Crispy Pork Belly

July 24, 2024

Few dishes are as satisfying as crispy pork belly. With its golden, crackling skin and rich, juicy meat, it brings together indulgence and simplicity in one irresistible bite. Whether you’re hosting a dinner party or preparing a weekend feast, pork belly is a showstopper that always delivers.

The key to perfect pork belly lies in the contrast between textures. The skin must be crackly and shatter with every bite, while the meat underneath should remain tender and succulent. To achieve this, the pork needs to be scored, well-seasoned, and slow-roasted before a final blast of high heat crisps up the top. A dry rub of salt, pepper, garlic powder, and Chinese five-spice adds a deep, savory aroma that enhances the natural richness of the pork.

Serving crispy pork belly is all about balance. The dish pairs beautifully with a fresh slaw, pickled vegetables, or even a zingy apple chutney to cut through the fat. For a heartier plate, serve it with jasmine rice, mashed potatoes, or a sweet soy dipping sauce.

What makes pork belly so appealing is its versatility. You can go classic with simple seasonings or take it in a fusion direction—Korean-style with gochujang glaze, Filipino lechon kawali, or even slider-style in bao buns with hoisin sauce and fresh cucumber.

While it may seem intimidating, cooking pork belly at home is quite straightforward if you follow the steps carefully. It’s also more economical than you might think, offering gourmet results with a relatively low-cost cut of meat.

Crispy pork belly isn’t just a dish—it’s an experience. One that delivers a perfect crunch, unforgettable flavor, and leaves everyone wanting more.

I used dried thyme instead of oregano because that’s what I had. Still came out great—family devoured it.

  2. User avatar Garrett Streich Sr. says:

    4 stars
Super easy to follow, I was surprised how good it was. Definitely making it again!

It tasted alright but took way too long. Why not just get it done quicker? 🤔

  4. User avatar wes.legros says:

    5 stars
This turned out AMAZING. The skin crackled like pork belly from a restaurant. I’ll never go back to the bland stuff.

  5. User avatar Grunthos the Flatulent says:

    4 stars
Easy to follow instructions! I felt like a chef. Can I use other spices?

    1. 5 stars
Absolutely, you can experiment with different spices! Just keep the balance right, and you’ll be fine. Maybe add some chili powder for a kick!

  6. 4 stars
The seasoning is simple but solid. I think 1 tsp of each is maybe a lot depending on how salty your pork belly already is.

  7. User avatar mafalda.baumbach15 says:

    2 stars
Followed this exactly, but it came out burnt. Oops.

  8. User avatar deandre.hyatt2002 says:

    3 stars
I followed it exactly but I’m not sure my oven runs hot or what… the skin wasn’t as crisp as I wanted. Flavor was great, but I may need longer at 450°F.

  9. User avatar ralph.anderson89 says:

I can’t eat pork. But can I use a chicken instead? Will it work tho?

  10. User avatar leta.reichel96 says:

375 for an hour then 450 for 30? That seems kinda random. Pork belly skin doesn’t always crisp that fast—mine stayed chewy and I was sad. Might need higher heat or more time.

    1. User avatar america.watsica95 says:

      4 stars
Yeah, it does sound a little random, but the switch is supposed to do two jobs: cook through at 375, then blast at 450 to crisp the fat/skin at the end. If yours stayed chewy, I’d try extending the 450 step by 10–20 minutes or starting with a slightly drier skin (pat it dry).

  11. 4 stars
I’m usually skeptical of “1 hour + 30 minutes” timing, but it turned out pretty close. Next time I’ll check earlier and maybe broil for the last few minutes.

  12. User avatar robbie.flatley54 says:

Pork belly is too fatty for me. I prefer leaner meats. Not my kind of recipe, but I guess some folks like it.

  13. User avatar ShanksOnePiece says:

    4 stars
I forgot the olive oil and it still turned out good. Go figure!

  14. User avatar alfredo.ebert says:

    5 stars
So easy. Like… too easy. 😂 The crispy bits were gone in minutes.

  15. User avatar patrick.batz50 says:

    4 stars
Not bad at all. I think 1 tsp oregano is a little strong for my taste though—next time I’ll cut it in half. Still crispy on the edges!

