    Sounds good but 2–3 minutes per side feels too short. I did longer and it turned out leathery. Also why eggs—wouldn’t they just be fine with flour? Idk.

    Pretty good, but mine got a little soggy after a few minutes. I think I didn’t press the breadcrumbs enough or the oil wasn’t hot enough.

      Yeah, I’ve had that happen too. I started frying a little hotter and honestly that made a huge difference—oil should be sizzling before you drop them in. Also I press the crumbs really firmly and let them sit 30 seconds after coating so they “stick.”

      Totally get it—avocado browns fast. Next time try slicing it right before breading, and toss the slices lightly with a squeeze of lemon/lime or even a little salt water while you prep. Also, 2–3 min per side is quick, so you don’t want them sitting around.

      You can definitely make a vegan version! Just skip the eggs and use a little plant-based milk mixed with some flour to help the breadcrumbs stick. It works great!
