actually turned out okay. I think the key is medium-high and not walking away.

  2. User avatar lona.gerhold says:

    1 star
Yuck! I don’t know why anyone would eat those slimy things. 1 star for the butter tho.

  3. User avatar latricia.gaylord says:

Garlic + oysters… yes please. This is gonna be my new go-to. Yum!

  4. User avatar rich.landlord says:

    3 stars
Not bad! My oysters curled too fast though, like after 3-4 minutes, so I had to pull them early. Flavor was good, just watch the grill heat.

  5. User avatar hilma.mckenzie says:

    4 stars
I did it on the stove tho. Still turned out good! 😋

  6. 2 stars
Why would anyone eat raw oysters? They’re gross! Looks appealing grilled tho.

    1. User avatar reynaldo.okeefe57 says:

      5 stars
I totally agree! Raw oysters are a big no for me, but grilled with garlic butter sounds amazing!

  7. User avatar clelia.cummerata says:

Does this really have garlic? I can’t taste it!!! I think I messed something up.

  8. User avatar douglass.ankunding69 says:

Super easy recipe! My kids even liked them! #winning

  9. User avatar benjamin.mckenzie79 says:

Not gonna lie, shucking 12 oysters is annoying. Also I think my grill ran hotter—mine were slightly overcooked, but the sauce still tasted great. Flavor > texture for me this round.

  10. User avatar louis.grimes66 says:

    4 stars
Garlic + butter is always a win. I used dried parsley because I didn’t have fresh and it still worked. Would recommend adding a pinch of chili flakes though.

  11. User avatar leonardo.runolfsson46 says:

    4 stars
The instructions say to keep the liquor—mine kinda spilled anyway (I’m clumsy). Still tasted fine, just a little less rich. Not the recipe’s fault though.

    1. 4 stars
Honestly, that’s reassuring—oyster liquor is delicate but it sounds like you didn’t overcook them. Garlic butter can still carry the flavor even if it spills a bit.

  12. User avatar kristina.swift1955 says:

    3 stars
Too much butter for my taste, but decent overall.

  13. User avatar MAGA2024.Trumpster says:

    2 stars
Meh. The garlic butter was tasty, but I couldn’t get them to cook evenly—some were done and some weren’t. Also my parsley ran out, so I used dried. Maybe that’s on me.

    1. User avatar johnny.corwin15 says:

      4 stars
Yeah, that’s frustrating—5–7 minutes can vary a lot depending on the grill and oyster size. I’ve had luck by making sure the grill is truly medium-high and spreading them out so they’re not crowded. Also spooning the butter closer to the edges helps them cook more evenly.

    2. User avatar MAGA2024.Trumpster says:

      3 stars
Could be the dried parsley, maybe? I always thought dried gets bitter if you cook it too long. Also 5-7 min seems long for oysters on a grill… I’d do more like 3-4 until they’re just starting to curl. But hey—could also be your heat being too hot/uneven. Mine do better when I rotate the shells mid-way.

  14. User avatar jennine.kunde says:

    1 star
I don’t like oysters, so I don’t know why I tried this. They tasted weird. No offense.

  15. User avatar vonda.flatley98 says:

    5 stars
Tried these on the grill tonight—so simple and the garlic butter is incredible. The edges curling was spot on, not chewy at all. Definitely making again.

  16. User avatar shenita.rath34 says:

    5 stars
This is delicious. The garlic-parsley butter is like instant fancy restaurant vibes. I added a tiny pinch of chili flakes just because, and it was perfect.

  17. User avatar geoWizard says:

    4 stars
I did 5 minutes and they were perfect—like restaurant perfect. The garlic butter gets in there and tastes amazing. Would make again for sure.

  18. 3 stars
I tried but they turned out too salty. Maybe I put too much salt? I’ll reduce it next time.

  19. User avatar blair.barrows1974 says:

    4 stars
Not gonna lie, 12 oysters is a lot for me. I used 6 and still had plenty of sauce. Flavor is great, but my grill runs hot and I think I overcooked by like a minute—some were a little chewy.

  20. 3 stars
Could you add chees? A pizza version maybe? 🤔

  21. User avatar Death Hound says:

    5 stars
These turned out insanely good—so buttery and garlicky. I kept the liquor like the recipe said and they stayed super juicy. 5-7 minutes was spot on for my grill.

