Five-Spice Pork and Cucumber Salad

August 9, 2023

Five-Spice Pork and Cucumber Salad is a refreshing and flavorful dish that combines warm, aromatic spices with crisp vegetables. It’s perfect for summer meals, quick lunches, or a light dinner that doesn’t skimp on taste.

The star of the dish is the pork. Thinly sliced pork tenderloin or pork shoulder works best for this recipe. Marinate the meat in a mixture of Chinese five-spice powder, soy sauce, garlic, rice vinegar, and a touch of honey or brown sugar. Let it sit for at least 20 minutes to absorb the flavors. The five-spice blend brings a mix of sweet, savory, and slightly peppery notes, with hints of cinnamon, star anise, fennel, cloves, and Szechuan peppercorns.

Once marinated, quickly sear or grill the pork slices over medium-high heat until they’re golden and cooked through. The result is tender, juicy meat with a caramelized crust that contrasts beautifully with the crisp, cool cucumber.

For the salad, use thinly sliced cucumbers, preferably Persian or English, as they have fewer seeds and stay crunchy. Lightly salt the cucumbers to draw out excess moisture, then toss them with fresh herbs like cilantro or mint. Add sliced scallions, shredded carrots, and thin red chili slices for extra color and mild heat.

The dressing ties everything together. A mixture of rice vinegar, soy sauce, sesame oil, and a bit of sugar gives the salad a tangy-sweet punch. You can also stir in some grated ginger for extra warmth.

To serve, layer the cucumber salad on a plate and top with warm slices of pork. Finish with a sprinkle of toasted sesame seeds and crushed peanuts for texture. This dish is delicious both warm and cold, making it ideal for meal prep or summer picnics. Serve on its own or with a side of jasmine rice or rice noodles for a more filling option.

OMG, the pork was so tender! I can’t believe how fast it cooked. Love it!

  2. 1 star
I have no idea what five-spice is. Is that a real thing? I just went without it.

Cucumbers in a hot dish?? I was skeptical at first but I gave it a shot. Surprisingly good! 👍

I’m glad you enjoyed it! Perfect for unwinding after a busy day. 🌸

  5. 2 stars
I dunno, I expected more from this. The pork was kinda dry and the cucumbers didn’t add much. Meh.

  6. 2 stars
Wouldn’t recommend. My husband said it tastes like a salad from a cheap diner.

    1. User avatar launa.bashirian says:

      3 stars
That sounds weird, how can a salad taste bad? It’s just pork and cucumbers… maybe he just doesn’t like five-spice?

    2. User avatar geoWizard says:

      4 stars
I disagree! I thought it was delicious and fresh! Maybe your husband just doesn’t appreciate good food.

  7. 3 stars
Not sure about the five-spice… never tased it before. Hope it ain’t too strong.

  8. User avatar barton.kertzmann says:

    5 stars
This was so good! The five-spice really made a difference.

  9. User avatar marlana.walter15 says:

Cook time question: 4-5 minutes on medium-high for thin sliced pork—seems easy to overcook. I’d start checking earlier. Still, the salad vibe is nice.

    1. User avatar gracia.hermiston42 says:

      2 stars
Looks too easy ngl 😅 Pork dries out so quick. I would cook it less then mix back? Like, 2-3 mins max or it’s pork jerky. Also, five-spice powder is strong—use less if you don’t like licorice vibes.

    2. 4 stars
Totally—4-5 minutes can go fast with thin pork. I’d start checking at like 2-3 minutes. Even a little over and it gets chewy. But the flavor combo sounds great.

  10. 2 stars
Not sure about the whole cucumber thing. They’re too watery for me.

    1. User avatar Falmer Archer says:

      4 stars
I get that! Cucumbers can be kinda mushy. Maybe try adding some crunchy veggies instead?

  11. User avatar vergie.kris41 says:

    4 stars
One of the best recipes I have tried! So simple and fresh! I didn’t have five-spice, used Italian seasoning instead.

  12. 5 stars
This recipe is amazing! The flavors are spot on, and it’s so easy to make.

    1. User avatar lynsey.wiza50 says:

      5 stars
I tried it and it was delicious! The pork was so juicy. Thanks for sharing!

  13. User avatar dillon.wuckert says:

    5 stars
Simple and easy to make! I had all the ingredients at home and it turned out great!

  14. 3 stars
The measurements feel a little off to me, like 1 tbsp soy and only 1 tbsp sesame oil for a whole pound? Maybe it’s fine though. Also cilantro is a must right?

