Double Chocolate Palmiers

September 14, 2023

Double Chocolate Palmiers are an indulgent pastry treat that takes the classic French palmiers (also known as elephant ears) to the next level with a rich, chocolatey twist. These flaky, buttery pastries are made by rolling layers of puff pastry with melted chocolate and a sprinkling of sugar, then baking them to a golden, crispy perfection. The result is a delicious combination of crisp, caramelized edges with a smooth, chocolatey center, making them the perfect sweet snack or dessert.

To make Double Chocolate Palmiers, start with high-quality puff pastry as the base, which provides the flaky texture that makes this treat so irresistible. A generous spread of melted dark and milk chocolate is then applied to the pastry, giving it a deep, rich chocolate flavor. The pastry is folded, rolled, and sliced into thin pieces before being baked in the oven, where it puffs up beautifully and forms the signature crisp, caramelized edges.

What makes Double Chocolate Palmiers stand out is the blend of two types of chocolate: dark chocolate adds a slightly bitter contrast, while milk chocolate brings a creamy sweetness. Together, they create a perfect balance of flavors that complements the buttery, flaky pastry. Some recipes may even include a hint of cinnamon or vanilla to elevate the flavor profile and give these palmiers a unique twist.

These pastries are incredibly versatile. They can be served as a dessert after a dinner party, paired with a cup of coffee or tea, or even gifted as a sweet homemade treat. Whether enjoyed warm from the oven or at room temperature, Double Chocolate Palmiers are a decadent indulgence that will leave you craving more.

Serve them as a tasty dessert or enjoy them with a cup of coffee. Either way, they are bound to be a hit!

This is a weird way to make palmiers, never seen cocoa in them before. Aren’t they supposed to be just butter and sugar?

400F is kinda high for puff pastry right? Mine got golden too fast and the centers were still a bit soft. I think I should start checking at like 10 minutes next time.

These were amazing! Just the right amount of chocolate flavor. My kids loved them!

Hate puff pastry! Why not just use regular dough? This is just fancy.

I followed the steps exactly, but 12 minutes wasn’t enough—mine stayed pale. Next time I’ll go closer to 17. Otherwise, great flavor!

Too much work for not enough flavor, the chocolate was nice but the puff pastry didn’t wow me.

This looks complicated, but I’m gonna try it this weekend. I’ll report back! Fingers crossed! 🤞

Mine were more “soft cookies” than “crispy palmiers.” I think 12 minutes wasn’t long enough in my oven. I’ll try 15 again next time.

Totally agree—mine also turned out more like soft chocolate cookies the first time. I’d definitely bake a bit longer until they’re properly golden and slightly darker at the edges.

Mine came out crispy at 12 min, so maybe your oven runs cooler? 15 min sounds right if yours does. Also don’t skip rolling tightly—gaps can make them less crisp.

Super easy and delicious! My kids loved helpin’ out! Will make again for sure! Yum!

lol palmiers are fancy, but these were actually easy. My family ate them immediately and I didn’t even get to dust with powder sugar first.

    1. 5 stars
Honestly that tracks—palmiers always sound “fancy,” but once you’re rolling and baking it’s pretty straightforward. Next time make sure you get at least one tray dusted before your family demolishes them 😂

I burnt mine 😭. Should have watched them more closely. But when they weren’t burnt, they were good!

Super yummy! My only problem was that they burned too fast in my oven. Maybe try 10 minutes next time?

The cocoa/sugar layer is a little messy to spread evenly, but the end result is worth it. I added a pinch of salt to the cocoa mix and it balanced the sweetness nicely.

I don’t understand how these are palmiers. They don’t look like the ones I had in Paris. Not a fan.

Palmiers in Paris are so classic, but maybe these double chocolate ones are just a fun twist? I’m curious about the taste!

I think they look great! Different regions have their own takes on palmiers. You should give them a try before judging!

Not as easy as it sounds! I ended up with a sticky mess instead of nice rolls. But they tasted nice, so I’m giving it a 4.