  22. User avatar elliott.reichert says:

    3 stars
Garlic is too much! Should’ve added less.

    1. User avatar shawn.koss says:

      5 stars
I actually think garlic is what makes these oysters pop! Too much garlic? Nah, never!

  23. User avatar giuseppina.halvorson82 says:

I love this recipe! My mom used to make them this way. Thanks for reminding me!

  24. User avatar steve_maga says:

My husband said they were good, but honestly, I think they were too salty. Maybe less salt next time?

  25. User avatar Super Saiyan 2 Vegeta says:

Garlic oysters! I did this for a date night and we were like omg. I used dried parsley (because none fresh) and it still worked. Don’t skip the lemon.

  26. User avatar w00d_ch0p says:

    2 stars
Isnt this just grilled snails? I think they taste the same honestly.

  27. User avatar Spider Worker says:

    4 stars
I didn’t have oysters on hand so I used mussels and it worked. Still tasty!

    1. User avatar lee.pfannerstill32 says:

      5 stars
That’s awesome! Mussels are a great substitute. Glad it turned out tasty! 😊

  28. 2 stars
I messed up the seasoning—forgot the salt at first (whoops). Still tasted buttery and garlicky, but it definitely needed that extra balance. Easy fix though.

  29. 3 stars
I followed it exactly and… mine came out kinda chewy. Maybe I had the grill hotter than “medium-high”? Also, 12 oysters felt like a lot for two people. Tasty, just needs timing love.

  30. User avatar eleonore.wehner55 says:

    5 stars
These garlic oysters were to die for! The butter and garlic combo is amazing. Definitely doing this again!

    1. User avatar jimmy.haag19 says:

      5 stars
I totally agree! The butter and garlic combo takes it to another level. Best garlic oysters I’ve ever had!

    2. User avatar rochelle.reinger says:

Loved this! My friends thought I was a chef after making it! So easy!

  32. 5 stars
These were amazing! The garlic butter is life!!

  33. 5 stars
Tried this on our backyard grill—those garlic-butter juices are unreal. 5–7 minutes is spot on if you don’t overthink it. Lemon at the end really wakes everything up. Will make again!

    1. 5 stars
Ooh I love the “don’t overthink it” energy 😄 The garlic-butter + lemon combo sounds perfect.

  34. 3 stars
Honestly, I don’t trust grill directions with seafood. Oysters feel too delicate. But I followed it exactly and… wow. Still safe, still tasty.

  35. User avatar Bilbo Baggins says:

    5 stars
Luv it! My hubby can’t stop asking for more! 🍽️

So glad to hear that! Garlic and oysters are a match made in heaven! 😍

  36. User avatar linnea.west35 says:

    3 stars
I followed the steps and it was… fine? The shucking part is the real boss fight. Flavor was there, but I think I needed more garlic (or less parsley).

  37. User avatar antonetta.howell82 says:

    2 stars
Grilling oysters? Sounds complicated… I just stick to steaks.

  38. User avatar katharina.reilly says:

These garlic oysters were amazing! I loved the buttery flavor and garlic combo.

  39. User avatar isaiah.lind7 says:

Garlic butter is good on anything, even bread! Great recipe!

  40. User avatar Palmer Langworth says:

    3 stars
Yum, but do oysters need cleaning? I want to be sure!

  41. 1 star
This is not how you cook oysters! You don’t grill them, that ruins the flavor. Real chefs wouldn’t do this.

  42. User avatar Fredda Gibson says:

    5 stars
These were a hit at my backyard cookout. The garlic-butter mix is perfect and the lemon at the end really wakes everything up. I kept the liquor like the recipe said and they stayed super juicy.

  43. 1 star
Yucky! My oysters were gritty and not fresh. I followed the recipe but still gross.

  44. 3 stars
Tried it and honestly, it was a bit too greasy for my taste. I think it needs less butter.

  45. User avatar mohamed.dicki says:

    4 stars
So simple but packed with flavor! I added a bit of cheese on top and it was a game changer! Yum!

  46. 1 star
The recipe’s fine but I used old oysters by mistake. Probably ruined the dish. Oops.