  16. 5 stars
Crispy is the key! Also, I added some soy sauce and honey to the rub, came out incredible!! Give it a try!

    1. User avatar benny.emmerich1993 says:

      5 stars
That sounds amazing! Soy sauce and honey? I’m definitely trying that next time! Thanks for sharing!

    2. User avatar Dale Graham says:

      2 stars
I dunno about soy sauce, wouldn’t that make it too salty? Pork belly is already fatty as it is.

  17. User avatar BEVERLY NELSON says:

  21. User avatar bud.hartmann65 says:

This is the kind of recipe I can actually do. Simple seasoning, no weird steps. My kids ate it all up. Would absolutely make again.

  22. 4 stars
Seems easy enough! I might add some honey next time for a sweet twist.

  23. 5 stars
So easy to make! I added some chili flakes for a little kick. Yum!

    1. 5 stars
Chili flakes! That’s a neat idea! I wanna try that next time. Thanks for sharing!

    2. User avatar amalia.purdy says:

      5 stars
I’m so glad to hear that! It really is delicious. Did you try adding anything special to it?

  25. 4 stars
I had no paprika, so I used chili powder. It worked pretty well! I’d do it again. 4 stars.

  26. User avatar Oliver Sutton says:

    4 stars
The instructions are a little vague—like, do you cover it or leave it uncovered? I left it uncovered and it probably helped, but still…

  27. User avatar arden.feest1979 says:

    3 stars
Too much salt! I think 1 tsp was too much. Next time I’m gonna reduce it.

  28. 3 stars
What about marinades? I think it needs more flavor!

  29. User avatar genny.goodwin5 says:

    5 stars
YUMMY! Best thing I ever made. 10/10 recommend!

  30. User avatar sook.lockman says:

    5 stars
Simple and yum! Olive oil really made a difference. 👍

  31. User avatar laurice.treutel22 says:

    4 stars
The seasoning was solid, but mine didn’t crisp as much as the recipe promised. I think my oven runs hot? Still tasty though, and the rest step helped.

  32. User avatar felipe.lebsack90 says:

    2 stars
Needs more salt lol. The spices are fine but it was a bit bland to me. Also, I forgot to score the skin at first and it was messy after.

    1. User avatar donnell.kautzer1996 says:

      4 stars
Honestly I agree—2 lbs and “salt to taste” is doing a lot of work. I added more salt right before the hot phase and it helped a ton. Also scoring first is key; otherwise you get that chewy, messy skin.

  33. User avatar valentin.sauer12 says:

    5 stars
This recipe is kinda boss ngl. My whole family ate it straight off the tray.

  34. User avatar Mr. Shin Christiansen says:

Can someone tell me what pork belly is?? I’m not familiar with it, is it same as bacon?

  36. User avatar Jessica Atreides says:

    4 stars
Easy to follow! My family loved it. Thanks for sharing! 🙌

  37. User avatar Tom Bombadil says:

    2 stars
Sounds good but kinda greasy, isn’t it? I prefer lean meats. Should I try it anyway?

  38. User avatar terrance.lebsack98 says:

    5 stars
This was AMAZING! The pork came out so crispy and delicious. My family loved it!

  39. 5 stars
This was awesome! The pork belly was so crispy and flavorful. Will definitely make it again!

    1. User avatar lucien.witting53 says:

      5 stars
I’m glad you loved it! It’s one of my favorites too! The spices really make a difference!

  40. 4 stars
Honestly, I was skeptical about the cooking times. My oven doesn’t heat evenly. Next time I’ll adjust it. Still turned out pretty good tho.

  41. User avatar napoleon.lind92 says:

    4 stars
Mine came out a little too salty even though I “used to taste,” so next time I’ll go lighter on the salt. Still super crispy though. Resting helped a lot.

  42. User avatar Dan Saul Knight says:

    4 stars
Good basic method, but 1 hour at 375°F felt a little short for my thick cut. I ended up adding ~20 minutes before cranking to 450°F. Still turned out great though.

    1. User avatar norah.schimmel says:

      5 stars
Yeah, 1 hour at 375°F can be a little too optimistic for thick cuts. Adding time before the high-heat blast makes total sense—450°F is where it really snaps up.

