Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1 cup frozen peas and carrots thawed
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 pcs pie crusts store-bought or homemade

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a saucepan over medium heat, melt the butter and stir in flour. Cook for one minute while stirring constantly.
  • Gradually whisk in the chicken broth and milk, and then add salt and pepper. Cook and stir until the mixture thickens and begins to bubble.
  • Mix in the cooked chicken and thawed peas and carrots. Remove from heat.
  • Place one crust in a pie pan, fill with the chicken mixture, and cover with the second crust. Seal and flute the edges, and cut several slits in the top to allow steam to escape.
  • Bake in the preheated oven for 30 to 35 minutes, or until the crust is golden brown. Let it cool for 10 minutes before serving.

      Totally get that—this recipe’s base gravy is pretty simple. Thyme definitely helps, and a little celery salt or sautéed celery/onion would give it more “personality.” Next time I might add garlic too.

    I feel like 1/2 tsp salt is too much for my taste—mine turned a bit salty. Otherwise the filling was creamy and hearty. Also, 10 minutes cooling wasn’t enough for me; it was still super runny.

      Mine was runny too the first time 😅 I think the filling needs to bubble/thicken more than the instructions say. Also let it cool longer—20 min helped me. Salt part is personal; try less salt + more thickening.

      Totally get that—when the roux doesn’t cook long enough it can taste kinda chalky. I usually do 2-3 min too, and I whisk until it’s smooth before adding the liquid. Glad it still ended up comforting for you!