  47. User avatar shanta.franecki says:

    4 stars
Surprised at how easy this was! I just used my grill on the balcony, and it worked great! Would make again.

    1. User avatar renita.feeney37 says:

That’s awesome! I love grilling! Can’t wait to try this recipe myself.

    2. User avatar fabian.weissnat says:

      2 stars
Grill?? For oysters?? I thought they were better raw… not sure I would like it grilled…

  48. User avatar alecia.damore says:

    4 stars
Tried it exactly and they came out juicy. Mine curled a bit faster though, so I started checking around minute 4. Next time I’ll use a touch more parsley for color.

  49. User avatar Jaqueline Hyde says:

    4 stars
Solid recipe, but I was nervous about shucking. Mine leaked a little liquor, still tasted great though. I’d maybe start checking around 4-5 minutes because my edges curled fast.

  50. User avatar dominic.howe1951 says:

    5 stars
Followed this recipe to the letter, never had oysters like this. Shocking!

  51. User avatar eli.bashirian28 says:

    5 stars
This recipe is amazing! The garlic butter flavor is out of this world. Will definitely make again!

  52. User avatar everett.mosciski84 says:

    3 stars
I followed it exactly but the sauce kinda burned on the grate 😬. Still tasted good though—just messier. Maybe lower heat would help.

  53. User avatar carina.doyle1958 says:

    1 star
Didnt like it, oysters just taste like ocean to me. 👎

  54. User avatar Mrs. Dwight Boyer says:

    4 stars
I have never shucked oysters before. Scared to try! Anyone got tips?

  55. User avatar rodrigo.lehner20 says:

    3 stars
Can you use store-bought oysters? Or does it have to be fresh? I’m not really sure.

  56. 3 stars
Is glassy wine good with this or no? I’m confused.

    1. User avatar shelli.spencer1950 says:

      2 stars
I dunno, isn’t glassy wine too sweet? I think a red would be better for this. Just my opinion though.

    2. User avatar Ms. Delilah Cummings says:

      4 stars
Glassy wine can actually pair well with seafood! It’s light and refreshing. You should give it a try!

  57. User avatar jerrell.johns7 says:

    5 stars
This was amazing. Even my partner who won’t eat seafood went back for seconds. The lemon at the end is a must.

  58. 3 stars
5-7 min cooked through… or they’re ruined? I watched mine like a hawk and still wasn’t sure lol. Tastes good, but I need more clear guidance like when to pull them off.

  59. User avatar lynne.weimann75 says:

    5 stars
    Yummy!!

  60. 2 stars
I tried this recipe but my oysters didn’t cook well 🙁 I think I overcooked them. Can someone help?

  61. User avatar fredric.labadie89 says:

    5 stars
Honestly, this is foolproof. I shucked carefully, poured the butter, and they curled perfectly. Garlic flavor wasn’t overpowering—just right. Lemon on top is mandatory.

  62. 3 stars
I used salted butter and might’ve double-salted because it came out a bit too salty. Otherwise the flavors were nice. Maybe reduce the salt if your butter is salted.

  63. 4 stars
Not gonna lie, I was skeptical about grilling oysters. But the garlic butter helped a ton. Next time I’ll add a tiny pinch of chili flakes for some bite.

  64. User avatar romelia.lesch22 says:

    5 stars
Garlic and butter? What more u need, bro? 5 stars definitely!

  65. 4 stars
Tough to shuck the oysters, my hands are sore. But the result was worth it. Yum!

  66. User avatar Yooden Vranx says:

So simple and so good! Perfect for summer BBQs. Thanks for sharing!

    1. User avatar suspiciousCommentator says:

      2 stars
I don’t know… oysters are kinda slimy. Wouldn’t it be easier to just BBQ some chicken instead?

    2. 5 stars
Totally agree! These are a hit at every BBQ I go to. Love how easy they are to make! 😍

  67. User avatar rod.ohara1955 says:

    5 stars
These are the best oysters I’ve ever made! Super garlicky and delicious! Will definitely be making them again.

  68. 4 stars
I messed up the grilling part. Can I bake these instead? Not really a grill person.

