Fennel Spaghetti

October 10, 2024

Fennel Spaghetti is the kind of dish that surprises you with how simple yet flavorful it can be. It is light, aromatic, and full of subtle sweetness balanced with savory notes. The natural flavor of fennel transforms as it cooks, turning mellow and slightly caramelized, bringing a fresh elegance to a comforting bowl of pasta. This is the type of meal that feels both rustic and sophisticated at the same time.

The beauty of fennel lies in its ability to completely shift the personality of a dish. Its crisp, licorice-like flavor softens beautifully when cooked, becoming delicate and slightly sweet without overpowering other ingredients. Paired with the earthiness of garlic, the richness of olive oil, and the brightness of lemon, it creates a perfect harmony of flavors that feels both vibrant and satisfying.

Fennel Spaghetti is the ultimate expression of how a few humble ingredients can turn into something memorable. It is the kind of dish you turn to when you want a meal that feels special but does not require fuss. Each bite delivers that wonderful contrast between the tender strands of pasta and the soft, golden fennel, with little bursts of brightness from fresh herbs and maybe even a touch of heat from red pepper flakes.

What makes this dish even more delightful is its versatility. It is light enough to enjoy on warm days but comforting enough to serve when you crave something cozy. The flavors feel clean and fresh, yet deeply satisfying. Whether you enjoy it as a main dish or pair it with a salad or some roasted vegetables, it always manages to feel balanced and complete.

The simplicity of Fennel Spaghetti invites endless possibilities. It feels just as appropriate for a solo lunch as it does for sharing with friends over a casual dinner. There is an effortless charm to it – unpretentious yet undeniably delicious. It is a wonderful reminder that sometimes the best meals come from letting a few good ingredients shine.

Spaghetti was cooked how long? I didn’t time it right and made mushy pasta and the whole dish was a mess. 😩

This is a great way to use up all that fennel in the fridge! Thanks for the recipe!

  3. User avatar Tom Baumbach says:

I had to adjust the cooking time a bit but still came out good. I’ll make it for my friends next time.

Glad to hear it turned out well! Your friends will love it! 😊

I’m not sure about using so little seasoning. Salt and pepper “to taste” is fine, but I ended up adding more red pepper flakes for balance.

    1. User avatar terry.koss15 says:

      5 stars
I get you—fennel can be kinda sweet/soft on its own, so a little extra red pepper flakes totally makes sense. “To taste” really is the key here.

  5. 5 stars
This dish is so easy to make! Didn’t take long and tasted like a fancy restaurant meal.

  6. User avatar Demon King Piccolo says:

    5 stars
Love how simple this recipe is! My kids ate it without questions, which is a win in my book.

    1. User avatar darell.romaguera1954 says:

      5 stars
Absolutely! Simple recipes are the best when you have kids. Fennel spaghetti sounds fun!

  7. 5 stars
This dish was surprisingly good! I was skeptical at first, but the fennel adds such a unique flavor. Will definitely make again!

  8. User avatar boyce.bernier95 says:

Is spaghetti really made of just pasta? I thought it had sauce too… confused.

  9. User avatar modesto.mcdermott67 says:

    5 stars
This recipe is fantastic! The fennel adds such a nice flavor to the spaghetti. My family loved it!

I don’t like fennel so I just added broccoli instead. Still turned out good, I think!

    1. User avatar Marcus Quitzon says:

      4 stars
Broccoli instead of fennel? That’s kinda wild. But if it tastes good, who am I to judge? 🤷‍♂️

  11. User avatar jamal.wisoky2001 says:

    3 stars
I messed up and used too much garlic. It was like a garlic bomb! But the taste was still decent.

    1. User avatar florencia.maggio72 says:

      4 stars
Don’t worry, garlic is life! More flavor right? 😂

  12. User avatar basementDweller says:

    4 stars
Lol fennel spaghetti sounds weird but I tried it. Turns out fennel is like magic. Next time I’ll double the garlic (sorry).

