Fried Pork and Egg Stuffed Peppers

February 13, 2024

Fried pork and egg stuffed peppers are a satisfying and savory dish that combines tender pork, fluffy scrambled eggs, and vibrant bell peppers for a meal that’s both hearty and flavorful. This dish is the perfect fusion of protein-packed ingredients wrapped in the crispy, slightly charred exterior of a fried bell pepper. It’s a great option for breakfast, brunch, or even dinner when you want something both filling and delicious.

To start, you’ll want to brown some ground pork in a skillet. Season it with a blend of spices like garlic powder, cumin, paprika, and salt to enhance its savory flavor. As the pork cooks, it becomes golden and crispy, adding texture to the filling. Once the pork is cooked through, remove it from the pan and set it aside.

Next, you’ll scramble some eggs in the same skillet. The eggs should be soft and fluffy, adding richness to the filling. Combining the eggs with the cooked pork gives the dish a balanced, comforting texture. You can also add chopped onions, garlic, or herbs like cilantro or parsley to the egg mixture for extra flavor.

Now it’s time to prepare the bell peppers. Cut the tops off of large bell peppers and carefully remove the seeds and membranes. Stuff each pepper with the cooked pork and egg mixture, packing it tightly to ensure every bite is full of flavor. You can use any color of bell peppers, but red, yellow, or orange peppers tend to be the sweetest.

To finish, gently fry the stuffed peppers in a hot pan with a little oil until the peppers are tender and the edges are golden and crispy. This quick frying step creates a deliciously crunchy exterior while keeping the filling soft and flavorful.

Fried pork and egg stuffed peppers are a fun and satisfying way to enjoy bell peppers, and they can be easily customized with different fillings or toppings. Add cheese for extra richness, or serve them with a side of salsa or hot sauce for a bit of spice. Whether enjoyed on their own or with a side of greens, these stuffed peppers are a perfect combination of savory and satisfying.

Despite the indulgent-sounding name, Fried Pork and Egg Stuffed Peppers can be a nutritious choice when prepared with lean pork and cooked in a health-conscious manner. The dish provides a good balance of proteins and essential nutrients, making it a satisfying and filling option for those looking to enjoy a flavorful meal without compromising on health.

Made these last night and wow—so comforting. The paprika + cayenne gives a nice kick and the egg makes it feel super filling. I used leftover rice and it still worked great.

Instructions were clear, but I forgot to take out the seeds from the peppers! Oops.

It was okay, but I think the cayenne was too much for my kids.

This was edible but kinda plain for me. I doubled the garlic and salt and it helped. The parsley is nice though—fresh taste.

    1. User avatar sunshine.ankunding51 says:

      5 stars
Glad you tried it! I agree it can taste a bit mild—doubling garlic and salt sounds like exactly what it needs. The fresh parsley really does brighten it up.

This is the first time I’ve attempted to cook something like this, and it was easier than I thought! Thank you for the detailed instructions!

  7. 4 stars
Yum! I used turkey instead of pork and it still turned out delicious! Great recipe!

    1. 4 stars
Using turkey? That’s a clever twist! I never thought of that. Glad it worked out!

  8. User avatar phillis.barton27 says:

I tried making these but the egg on top got all weird and runny. Not sure if I did it right.

  9. User avatar ora.stroman26 says:

    4 stars
Not gonna lie, I thought stuffing peppers with raw egg would be weird, but it was actually really good. The egg kind of binds everything together.

  10. User avatar isreal.ledner says:

    5 stars
Yum! Can’t believe how easy it was! Adding this to my weeknight meals!

  11. User avatar kati.hudson1974 says:

    4 stars
Great idea with cracking an egg right in. I used a little less cayenne because I’m not into spicy, but flavor was still awesome.

  12. User avatar alfonzo.cassin says:

These were surprisingly comforting—savory pork + rice inside sweet peppers is such a good combo. I baked mine a bit longer so the peppers got softer and the eggs set nicely. Will make again!