  43. User avatar loyd.altenwerth46 says:

    4 stars
I used my fattier pork belly and it still worked, though I had to add like 10 minutes to get it truly crunchy. Worth it.

    1. User avatar Prostetnic Vogon Jeltz says:

      4 stars
My oven is always weird—so “add 10 minutes” is super helpful. Do you think the crunch comes more from the 450°F step or just overall cooking time?

    2. User avatar kieth.breitenberg11 says:

      5 stars
Nice! I’m glad the fattier pork belly still came out. That extra time makes sense—fat takes a bit longer to fully render and crisp up.

  44. 1 star
Crispy? More like soggy! What a waste of good pork. Never again.

  45. User avatar irina.barrows31 says:

    3 stars
meh, i dont know. Mine was ok but not crispy enough. Oven temps maybe off? Anyway, 3 stars.

    1. User avatar Rob McKenna says:

      4 stars
Yeah, 375°F for an hour + then 450°F for only 30 mins can come out a bit soft depending on how thick the belly is. Next time, try longer at 450 (or even 10–15 mins more) and make sure the skin is really dry before scoring.

  46. User avatar josh.thompson45 says:

    2 stars
Pork belly?? That’s just a slice of fat!! Who eats that? We should eat more healthy foods.

    1. 2 stars
But it’s just fat! Healthy is the way to go. Maybe try a veggie recipe instead?

    2. User avatar Barliman Butterbur says:

      5 stars
I love pork belly! It’s a treat for special occasions. Not everything has to be super healthy all the time!

  47. User avatar lucilla.leuschke36 says:

    5 stars
This recipe was spot on! My family loved it and it turned out so crispy. Will definitely make again!

  48. User avatar oPandariaNo says:

    2 stars
I followed the instructions but my skin didn’t get crispy! What did I do wrong? I really wanted it to turn out great.

    1. User avatar elvis.rohan says:

      4 stars
Sounds like you might not have scored the skin deep enough. Scoring helps the fat render out, which is key for that crispy texture!

    2. User avatar shiela.reichert says:

      3 stars
Maybe your oven doesn’t heat evenly? It could also be that you didn’t use enough salt on the skin. Just a thought…

  49. 3 stars
Crispy, but my skin was too chewy. Any tips?

    1. User avatar junior.tromp60 says:

      3 stars
Chewy skin? Hmm… maybe try cooking it longer or at a higher temp? I dunno, but I tried this recipe and it turned out fine. 😕

    2. User avatar chana.wiegand says:

      4 stars
You might not be scoring the skin deep enough. Make sure to cut into the fat but not too deep into the meat. That really helps! Good luck!

  50. User avatar zofia.beahan63 says:

    1 star
Pork belly? More like pork belly flop. It turned out chewy and not crispy at all! 🙁

  51. 2 stars
Did you really need all those spices? Just salt and pepper wudbe fine.

  52. 2 stars
I followed the recipe but my skin didn’t get crispy at all. What did I do wrong??

  53. 3 stars
I tried this and the seasoning was great, but I wish it mentioned drying the skin first. I may have skipped that and it wasn’t as crackly as I expected.

  54. User avatar margrett.krajcik1987 says:

    5 stars
The two-step roast at 375 then 450 is exactly what I needed—my skin turned out super crisp. I used a little extra paprika and it smelled amazing.

  55. 2 stars
I think 375°F is too low for pork belly, it should be higher from the start. Also I didn’t get that “crackly” skin texture at all.

  56. 5 stars
This is the best pork belly recipe I’ve tried! So crispy and flavorful! Will make again!

    1. User avatar nick.rodriguez says:

      5 stars
I tried this too, and it turned out really good! Best I’ve made in ages!

  57. 5 stars
Crispy skin is everything! 😍 I did it and turned out perfect. U should try!

  58. User avatar omer.morissette15 says:

    4 stars
The seasoning is simple and honestly it’s pretty foolproof. Also love that it doesn’t require complicated steps. Mine crackled a bit more after I patted the skin dry first (wish the recipe mentioned that).

  59. User avatar dave.aufderhar says:

    3 stars
Mine came out chewy in the middle. I scored the skin but maybe I didn’t render enough fat. Flavor was still good, just not the texture I wanted.