    1. User avatar fay.ferry1955 says:

      3 stars
Cilantro is a must?? Mine always gets swapped for parsley sometimes and it’s still good. 2 tbsp cilantro sounds like a lot though—maybe use less if you’re not a fan. Also I think the oil should be more than 1 tbsp, but idk I’m no chef 😅

    2. User avatar marcelino.kertzmann says:

      4 stars
I wondered the same thing—1 tbsp sesame oil + 1 tbsp soy for 1 lb pork sounded light. But since it’s a tenderloin salad (thin slices) and only needs a quick toss/marinade, the combo is probably meant to be more “light and fresh” than heavy. If yours feels bland, just add a little more soy or a splash more vinegar.

  15. User avatar vania.nienow67 says:

    2 stars
Who put cilantro in a salad?? It tastes weird. Minus points for that! 😒

  16. 5 stars
Yummy salad, but I’d recommend adding some nuts for a crunch. Thx for the recipe!

  17. 4 stars
I don’t know about adding cucumbers to meat dishes… Seems weird. But my boyfriend loved it!

    1. User avatar Marion Emmerich says:

      4 stars
I used to think that too! But cucumbers can actually add a nice crunch and freshness to meat dishes. Glad your boyfriend liked it!

  18. 1 star
Total flop! The cucumbers went soggy and the pork was dry. Not making this again. 1 star.

  19. 2 stars
    Meh… just average. Wouldn’t make again. 😕

  20. User avatar nichole.rohan44 says:

    3 stars
Tried it last night but I think I overcooked the pork. It turned out dry. 😕

  21. User avatar antone.mcdermott says:

It was alright I guess. Not sure what the fuss is about. The five-spice is kinda weird, isn’t it?

  22. User avatar kirby.dickens6 says:

I added bell peppers and it was even better! Great for summer days!

  23. User avatar hollis.hand2020 says:

  24. User avatar elissa.hartmann1955 says:

    5 stars
How long you let it marinate? I did 20 mins and was perfect! Yum!

    1. 2 stars
Who needs marinating? Just cook it right away! 🤷‍♂️

    2. User avatar Trin Tragula says:

      4 stars
20 mins sounds good! I usually do at least 30 to get more flavor. But if you liked it, that’s what matters!

  25. 4 stars
Tastes good! My kids liked it, but next time I’ll use less vinegar.

  26. User avatar son.cummings says:

    2 stars
Eh, it was kinda bland. Needed more seasoning. I would give it a 2.

  27. User avatar rick.johnston77 says:

    2 stars
Not even worth it. The flavor didn’t pop at all. Would rate it a 1 but I gave 2.

  28. User avatar monnie.jones1982 says:

      5 stars
I agree! Cilantro is the best! It really brightens up dishes!

  30. User avatar Lumberjack says:

    5 stars
This sounds like a really fresh twist—cucumber + five-spice is such a good combo. I’d probably marinate a bit longer than 10 min though, just to get more flavor into the pork.

  31. 5 stars
Quick and easy!! My kids loved it. Will def make again!

  32. User avatar MAGA2024.Trumpster says:

    4 stars
Could you sub soy sauce with coconut aminos? I’m trying to go lower sodium. Not sure how it would change the flavor, but the combo sounds balanced.

  33. User avatar jere.kub2008 says:

    4 stars
Low effort, high flavor. I give 10/10 would eat again.

  34. User avatar leslie.jakubowski95 says:

    2 stars
Not enough spice for me. I thought it would be more flavorful with the five-spice powder or something!

  35. 5 stars
This combo sounds way better than I expected—five-spice with cucumber is such a refreshing twist. I marinated closer to 20 minutes and it was super flavorful.

  36. User avatar Nunu & Willump says:

    2 stars
I don’t know about this one. Pork and cucumbers? Seems a bit odd. I wasn’t impressed.

  37. User avatar kate.schuster1965 says:

    5 stars
5 stars! My family loved it. Even my kids ate their veggies! Followed the recipe exactly.

    1. 5 stars
That’s awesome to hear! I think I might try it for my family too. Thanks for sharing!

  38. 3 stars
I’m skeptical about marinating only 10 minutes for the pork. Thin slices help, but I think it might not fully absorb. Would love to try it longer next time.

    1. 4 stars
Totally get your skepticism—10 minutes feels short, but with thin slices it can still soak up enough flavor for sure. I’ve done it around that time and it comes out tasty, just not “deep marinated.” Next time longer definitely sounds like a win.

    2. User avatar tisa.beier77 says:

      2 stars
I’m not sure 10 min is gonna do much. The pork always tastes kinda mild when I rush marinades. Also five-spice on cucumber is a weird combo to me… but I guess cilantro helps? I’d marinate like 30 min minimum.

  39. 5 stars
Wow, this was absolutely delicious! The five-spice gave it such a unique flavor. Will make again!

  40. User avatar edgardo.davis87 says:

    3 stars
Tried it, but I think I added too much soy sauce. Next time less!

