325°F felt a bit low to me—mine were pale at 12 minutes. I ended up going closer to 14, and they browned just enough.

“Tap the baking sheet” is doing a lot of work here 😂. I did it but my shells still had bubbles. Maybe parchment matters? Also I let them rest longer and the skin formed too fast—kinda weird for me.
I’ve found parchment *does* matter a bit—some brands let them bake too “wet” or make the bottom brown unevenly. Also, if you rested too long and the skin set early, it can trap bubbles. Try a shorter rest and bake right after they look matte/not sticky.