  69. 4 stars
Pretty good! I was nervous about the shucking part, but the timing (5-7 min) worked once I kept an eye on the edges. Next time I’ll mince the garlic a bit finer so it spreads better.

  70. User avatar regina.harris91 says:

    5 stars
Best garlic oysters I’ve ever had! Can’t believe how easy they were!

  71. User avatar carol.stehr says:

    2 stars
I don’t see how people eat oysters. This seems gross.

  72. 3 stars
Really good recipe. Just make sure to get fresh oysters! I used frozen and they were mushy.

  73. 2 stars
Honestly I’m scared to grill oysters. Like won’t they dry out?? Also medium-high is vague—my grill runs hot, so mine cooked way too fast. Still tasted alright though.

  74. User avatar tomiko.schuster says:

    5 stars
These were amazing! I’m definitely making them again!

    1. User avatar cary.mraz2011 says:

I totally agree! These are the best! Can’t believe how simple they are to make!

    2. 2 stars
Eh, I don’t know. Isn’t garlic a bit too strong for oysters? I prefer them with just lemon.

  75. User avatar basementDweller says:

    5 stars
OMG, garlic and butter together is life! These oysters are like a party in my mouth.

  76. 3 stars
Just 12 oysters? What kind of party is that!?🍻 Need more!

    1. User avatar Charles Darwin says:

      3 stars
My grandma used to make them too, but we had way more! What’s the deal with just 12?

    2. User avatar Frodo Baggins says:

      5 stars
I agree! 12 oysters ain’t gonna cut it! Gotta have a feast! 🍽️

  77. User avatar palmer.heller says:

    4 stars
I was skeptical about grilling oysters at medium-high, but they turned out juicy. Next time I’ll mince the garlic even finer so it disperses more evenly in the butter.

  78. User avatar Chas Littel says:

    3 stars
Easy to make! But my grill is broken lol. Had to use oven instead, still good tho.

    1. User avatar yukiko.treutel1973 says:

      4 stars
Glad it turned out good! Oysters in the oven? Bet they still taste great. Will try it myself!

  79. User avatar nubia.maggio1978 says:

Tried it but my oysters overcooked a bit. Next time I’ll pull them sooner—maybe more like 4-5 min. The garlic butter flavor is legit though, would make again.

  80. User avatar brenton.heaney7 says:

    4 stars
5 stars for flavor! But can someone tell me how to get the oysters out without tools?

  81. User avatar Mr. Christina Torphy says:

    5 stars
These were a total hit—super garlicky and buttery, and the lemon at the end really brightens everything up. I kept the liquor like the recipe said and it made a difference. 5–7 minutes felt right on my grill.

  82. User avatar gabriele.mann54 says:

    5 stars
These garlic oysters were amazing! So flavorful and easy to make. I’ll definitely make these again!

  83. 4 stars
1/4 tsp of salt? Felt like not enough, maybe I used more.

  84. User avatar Providencia Graham says:

    5 stars
Tried this on my backyard grill—garlic butter smelled amazing. Oysters cooked perfectly in about 6 minutes. The lemon at the end is a must.

    1. User avatar Fredrick Hodkiewicz says:

      5 stars
Yes!! I made these last weekend and the garlic butter smell had everyone hovering. Mine took closer to 7 minutes but the edges curled up right like the instructions. Lemon at the end totally makes it pop.

    2. User avatar tia.hintz1965 says:

      3 stars
Not bad, but I think my grill ran hotter—mine got a bit chewy at 6 minutes. Also, I’m not sure I had the right amount of garlic butter, it kinda pooled off the oysters. Still decent with lemon though, so I’ll try again with lower heat.

  85. User avatar april.mills81 says:

    5 stars
Tried this on my grill tonight—wow. The garlic butter smell was unreal and the 5–7 minutes timing was spot on. Super simple too.

  86. User avatar mathWizard says:

    2 stars
Okay but why grill time so specific? I did 7 minutes and mine were chewy. Maybe my oysters were bigger? Next time I’ll aim for less time.

  87. 5 stars
Can’t believe how easy this is. I shucked a little messily (oyster liquor everywhere lol) but the result tasted restaurant-level. Lemon at the end is key.