  41. User avatar felica.mills11 says:

    2 stars
I’m skeptical about cooking directly in the bowl marinade… like doesn’t the cucumber get soggy fast? Mine did after a while. Still tasted okay though.

  42. User avatar fidel.schmidt1984 says:

    3 stars
I dunno about this. Pork with cucumber? Sounds weird. But hey, I’ll try anything once.

    1. User avatar leo.littel says:

      4 stars
I get what you mean, pork and cucumber does sound a bit off. But trust me, the five-spice makes it super tasty! Give it a chance!

    2. User avatar shay.kshlerin68 says:

      5 stars
Yeah, sounds weird but I bet it tastes good! I’m gonna make it tonight. Let’s see if it works!

  43. User avatar jean.ward52 says:

    4 stars
The pork was nice but 10 mins in marinade? Seems too short, right?

  44. User avatar jeff.rutherford says:

    4 stars
Quick and easy weeknight dinner! I loved how fresh it was. Just perfect for summer.

  45. 3 stars
Too much cucumber! I like them, but this was just overkill. Next time, I’ll just halve it.

  46. User avatar georgetta.terry58 says:

    2 stars
Not sure this was worth the hassle. It wasn’t as good as I expected.

    1. 5 stars
I actually loved it! The flavors were bursting, and I thought it was super easy. Maybe you missed something?

    2. User avatar clemmie.johnson1982 says:

      2 stars
Nah, I feel ya. Took me ages to make and didn’t taste great either, kinda bland. Not sure if I’ll try again.

  47. 5 stars
Quick and easy! Perfect for busy weeknights. Thanks for the recipe!

  48. User avatar ellis.waters56 says:

    5 stars
Super easy! I just threw everything in a bowl, no marinating. Still tasted great! 🌟

  49. User avatar Blue Dartwing says:

    3 stars
Five-spice powder smells amazing but I don’t know… I found it a tiny bit strong for me. Next time I’d use like 1/2 tsp.

  50. User avatar bobby.stracke says:

    4 stars
My family loved it! I did add a bit more soy sauce for extra flavor. Will definitely make again!

  51. User avatar Restless Draugr says:

    1 star
Did not like this at all! The cucumber was too crunchy for my taste and pork was tough. Never again.

  52. User avatar owen.haley says:

    2 stars
Meh, could have used more flavor. The pork was kinda dry too. I don’t get why this is so popular.

    1. User avatar anthony.rempel says:

      5 stars
Nah, didn’t think it was dry at all. Maybe you just cooked it too long? This has been a hit in my family!

    2. User avatar dennise.schimmel33 says:

      4 stars
I totally agree! More seasoning could have really brought it to life. The pork was chewy for me too.

  53. User avatar Arthur Philip Deodat says:

    4 stars
Made it for lunch and it was actually way better than I expected. The sesame oil and rice vinegar balance each other nicely. Would recommend!

  54. User avatar loren.toy2019 says:

    4 stars
Yummy! The cucumber kept everything fresh. Perfect for summer!

    1. User avatar dusty.marvin96 says:

      2 stars
Cucumber? Don’t think that’s gonna mix well with the pork. Sounds weird to me!

    2. 5 stars
Absolutely agree! The cucumber really does add that refreshing touch. Can’t wait to try this recipe myself!

  55. User avatar ArabianNights says:

    5 stars
So easy and quick! My kids loved it, too. Will make it again for sure!

  56. User avatar Gag Halfrunt says:

    3 stars
I made this salad but used chicken instead of pork. It was still nice, I guess.

    1. 2 stars
I dunno, using chicken instead of pork sounds wrong. The five-spice is meant for pork! Did it taste the same?

    2. User avatar bailey.mante says:

      4 stars
Glad you liked it! Chicken can be a great substitute. I often switch things up too.

  57. User avatar Lumberjack says:

    3 stars
Five-spice? What even is that?? The pork was good, but I don’t know about the rest. 3 stars.

  58. 5 stars
Quick and easy weeknight meal. Everyone finished their plates! Definitely a keeper. 🔥

I’m so glad to hear that! I was a bit worried about trying five-spice, but now I feel inspired to make it!

  60. User avatar shaun.deckow2025 says:

    3 stars
I messed up the recipe and put too much salt, but still tasted ok. Ha!

  61. 3 stars
Meh. The salad need more flavor. I added garlic and it helped. 🌿

  62. User avatar delmy.bosco1962 says:

    2 stars
Meh… cucumber watery, pork okay. Not bad but not my thing. Next time I’ll do a different seasoning.

  63. User avatar Main Antagonist says:

    3 stars
Could’ve used more sauce tbh. Also my skillet was too hot and I charred the edges a lil, so I think the heat setting matters a lot.