    1. User avatar whitley.halvorson says:

      5 stars
Haha love this—fennel really does mellow into something kind of sweet. Doubling the garlic next time sounds risky but in a good way 😄

  13. 1 star
Why would anyone put fennel into pasta? Some things just don’t make sense!!! 😒

  14. 3 stars
I don’t have fennel, can I use something else? Like, uh, celery? Asking for a friend!

    1. User avatar octavia.wiegand says:

      2 stars
Nah, celery ain’t the same. Might as well just skip the fennel! Just use more garlic, lol.

    2. User avatar norbert.okon says:

      4 stars
Celery is different from fennel, but it could work in a pinch! Just might change the taste a bit.

  15. 1 star
I hated it. Fennel tastes like licorice and I can’t stand that. Gave it a shot but nope!

  16. User avatar arlette.hilpert85 says:

    4 stars
Took me a while to like fennel, but this recipe changed my mind. Who knew it could be so good with pasta!

    1. User avatar teena.cruickshank1973 says:

      5 stars
I never thought of fennel like that! Gonna try it soon, thanks for sharing!

  17. User avatar tristan.smith52 says:

Spaghetti plus fennel? Sounds like a bad idea. But my family loved it…

  18. User avatar kyla.baumbach2000 says:

    4 stars
Good flavor, but I think the fennel needs a touch more time. Mine was still a little crisp at 5 minutes. Next time I’ll sauté closer to 8.

    1. 5 stars
Totally agree—fennel can stay crisp if it’s only 5 minutes. I usually aim for closer to 8–10 until it turns tender and a bit sweet.

    2. User avatar karoline.jakubowski says:

      3 stars
Mine came out fine at 5 mins 🤷‍♂️ maybe your pan was too hot/too crowded? I just slice mine real thin. Also parmesan at the end works.

  19. User avatar alec.koepp44 says:

    3 stars
I followed it exactly, but my spaghetti ended up a bit dry. Next time I’ll reserve some pasta water to loosen it up.

    1. User avatar Humma Kavula says:

      4 stars
Maybe you overdrained it? I always keep like a ladle of the water, otherwise the Parmesan clumps and dries out the noodles 😅 Try that and maybe add more oil too.

    2. 5 stars
Good catch—reserving pasta water really helps here. A splash or two while tossing makes the sauce silky instead of dry. I’ll do that next time too!

  20. 1 star
Is fennel even edible? I thought it was just for decoration. 🤔

    1. User avatar mark.schiller82 says:

      5 stars
Yes, fennel is definitely edible! It’s tasty and adds a nice flavor to dishes. You should give it a try! 😊

  21. User avatar nicky.bogisich1968 says:

    4 stars
Pretty good! I used a little extra parmesan because I’m that person. The fennel got sweet and tender after sautéing.

  22. User avatar hosea.quigley says:

    4 stars
Fennel in spaghetti sounds fancy, but also kinda weird? Honestly it’s not bad—reminds me of a lighter Italian dish. I think I’ll do it again with extra pepper flakes.

    1. 3 stars
I’m on the fence 😅 I tried fennel once and it was kinda licorice-y for me. If you go heavy on the garlic and pepper maybe it balances—also do you cook the fennel longer?

    2. User avatar Dr. Nicholas Bernier says:

      5 stars
Totally get what you mean—fennel feels fancy but it actually makes it taste lighter and kinda “clean.” Extra pepper flakes is a great call!

  23. User avatar morton.bauch14 says:

    5 stars
OMG, this is the best! I never thought I’d like fennel but this dish was amazing! Five stars!!!

  24. User avatar Restless Draugr says:

    5 stars
This fennel spaghetti was amazing! The flavors were so fresh and light. Definitely a keeper!

    1. 2 stars
But like, fennel? Isn’t that just a fancy name for celery? Not sure about this one.

    2. User avatar gwenda.stanton66 says:

      5 stars
I’m so glad you liked it! Fennel really does add a nice touch. I’ll definitely try making it myself now!

  25. 4 stars
This is tasty but I think 1 clove garlic is too mild—next time I’ll do 2. Otherwise it’s a great combo.

  26. User avatar jay.farrell91 says:

    4 stars
Super easy recipe! I added some chicken for protein and it turned out great. Thanks for sharing!