    1. User avatar suspiciousCommentator says:

      4 stars
Sorry that happened! Chewy in the middle usually means it didn’t render through enough—next time, try roasting a bit longer at 450°F *or* start with the oven slightly hotter so the fat renders more thoroughly. Also, make sure the skin is truly dry before you oil/season it.

  60. 5 stars
This is hands down the best pork belly recipe I’ve ever tried! So crispy and flavorful. I followed it exactly, and it turned out perfect. 5 stars!

    1. User avatar jayne.durgan75 says:

      5 stars
I’m so glad you loved it! I tried it too and it was a hit at my family dinner. Definitely going to make this again!

  61. User avatar Marathon Man says:

    2 stars
So fatty! Yuck! I thought it would be leaner. Not my taste.

    1. 4 stars
I get it, pork belly isn’t for everyone. But it’s meant to be a bit fatty! It’s all about that crispy skin! 😊

  62. User avatar Nancie Jast says:

    4 stars
Not bad! Next time I’ll use more salt—there wasn’t enough to really season the fat for me. Still crispy at the end, so thumbs up.

  63. User avatar noble.herzog says:

    5 stars
Turned out way crispier than I expected. The scoring step really matters—didn’t skimp on it. Flavor’s awesome too.

    1. User avatar cyril.berge78 says:

      4 stars
Hmm I think mine was crispier too but I roasted at like 400 then 450… maybe that’s why. Either way the flavor sounds bomb.

    2. User avatar tempie.stamm43 says:

      5 stars
Totally agree—scoring is the whole game. Love that it got crispier than expected!

  64. 2 stars
Would have been better with a glaze or sauce. Just kinda dry.

  65. User avatar Charlyn Hauck says:

    5 stars
This recipe is amazing! The pork belly came out so crispy and full of flavor. My family loved it!

  66. User avatar evia.renner12 says:

    3 stars
I don’t think 1 hour is enough at 375°F. Mine turned out a bit tough. Maybe cook longer?

    1. User avatar ShanksOnePiece says:

      4 stars
I think you might be right about the time! My first try was tough too, but adding extra time made it perfect! Maybe try 15-20 mins more at the end.

  67. User avatar caitlin.zieme says:

    3 stars
Okay, but can I use a different oil? Olive oil isn’t my fave.

  68. User avatar oPandariaNo says:

    5 stars
I followed it exactly and it turned out amazing. The seasoning is simple but spot on. Resting 10 minutes helped the slices hold together.

  69. User avatar carlos.trantow1986 says:

    2 stars
Why would you roast it at such high temps??? That’s not how you cook pork belly. It needs low and slow, duh!

    1. User avatar floyd.frami says:

      4 stars
I think higher temps help make the skin really crispy though! It’s just a different method. Can’t wait to try it!

  70. User avatar Zaphod Beeblebrox says:

    5 stars
Crispy pork belly for the win! My family devoured it. This recipe is a keeper! 👍

    1. User avatar tamala.braun says:

So glad to hear your family loved it! Crispy pork belly is just the best. What sides did you serve with it?

    2. User avatar rich.landlord says:

This recipe seems easy enough, but my pork belly always comes out chewy. Any tips?

  71. User avatar maryjane.barton45 says:

    3 stars
can we use pork loin instead? I only have that. Anyone?

    1. 4 stars
Yeah, you can use pork loin, but it won’t be as crispy or fatty. Might wanna adjust the cooking time too!

    2. User avatar imogene.wyman37 says:

      2 stars
What’s a pork loin? Is that like pork? Just cook it, it’ll be fine!

  72. User avatar Tom Schoen says:

    4 stars
Pork belly is so fatty! But I actually thought it was really good after I tried it. Will make again!

  73. User avatar emily.gerhold26 says:

    3 stars
Pretty good for a simple oven method. The pork belly was flavorful, though I wish the measurements for salt were more specific (like how much).

  74. User avatar ranee.bins17 says:

    4 stars
Not gonna lie, “rest for 10 minutes” is the difference maker. I cut early once and it was less crisp. Learn from me 😅

  75. 2 stars
Tbh, I wasn’t impressed. It took longer than advertised and the skin didn’t get crispy enough. Maybe I did something wrong.