  64. 1 star
5 spice? I thought it was 7! lol 🤷‍♂️ Can someone explain this? I’m confused.

    1. User avatar effie.altenwerth60 says:

      4 stars
Haha, it’s confusing, isn’t it? But five-spice is the traditional blend from Chinese cooking. I guess 7-spice is just a twist! 🤔

    2. 3 stars
I don’t understand why it’s called five-spice if there can be more or less. Seems weird to me. 🤷‍♀️ Just stick to this recipe, lol.

  65. User avatar Pizpot Gargravarr says:

    1 star
Cucumbers? Really? Nothing exciting about that! Gimme more meat!

  66. User avatar Prostetnic Vogon Kwaltz says:

    5 stars
Really good. It’s like a party in my mouth! Who knew cucumbers could be so tasty?

  67. 3 stars
I tried it but felt something was missing. Maybe a bit more seasoning?

    1. User avatar dwain.schuppe says:

      2 stars
Nah, I think it’s perfect as it is. You can always add salt at the table if you need more flavor. Just my opinion!

    2. 4 stars
I totally agree! A little more seasoning could really bring it to life. Maybe some garlic or chili flakes would work too!

  68. User avatar jolyn.feeney1955 says:

    4 stars
Mmm! So good! I think I might try it with beef next time. Anyone tried that?

  69. User avatar jenee.jenkins46 says:

    Pork, yuck!

  70. 5 stars
Mmm, so easy to make! I basically threw everything in the bowl and it was a hit!

    1. 5 stars
I totally agree! This recipe is so simple and delicious! Can’t wait to try it myself!

  71. User avatar Skye Wiegand says:

    2 stars
Why do they call it five-spice if there’s only one in the ingredients? 🤔

  72. User avatar major.witting87 says:

    4 stars
Simple and quick! The marinade was perfect. I’ll make this again for sure.

    1. 5 stars
I’m glad you liked the marinade! It’s so easy to make, isn’t it?

  73. User avatar ArabianNights says:

    3 stars
I used chicken instead of pork because I didn’t have any. Still turned out pretty good, surprisingly.

  74. User avatar denna.denesik2011 says:

    2 stars
I don’t know what five-spice even is. Can someone explain? The dish was just okay to me.

    1. 4 stars
Five-spice is a Chinese spice blend made up of star anise, cloves, Chinese cinnamon, Sichuan pepper, and fennel seeds. It adds a unique flavor! Sorry the dish wasn’t great for you! 🙁

  75. 5 stars
This looks super fresh and flavorful—cucumber + sesame oil is always a win in my book. I might add a little chili crisp for heat, but the base idea is great.

    1. 3 stars
Chili crisp sounds good but I’m wonderin about the pork part—10 mins marinatin feels too short to me. Also, do you cook the cucumbers at all or they stay raw? Mine would get watery if it’s raw.

    2. User avatar francisco.pfeffer39 says:

      5 stars
Totally agree—cucumber + sesame oil is such a good combo. I’ve done something similar with chili crisp and it really brings the whole thing to life. This would be perfect as a quick lunch.

  76. User avatar lacresha.larson2009 says:

    5 stars
    Yum!

    1. User avatar forrest.altenwerth says:

      5 stars
Yum is right 😄 The five-spice with cucumber sounds so fresh!

  77. User avatar aurelio.sanford says:

    4 stars
Pretty tasty, but mine came out a bit too salty. I think I should’ve held back on the soy sauce or added less salt at the end. Still worth making again.

    1. User avatar kermit.dach27 says:

      3 stars
Mine too! I swear the soy sauce just punches you in the face 😅 I thought 1 tbsp would be fine but I guess depends on brand. Also I mixed salt in at the end and it got worse. 😬

    2. User avatar Draugr Scourge says:

      5 stars
Glad you’d make it again! Soy sauce can definitely run salty—next time try cutting it back (or using low-sodium) and just add final salt a little at a time.

  78. User avatar Hillman Hunter says:

    5 stars
Marinating 10 minutes feels too short for pork, in my opinion. I let it sit for an hour and the flavors really came together.

    1. 5 stars
Totally agree—10 minutes sounds rushed for pork. I usually do closer to an hour too, then the five-spice actually tastes like something instead of “just seasoning.”

    2. User avatar ernesto.dach1952 says:

      3 stars
I tried the 10 min thing and it was still good? maybe my pork was thinner. but uh… i think “let it marinate” shud mean like 20-30 at least. 4-5 mins on skillet can dry it out fast.

  79. 3 stars
This meshed well for lunch but my kids wouldn’t eat it. What a bummer!

  80. 4 stars
Can I substitute the pork with chicken? Or like, tofu? Asking for my vegan friends.