  27. User avatar celine.kilback70 says:

    5 stars
This turned out way better than I expected—sweet, anise-y fennel with that garlicky oil is a perfect combo. I added a little lemon zest at the end and it really popped.

  28. 2 stars
I followed the recipe step by step, but it turned out really bland. Maybe I missed something?

  29. 4 stars
Simple weeknight pasta, love that it doesn’t use a heavy sauce. I used a little more pepper flakes because I like it spicy.

    1. 5 stars
Yes! That’s exactly why I like it too—light but still flavorful. The pepper flakes addition sounds perfect.

  30. User avatar deedee.gottlieb98 says:

    1 star
Fennel spaghetti? What even is fennel? 😂 I just eat regular pasta.

  31. User avatar yuk.greenfelder1 says:

    2 stars
I dunno, the fennel was weird. Not my favorite veggie, I guess. Maybe it’s just me.

  32. User avatar spencer.hammes says:

    5 stars
I loved the cheese part! Cheese makes everything better. 😋

    1. User avatar joesph.herman says:

      5 stars
Totally agree! Cheese just takes it to the next level! 🧀❤️

  33. User avatar Dr. Melina Murphy says:

    5 stars
This was delicious! I love fennel now!

  34. User avatar Geraldo Fahey says:

    2 stars
Eh, not my cup of tea. The fennel was too strong for me.

  35. User avatar awilda.leuschke says:

    5 stars
OMG this is so good 😭 the fennel fragrance in the skillet is unreal. I served it with garlic bread and everyone went back for seconds.

    1. 5 stars
Yesss 😍 fennel really turns it into something special—totally makes sense with garlic bread too. I’m stealing this combo!

  36. User avatar nathan.hettinger55 says:

    2 stars
I think I minced the garlic wrong? It burned a little. Otherwise, it was pretty tasty—could’ve used more cheese.

    1. 5 stars
Oof, yeah—burned garlic happens fast. Next time try smashing/mincing and then keep the heat a touch lower (or add the garlic for ~30 seconds once the oil’s hot). And more cheese is never wrong 😄

  37. User avatar jamey.rolfson says:

    4 stars
Super flavor! My wife and I enjoyed it, but the kids said it tasted weird. Kids can be picky, right?

  38. 3 stars
Too much pepper for my taste, but overall it’s decent. The cheese helps it a bit.

  39. 2 stars
I don’t like spaghetti, so maybe that’s why it didn’t wow me. The fennel flavor is too strong, maybe just stick to garlic and oil.

    1. User avatar dan.waters says:

      4 stars
I get what you’re saying about the fennel! It’s a strong flavor for sure. But have you tried it with less fennel? Might balance it out! I love garlic too, can’t go wrong with that. 😊

    2. User avatar mohamed.ziemann20 says:

      2 stars
Spaghetti doesn’t need fancy stuff like fennel. Just give me plain spaghetti with butter and I’m good! Lol.

  40. User avatar Shadowfax says:

    4 stars
Yummy! Quick and easy, but can I use broccoli instead of fennel? 🤔

  41. User avatar liberal.hero says:

    2 stars
I dunno, the fennel was weird. I thought it was gonna taste different. Could’ve used more garlic.

  42. User avatar Michael83 says:

    3 stars
Not a fan of red pepper flakes, so I left them out. Still tasted fine! 👍

  43. User avatar Gurney Halleck says:

    5 stars
Yum! The parmesan cheese just takes it to the next level. Definitely making this again!

  44. User avatar jake.pacocha says:

    1 star
How can you eat that? It looks gross on the plate. Just spaghetti isn’t enough anymore?

    1. User avatar dante.cormier says:

      5 stars
I think it looks delicious! Spaghetti can be so boring on its own. Fennel adds a nice twist!

  45. User avatar stella.hauck6 says:

    4 stars
Quick and easy! I made this in less than 30 minutes. Definitely a keeper!

  46. User avatar elwanda.green47 says:

    5 stars
Five stars!! My kid actually ate it and asked for more 😅 The fennel fronds garnish is such a cute touch.