  76. User avatar raleigh.flatley78 says:

    3 stars
I don’t know, it sounds easy enough but mine turned out chewy. Maybe I did something wrong?

  77. User avatar catrice.reynolds1952 says:

    3 stars
Pretty good, but 450°F for only 30 minutes isn’t always enough. If your skin is thick, you might need longer.

  78. User avatar basementDweller says:

    2 stars
Too much salt! I couldn’t even finish it because it was so salty. Be careful with that!

  79. User avatar lexie.rohan2021 says:

    5 stars
Came out super crispy on top and still juicy underneath. I added a little extra paprika and it tasted like the pork belly I get at Korean places—would 100% make again.

  80. User avatar jeanne.waters says:

    4 stars
Not bad! Kinda like pork bacon vibes. Next time I’ll add a touch of brown sugar for color ’cause mine looked a little pale.

  81. User avatar frederic.lynch says:

    3 stars
meh. It was alright. Nothing special, I guess. Just pork belly.

  82. User avatar esteban.osinski7 says:

    1 star
This is a terrible idea. Pork belly is bad for you! Just eat salad.

  83. User avatar Calvin Toy says:

    5 stars
I made this for my friends and they couldn’t stop eating it! So glad I tried this recipe.

  84. User avatar MAGA2024.Trumpster says:

    5 stars
Love this. Garlic powder + paprika on pork belly is such a vibe. Will do again for sure.

  85. 4 stars
Easy peasy! Just make sure your knife is sharp for scoring the skin. I’m not a pro, but this was delicious! 😋

    1. User avatar lucky777 says:

      5 stars
I can’t believe how easy this was! I made it for my family and they couldn’t get enough! 🔥

  86. 4 stars
I thought pork belly is hard to make. This changed my mind!

  87. User avatar devon.kassulke51 says:

    4 stars
I know it says roast at 375 then 450, but I always start hot to render faster. Still, this looks way easier than my old method.

  88. User avatar w00d_ch0p says:

    1 star
MEH. Just looks like a big piece of fat. Not worth it.

  89. User avatar stephine.bahringer92 says:

    3 stars
The instructions are kinda vague. Like, do I score the skin only or the fat too? Also 375 for an hour seems random. But I followed it anyway and it was decent.

    1. User avatar sherise.beer30 says:

      5 stars
Yeah the timing is a little weird. I did 1 hour at 375, then 450 for the crisping and it turned out great anyway. The “skin only” thing is key—don’t cut down into the meat too much.

    2. User avatar Clement Maggio says:

      4 stars
I was confused too 😅 When it says “score the skin,” I just do the top layer (like little shallow cuts). If you score too deep the fat leaks out and it doesn’t get as crunchy.

  90. User avatar mckenzie.hirthe71 says:

    2 stars
I don’t know about this. My pork belly turned out kinda chewy. Did I do it wrong?

  91. User avatar Falmer Archer says:

    1 star
What’s the point of using spices? Pork belly is already tasty on its own 😒.

  92. 2 stars
I followed the recipe exactly but mine turned out super greasy. Maybe a step was skipped?

  93. 5 stars
Made this last night—my pork belly actually came out super crisp on top. The garlic powder + paprika combo smells incredible while it roasts. I let it rest the full 10 minutes and it stayed juicy.

    1. User avatar tommie.schmidt67 says:

      5 stars
Yesss! The rest + the hot finish is the magic combo. Glad yours stayed juicy—crispy on top without drying out is the goal.

    2. User avatar ambrose.effertz says:

      4 stars
I’m trying this tonight. One question—did you score pretty deep or just lightly score the skin? Also 375°F first seems kinda low but I’ll trust it.

  94. 5 stars
This was a hit at my BBQ! Everyone wanted the recipe! So good! 💖

  95. User avatar randi.mante9 says:

    1 star
Pork belly? More like pork yucky! I just don’t get all the fuss. Not for me. 🙅

  96. User avatar altha.jast2002 says:

    1 star
Not a fan of this recipe. I like roast chicken better. But to each their own, I guess.

  97. User avatar elvis.botsford24 says:

Yum! My hubby said this was the best thing ever. Will definitely make again!

