Ingredients
  

  • 2 pounds pork belly
  • salt to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp black pepper
  • 1 tbsp olive oil

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Score the skin of the pork belly with a sharp knife.
  • Season the pork belly with salt, garlic powder, paprika, oregano, and black pepper.
  • Rub the olive oil all over the pork belly.
  • Place the pork belly on a baking sheet and roast in the preheated oven for 1 hour.
  • Increase the oven temperature to 450°F (230°C) and roast for another 30 minutes, or until the skin is crispy.
  • Remove from the oven and let the pork belly rest for 10 minutes.
  • Slice and serve crispy pork belly.

    375 for an hour then 450 for 30? That seems kinda random. Pork belly skin doesn’t always crisp that fast—mine stayed chewy and I was sad. Might need higher heat or more time.

      Yeah, it does sound a little random, but the switch is supposed to do two jobs: cook through at 375, then blast at 450 to crisp the fat/skin at the end. If yours stayed chewy, I’d try extending the 450 step by 10–20 minutes or starting with a slightly drier skin (pat it dry).

      Honestly I agree—2 lbs and “salt to taste” is doing a lot of work. I added more salt right before the hot phase and it helped a ton. Also scoring first is key; otherwise you get that chewy, messy skin.

      Yeah, 375°F for an hour + then 450°F for only 30 mins can come out a bit soft depending on how thick the belly is. Next time, try longer at 450 (or even 10–15 mins more) and make sure the skin is really dry before scoring.