    1. User avatar kiana.crooks1980 says:

      5 stars
Yes! Sweet peppers + savory filling is such an underrated combo. I do the same—extra time in the oven makes everything way more tender.

    2. User avatar Martha Kreiger PhD says:

      4 stars
I made these and the flavor was great, but my eggs didn’t really set until I covered the dish with foil. Otherwise they stayed too runny for me.

  13. User avatar dania.roberts3 says:

    4 stars
My family loved this recipe! I used turkey instead of pork and it was still delish. Will make again!

  14. User avatar dominick.runolfsdottir1985 says:

I don’t get why people like this. It was kinda bland and the egg wasn’t what I expected. Meh.

  15. User avatar sheena.schroeder29 says:

    2 stars
Wait… bake at 375 for only 15-20 with raw eggs? That seems too short. I tried it and I guess mine were more runny than “to your liking,” haha. Still ate them. Next time I’ll go longer.

    1. User avatar esteban.jacobson41 says:

      5 stars
Yeah 15–20 at 375 can be pretty quick, especially with big peppers. I’d check a few minutes earlier/later depending on how thick the peppers are. If the whites aren’t set, just keep going!

  16. User avatar yadira.larkin55 says:

    1 star
Confused about the cayenne. Thought it was a spice for dessert. Is that normal?

    1. User avatar kevin.tillman39 says:

      3 stars
What? Cayenne in dessert? I thought that too once, but it’s like a spicy thing. Give it a chance. It’s great in non-sweet meals!

    2. 4 stars
Cayenne is usually used in savory dishes! It can add a nice kick, but it’s not for sweets. You’re not alone in thinking that though!

  17. User avatar berry.thiel0 says:

Idk about 4 bell peppers with 1 lb pork—felt like I didn’t get enough filling. Also, baking 15-20 for eggs depends a lot on pepper size.

    1. 5 stars
Totally agree about bake time—15 min once was perfect for me, then later I had to go closer to 22 because my peppers were huge. Eggs are so temperamental.

    2. User avatar wilfredo.stokes1975 says:

      4 stars
Yeah, I felt the filling was a little tight too. If your bell peppers are on the bigger side, 1 lb pork can disappear fast—next time I’ll bump the pork (or add more rice).

  18. User avatar lise.muller40 says:

    4 stars
Easy and tasty! But next time, I’ll add more spice. Loved the paprika tho.

  19. 3 stars
I dunno if I like mixing eggs with pork. Seems weird, like, why would you do that?

    1. User avatar chantay.connelly47 says:

      4 stars
I actually think mixing eggs with pork is really tasty! It adds a nice richness. You should give it a try!

  20. 3 stars
375°F seems low—mine took longer than 20 minutes for the eggs to set. Still tasty though, just plan ahead.

  21. User avatar louie.jacobson says:

    5 stars
These stuffed peppers were amazing! The flavors blended so well together. 5 stars!

  22. 1 star
I messed up and used raw eggs instead, what a disaster! Never doing that again.

  23. User avatar karri.stehr12 says:

    5 stars
    sooooo good!

    1. User avatar MAGA2024.Trumpster says:

Wasn’t sure about mixing eggs with peppers, but it worked out! Bet it tastes great.

    2. User avatar kathaleen.zemlak16 says:

      5 stars
Totally agree! These are the best! 😍

  24. User avatar ozzie.sauer26 says:

    2 stars
Not sure about the cayenne + paprika combo. It’s a little too spicy for my taste, and the pepper gets sweet which makes the heat feel harsher. I’d adjust the spices.

  25. User avatar Frost Atronach says:

    5 stars
My husband is picky and he said these were delish!!

  26. User avatar kasey.prosacco1984 says:

    2 stars
I messed up and used uncooked rice once (don’t do that). It was a gummy mess, so that’s on me. With cooked rice like the recipe says, I bet it’s way better—5 stars in that alternate universe 😅

    1. 3 stars
I don’t know… 15-20 minutes for stuffed peppers with eggs seems a little short. My eggs would be raw. Also, why cayenne with pork and peppers—seems too spicy for me. Still, sounds tasty.