Yum. Just yum. I ate it all myself. 😋

I’m skeptical about the herbs (oregano?) with pork belly, but I tried it anyway. Honestly, the paprika and garlic carried it. It tasted way better than I expected.

Not for me. Didn’t like the texture of the pork belly, was kinda greasy.

5 stars. Crunchy skin, juicy inside. My oven timer is wrong sometimes but the smell told me it was done lol.

What do ya mean by score the skin? Don’t get it.

Crispy skin is a must!! Do not skip the resting step, trust me!

Decent flavor, but mine didn’t get as crispy as in the picture. I think my oven runs cooler. Also, 1 hour at 375 felt short for my thick piece—would probably go longer.

  105. 2 stars
This was not as crispy as I’d hoped. It tasted good but needs better directions.

Wow wow wow! So delish 🤤. Everyone loved it at the family dinner!

So easy! My family loved it. I just think there could’ve been more seasoning. Kinda bland.

  108. 3 stars
I followed it exactly, except I might’ve under-salted because I was scared it’d be too salty. Flavor was okay, but not as punchy as I expected. Next time I’ll go heavier on the salt.

Finally, a pork belly recipe that actually gives a crispy skin—did the 375 then bumped to 450 and it worked. Seasoning is simple but flavorful. Would make again!

  110. 4 stars
Not gonna lie, 375°F first then 450°F second is kinda genius. The seasoning smelled incredible. Next time I’ll add a pinch of chili flakes for a little kick.

This was a total disaster! The skin burned and the meat was dry. So disappointed! 1 star!

375°F for an hour felt too short? Mine was okay but the fat didn’t really render like I wanted.

    1. 3 stars
Mine came out okay too, but the skin wasn’t super shattery. Maybe my pork belly was thicker and needed more time before the 450°F step.

Yeah I think 1 hour at 375 can be a bit short depending on how thick your pork belly is. I usually go longer at the lower temp so the fat really starts to melt—then crank it up to finish crisping.

  113. 5 stars
I followed it exactly and it was perfect—crispy skin, juicy meat. The garlic powder + paprika combo is such a good vibe.

  114. 3 stars
It’s ok. My grandma made it better. No offense!

Pork belly is overrated. I’ve had better stuff at restaurants.

Not bad, but I think there’s too much salt. Maybe cut back a bit? Still, it was okay.

I tried this and my smoke alarm almost died. Oven at 450°F plus pork belly is intense. Flavor is good though—just vent the kitchen.

Mine didn’t turn out as crispy as I’d hoped. I think I might’ve used too much oil. Any tips for next time?

Pretty solid recipe. The seasoning is simple but flavorful. Only thing: 1 hour felt a bit short for my thick piece, so I added ~15 minutes before turning up to 450.

Good call—thickness really changes the timing. I’ve had to tack on extra minutes too. 👍 The second blast at 450 usually saves it.

Perfectly crispy! Just a tip, I added some chili flakes for extra kick. Yummy!

Best pork belly recipe ever! I’ve tried many, but this one is THE BEST! 😍

  123. 3 stars
375°F for only 1 hour seems too short… maybe depends on the thickness. Mine was thicker and it was underdone before the final roast, so I extended time.

  124. 3 stars
I followed it exactly but my skin didn’t crisp much. I wonder if I didn’t score deep enough or if the oven runs cooler than it says. Tastes great though—just not the crunch I wanted.

  125. User avatar boyce.purdy says:

Is it necessary to score the skin? I skipped that step and it still tasted fine!

Crispy pork belly is all about patience. I rested it the full 10 minutes and the slices held up nicely. Would definitely make again.

    1. User avatar Vroomfondel says:

Yes! The rest is the underrated part. I did almost the same timings and the slices stayed together way better.

My butcher gave me skinless pork belly, so I guess I kinda ruined it? Still tasty and fatty, but yeah… not crispy like the title. Learn from me 😅

    1. User avatar desire.tromp49 says:

Honestly, if it’s still tasty and fatty, you didn’t ruin anything—you just got a different style. “Crispy” pork belly still needs that skin/fat layer to really crisp up.

  128. 4 stars
First time cooking pork belly. Turned out better than I expected! Thanks for recipe.