  88. User avatar Paul "Muad'Dib" "Usul" Atreides says:

    4 stars
Not gonna lie, shucking was the hard part. I spilled some liquor, but the butter sauce helped save it. Flavor is great, would recommend for confident cooks.

    1. User avatar mathWizard says:

      5 stars
Yeah, shucking is the boss level 😅 I usually wear gloves and still manage to spill a little. Glad the butter sauce saved your batch though—garlic + parsley + that oyster liquor combo sounds amazing. I’ll try this but probably with way more patience than usual.

  89. User avatar Dremora Lord says:

    1 star
These are not oysters, these are tiny rocks 😅

  90. User avatar elyse.witting says:

    4 stars
Good flavor, but my grill runs hot—5 minutes was barely enough for me. Next time I’ll start checking at 4 minutes. Otherwise solid.

  91. 1 star
Oysters are gross! Why would anyone eat them? They’re just slimy!

  92. User avatar cedrick.heathcote68 says:

    3 stars
My garlic turned a bit too strong/bitter because I minced it super fine and it sat on the heat too long. Still ate them all, but I’ll either reduce garlic or brush more gently.

  93. 3 stars
Was confused about shucking oysters. Thought they were like clams😕. Anyway, it was fun to try it out!

  94. User avatar olga.bruen1992 says:

    5 stars
I’m not usually an oyster person, but this made me rethink it. Super simple, and the garlic/parsley combo tastes restaurant-level. Will make again for friends.

  95. User avatar jamila.schneider says:

    4 stars
Pretty solid, but 5–7 minutes felt like too long on my grill. Mine started to overcook around minute 4. Next time I’ll go shorter and watch the edges more closely.

    1. User avatar rodger.heaney says:

      4 stars
Mine overcooked too 😬 maybe my grill runs hot? Next time I’ll do like 3-4 mins and keep checking. Those oysters are so unforgiving.

    2. User avatar kelly.wyman says:

      5 stars
Thanks for the heads up! I did 5 minutes once and they were perfect, so I can see how 7 would push it. I’ll set a timer and pull when the edges curl—no waiting around.

  96. User avatar Eccentrica Gallumbits says:

    5 stars
Wow love this recipe, super easy! I’m not a chef, but even I could do it! 🤩

  97. 3 stars
Instructions are simple, which I love. However, “cooked through” is a vague thing—mine were cooked but I still don’t know how to tell without cutting one open. Flavor still won.

  98. User avatar preston.ortiz62 says:

    2 stars
I don’t get why everyone loves oysters. They taste like the ocean… not in a good way. This recipe didn’t change my mind.

  99. User avatar corey.grady1974 says:

    5 stars
These were shockingly good—loved how the garlic butter soaked in. I cooked a tiny bit longer (closer to 7-8 min) because my grill runs hot, but still perfect with lemon.

  100. User avatar randy.pacocha64 says:

    4 stars
Pretty good, but 1/2 cup butter felt like a lot for only 12 oysters. Next time I’d use a bit less and make sure the heat isn’t too high or they’ll toughen.

  101. User avatar jermaine.lockman74 says:

    4 stars
I’m skeptical about grilling oysters because they’re so delicate, but the instructions were clear. Still, I think you should mention keeping an eye on them constantly. Loved the parsley + garlic combo.

  102. User avatar lisabeth.lockman says:

    2 stars
Why grill though? I feel like oysters should be steamed. The flavor was okay, but I didn’t get that briny sweetness I expect. Maybe it’s me, but I’d rather do them another way.

    1. User avatar doreen.koss41 says:

      3 stars
I think it’s the grill time, not you 😅 5-7 is kinda long if they’re super fresh. Also, fresh shucked oysters should smell sweet/sea-y—if yours didn’t, could be the oysters or not enough of the sauce? I’d go steam next time.

    2. 4 stars
Totally get what you mean—steaming is more “classic” for that briny-sweet vibe. Grilling can dry them out or mute the liquor if the heat is too high. Maybe try lower heat and pull them as soon as the edges curl (not 7 min).

  103. User avatar jenny.cremin11 says:

    4 stars
Not bad, but mine took longer than 7 minutes. I think my grill runs hotter than medium-high. Still tasty though—nice and garlicky, and the parsley flavor comes through.