    2. User avatar suk.oconnell says:

      5 stars
Omg gummy uncooked rice is the worst 😭 but you’re right—this recipe’s way better with cooked rice. The peppers + egg would basically save the whole thing.

  27. User avatar roscoe.jacobson2024 says:

    3 stars
Mine looked good but the texture was weird—like the rice dried out and the peppers were still a little firm after 20 minutes. I think I needed to par-cook the peppers or add a splash of water to the baking dish.

  28. User avatar taisha.kuhn55 says:

    4 stars
Great idea for dinner! I used turkey instead of pork, and it turned out good! 🌶️

  29. User avatar Mr. Jamika Spencer says:

Fried Pork??! I thought it was boiled. 🤔 Can I boil the pork instead?

  30. User avatar suspiciousCommentator says:

    3 stars
I tried this recipe, but my eggs turned out all runny. Maybe I baked them too long?

  31. User avatar eddie.nienow says:

    2 stars
I don’t like peppers. Can I use zucchinis instead?

  32. 4 stars
I made these for meal prep and they reheated way better than I expected. The rice stays hearty and the pork is flavorful. Don’t forget to let it cool a bit before handling the peppers.

  33. 4 stars
Made it exactly as written and my peppers actually stayed tender (not just sad and crunchy). Next time I’ll chop the parsley finer, but flavor was solid.

  34. 5 stars
These turned out sooo good—savory pork, that little kick from the cayenne, and the eggs make it feel like a proper comfort meal. I added a bit of cheese on top at the end and it was perfect.

    1. User avatar argentina.okuneva10 says:

      5 stars
Yes!! The cayenne + that savory pork combo is everything. I’ve been craving comfort food like this—thanks for sharing!

    2. User avatar liberal.hero says:

      2 stars
I think I did something wrong—mine didn’t really taste “stuffed pepper” like at all, just kind of like seasoned meat and egg. Maybe I needed more rice? Either way it was edible lol.

  35. User avatar keisha.bayer says:

    4 stars
Totally a fan of this dish! But curry would be better, it needs a punch!

  36. User avatar Dr. Zoe Grant says:

    5 stars
Yummy!!! Good meal to impress friends. Easy to make too!

    1. User avatar Grady Kshlerin says:

      5 stars
Totally agree! This dish looks delish! Gonna try it for my dinner party.

  37. User avatar gale.mills says:

    5 stars
So good! I added some cheese on top before baking, totally worth it!

  38. User avatar zack.mckenzie says:

    5 stars
I used long-grain rice and it held up. If you use leftover rice that’s a little sticky, it might bind even better. Mine were messy to eat but in a good way.

  39. User avatar vivienne.veum33 says:

    3 stars
I don’t know about stuffing peppers with eggs, seems weird to me. But I’ll give it a try.

    1. User avatar ethan.kemmer4 says:

      5 stars
I used to think it was strange too, but trust me, it’s delicious! The eggs add a nice creaminess.

    2. User avatar earl.swaniawski46 says:

      3 stars
Weird? I guess. But hey, have you ever tried mixing eggs with other things? It adds flavor!

  40. 1 star
where do I find good peppers?? can’t find any fresh ones around here 🙁

  41. User avatar halflife4 says:

    3 stars
Good recipe but the baking time isn’t enough for my oven. Took longer to get the eggs set.

  42. User avatar chris.ortiz79 says:

    2 stars
I put too much paprika! It was too spicy for my kids. Lesson learned!

  43. 2 stars
Honestly? Too much pepper seasoning for my taste. The paprika/cayenne combo overpowered the pork a bit. Also 4 bell peppers with 4 eggs felt like a lot of egg—still good though.

    1. User avatar Thufir Hawat says:

      4 stars
Thanks for the heads up! I’m always nervous about peppers + seasoning going too hot. Might do half the cayenne and see—this sounds really good otherwise.

