Ingredients
  

  • 2 fillets cod fillet
  • 1 onion thinly sliced
  • 2 cloves garlic minced
  • 1/2 cabbage thinly sliced
  • 1 tsp thyme dried
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions
 

  • Season the cod fillets with salt, pepper, and dried thyme.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the sliced onion and minced garlic to the skillet and cook until softened.
  • Add the thinly sliced cabbage to the skillet and cook until wilted.
  • Move the cabbage mixture to the sides of the skillet and place the cod fillets in the center.
  • Cook the cod fillets for about 5 minutes on each side, or until cooked through.
  • Serve the cod and cabbage sauté hot.

    The instructions are easy, but I wasn’t sure what “move to the sides” meant at first. Once I got it, it worked—cod cooked evenly on the bed of cabbage.

      I had the same question about “move to the sides.” Once you do that, the cod gets the direct heat and doesn’t steam—so it makes sense. Glad it turned out even for you!

    Cod dries out on me sometimes, but this was okay. Maybe because I didn’t have cod—used pollock (same thing right?). Either way, pretty decent.

      Pollock isn’t the same as cod but yeah it’s close. Cod dries out bc it’s lean—next time try pulling it a bit earlier and let it finish from residual heat. Also did you cover the pan at all? That helps.

      Glad it worked for you! Cod can get dry fast—pollock is a pretty common swap and it usually behaves similarly, though it can be a bit more “flake-y.” I also find 5 min/side is close; thicker fillets might need a little less/more depending on the pan.
