Ingredients
  

  • 1 butternut squash large, peeled, seeded, and cubed
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1/2 teaspoon thyme dried
  • 1 cup heavy cream or coconut milk for a dairy-free option

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Place the cubed butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes or until tender.