  47. User avatar tegan.bechtelar1960 says:

    2 stars
Wait, fennel is like celery right? Anyway i added it, cooked it… taste was okay but garlic felt too strong. Maybe cut the clove next time.

  48. 4 stars
Simple recipe with good flavor! I added some chicken for protein and it was great! Thanks for sharing.

  49. User avatar Ka'o Makagh says:

    4 stars
Pretty good weeknight pasta. The fennel definitely softens nicely in 5–7 min, though I needed a tiny splash of pasta water to make it cling to the spaghetti.

  50. User avatar myrna.langosh1954 says:

    2 stars
Did anyone else burn their garlic? Whole dish was ruined! 🙁

  51. User avatar geoWizard says:

    5 stars
Honestly I was skeptical about fennel with spaghetti, but wow it’s kinda sweet and licorice-y in a good way. Would make again.

    1. User avatar karie.weissnat80 says:

      5 stars
Same! I thought the licorice flavor would be weird, but it’s actually really nice with the garlic and parmesan. Might need a little extra pepper flakes for my taste 😄

  52. User avatar carolina.wehner47 says:

    3 stars
Mine came out a little bland even after salting. Next time I’ll add more garlic and maybe more parmesan. Still, the texture was nice.

  53. User avatar Chef Bear says:

    3 stars
I followed the recipe, but my fennel turned out soggy. What did I do wrong? Any tips?

  54. User avatar gregorio.graham says:

    4 stars
I followed it pretty much exactly, but next time I’ll add a squeeze of lemon. Felt like it needed a little brightness.

  55. User avatar adalberto.upton25 says:

    3 stars
Fennel is kinda an acquired taste and this is definitely in that lane. Still, I liked the anise vibe with the garlic.

  56. User avatar norbert.borer says:

    3 stars
What’s a bulb of fennel? Can I use something else? Didn’t have none of that!

  57. User avatar Lumberjack says:

    3 stars
I tried it but used normal cheese instead of parmesan, still turned out ok. Different taste tho.

  58. User avatar margeret.schumm30 says:

    3 stars
Ok but… 100 grams spaghetti feels like a snack portion, not dinner. Also my fennel didn’t soften in 5-7 minutes (maybe my slices were thick). Still tasty though, just needed longer.

  59. User avatar erin.keeling says:

    2 stars
Honestly, I don’t get the hype. The flavor was too weird for me. Not my cup of tea.

  60. User avatar marvel.monahan1990 says:

    5 stars
Wow, the garlic and fennel combo is just perfect. Made it twice already!

  61. User avatar vennie.hessel74 says:

    5 stars
Made this tonight and it was surprisingly flavorful. The fennel goes sweet and tender after sautéing, and the garlic + chili flakes combo is great. Parmesan at the end really pulls it together. Will definitely make again!

  62. User avatar Marquis Moen says:

    3 stars
My spaghetti turned out a bit clumpy because I didn’t toss fast enough in the pan, but the flavor was still solid.

  63. User avatar ethelyn.robel says:

    3 stars
I like fennel, but 100g spaghetti feels kinda small for a full meal. Also “to taste” salt/pepper is vague—started light and had to fix it at the end.

  64. User avatar gordon.ward4 says:

    5 stars
Tried this tonight—super bright and fragrant. Fennel really comes through, and the garlic/oil base is perfect. I didn’t even need much extra salt.

  65. 2 stars
Fennel in pasta? Sounds fancy for me! I might just stick to meatballs.

  66. 4 stars
Honestly I was skeptical about fennel in spaghetti, but it’s not weird at all once cooked. Texture was great too.

  67. User avatar dorathy.kirlin says:

    5 stars
Wow, the fennel makes it taste way more special than regular garlic spaghetti. I added a squeeze of lemon at the end and it really popped.

  68. 3 stars
I tried following it but I think I did something wrong—mine tasted a little bland until I added more salt. The fennel flavor was there, just needed seasoning love.

  69. User avatar jonas.jenkins1980 says:

    2 stars
I don’t even know what fennel is. Is it like a spice or a noodle? Haha, recipe looks confusing.