    2. 4 stars
I totally get that. 1/4 tsp cayenne + paprika can be punchy, and with the pork it’s easy for it to take over. Next time I’d dial the spices back or add more rice/pork so it balances.

  44. User avatar Kera Ward says:

    2 stars
I tried it and honestly it was bland. I followed the salt/pepper/paprika/cayenne measurements. Maybe my pork was low quality? I had to add hot sauce at the end.

    1. 2 stars
Sorry it came out bland for you! I wonder if the rice is throwing it off—did you use plain cooked rice? Next time I’d add a splash of soy sauce or a bit more paprika/pepper to the pork mix.

  45. 2 stars
This is good but kinda bland without extra seasoning. Like I had to add hot sauce and salt after. Otherwise yeah okay.

  46. 5 stars
This recipe was amazing! The flavors were spot on and my family loved it. Will definitely make it again!

  47. User avatar rashad.glover1991 says:

    4 stars
Followed the recipe pretty much exactly. Flavor is solid (onion/garlic really shines), and the cayenne gives a nice kick. Next time I might add a little cheese on top of the eggs.

  48. User avatar edda.wiegand34 says:

    3 stars
My eggs kinda leaked out and didn’t sit nicely in the peppers. Maybe I should’ve leveled them more or baked in a tighter dish? Flavor was decent though.

  49. User avatar Elder Kai says:

    4 stars
I’m not sure about baking the egg *inside* the pepper—mine leaked a little and the baking dish got messy. Still tasted great though, just more of a “sloppy but delicious” situation.

  50. User avatar yong.hirthe says:

    4 stars
This was yummy! I added some cheese on top and it turned out amazing.

  51. User avatar isaac.hayes1960 says:

    3 stars
Stuffed peppers? Sounds like a lot of work! But maybe I’ll try if I have time.

    1. User avatar rolanda.yundt says:

      2 stars
Yeah, it looks like a lot of steps… do you have to bake them? Sounds complicated.

    2. 4 stars
I thought it would be hard too, but it was actually pretty fun to make! You should give it a shot!

  52. User avatar jonas.kozey57 says:

    5 stars
I followed it mostly, but I added some cheese on top (just a little). It tasted like a fancy breakfast casserole. Would recommend!

    1. User avatar Gonzalo Beier says:

      5 stars
That sounds perfect—cheese on top of stuffed peppers is basically a cheat code. Glad you enjoyed it! 😄

  53. User avatar wilfred.bernier says:

    2 stars
Confused. Can I use chicken instead of pork? Wish my mom was here to help.

  54. User avatar merlene.renner98 says:

    5 stars
Tried this tonight and it’s ridiculously good. The peppers get tender but still hold up, and the egg on top is such a nice finish. I added a little extra paprika and it kicked it up.

  55. User avatar suspiciousCommentator says:

    3 stars
I thought it would be more “fried” than baked, lol. Still, the stuffed peppers came out tasty and the rice keeps it from being too greasy. Would make again.

    1. 4 stars
Haha I get what you mean—“fried” is in the title but it’s definitely more baked/roasted here. Still, stuffed peppers are always solid and the rice balance sounds spot-on!

  56. User avatar Grunthos the Flatulent says:

    3 stars
How do you serve them? Just eat the pepper? Seems weird.

  57. User avatar quiana.bashirian92 says:

    4 stars
Yum! Fried pork + egg in peppers is genius. Next time I’ll make extra filling because I know I’m gonna snack on it before baking 😂

  58. 3 stars
This recipe feels like a dinner shortcut that’s not actually a shortcut. Plenty of prep. Also I used long-grain rice and it was a bit dry—maybe cook the rice with a touch more moisture next time.

  59. 2 stars
Didn’t turn out right for me. The eggs were too runny and the pork was dry. Maybe I did something wrong?

  60. User avatar glady.krajcik says:

    4 stars
Pretty solid comfort food. I’m not the biggest fan of cayenne, so I used less and it still tasted great. Next time I’ll cook the onions a touch longer for deeper flavor.