Tried this last night—so good. The garlic butter smell on the grill was unreal, and the oysters stayed juicy. Lemon wedges made it pop. 5/5 for sure!

    Wow! So good 😋

Garlic on oysters sounds great, but grilling them seems risky. I’m always worried they’ll dry out or explode all over the place. Still, the butter/garlic mix is a solid idea.

Nope. Oysters on the grill just doesn’t sound right to me. I prefer them raw with lemon, not cooked. Might be good for people who like that smoky taste.

Tried these on the grill and they came out super juicy. The garlic butter smells amazing. I served with extra lemon and everyone went back for more—will make again.

The recipe nailed the timing for me (mine took closer to 6-7 min). I was worried about overcooking but they turned out juicy. Lemon wedges were the perfect touch.

I tried this once and maybe my grill ran hot, but mine were kinda rubbery. Still tasted good with the garlic butter, tho. Next time I’ll pull them earlier than 5 minutes.

Totally agree on the timing—mine took about 6 minutes too. I was nervous they’d dry out, but they stayed juicy. That lemon at the end really does make it pop!

Ok, so I’m not an oyster person, but this recipe made it easy. I like that it uses butter + garlic instead of anything fussy.

I only had dried parsley and it was still decent. Also I minced the garlic wrong I think lol—still tasted garlicky. Would do again.

Followed this recipe but I added some cheese on top. It’s a game changer! #CheesyOysters

Cheese on oysters? Never thought of that! Might have to try it. 🧀

I don’t know about that. Oysters are perfect as they are! Why ruin them with cheese?

I was nervous about cooking them too long, but they curled just like you said. I added a tiny squeeze of extra lemon at the end and it really popped.

Honestly I’m skeptical about grilling oysters—like won’t they dry out? But they didn’t! Super easy too. My only tweak was adding a tiny pinch of chili flakes.

I was skeptical too—oysters just seem like they’d go rubbery on the grill. But the shell + butter baste makes sense. The chili pinch tweak sounds awesome.

Wait, grilled oysters for 5-7 min? That seems long… I did them once and they got dry. Maybe I had the heat too high? Also I’d use less garlic, it’s kinda strong.

Simple and fancy at the same time. The instructions were clear and the timing (5-7 min) was on point for me. Would absolutely make again for guests.

Yes! I love how simple this is but it still feels restaurant-level. The 5–7 min range is super helpful—my first batch usually runs long, but this time they were perfect. Making them again for friends for sure.

Tried it tonight and it was okay… but mine didn’t “curl” until more like 10 minutes. Also I grilled medium-high like it says—maybe my grill runs hotter? Flavor was good though, especially the garlic butter. Next time I’ll check earlier.

  118. 3 stars
I’m skeptical about grilling oysters on medium-high—seems like they’d dry out. Mine were okay, but I think I should’ve used lower heat and more sauce. Could be my grill though.

Yeah I get the worry—oysters can go rubbery fast. I’ve found medium-high works best if they’re already plump and you don’t leave them on too long, like closer to 5 minutes. Also, I totally agree: more of that garlic-butter helps keep them from drying out.

Not sure I trust grilling oysters “medium-high”. I feel like they’d dry out or toughen fast. I’d rather steam them.

I get what you mean, but oysters are pretty forgiving. 5–7 minutes on medium-high is usually enough to cook them without totally drying out. If you’re worried, keep a close eye—once the edges curl, pull them fast. Also, spooning the garlic butter helps keep them juicy.

  120. 2 stars
I might be doing something wrong, but mine didn’t cook through after 7 min. Maybe I had the heat too low? Also the sauce seemed a little thin—could use more butter? Idk.

    1. User avatar steve_maga says:

      3 stars
I don’t know… I tried this once and mine never did “cook through” either. Maybe the grill temp was lying lol. Mine took more like 12 min and I kept thinking I’d overcook them but they were fine. Thin sauce, I just dumped more butter in and it worked.

    2. User avatar billie.mckenzie says:

Hmm, 7 minutes can be just a bit short depending on oyster size and how hot your grill actually runs. I’d try medium-high for a full 7–10 and keep the grill lid on if you can. Also your “thin sauce” clue makes sense—if the butter isn’t staying warm it can look watery. A little extra butter (or even one more spoonful per oyster) usually helps.