  70. User avatar bo.oconner78 says:

    2 stars
This tastes like fancy cafeteria food. Not bad, just not ‘wow’ for me. Parmesan amount felt low.

  71. User avatar gene.kuvalis says:

    5 stars
    5 star!

  72. User avatar dusti.harris58 says:

    2 stars
Fennel spaghetti sounds weirdly fancy for my taste. Like, why not just use onions? Also the “to taste” salt/pepper always makes recipes harder than they should be.

  73. User avatar liberal.hero says:

    3 stars
Not gonna lie, I expected more sauce. It’s more like a light coating than a saucy pasta, but the aroma is amazing.

  74. User avatar jewell.quitzon says:

    2 stars
Not sure about the fennel + pasta ratio. It’s edible, but I kept tasting licorice-y fennel more than anything else. Might work better if you use less fennel or add lemon?

  75. 3 stars
The instructions are straightforward, but it’s missing a time for tossing/spaghetti integration—mine cooled down fast. Still tasty.

  76. 2 stars
I tried this recipe but found the fennel too strong. Maybe it’s just not for me.

  77. User avatar Lara Konopelski says:

    5 stars
Super easy weeknight meal. My kid ate it and asked for seconds—so that’s basically a win in our house.

  78. User avatar chloe.cronin says:

    5 stars
This dish was surprisingly good! Never thought I would enjoy fennel so much. Will definitely make it again!

  79. 5 stars
Tried this tonight—surprisingly fancy for such simple ingredients. The fennel gets sweet and the garlic/pepper combo is perfect. I used a bit more parmesan and it was awesome.

    1. User avatar tyrell.mckenzie52 says:

      3 stars
I made it but mine felt kinda bland? I followed it exactly, maybe my fennel was old or I under-salted. Also I forgot the red pepper flakes the first time… so that probably didn’t help lol.

    2. User avatar mauro.prohaska1975 says:

      5 stars
This is one of those “wait, that’s it?” meals—love it. The fennel really does turn sweet and silky. I’m gonna try with a touch more pepper next time.

  80. User avatar moses.muller1961 says:

    5 stars
This was surprisingly good—loved the anise-y fennel with the garlic and pepper flakes. Super simple weeknight dinner.

  81. User avatar Arthur Dent says:

    2 stars
Too much fennel for my taste. Should have used half. Less is more sometimes!

  82. 5 stars
Yum! Fennel Spaghetti rocks!!! 10/10 would eat a million times.

  83. 4 stars
Good idea with fennel, but I needed a splash of pasta water to make it feel a bit more saucy. Otherwise it was tasty and not complicated.

  84. User avatar wes.gleichner says:

    3 stars
I’m not a big fennel person, so I used less. That said, the parmesan helped a lot. It’s simple and doesn’t feel heavy.

  85. User avatar aurore.streich58 says:

    3 stars
Ok recipe, but not very filling. I had to eat bread with it…

  86. User avatar tissues_with_issues says:

    5 stars
5 stars! no joke—my kids ate it and asked for seconds. I used less red pepper though, and it still worked.

    1. User avatar lelah.hand says:

      5 stars
Love hearing that! 👏 Glad it held up even with less red pepper—fennel can be so good when it’s cooked down. Did you add any fennel fronds or just the parmesan?

  87. User avatar lorette.monahan says:

    5 stars
Yum! Made this for dinner last night and my family loved it. Easy to make!

  88. User avatar Falmer Shaman says:

    2 stars
Lowkey I messed up: I forgot to drain the spaghetti completely and it turned kinda soupy. But the flavor was still decent, so not a total fail.

  89. User avatar deon.wisoky6 says:

    4 stars
I’m not usually a fennel person but this was actually good. I used a bit more red pepper flakes because I like heat. Next time I’ll zest a little lemon on top for brightness—might be amazing.

    1. User avatar bernadette.nikolaus72 says:

      5 stars
Totally get that—fennel can be weird at first, but when it softens like this it turns sweet. Lemon zest is a great idea too; I do that with lots of pasta. Love the heat tweak!

  90. User avatar letisha.rohan76 says:

    5 stars
This was absolutely delicious! Who knew fennel could taste so good with spaghetti?!
